本发明涉及功能饮料技术领域,特别是涉及一种具有提神抗疲劳功能的饮料及其制备方法。
背景技术
疲劳是人体的一个极其复杂的生理状态,一般指身体和精神状态的下降而导致工作能力及工作效率的衰退。过度疲劳会导致神经衰弱,持续性的生理疲劳会使人脑功能紊乱、精神紧张,出现多梦、失眠、头昏脑涨、注意力涣散等多种症状,还可能会导致颈肩腰腿痛、颈椎病、肩周炎等多种疾病,严重影响着人们的正常工作与生活。
功能饮料主要作用为抗疲劳和补充能量。在运动过后或加班熬夜时用功能饮料来提神醒脑、缓解疲劳是较为简单有效的方式,因此目前功能饮料在我国受到越来越多的消费者喜爱,我国逐渐成为功能性饮料的消费大国。但是目前国内市场上的功能饮料大多含有较多的咖啡因,以目前国内市场热销的一种运动饮料为例,其咖啡因含量可达28mg/100ml(换算成93mg/罐),相当于一杯美式咖啡。孕妇、乳母、儿童需要更加严格限制咖啡因的摄入量,同时摄入含咖啡因的饮料极有可能对人的睡眠造成困扰,也会增加心脏的负担。另外,目前国内市场上的功能饮料的平均含糖量超过了11g/100ml,这甚至高于奶茶类饮品的含糖量,含糖量过高会造成糖尿病、心脑血管疾病等一系列健康问题。
发明内容
本发明的目的是提供一种具有提神抗疲劳功能的饮料及其制备方法,以解决上述现有技术存在的问题,本发明的饮料不含咖啡因,并严格控制糖的含量,不仅具有提神抗疲劳的功效,还具有丰富的营养价值。
为实现上述目的,本发明提供了如下方案:
本发明提供了一种具有提神抗疲劳功能的饮料,所述提神抗疲劳的有效成分是阿胶、牡蛎、酸枣仁、牛磺酸和小麦。
进一步地,包括以下重量份的原料:甜味剂2~6份,阿胶0.05~0.15份,果汁0.1~0.4份,牡蛎0.05~0.15份,酸枣仁0.1~0.4份,酸味剂0.2~0.4份,牛磺酸0.005~0.007份,荷叶水提物1~2份,菊苣水提物1~2份,薄荷0.01~0.02份,防腐剂0.01~0.03份,维生素D 0~0.0001份,色素0.03~0.05份,香精0~0.01份,小麦5~12份,水85~90份。
进一步地,所述甜味剂为蜂蜜,所述果汁为山楂汁,所述酸味剂为柠檬酸,所述防腐剂为苯甲酸钠,所述色素为落日红色素,所述香精为玫瑰香精。
本发明还提供了一种具有提神抗疲劳功能的饮料的制备方法,包括如下步骤:
(1)将小麦置于水中煮沸并过滤,得到滤液1;
(2)将牡蛎、阿胶和酸枣仁置于滤液1中煮沸,得到溶液2;
(3)在溶液2中加入甜味剂、酸味剂、牛磺酸、防腐剂进行第一次搅拌,再加入维生素D、荷叶水提物、菊苣水提物进行第二次搅拌,继续加入香精、色素、薄荷进行第三次搅拌,最后加入果汁进行第四次搅拌,即得具有提神抗疲劳功能的饮料。
进一步地,在步骤(1)中,所述煮沸的温度为95~100℃,时间为5~10min。
进一步地,在步骤(2)中,所述牡蛎和阿胶预先研磨成粉末;所述煮沸的温度为95~100℃,时间为15~20min。
进一步地,在步骤(3)中,所述第一次搅拌的时间为3~4min。
进一步地,在步骤(3)中,所述第二次搅拌的时间为1~2min,所述第二次搅拌后将溶液冷却至40~50℃。
进一步地,在步骤(3)中,所述第三次搅拌的时间为3~4min,所述第三次搅拌后将溶液冷却至35~45℃。
进一步地,在步骤(3)中,所述第四次搅拌的时间为1~3min。
