Definitions
- the invention relates to a salamander, consisting of a bottom part, a Support column and a radiant heater, the height adjustable mounted on the support column is.
- Such salamanders are mainly used in restaurant kitchens. she serve for keeping food warm and heated, as well as for gratinating, Baking, browning and the like.
- the radiant heater generally height-adjustable mounted on the salamander.
- Examples of such Salamanders with adjustable heater are in DE utility models 296 10 240, 297 14 039 and German Offenlegungsschrift 35 22 209 described.
- the heating is generally carried out electrically; but it is also a gas heating possible.
- the present invention is based on the object, the known Salamander to improve so that they are more comfortable to use distinguished.
- the height adjustment of the radiant heater should be relieved.
- This object is achieved in that the storage for the Height adjustment of the radiant heater to the support column at least approximately in a vertical is arranged by the center of gravity of the radiant heater.
- the invention is based on the recognition that in the previous salamanders the storage of the radiant heater is always located in its outer region. This constantly affects a tilting moment on the storage and if the radiant heater manually moved up or down to create considerable Friction forces. Due to the inventive suspension of the radiant heater In the focal area results in a drastic reduction of these frictional forces and the radiant heater is much easier to move up or down become. Due to the optimized running characteristics, the storage can be structurally more favorable than before.
- the support column which initially as before side of the radiant heater protrudes upward, has an approximately transverse arm, which is extends into an area approximately above the center of gravity of the radiant heater and there has the storage for the radiant heater.
- the support column can thereby be made very narrow and practically allows a four-sided Access with plates, plates etc. to salamander.
- this guide rod has a non-circular cross section, so that the Radiant heater can not be twisted.
- the radiant heater at its outer Scope at least partially - preferably circulating - of a frame surrounded by an approximately vertically continuous air gap from the radiant heater is distanced and that on this frame at least a handle for height adjustment of the radiant heater is arranged.
- the lower edge of the handle is offset upwards relative to the lower edge of the first frame.
- the first frame generates a radiation shadow with its lower region for the reflected radiation from the bottom part, so the handle is this radiation much less exposed and therefore can only heat less take up.
- the attachment of the first frame and the handle or the second frame should understandably be made so that the heat flow from the radiant heater to the frame and the handle is minimized.
- the bottom part has a support plate with multi-layered, in particular dreilagigem structure and at least the intermediate layer of a material of high thermal conductivity, in particular an aluminum or copper alloy.
- This multi-layered construction goes back to the knowledge that the previous support plates by the unilaterally from above acting heating a curvature Experienced. This is inventively avoided that top and Underside of the support plate are connected together well heat-conducting, so that the temperature difference between both sides is so low that the Plate remains virtually flat.
- the outer layers of the support plate expediently consist of one Material with at least approximately the same coefficient of thermal expansion, especially from a chromium-nickel steel, thus also high wear resistance is guaranteed.
- the support plate which indeed serves to accommodate the food, as possible low heat down, it is recommended that she dissociates is arranged to the bottom part.
- this is realized by that on the bottom part four still projecting uprights are mounted, on which the support plate can be stored. So it is both sides plan, so easy be cleaned and can even be used as a grill plate.
- the bottom part So that the heat flow from the bottom part to its footprint -in general a table or buffet plate is minimized, it is recommended that the bottom part Also has on its underside foot elements for distancing.
- the bottom part is slightly larger than the support plate, so that it projects something on all sides, such that it matches the outer contour of the second frame corresponds.
- a fourth aspect of the invention relates to salamanders in which the Height adjustment of the radiant heater via a motorized lifting drive.
- This linear actuator is usually designed so that by pressing a button Radiant heater is moved either up or down.
- the present Invention now relies on the fact that the motorized lifting drive at certain Situations too slow to respond. For example, if a dish is being gratinated and the gratin process ends earlier than expected, the court begins to burn and it would be desirable the position of the radiant heater from the gratin setting to the holding position. Such a fast height adjustment is but with the motor Lifting drives not possible. Therefore, according to the invention between the lifting drive and the radiant heater arranged a slip clutch.
- the slip clutch is to be dimensioned so that it transmits a frictional force, the easily enough for normal motorized adjustment of the radiant heater, However, at slightly higher forces slipped, so at any time a manual Correcting the radiator position is possible.
- the slip clutch For the structural design of the slip clutch as well as for their positioning in the powertrain offer the expert numerous possibilities. With regard to a cost-effective design, it is recommended that the slip clutch to form by a belt drive, so from a pulley and a belt, wherein the belt on the one hand to the radiant heater, on the other hand a tensioning element, namely a weight, a spring or the like attached is. This can in a very simple way, the power transmission to a certain value are set and above this value slips the Through belt, so then allows the manual adjustment.
