Im Betrieb des Backofens sind die an der Innenscheibe zu messenden Temperaturen im Zentralbereich wesentlich höher als im äußeren Bereich bzw. dem Peripherbereich. Dadurch ist ein großer Temperaturgradient in der Innenscheibe vom Zentralbereich zum Peripherbereich hin verursacht. Aufgrund der erfindungsgemäßen Wölbung der Innenscheibe und insbesondere deren räumlicher Orientierung wölbt sich die Innenscheibe infolge des vorhandenen Temperaturgradienten lediglich im Zentralbereich weiter von der Muffelöffnungsebene weg. Im Peripherbereich bleibt die Innenscheibe am Muffelflansch bzw. an der Dichtung im wesentlichen unverändert anliegend. Falls in Abweichung von der erfindungsgemäßen Lehre eine Backofentür verwendet wird, die geringfügig in die andere Richtung, also in den Garraum hinein, gewölbt ist, so daß ihr Abstand von der Ofenmuffelebene im Zentralbereich kleiner ist als im Peripherbereich, dann wird infolge des Temperaturgradienten die Backofentür weiter in die Öffnung der Backofenmuffel hineingewölbt. Dies führt dazu, daß die Innenscheibe nachteiligerweise im unteren Muffelbereich von der Muffel bzw. der Dichtung weggedrückt wird. Dies hat insbesondere bei einer an sich bekannten Backofendrehtür zur Folge, daß sich ein größerer Türspalt im oberen Bereich der Türdichtung bzw. des Muffelflansches ergibt. Infolge dieses Türaufdrückens und dem daraus resultierenden Türspalt entweicht insbesondere Wärme aus der Backofenmuffel. Um dieses Türaufdrücken beim Stand der Technik zu vermeiden, wird beispielsweise die Dichtung im unteren Bereich ausgeschnitten. Eine andere Möglichkeit besteht darin, die Backofentür aus der Vertikalen geringfügig geneigt vor der Muffelöffnung zu montieren. Dabei wird die Backofentür unter einem geringen Winkel angestellt montiert bzw. im unteren Bereich der Dichtung bzw. des Muffelflansches weiter von dieser beabstandet montiert als im oberen Bereich. Die sich dabei ergebende geneigte Türanordnung ist jedoch optisch wenig ansprechend.