本发明公开了以下技术效果:
(1)提神抗疲劳:
本发明通过选用阿胶、牡蛎、酸枣仁、牛磺酸、小麦等一系列组份,并严格控制各原料的添加比例,其中牡蛎、酸枣仁、牛磺酸都具有良好的抗疲劳作用,且彼此相互配合,协同作用,增加了抗疲劳的功效,最终达到了优异的提神抗疲劳效果。
(2)口感及营养价值丰富:
本发明的饮料不含咖啡因,并严格控制糖的含量,含糖量为6g/100ml左右,可有效降低糖的摄入量;且阿胶、酸枣仁、维生素D等物质的加入使饮料获得丰富的营养价值,本发明还加入了果汁、薄荷、香精等原料,使制得的饮料获得丰富的口感。
(3)成本低、工艺简单:
本发明所提供的一种具有提神抗疲劳功能饮料的制备方法,原材料易获取,生产成本较低,同时制作工艺简单,适于工业化生产。

在本发明中,所述果汁优选浓缩原山楂汁,所述浓缩原山楂汁的制备过程如下:将20份新鲜山楂去核,先用100℃开水煮2min,煮软之后用榨汁机榨成浓缩山楂汁,倒入50份纯净水,搅拌均匀,再煮沸1min,得到浓缩原山楂汁。
作为优选,还包括烟酸0~0.0001份,乳化剂0~3份,增稠剂0~3份。
作为优选,所述乳化剂为单硬脂酸甘油酯,所述增稠剂为琼脂。

阿胶具有很多的药理作用和保健作用,阿胶具有耐缺氧、耐寒冷、抗疲劳和增强免疫功能作用;同时,阿胶具有促进血液凝固和抗贫血作用。
山楂使饮料口感酸甜,使饮用者开胃提神。
牡蛎中含有丰富糖原,是组织能源物质的储备形式,是体力脑力活动效率及持久力的物质保证,具有抗疲劳功效和改善心脏及血液循环功能,并能增进肝脏的功能,具有保肝作用。而且糖原可直接为机体所吸收利用,从而减轻胰腺负担,对糖尿病的防治有十分重要的意义。
酸枣仁为鼠李科植物酸枣的种子,酸枣仁有生熟之分,生酸枣仁药理上有提神醒脑的作用。
牛磺酸是动物体内一种结构简单的含硫氨基酸,化学名称为2-氨基乙磺酸,分子式为C2H7NO3S,牛磺酸是人体的必需氨基酸,对胎儿、婴儿神经系统的发育有重要作用,可用作部分食品和饮料的优质添加剂,以增强体质、解除疲劳。
荷叶,莲科莲属多年生草本挺水植物。荷叶提取物具有利尿通便、通肠毒、降脂除油、清暑解热等作用,能明显降低血清中甘油三醇和胆固醇含量,具有调节血脂的保健作用。
菊苣是菊科多年生药食同源的草本植物,具有清热解毒,利尿消肿,健胃等功效,菊苣氨基酸含量丰富,叶丛期9种必需氨基酸含量高于苜蓿草粉,维生素、胡萝卜素、钙含量丰富。菊苣及其提取物能够降低血液中血糖水平,产生的热能低,改善脂质代谢,降低血液中胆固醇和甘油三酯含量,菊苣提取物有明显的降尿酸作用。
薄荷增加饮料清爽口感,短时间内就有提神效果。
维生素D的主要功用是促进小肠粘膜细胞对钙和磷的吸收,可提高血钙、血磷浓度,有利于新骨生成和钙化,还有促进皮肤细胞生长、分化及调节免疫功能的作用。
小麦具有除烦的功效和作用,服用小麦有益气、除热、止汗的功效,常食小麦对于身体出现的心神不宁、脏躁、身体烦躁不安、精神抑郁引起的悲伤欲哭的状态,有良好的调理和舒缓神经抑郁的功效。
烟酸属于维生素B族,参与人体的脂质代谢、氧化过程和无氧分解过程,是人体和动物中不可缺少的营养成分,人体每天对烟酸的需求量为:成人10-20mg,婴儿4-11mg。
