Description
Claims (9)
- Verfahren zur automatischen Garraumreinigung von Gargeräten zur Lebensmittelbehandlung umfassen das Einsprühen sämtlicher Flächen und Teile des Garraumes mit einer Reinigungslösung, das Einwirken der Reinigungslösung über einen vorgewählten Zeitraum, das Ausspülen des Garraumes und das Nachspülen der die Reinigungslösung führenden Leitungen und Düsen, dadurch gekennzeichnet, dass zum Abschluß des Reinigungsvorganges Wasserdampf bei einer Temperatur von mindestens 100°C über eine von dem angestrebten Desinfektionsgrad abhängige Zeitdauer in den Garraum eingeführt wird und dass zum Nachspülen der die Reinigungslösung führenden Leitungen und Düsen entmineralisiertes Wasser verwendet wird.
- Verfahren nach Anspruch 1, dadurch gekennzeichnet, dass die Einführung von Wasserdampf in den Garraum über einen Zeitraum von 5-10 Minuten erfolgt.
- Verfahren nach Anspruch 1 oder 2, dadurch gekennzeichnet, dass dem entmineralisiertem Wasser eine Lebensmittelsäure zugesetzt wird.
- Verfahren nach einem der Ansprüche 1 bis 3, dadurch gekennzeichnet, dass als Lebensmittelsäure Zitronensäure verwendet wird.
- Verfahren nach einem der Ansprüche 1 bis 4, dadurch gekennzeichnet, dass im Anschluss an die Dampfdesinfektion eine Heißluftsterilisation erfolgt.
- Verfahren nach Anspruch 5, dadurch gekennzeichnet, dass die Heißluftsterilisation bei einer Temperatur von mindestens 160°C über eine vom angestrebten Sterilisationsgrad abhängige Zeitdauer erfolgt.
- Verfahren nach Anspruch 6, dadurch gekennzeichnet, dass einer Heißlufttemperatur von 160°C eine Sterilisationszeit von 200 Minuten zugeordnet wird.
- Verfahren nach Anspruch 6, dadurch gekennzeichnet, dass einer Heißlufttemperatur von 180°C eine Sterilisationszeit von 30 Minuten zugeordnet wird.
- Verfahren nach Anspruch 6, dadurch gekennzeichnet, dass einer Heißlufttemperatur von 200°C eine Sterilisationszeit von 10 Minuten zugeordnet wird.
