Claims (14)

  1. Hotte d'extraction de fumée, comprenant :
    - un organe horizontal plan supérieur (1) adapté pour piéger et recueillir des vapeurs et des gaz s'écoulant vers le haut à partir d'une table de cuisson (10) située en dessous de celui-ci, où les vapeurs et les fumées devant être extraites sont produites,
    - un conduit d'aspiration (2) qui est ouvert dans la région médiane dudit organe horizontal plan supérieur (1),
    - des premiers moyens d'aspiration associés audit conduit d'aspiration et adaptés pour aspirer les fumées et les vapeurs à partir de celui-ci et les souffler vers l'extérieur, de tels moyens comprenant un ventilateur d'aspiration (21) associé audit conduit (2),
    - des moyens de ventilation adaptés pour communiquer un mouvement de tourbillonnement autour d'un axe vertical (X) au mélange d'air et d'autre gaz contenus dans le volume en dessous dudit organe horizontal plan supérieur (1),
    lesdits moyens de ventilation comprenant un organe cylindrique intérieurement creux (11), dont un bord périphérique est placé sur le bord extérieur (110) dudit organe horizontal plan supérieur (1), et qui s'étend verticalement vers le bas à partir dudit organe horizontal plan supérieur (1) sans atteindre le niveau de la table de cuisson (10) ou d'une surface similaire située en dessous de celui-ci, caractérisée en ce qu'un canal horizontal intérieurement creux (31) est défini à l'intérieur dudit organe cylindrique (11), lequel canal est délimité vers l'intérieur par un périmètre intérieur comprenant une séquence alternée de surfaces fermées sensiblement verticales (34) s'intercalant avec une séquence alternée correspondante de fentes respectives (33), et délimité vers le bas par un organe plan (41).
  2. Hotte d' extraction selon la revendication 1, caractérisée en ce que lesdites surfaces fermées sont pourvues d'ailettes ou de déflecteurs respectifs (37) placé(e)s sur un bord vertical respectif (34A) de celles-ci et orienté(e)s de telle sorte que la séquence alternée desdites fentes (33) et desdits déflecteurs (37) associés auxdites surfaces fermés (34) détermine une pluralité d'orifices de sorties d'écoulement.
  3. Hotte d'extraction selon la revendication 2, caractérisée en ce que lesdit(e)s ailettes ou déflecteurs (37) sont pourvu(e)s de moyens de commande adaptés pour permettre d'ajuster l'angle de rotation de chaque telle ailette ou tel déflecteur (37) autour du bord vertical respectif (34A).
  4. Hotte d'extraction selon la revendication 3, caractérisée en ce que lesdit(e)s ailettes ou déflecteurs (37) sont relié(e)s par le biais de moyens mécaniques adaptés pour commander d'une manière synchrone et similaire l'inclinaison desdit(e)s ailettes ou déflecteurs (37).
  5. Hotte d'extraction selon la revendication 4, caractérisée en ce que lesdits moyens mécaniques comprennent une bague d'ajustement (38) reliant lesdit(e)s ailettes ou déflecteurs (37).
  6. Hotte d'extraction selon l'une quelconque des revendications précédentes, caractérisée en ce que lesdites fentes (33) sont orientées de telle sorte que les flux d'air respectifs sortant de celles-ci soient soufflés dans une direction horizontale (a) avec une inclinaison qui est sensiblement inférieure à 10° par rapport à la tangente (t) à la circonférence dudit organe cylindrique (11) au point d'application (P) avec le canal de sortie d'écoulement respectif.
  7. Hotte d'extraction selon l'une quelconque des revendications précédentes, caractérisée en ce que le rapport de la hauteur (h1) dudit organe cylindrique (11) au diamètre, ou à la plus grande dimension (D1), dudit organe plan supérieur (1) est situé n'importe ou entre 3,25 et 4,0.
  8. Hotte d'extraction selon l'une quelconque des revendications précédentes, caractérisée en ce que le rapport de la somme des débits desdites fentes (33) au débit dudit conduit d'aspiration (2) est situé n'importe où entre 0,6 et 1,0.
  9. Hotte d'extraction selon l'une quelconque des revendications précédentes, caractérisée en ce que la fréquence de remplacement d'air, c'est-à-dire le nombre de fois que l'air contenu à l'intérieur dudit organe cylindrique (11) est remplacé par l'air soufflé à partir desdites fentes (33) par unité de temps, est située n'importe où entre 35 et 45 fois par minute.
  10. Hotte d'extraction selon l'une quelconque des revendications précédentes, caractérisée en ce que la vitesse angulaire de la circulation rotative c'est-à-dire tourbillonnante, dudit air et desdites fumées, telle que produite par lesdits moyens de ventilation et mesurée le long de la trajectoire la plus à l'extérieur à l'intérieur dudit organe cylindrique (11), est située n'importe où entre 50 et 60 tr/min.
  11. Hotte d'extraction selon l'une quelconque des revendications précédentes, caractérisée en ce que le rapport de la vitesse tangentielle la plus à l'extérieur moyenne (VI) de ladite circulation d'air rotative ou tourbillonnante à la vitesse de sortie d'écoulement d'air à partir desdites fentes (33) est situé n'importe où entre 4,0 et 6,0.
  12. Hotte d'extraction selon l'une quelconque des revendications précédentes, caractérisée en ce que lesdits premiers moyens d'aspiration et lesdits moyens de ventilation pour produire ladite circulation d'air tourbillonnant comprennent des ventilateurs respectifs (21, 22), ces deux ventilateurs étant reliés mécaniquement à un seul et même moteur d'entraînement (23).
  13. Hotte d'extraction selon l'une quelconque des revendications précédentes, caractérisée en ce que, à proximité ou au niveau d'une bouche d'aspiration (24) dudit conduit d'aspiration (2), un organe filtrant (25) est logé, lequel s'étend au moins partiellement dans le volume renfermé par ledit organe cylindrique (11) sous la forme d'un tronc de cône.
  14. Ensemble de cuisson comprenant :
    - une hotte d'extraction selon l'une quelconque des revendications précédentes ;
    - une surface ou plaque de cuisson (10) située en dessous de la hotte d'extraction ; caractérisé en ce que le rapport de la dimension horizontale maximale dudit organe cylindrique (11) à la distance du rebord inférieur (120) de celui-ci à ladite surface ou plaque de cuisson (10) située en dessous de celui-ci est situé n'importe où entre 0,75 et 1,0.