乳化剂除了具有典型的表面活性之外,在食品中还具有消泡、增稠、稳定、润滑、保护等作用。单硬脂酸甘油酯是一种多元醇型非离子型表面活性剂,由于它的结构具有一个亲油的长链烷基和两个亲水的羟基,因而具有良好的表面活性,能够起乳化、起泡、分散、消泡、抗淀粉老化等作用,是食品中应用最为广泛的一种乳化剂。
增稠剂可以提高物系黏度,使物系保持均匀稳定的悬浮状态或乳浊状态,或形成凝胶;大多数增稠剂兼具乳化作用。琼脂的特点是具有凝固性、稳定性等物理化学性质,能与一些物质形成络合物,用于食品中能明显改变食品的品质,提高食品的档次。

(2)取0.1份牡蛎和0.1份阿胶,在钵体中研磨成细腻均匀的粉末,将牡蛎、阿胶和0.25份酸枣仁粉末放入6cm*8cm的食品级茶包过滤袋中,扎紧过滤袋(此时应倒扣过滤袋摇晃3次,防止有粉末在过滤包开口处漏出),将过滤袋置于澄清透明的滤液中,于95℃水温中煮沸16min,得到澄清透明的溶液。
(3)在澄清透明的溶液中趁热加入6份蜂蜜、0.3份柠檬酸、0.005份牛磺酸、0.02份苯甲酸钠,搅拌3min;再趁热加入0.00005份维生素D、1份荷叶水提物、1份菊苣水提物,搅拌1min,将溶液冷却至40℃;继续加入0.005份玫瑰香精、0.04份落日红色素、0.01份薄荷,搅拌3min,将溶液冷却至40℃;最后加入0.25份山楂汁,搅拌2min,即得提神抗疲劳功能饮料。
实施例2
(1)将7份小麦置于88份水中,在96℃水温中煮沸8min,过滤,得澄清透明、淡黄色的滤液,弃固体杂质。
(2)取0.12份牡蛎和0.12份阿胶,在钵体中研磨成细腻均匀的粉末,将牡蛎、阿胶和0.3份酸枣仁粉末放入6cm*8cm的食品级茶包过滤袋中,扎紧过滤袋(此时应倒扣过滤袋摇晃4次,防止有粉末在过滤包开口处漏出),将过滤袋置于澄清透明的滤液中,于96℃水温中煮沸18min,得到澄清透明的溶液。
(3)在澄清透明的溶液中趁热加入3份蜂蜜、2份单硬脂酸甘油酯、0.2份柠檬酸、0.006份牛磺酸、0.01份苯甲酸钠,搅拌4min;再趁热加入0.0001份维生素D、1份荷叶水提物、2份菊苣水提物,搅拌2min,将溶液冷却至40℃;继续加入0.01份玫瑰香精、0.05份落日红色素、0.02份薄荷,搅拌3.5min,将溶液冷却至35℃;最后加入0.2份山楂汁,搅拌2min,即得具有提神抗疲劳功能的饮料。
实施例3
(1)将12份小麦置于90份水中,在100℃水温中煮沸6min,过滤,得澄清透明、淡黄色的滤液,弃固体杂质。
(2)取0.15份牡蛎和0.15份阿胶,在钵体中研磨成细腻均匀的粉末,将牡蛎、阿胶和0.4份酸枣仁粉末放入6cm*8cm的食品级茶包过滤袋中,扎紧过滤袋(此时应倒扣过滤袋摇晃4次,防止有粉末在过滤包开口处漏出),将过滤袋置于澄清透明的滤液中,于100℃水温中煮沸15min,得到澄清透明的溶液。
(3)在澄清透明的溶液中趁热加入6份蜂蜜、2份琼脂、0.4份柠檬酸、0.007份牛磺酸、0.03份苯甲酸钠,搅拌3min;再趁热加入0.0001份维生素D、2份荷叶水提物、1份菊苣水提物,搅拌1.5min,将溶液冷却至50℃;继续加入0.01份玫瑰香精、0.04份落日红色素、0.015份薄荷,搅拌3min,将溶液冷却至45℃;最后加入0.4份山楂汁,搅拌3min,即得具有提神抗疲劳功能的饮料。

(1)将11份小麦置于89份水中,在98℃水温中煮沸7min,过滤,得澄清透明、淡黄色的滤液,弃固体杂质。
