背景技术
粽子又称“角黍”、“筒粽”,是中华民族传统节庆食物之一,广泛传布于中国及汉文化圈国家,最初是用来祭祀祖先和神灵,到了近代,粽子成为端午节庆食物。粽子通常是用粽叶包裹糯米或黏黍,经过蒸煮而成的食品。自古至今,每年农历五月初,中国百姓家家都要浸糯米、洗粽叶、包粽子。明李时珍《本草纲目》载:“糉,俗作粽。古人以菰芦叶裹黍米煮成,尖角,如棕榈叶心之形,故曰粽,曰角黍。近世多用糯米矣。今俗,五月五日为节物,相隗送,或言为祭屈原。作此投江,以饲蛟龙。”粽子的种类繁多,如枣粽、豆沙粽、鲜肉粽、八宝粽、火腿粽、桂圆粽、莲蓉粽、蜜饯粽、板栗粽、咸蛋粽、蛋黄粽等。南方粽叶多用箬叶、露兜叶、柊叶等,粽子多呈三角形、四角形;在中原地区粽叶多为槲叶等,粽子多呈长方体。
粽子大多用糯米做成,高糖高能量,缺乏膳食纤维、蛋白质,营养不均衡,黏度高、不易消化,不符合现代科学的合理饮食需求,尤其胃肠道疾病和糖尿病患者最好少吃或不吃,致使其消费市场受到影响。

一种富含膳食纤维的槲叶粽,由以下重量份的原料制成:糯米150份、黄米40份、青稞米45份、无核蜜枣30份、葡萄干10份、无核枇杷果25份、西瓜皮12份、白糖10份、红薯粒15份。
制备富含膳食纤维的槲叶粽的方法,包括以下步骤:
1)分别将糯米、黄米、青稞米清洗、浸泡,取出后沥干水分、混合,得软化后的混合料;青稞米浸泡方法:将生桔皮清洗、打浆后,与水按照质量比为1: 10混合,得浸泡液,将青稞米置于浸泡液中浸泡10h;
2)槲叶的处理:将新鲜的槲叶清洗、置于淡盐水中浸泡6h;
3)无核蜜枣、枇杷果、西瓜皮清洗,无核蜜枣、枇杷果去核、西瓜皮去皮、红薯去皮后切丁,与清洗后的葡萄干、红薯粒、白糖和步骤1) 软化后的混合料混合,用步骤2)浸泡后的槲叶包装,煮制、真空包装即可。

一种富含膳食纤维的槲叶粽,由以下重量份的原料制成:糯米130份、黄米25份、青稞米55份、无核蜜枣17份、葡萄干5份、无核枇杷果15份、西瓜皮5份、白糖15份。
制备富含膳食纤维的槲叶粽的方法,包括以下步骤:
1)分别将糯米、黄米、青稞米清洗、浸泡,取出后沥干水分、混合,得软化后的混合料;青稞米浸泡方法:将生桔皮清洗、打浆后,与水按照质量比为1: 10混合,得浸泡液,将青稞米置于浸泡液中浸泡10h;

1.一种富含膳食纤维的槲叶粽,其特征在于,主要由以下重量份的原料制成:糯米65-150份、黄米20-40份、青稞米30-60份、红枣或无核蜜枣10-30份、葡萄干5-20份、无核枇杷果10-25份、西瓜皮5-15份、白糖6-20份。
2.如权利要求1所述的富含膳食纤维的槲叶粽,其特征在于,还包括红薯粒10-30份。
3.如权利要求2所述的富含膳食纤维的槲叶粽,其特征在于,由以下重量份的原料制成:糯米70-120份、黄米25-35份、青稞米35-55份、红枣或无核蜜枣10-20份、葡萄干5-15份、无核枇杷果15-25份、西瓜皮10-15份、白糖6-15份、红薯粒10-20份。
4.如权利要求3所述的富含膳食纤维的槲叶粽,其特征在于,由以下重量份的原料制成:糯米90、黄米25份、青稞米35份、红枣15份、葡萄干10份、无核枇杷果15份、西瓜皮15份、白糖8份、红薯粒12份。
5.如权利要求4所述的富含膳食纤维的槲叶粽,其特征在于,所述红薯粒为西瓜红品种的红薯粒。
6.制备权利要求1所述的富含膳食纤维的槲叶粽的方法,其特征在于,包括以下步骤:
1)分别将糯米、黄米、青稞米清洗、浸泡,取出后沥干水分、混合,得软化后的混合料;
2)红枣或无核蜜枣、枇杷果、西瓜皮清洗,红枣去核、枇杷果去核、西瓜皮去皮后切丁,与清洗后的葡萄干、白糖和步骤1) 软化后的混合料混合,用槲叶包装,煮制、真空包装即可。
7.如权利要求6所述的制备富含膳食纤维的槲叶粽的方法,其特征在于,
步骤1)青稞米浸泡时方法:将生桔皮清洗,与沸水按照质量比为1:(5-10)混合、冷却,得浸泡液,将青稞米置于浸泡液中浸泡4-10h。
8.如权利要求7所述的制备富含膳食纤维的槲叶粽的方法,其特征在于,步骤2)槲叶的处理:将新鲜的槲叶清洗、置于淡盐水中浸泡4-6h。
