本发明涉及具有与一层脂肪基的糖皮相接触的表面的冷冻甜食产品。这些产品包含一块冷冻甜食,例如条形甜食。本发明尤其涉及用糖皮覆盖的冷冻甜食例如插有小棒适于手拿的产品。而且,本产品还扩展到那些其中整个表面只有部分与糖皮接触的产品。这种产品的例子是冷冻甜食体装于塑料筒或纸盒中,其暴露的上表面具有一层糖皮。
发明背景:
冷冻甜食上的糖皮层常常会出现龟裂。这种龟裂来源于在加工和消费时机槭力作用在易碎糖皮层上。这些糖皮易碎性出现在冷冻甜食处于低温时。糖皮和冷冻甜食物质间的粘连降低会导致龟裂,这样糖皮就出现了难看的剥落。
本发明中所使用的“糖皮”这个术语是指一种物料,通常但不仅仅基于巧克力,该物料的脂肪含量至少约25%(重量),优选高达约70%(重量),更优选高达约80%(重量)。易碎问题尤其出现在含有高含量的与乳脂有关的可可脂的糖皮中。
糖皮组合物的特征在文献中有所阐述,实例为Kirk-Othmer(1964年第二版)第363页和Elements of Food Technology第579页。
在糖皮层涂的方法上没有限制。例如,可以有在幕帘中浸挂,也可以通过浸泡和喷雾的方式。喷雾的方法是优选的,因为它能产生一个不连续的层,而且还能附着上连续的薄层。
冷冻甜食通常是以乳为基础。当存在乳成份时,它可以是液体乳、奶油、脱脂乳奶粉、脱脂奶粉的组合。尽管本发明特别适合于冰淇淋,但它也适合冰奶、冷冻酸乳酪、冷冻牛奶蛋糊。
冷冻甜食已在一般文献中描绘过,例如在Arbuckle和J.Soc.DairyTechnology 1990,43(1),P17-40中。
本发明中的冷冻甜食适合于充入空气或其它无害而又相容的气体,例如氮气、 一氧化二氮或二氧化碳。典型地,膨胀度可在约20%~约200%范围内。冷冻甜食保存温度范围通常在-10℃~-40℃。发明概述:
本发明提供了一种在其表面的至少一部分上具有糖皮层的冷冻甜食,该糖皮层包含了第一的、内层的、含脂肪约25%~约100%的预涂层。本发明提供了一种制备有涂层的冷冻甜食的方法,其中,在冷冻甜食表面的至少一部分上形成预涂层糖皮,再加上进一步的糖皮涂层。在优选为连续的预涂层存在时,降低了在糖皮层上出现龟裂的可能性。在再加涂层前,预涂层要求基本上是固体,预涂层可以与外层具有相同的组成,但是在某些应用上,具有不同组份的层有它的优越性。在整个糖皮层中预涂层的比例是以小为好,尤其在预涂层不连续时。通常预涂层占整糖皮层至少约2%(重量)以达到有效,优选至少约5%。在通常制备方法中,可期望预涂层占总涂层重量约10%。一般地,含量为2%及以上的对不连续层是合适的,而含量至少10%的符合有一个连续层的要求。文献:
制备与冷冻甜食粘接较好的冷冻甜食是美国专利5085877(Mars)和美国专利4985263(Nestec)的主题。测试方法:
以下方法用来评价本发明产品。i)Instron Wedge试验:
用有或没有预涂层的涂覆冰淇淋样品作模拟咬的试验,使用StableMicro Systems TA-XT2组织分析仪,用一个70mm叶片去碰撞一根其长轴垂直于叶片的杆。试验条件是变化的:叶片的速度为0.5mm/sec.或1.0mm/sec,通过杆的运动距离为10mm或15mm。所有的试验都被记录在电视上以提供肉眼比较断裂/龟裂情况。ii)下落试验:
用有或没有预涂层的涂覆冰淇淋样品以最大表面积的面向下,从50cm高处下落到一个坚固表面。比较龟裂的相对程度和涂层分离的量。iii)冰淇淋/涂层粘连情况
不做实际的试验,用物理方法将涂层从冰淇淋上移开。记录移开的轻易程度和在涂层下面的冰淇淋的存在情况。iv)品尝试验:
用有或没有预喷雾(预涂层)的涂覆冰淇淋样品作品尝试验来评价涂层性质。发明详述:
本发明的实例将在这得到说明但本发明并不受限于此。实施例1
一种工业生产的冰淇淋,膨胀度100%,卵形,其体积约120ml(尺寸:100mm×45mm×33mm)。由一小棒支撑,在-30℃的温度下通过喷一连续薄层巧克力(脂肪含量:43%)作为预涂层。喷射设备由下面所述部分组成,一个用于在规定温度下容纳巧克力的搅拌釜、一个变速泵、一个喷嘴和一个通到具有一个止回阀的储蓄器的回流管。在控制压力下的空气被供给喷嘴使液体巧克力成为雾状喷出。
在45℃时,液体巧克力被喷到放在喷雾的手拿冰淇淋上。为了保证其全部涂覆,冰淇淋整个表面应暴露于喷雾中。从喷区取出冰淇淋并保持5~10秒使2~3g重的巧克力硬化。然后把已预涂好的冰淇淋浸入到42℃的巧克力浴中保持2~3秒,允许巧克力滴落。当滴落停止时,已附有22~23g涂层的样品转移到-35℃的温度下,用空气急速冷却5分钟,然后保存在-20℃的环境中,整个涂层厚约2mm。
用至少有两周久的经历相同加工过程但没有预涂层的工业产品作为样品做Instron试验、下落试验和品尝试验。得到的结果表明,涂层裂缝/断裂大大减少并仅限于受力的地方。而且,同对比样品(没有预涂层)相比,从冰淇淋上移去涂层是相当困难的。移去的涂层上附有冰淇淋,其说明了已获得的粘连程度。
六个实施例1样品同11个类似的工业产品样品(对照例),即没有涂层的样品相对比。用10个人的有经验的品尝组。分别比较易碎度和龟裂度,易碎度和龟裂度的评价基准是没有该特征为1分,有明显该特征为10分,即较好的产品分数较低。龟裂度要在产品制成和运输后方可检查。易碎度是对粘接情况的一种表征。
平均的结果列在表1中:

在-30℃时把无棒条形冰淇淋(约:85mm×30mm×20mm)置于一移动的传送带上,用手持喷嘴把含脂肪42%的巧克力喷到裸露表面上。在用工业巧克力浸挂设备浸挂之前使薄层巧克力硬化。已涂好的条形冰淇淋转移到-35℃的吹风冷冻机中保持至少5分钟,然后保存在-20℃的环境中。用至少有两周久的样品做Instron试验和品尝试验。获得与实施例1相似的结果。实施例6:
同实施例5一样,除了用含脂肪46%的糖皮做预涂层和覆盖层。获得与实施例1相似的结果。

Claims (5)

1.一种冷冻甜食,在其表面至少一部分上有糖皮层,该层包括第一的、内层的预涂层。
2.一种根据权利要求1的冷冻甜食,其膨胀度为约20%至约200%。
3.一种根据权利要求1或2的冷冻甜食,其中预涂层是连续的。
4.一种根据以上任何权利要求的冷冻甜食,其中预涂层是整个涂层重的至少大约2%。
5.一种根据权利要求4的冷冻甜食,其中预涂层是整个涂层重的至少大约5%。