(2)取0.08份牡蛎和0.08份阿胶,在钵体中研磨成细腻均匀的粉末,将牡蛎、阿胶和0.3份酸枣仁粉末放入6cm*8cm的食品级茶包过滤袋中,扎紧过滤袋(此时应倒扣过滤袋摇晃4次,防止有粉末在过滤包开口处漏出),将过滤袋置于澄清透明的滤液中,于98℃水温中煮沸20min,得到澄清透明的溶液。
(3)在澄清透明的溶液中趁热加入5份蜂蜜、0.25份柠檬酸、0.006份牛磺酸、0.02份苯甲酸钠,搅拌3.5min;再趁热加入0.00005份烟酸和0.00005份维生素D、2份荷叶水提物、2份菊苣水提物,搅拌2min,将溶液冷却至50℃;继续加入0.01份玫瑰香精、0.03份落日红色素、0.015份薄荷,搅拌3.5min,将溶液冷却至45℃;最后加入0.35份山楂汁,搅拌2min,即得具有提神抗疲劳功能的饮料。

(1)将5份小麦置于90份水中,在95℃水温中煮沸8min,过滤,得澄清透明、淡黄色的滤液,弃固体杂质。
(2)取0.1份牡蛎和0.1份阿胶,在钵体中研磨成细腻均匀的粉末,放入6cm*8cm的食品级茶包过滤袋中,扎紧过滤袋(此时应倒扣过滤袋摇晃3次,防止有粉末在过滤包开口处漏出),将过滤袋置于澄清透明的滤液中,于95℃水温中煮沸16min,得到澄清透明的溶液。
(3)在澄清透明的溶液中趁热加入6份蜂蜜、0.3份柠檬酸、0.005份牛磺酸、0.02份苯甲酸钠,搅拌3min;再趁热加入0.00005份烟酸和0.00005份维生素D、1.5份荷叶水提物、1.5份菊苣水提物,搅拌1min,将溶液冷却至40℃;继续加入0.005份玫瑰香精、0.04份落日红色素、0.01份薄荷,搅拌3min,将溶液冷却至40℃;最后加入0.25份山楂汁,搅拌2min,即得提神抗疲劳功能饮料。
对比例3
(1)将1份小麦置于90份水中,在95℃水温中煮沸8min,过滤,得澄清透明、淡黄色的滤液,弃固体杂质。
(2)取0.5份牡蛎和0.5份阿胶,在钵体中研磨成细腻均匀的粉末,将牡蛎、阿胶和0.5份酸枣仁粉末放入6cm*8cm的食品级茶包过滤袋中,扎紧过滤袋(此时应倒扣过滤袋摇晃3次,防止有粉末在过滤包开口处漏出),将过滤袋置于澄清透明的滤液中,于95℃水温中煮沸16min,得到澄清透明的溶液。
(3)在澄清透明的溶液中趁热加入6份蜂蜜、0.3份柠檬酸、0.005份牛磺酸、0.02份苯甲酸钠,搅拌3min;再趁热加入0.00005份烟酸和0.00005份维生素D、2份荷叶水提物、2份菊苣水提物,搅拌1min,将溶液冷却至40℃;继续加入0.005份玫瑰香精、0.04份落日红色素、0.01份薄荷,搅拌3min,将溶液冷却至40℃;最后加入0.25份山楂汁,搅拌2min,即得提神抗疲劳功能饮料。
基于新奇物品探索小鼠抑郁程度检测装置,EET,是一种常见的检测小鼠抑郁程度的行为学测试。实验有三组小鼠,第一组为CMS小鼠即为28天慢性应激抑郁鼠,第二组鼠为在CMS造模的基础上饮用长达2周的饮料(实施例和对比例),第三组为正常对照鼠。将小鼠置于放有新奇玩具的长方体箱体中,记录小鼠在6min内对玩具触碰次数的平均值,触碰探索程度越高,则小鼠的抑郁程度越低,结果如表1所示。

结果分析显示,CMS鼠的探索程度最低,饮用本发明饮料的抑郁小鼠探索程度明显增加,抑郁程度减轻;而对比例制得的饮料对小鼠的抑郁程度影响较小,证明本发明的饮料可有效改善心情。
