Abstract
本发明提供一种仙人掌啤酒制作工艺,其结构是由仙人掌作为啤酒的一种辅助原料添加到啤酒的酿造过程中制备具有保健作用的仙人掌啤酒,仙人掌作辅助原料用于啤酒酿造主要有两种方式:a.在糖化工序中将仙人掌磨切、粉碎,以0.18-400g/L的量加入到煮沸锅中与麦芽、大米一起糖化,制备出含有仙人掌成份的糖化液供啤酒发酵工序使用;b.发酵工序中,通过轧制获得仙人掌提取液,将仙人掌的提取液以5-50g/L的量泵入发酵罐中与麦汁混合进行发酵制备含有仙人掌成份的仙人掌啤酒。本发明的仙人掌啤酒制作工艺和现有技术相比,具有工艺设计合理、易于实施、饮用保健兼有及对原有的啤酒生产设备不需改动等特点,是普通啤酒的更新换代产品,因而,具有很好的推广使用价值。
Description
1、技术领域
本发明涉及一种啤酒酿造技术,具体地说是一种仙人掌啤酒制作工艺。
2、技术背景
仙人掌又名龙舌、神仙掌,是一种古老植物,原产于南、北美洲,生长在海岛、森林、草原和沙漠地区。通过墨西哥等国家科研人员多年的杂交培育和驯化,培育出供人食用墨西哥“米帮塔”仙人掌。食用仙人掌具有高钾、钙,低钠、无草酸等特点,富含黄酮类物质和多糖,以及铁、锰、锶等多种矿物质及柠檬酸、苹果酸、磷脂、维生素等,具有很高的营养价值,具有很好发展前景和市场潜力的营养保健蔬菜,仙人掌在药物保健方面具有降血糖、血脂、血压,活血化淤,消炎解毒,清心明目,美容生肌,润肠等医疗保健作用。有关医学研究证明,在经常食用仙人掌的地区患糖尿病的几率几乎为零。
目前,食用仙人掌已被列为国家二十一世纪最具发展潜力的蔬菜品种,已经成为农产品市场上新的经济增长点,仙人掌因其具有丰富的营养价值和食用价值,已逐渐受到人们的重视和喜爱。但是,将仙人掌的食用性和保健性引用到啤酒酿造业,让仙人掌与传统的大麦、大米、啤酒花等原料混合制造出饮用性和保健功能的结合还未有文献报导。
3、发明目的
本发明的目的是提供一种饮用和保健兼有的仙人掌啤酒制作工艺。使其具有啤酒原有风味及营养的同时,还具有降血糖、改善血液循环、降低胆固醇、促进肠胃循环的保健功能。
本发明的仙人掌啤酒制作工艺,是将仙人掌作为啤酒的一种辅助原料添加到啤酒的酿造过程中制备具有保健作用的仙人掌啤酒,仙人掌作辅助原料用于啤酒酿造主要有两种方式:a、在糖化工序中将仙人掌磨切、粉碎,以0.2-400g/L的量加入到煮沸锅中与麦芽、大米一起糖化,制备出含有仙人掌成份的糖化液供啤酒发酵使用;b、发酵工序中,通过轧制获得仙人掌提取液,将仙人掌的提取液以5-80g/L的量泵入发酵罐中与麦汁混合进行发酵制备含有仙人掌成份的仙人掌啤酒。
4、实施方式
实施例一、
在糖化工序中将仙人掌磨切、粉碎,以200g/L的量加入到煮沸锅中与麦芽、大米一起糖化,制备出含有仙人掌成份的糖化液供啤酒发酵工序使用。
实施例二、
发酵工序中,通过轧制获得仙人掌提取液,将仙人掌的提取液以50g/L的量泵入发酵罐中与麦汁混合进行发酵制备含有仙人掌成份的仙人掌啤酒。
本发明的仙人掌啤酒制作工艺和现有技术相比,具有工艺设计合理、易于实施、饮用保健兼有及对原有的啤酒生产设备不需改动等特点,是普通啤酒的更新换代产品,因而,具有很好的推广使用价值。
除说明书所述的技术特征外,均为本专业技术人员的已知技术。
