绿豆汤是家庭常备夏季清暑饮料,清暑开胃,老少皆宜。虽然目前已有部分专利,但是多数为液体饮料,而且解暑功能并不强,无法取代藿香正气水。本发明公开了一种绿豆解暑冲剂的制备方法,具有携带方便且可取代藿香正气水的特点。特别是在提取传统绿豆汤中解暑成分的同时通过水解绿豆蛋白获取绿豆肽中的解暑成分,增加了绿豆提取物的解暑功能,同时搭配多种提取物解暑材料,进一步强化了绿豆解暑冲剂的解暑功能,辅料成分的搭配,营养成分的补充,口感与冲调性能的改良,解决儿童与司机等人不能饮用藿香正气水的问题,同时其操作步骤简单快捷、制备过程节能高效、且制备成本低,便于大规模生产。

绿豆是豆科植物绿豆的种子,别名青小豆、菉豆、植豆等,在中国已有两千余年的栽培史,我国是绿豆生产和输出大国之一。绿豆清热之功在皮,解毒之功在肉。它不仅满足了人类的基本营养需求,而且具有很高的医疗价值
绿豆是我国传统的药食同源性杂粮豆类,是良好的蛋白质来源,其蛋白不仅含量高,且具有多种生物学功能。绿豆肽的氨基酸组成与绿豆蛋白相似,但却具备更多样的生物活性,如解暑、抗氧化性、免疫活性、降血压作用等;还具有较强的金属螯合能力,可提升其功能活性以及金属离子在机体中的运转;添加到食品中还可赋予食品相应功能特性,且对于食品品质形成及保持具有一定作用,故绿豆肽是一种极具潜力的植源性生物活性肽。
绿豆含有丰富的蛋白质、维生素和钙、铁等矿物质。其味甘、性寒、入心、胃经,具有清热、解毒、消暑等功效。孙思邀说,绿豆“能治寒热热中,止泻痢卒嚼,利小便长满”。李时珍曾指出绿豆“肉平皮寒,解金石、砒霜、草木一切诸毒”。又称绿豆为“食中要汤”、“济世之良谷也”。绿豆浆经过酶处理后获得的提取物不仅具有传统绿豆汤中的各种解暑成分,同时新增加了具有解暑功能的绿豆多肽,使其解暑功能进一步增强,而且调味后极大地改善了酶解绿豆粉的冲调性能与口感。
荷叶是睡莲科植物莲的叶片,在2020年3月,荷叶被中国卫生部列入“既是食品又是药品”的名单中。作为常用中药材具有解暑利湿、升发清阳等功效。荷叶中含有生物碱、黄酮、挥发油、鞣质等多种次生代谢产物,其中生物碱和黄酮两类化合物是荷叶中最重要的生物活性和生理功能成分。
菊花为菊科植物菊的干燥头状花序,具有平肝明目、清热解毒、疏风解郁的功效。菊花是一种药食两用品,汉《神农本草经》将其归为上品,认为“久服利血气,能轻身耐老延年”。现代研究发现菊花含有黄酮、三萜等活性成分,具有清热解暑抗氧化、抗炎、保肝等多种药理作用。
莲子为睡莲科多年生的水生草本植物莲的成熟种仁,其在我国已经具有两千多年的栽种历史。莲子具有清热解暑、抗心律失常、抗氧化、抗菌、抗病毒、抗肥胖、抗血栓形成等药效。近年来研究发现,莲子中的提取物比如莲心碱、甲基莲心碱等对脑缺血以及心肌缺血有良好的保护作用。
虽然目前已有部分关于解暑的专利,但是多数为液体饮料,而且存在携带不方便的问题,解暑功能不强,无法代替藿香正气液等诸多不足。围绕上述不足,国内外学者主要制备了多种解暑产品,但仍有诸多技术不足,主要体现在(1)含酒精解暑产品不适宜开车及婴幼儿服用(2)功能成分不足,无法满足中暑之人相关的营养需求(3)不便于携带或口感较差。
本发明从改善解暑产品携带方便以及功能增强可替代藿香正气水的角度出发,通过蛋白酶水解处理绿豆浆在获取传统绿豆汤中的解暑成分的同时进一步获取具有解暑功能的绿豆肽从而进一步增强绿豆提取物的解暑特性,同时通过不同植物解暑成分的搭配对绿豆提取物的解暑功能进行了再次增强,使其可以取代传统的藿香正气水等解暑产品,为解暑产品的开发提供了行之有效的新方法。
发明内容
本发明的内容主要可以分为二部分,首先是绿豆提取物的制备,其中包括绿豆原材料的前处理,酶解处理,上清液的提取浓缩和喷雾干燥。其次是原辅料的配比、造粒和包装。
本发明的目的是克服现有技术的不足,改善现有绿豆产品应用范围较窄的现状,解暑产品功能不强无法取代传统藿香正气水以及携带的不方便等,从而提供了一种应用范围更广、携带方便且解暑功能更强可代替藿香正气水的绿豆解暑冲剂。
本发明通过蛋白酶水解处理绿豆浆在获取传统绿豆汤中的解暑成分的同时进一步获取具有解暑功能的绿豆肽从而进一步增强绿豆提取物的解暑特性,同时具有抗氧化性,有美白作用,促进身体免疫力的提高,还能有效地控制生物体血压。
本发明突破传统设计思想与制备方法的技术劣势,通过研究植物性解暑成分的功能特性及相互作用,创新性地实现了植源性天然解暑成分相互组合同时加入相关营养因子的技术优势,为促进天然解暑产品的发展提供了新方法。
本发明的有益效果如下:
(1)本发明不含酒精,适用于绝大多数场合以及人群。