抗疲劳测试是一种常见的测量小鼠耐疲劳程度的行为学测试,实验有三组小鼠,第一组为CMS小鼠即为28天慢性应激抑郁鼠,第二组鼠为在CMS造模的基础上饮用长达2周的饮料(实施例和对比例),第三组为正常对照鼠。本实验使小鼠在滚动的圆柱体上奔跑,耐力差的小鼠会在很短的时间内从圆柱体上滚落,耐力强的小鼠则会一直在圆柱体上奔跑,最终坚持时间越久的小鼠其抗疲劳的能力越强。设置滚动圆柱体的转速为40r/min,转动时长为5min。结果如表2所示。

结果分析显示:记录各组小鼠奔跑时间的平均值,饮用本发明饮料的小鼠抗疲劳能力最强,对比例制得的饮料对小鼠抗疲劳能力的影响相对较弱,证明本发明产品对机体的抗疲劳能力具有很好的改善作用。
结论:本发明通过选用阿胶、牡蛎、酸枣仁、牛磺酸、维生素D、小麦等一系列组份,并严格控制各原料的添加比例,各组分相互配合,协同作用,最终达到了优异的提神抗疲劳的效果。即本发明饮料是一种不含咖啡因,糖含量相对较低,口感好,营养价值丰富的提神抗疲劳饮料。

Claims (7)
1.一种具有提神抗疲劳功能的饮料,其特征在于,由以下重量份的原料制成:甜味剂2~6份,阿胶0.05~0.15份,果汁0.1~0.4份,牡蛎0.05~0.15份,酸枣仁0.1~0.4份,酸味剂0.2~0.4份,牛磺酸0.005~0.007份,荷叶水提物1~2份,菊苣水提物1~2份,薄荷0.01~0.02份,防腐剂0.01~0.03份,维生素D0~0.0001份,色素0.03~0.05份,香精0~0.01份,小麦5~12份,水85~90份;
所述提神抗疲劳的有效成分是阿胶、牡蛎、酸枣仁、牛磺酸和小麦;
所述具有提神抗疲劳功能的饮料的制备方法包括以下步骤:
(1)将小麦置于水中煮沸并过滤,得到滤液1;
(2)将牡蛎、阿胶和酸枣仁置于滤液1中煮沸,得到溶液2;
(3)在溶液2中加入甜味剂、酸味剂、牛磺酸、防腐剂进行第一次搅拌,再加入维生素D、荷叶水提物、菊苣水提物进行第二次搅拌,继续加入香精、色素、薄荷进行第三次搅拌,最后加入果汁进行第四次搅拌,即得具有提神抗疲劳功能的饮料。
2.根据权利要求1所述的一种具有提神抗疲劳功能的饮料,其特征在于,所述甜味剂为蜂蜜,所述果汁为山楂汁,所述酸味剂为柠檬酸,所述防腐剂为苯甲酸钠,所述色素为落日红色素,所述香精为玫瑰香精。
3.如权利要求1所述的具有提神抗疲劳功能的饮料,其特征在于,
在步骤(1)中,所述煮沸的温度为95~100℃,时间为5~10min;
在步骤(2)中,所述牡蛎和阿胶预先研磨成粉末;所述煮沸的温度为95~100℃,时间为15~20min;
所述第二次搅拌后将溶液冷却至40~50℃;
所述第三次搅拌后将溶液冷却至35~45℃。
4.根据权利要求1所述的一种具有提神抗疲劳功能的饮料,其特征在于,在步骤(3)中,所述第一次搅拌的时间为3~4min。
5.根据权利要求1所述的一种具有提神抗疲劳功能的饮料,其特征在于,在步骤(3)中,所述第二次搅拌的时间为1~2min。
6.根据权利要求1所述的一种具有提神抗疲劳功能的饮料,其特征在于,在步骤(3)中,所述第三次搅拌的时间为3~4min。
7.根据权利要求1所述的一种具有提神抗疲劳功能的饮料,其特征在于,在步骤(3)中,所述第四次搅拌的时间为1~3min。
