Claims (19)

Patentansprüche
1. Mit Calcium versetztes Fruchtsaftgetränk, dadurch gekennzeichnet, daß es im wesentliehen frei von zugesetztem Protein ist und
a. 0,05 bis 0,26 Gew.-% gelöstes Calcium;
b. 0,4 bis 4 Gew.-% einer Säurekomponente, die aus einer Mischung von Zitronensäure und Maleinsäure in einem Gewichtsverhältnis von 5 zu 95 bis 90 zu 10 besteht;
c. wenigstens 45 % Fruchtsaft;
d. einen Zucker in einer Konzentration von 2 bis 16"Brix und
e. nicht mehr als 0,07 Gew.-% Chloridionen enthält. 25
2. Getränk gemäß Anspruch 1, dadurch gekennzeichnet, daß es weiterhin Aspartam enthält und einen Zuckergehalt von bis 8* Brix besitzt.
3. Getränk gemäß Anspruch 1 und 2, dadurch gekennzeichnet, daß es 0,10 bis 0,15 Gew.-% gelöstes Calcium und 0,8 bis 1,8 Gew.-% der Säurekomponente enthält.
4. Getränk gemäß den Ansprüchen 1 bis 3, dadurch gekenn-
zeichnet, daß es nicht mehr als 0,03 Gew.-% Chloridionen enthält.
5. Mit Calcium versetztes Fruchtsaftkonzentrat, dadurch gekennzeichnet, daß es im wesentlichen frei von zugegebenem Protein ist und
a. 0,15 bis 1,30 Gew.-% gelöstes Calcium;
b. 1,2 bis 20 Gew.-% einer Säurekomponente, die aus
einer Mischung von Zitronensäure und Maleinsäure in einem Gewichtsverhältnis von 5 zu 95 bis 90 zu 10 be steht;
c. wenigstens 45 % Fruchtsaft und
d. Zucker in einer Konzentration von 6 bis 75° Brix enthält.
6. Konzentrat nach Anspruch 5, dadurch gekennzeichnet, daß es gefrostet ist.
7. Konzentrat nach einem der Ansprüche 5 und 6, dadurch gekennzeichnet, daß es das gelöste Calcium in einer Konzentration von 0,3 bis 0,75 Gew.-% und die Säurekomponente in einer Konzentration von 2,4 bis 9 Gew.-% enthält.
8. Getränk oder Konzentrat nach einem der Ansprüche 1 bis
7, dadurch gekennzeichnet, daß der Fruchtsaft Zitrussaft ist.
9. Getränk oder Konzentrat nach einem der Ansprüche 1 bis
8, dadurch gekennzeichnet, daß der Zitrussaft Orangensaft ist und das Gewichtsverhältnis von Zitronensäure zu Maleinsäure 60 zu 40 bis 90 zu 10 beträgt.
10. Getränk oder Konzentrat nach einem der Ansprüche 1 bis 9, dadurch gekennzeichnet, daß der Orangensaft 50 bis 70 % des Getränkes oder Konzentrates enthält.
11. Getränk oder Konzentrat nach einem der Ansprüche 1 bis
9, dadurch gekennzeichnet, daß der Orangensaft
wenigstens 95 % des Getränkes oder Konzentrates enthält.

12. Getränk oder Konzentrat nach einem der Ansprüche 1 bis 8, dadurch gekennzeichnet, daß der Zitrussaft Pampelmusensaft ist.
13. Getränk oder Konzentrat nach einem der Ansprüche 1 bis 7, dadurch gekennzeichnet, daß der Fruchtsaft Apfelsaft ist und das Gewichtsverhältnis von Zitronensäure zu Maleinsäure 30 zu 70 bis 50 zu 50 ist.
14. Verfahren zur Herstellung eines mit Calcium versetzten Fruchtsaftproduktes, dadurch gekennzeichnet, daß es folgende Stufen umfaßt:
a. Herstellung einer wenigstens metastabilen wäßrigen Vorgemischlösung mit gelöstem Calcium aus Wasser,
einer Säurekomponente, die 0 bis 90 Gew.-% Zitronensäure und 10 bis 100 Gew.-% Maleinsäure enthält und einer Calciumquelle, ausgewählt aus der Gruppe Calciumcarbonat, Calciumoxid und Calciumhydroxid; 20
b. Mischung der Vorgemischlösung mit dem gelösten Calcium mit Fruchtsaftmaterial, das konzentrierten Fruchtsaft mit einem Zuckergehalt von 20 bis 80* Brix enthält, um ein mit Calcium versetztes Fruchtsaftprodukt zu gewinnen, das wenigstens 0,05 % gelöstes Calcium (1); wenigstens 45 % Fruchtsaft (2) und einen Zuckergehalt (3) von 2 bis 75" Brix enthält.
15. Verfahren nach Anspruch 14, dadurch gekennzeichnet, daß die Vorgemischlösung mit dem gelösten Calcium durch den folgenden Schritt hergestellt wird: (1) Herstellung einer wäßrigen Lösung, die die Säurekomponente enthält und (2) Hinzufügen der Calciumquelle zu der die Säurekomponente enthaltenden wäßrigen Lösung. 35
16. Verfahren nach einem der Ansprüche 14 und 15, dadurch gekennzeichnet, daß der Fruchtsaft konzentrierter
Orangensaft ist und die Säurekomponente 15 bis 60
Gew.-% Zitronensäure und 40 bis 85 Gew.-% Maleinsäure enthält.
17. Verfahren nach einem der Ansprüche 14 bis 16, dadurch gekennzeichnet, daß die Calciumquelle Calciuracarbonat ist und das Gewichtsverhältnis der Gesamtsäuren zu
Calcium in der Vorgemischlösung 1 zu 6 ist.
18. Verfahren nach einem der Ansprüche 14 bis 17, dadurch gekennzeichnet, daß die Vorgemischlösung mit dem
gelösten Calcium weiterhin konzentrierten Orangensaft in einer genügenden Menge enthält, um einen Zuckergehalt in der Vorgemischlösung von 2 bis 12" Brix einzustellen.
19. Verfahren nach einem der Ansprüche 14 bis 17, dadurch gekennzeichnet, daß die Vorgemischlösung mit dem
gelösten Calcium weiterhin Zucker in einer Menge von bis 40" Brix enthält.