(2)主要成分为植源性天然成分,有良好的解暑功效,对身体的无损害。
(3)营养成分种类及含量合格,满足易中暑人群的营养需求。
具体实施方式
通过以下实施例进一步举例描述本发明,并不以任何方式限制本发明,在不背离本发明的技术解决方案的前提下,对本发明所作的本领域普通技术人员容易实现的任何改动或改变都将落入本发明的权利要求范围之内。
实施例1
a.称取100g湿绿豆,加水配制得料液比为1:10,在常温下于粉碎机中粉碎3min,获得绿豆浆。
b.酶解液的制备:将绿豆浆液温度调节至55℃,以氢氧化钠溶液调pH至7.5,加入20000U/kg的耐高温α-淀粉酶和60000U/kg的木瓜蛋白酶,酶解处理10min。
c.灭酶处理:在95℃下灭酶处理15min,并调节酶解液的pH为7。
d.离心获取上清液:待酶解液冷却至25℃,在1000r/min下离心15min,获得上清液。
e.上清液浓缩干燥:将d所得的上清液进行浓缩,最后喷雾干燥获得绿豆提取物。
实施例2
a.称取100g绿豆,加水配制得料液比为1:10,在常温下于粉碎机中粉碎3min,获得绿豆浆。
b.酶解液的制备:将绿豆浆液温度提高至55℃,以氢氧化钠溶液调pH至7.5,加入20000U/kg的耐高温α-淀粉酶和100000U/kg的木瓜蛋白酶,在酶解处理30min,每10min测定pH并调节pH至7.5。
c.灭酶处理:在95℃下灭酶处理15min,并调节酶解液的pH为7。
d.离心获取上清液:待酶解液冷却至25℃,在1000r/min下离心15min,获得上清液。
e.上清液浓缩干燥:将d所得的上清液进行浓缩,最后喷雾干燥获得绿豆提取物。
实施例3
称取20份的绿豆提取物,加入6.2份的荷叶提取物,10.6份的菊花提取物,6.2份的莲子提取物,以此为主要成分,辅以26份的冰糖,15份的麦芽糊精,15份葡萄糖,0.5份牛磺酸,0.2份硝酸硫胺素,0.2份核黄素,0.1份醋酸维生素A,最后混匀,造粒,获得产品颗粒。
实施例4
称取12份的绿豆提取物,加入4份的荷叶提取物,6份的菊花提取物,4份的莲子提取物,以此为主要成分,辅以20份的冰糖,26.2份葡萄糖,15份的麦芽糊精,0.3份牛磺酸,0.2份硝酸硫胺素,0.2份核黄素,0.1份醋酸维生素A,混和均匀,造粒,获得产品颗粒。
Claims (4)
1.一种绿豆解暑冲剂的制备方法,其特征在于:以绿豆提取物为主要材料,通过对绿豆磨浆、煮制、酶解,离心分离获得绿豆浆中的多种解暑活性成分,最后通过旋转蒸发进行浓缩和喷雾干燥获得绿豆提取物。
2.根据权利要求1所述的一种绿豆解暑冲剂的制备方法,其特征在于,本发明所用主要材料为:绿豆提取物,荷叶提取物,菊花提取物,莲子提取物,麦芽糊精,冰糖,葡萄糖,牛磺酸,硝酸硫胺素,核黄素,醋酸维生素A,其中,绿豆提取为主要解暑材料,通过酶解处理可以获得多种活性多肽以及功能性多糖,增强绿豆提取物的解暑功能,荷叶提取物、菊花提取物、莲子提取物的加入可以进一步强化该冲剂的解暑功能,其它多种添加物不仅改善了产品的理化性质和口感,还增加了其它功能特性,使得适应更多的人群。
3.根据权利要求1所述的一种绿豆解暑冲剂的制备方法,其特征在于,绿豆提取物的获取步骤如下:
(1)绿豆前处理:将经过挑选的绿豆洗净,去除杂质,先用开水烫5~10min,再放入35~45℃的温水中浸泡6~10小时;
(2)绿豆提取物的制备:
a.绿豆浆的制备:称取100g湿绿豆,加水使其料液比为1:10~1:15,室温下于粉碎机中粉碎3~5min,煮制30min获得绿豆浆;
b.酶解处理:调节a所得的绿豆浆液温度为50~70℃,调节pH为5~8,加入20000U~100000U/kg的耐高温α-淀粉酶和30000~100000U/kg的木瓜蛋白酶酶解,酶解时间为10~30min;
c.灭酶处理:将b所得的酶解液在95℃~100℃下灭酶10~15min;
d.绿豆提取液分离:待酶解液冷却至20℃~40℃,在500r/min~1500r/min下离心分离10min~30min,获取上清液;
e.上清液浓缩干燥:将d所得的绿豆上清液采用旋转蒸发仪蒸发浓缩,喷雾干燥获得绿豆提取物。
4.根据权利要求1所述的一种绿豆解暑冲剂的制备方法,一种绿豆解暑冲剂的成分配制步骤如下:
绿豆提取物12~20份,荷叶提取物4~8份,菊花提取物6~10份,莲子提取物4~8份,麦芽糊精10~15份,冰糖20~30份,葡萄糖15~30份,牛磺酸0.2~0.5份,硝酸硫胺素0.1~0.3份,核黄素0.1~0.3份和醋酸维生素A0.05~0.1份,将上述材料混匀,然后使用造粒机造粒,获得绿豆解暑冲剂,分装成小包装。