- the lifting drive to an automatic program control connect, for example, in such a way that when pressing a start button the Lift drive automatically moves the spotlight to a predefined height and the Heating turns on. After a predetermined period of time, the For example, keep the heater back to warm and the lifting drive will move Spotlight in the warm holding position upwards.
- the service staff recognizes the holding position of the reflector, preferably also of acoustic signals, which are automatically handed over by the salamander, that the court finished and the plate can be removed. After a likewise programmed Keep warm, the control switches the heating if necessary from.
- the salamander consists of a lower bottom part 1 with approximately rectangular basic shape. Outside this basic form runs a support column 2, the is firmly connected to the bottom part 1, upwards, with an above about transverse arm 2a which extends into the area above the bottom part 1 extends. About above the center of the bottom part 1 carries the Arm 2a is a vertically extending bearing housing 3. This bearing housing is open at the bottom and takes there a guide rod 4, which firmly with a Radiant heater 5 is connected.
- FIG. 1 also shows, carries the bottom part 1 at its top a support plate 6.
- This support plate serves as a document for the to be heated Food. It is not directly on the bottom part 1, but is over terminal feet 6a him distanced to. This will be the Heat flow from the support plate 6 to the bottom plate 1 is considerably reduced.
- bottom part 1 via foot elements 1a on his Stand surface and is opposite to the support plate 6 on all sides horizontally.
- the plate-like radiant heater 5, the inside its outer jacket 5c above an insulation 5a and below a variety electric heating rods 5b carries, on its outside of a first Surrounded frame 7.
- This frame 7 runs at the same height as the heating plate 5 around them, but spaced horizontally to him, so that one is everywhere circumferential clearance in the form of a vertical air gap 8 forms.
- This air gap 8 is open at the top and bottom and is local only in a few places interrupted, namely, where the frame 7 attached to the radiant heater 5 is.
- the frame 7 is surrounded by a second frame 9, and Although also horizontally spaced, so again on all sides a circumferential vertical air gap 10 forms.
- This air gap 10 is interrupted only there, where the second frame 9 is connected to the first frame 7. It Of course, it is not mandatory that both frames are uninterrupted run around the entire circumference of the radiant heater 5.
- the second frame 9 acts as a handle for the height adjustment of the radiant heater 5. It is, as Figure 2 shows, with its lower edge opposite the lower edge the first frame 7 is offset upwards. This forms the lower part of the Frame 7 a shield against the reflected from the platen 6 Heat radiation, i.
- the handle is largely in the radiation shadow of the first frame 7, especially since it extends on a more outer periphery as the outer edge of the support plate 6, namely approximately aligned with the outer edge of the bottom part 1.
- the support plate 6 has a three-layer structure, namely two outer layers 16th made of the same material, preferably stainless steel and an intermediate layer, the characterized by high thermal conductivity.
- this liner has a much larger wall thickness than the two outer layers. Thereby the two outer layers are kept at a similar temperature level and the platen 6 remains flat even at high temperature.
- a single-layer design is sufficient, preferably made of stainless steel. It lies either directly on the lower cross struts of the Support column 2 on or as intermediate in the embodiment Foot elements 1a.
- Figures 2 and 3 also show the motor lifting drive for height adjustment of the radiant heater 5. It consists of a arranged in the structure 3 Electric motor 12, the at least one end face of a pulley 13a and 13b drives with horizontal axis of rotation. About these two Pulleys each run a belt 14a and 14b and these belts are at its one end with the guide rod 4 of the radiant heater 5, at the other End connected to a common counterweight 15. This counterweight is similarly sized as the weight of the complete radiant heater 5 including its power supply and its command staff 4. It needs Make sure that the belt drive turns on the radiant heater depending on the direction of rotation of the heater Drive motor 12 moves up or down.
- the belt drive also acts as a friction clutch, because it is at any time possible to manually move the heater, in which case the belts slip over the stationary pulleys.
- the switching elements also on the belt 14a or 14b on the one hand and the corresponding Pulley 13a and 13b on the other hand be arranged, wherein the pulley then slipped on the belt located in the stop position, until the calibration position is reached.
- Figure 2 illustrates the stroke storage of the radiant heater in the form of a Socket 11, which is mounted on the arm 2a of the support column, above the center of gravity of the radiant heater 5.
- This bushing 11 surrounds the guide rod 4 with the interposition of a ball bearing, not shown in the drawing and allows its low-friction height adjustment.
