Abstract
本发明公开了一种胶原三肽酸樱桃果冻,涉及食品加工技术领域。包含以下重量份的组分:胶原三肽3‑10份、酸樱桃浓缩粉1‑3份、γ‑氨基丁酸0.5‑2.0份、核桃肽粉0.2‑1.0份、赤藓糖醇5‑10份、维生素C 0.1‑0.5份和复配果冻增稠剂0.1‑2.0份。本发明提供的胶原三肽酸樱桃果冻,能够有效改善睡眠质量,延缓皮肤衰老,使人能够拥有睡眠充足情况下的良好肌肤状态。

技术领域
本发明涉及一种食品加工技术领域,尤其是一种胶原三肽酸樱桃果冻及其制备方法。
背景技术
睡眠是人体生理活动所必须的过程,是一种自然的生物节律,人需要睡眠就像需要空气和水一样。但是随着现代社会的快速发展,生活节奏的加快、生存压力的加大和竞争的不断白热化,人类的睡眠正受到严重的威胁,失眠逐渐成为了一种普遍现象,长期的睡眠不足,将会引起皮肤毛细血管瘀滞,循环受阻,使得皮肤的细胞得不到充足的营养,因而影响皮肤的新陈代谢,加速皮肤老化,胶原蛋白大量流失,使肌肤出现色斑、皱纹、黑眼圈等问题。
目前,对于失眠问题,临床上常选择起效快、作用强的西药治疗法,但因其成瘾性大,安全性低等缺点,故使人们逐渐趋向于较为安全的天然食物疗法,而果冻是一种接受度较高的休闲食品,外观晶莹,口感爽滑,深受消费者的喜爱,现今市场上的果冻虽然口味多样,但绝大部分都营养较低,因此具有保健功能的果冻更加适应消费者的多种需求。
发明内容
基于此,本发明的目的在于克服上述现有技术的不足之处而提供一种胶原三肽酸樱桃果冻及其制备方法。该胶原三肽酸樱桃果冻外观晶莹,口感爽滑且能有效改善睡眠质量,延缓皮肤衰老。
为实现上述目的,本发明所采取的技术方案为:一种胶原三肽酸樱桃果冻,包含以下重量份的组分:胶原三肽3-10份、酸樱桃浓缩粉1-3份、γ-氨基丁酸0.5-2.0份、核桃肽粉0.2-1.0份、赤藓糖醇5-10份、维生素C 0.1-0.5份和复配果冻增稠剂0.1-2.0份。
优选地,所述胶原三肽酸樱桃果冻,包含以下重量份的组分:胶原三肽7.5份、酸樱桃浓缩粉2.5份、γ-氨基丁酸1.5份、核桃肽粉0.8份、赤藓糖醇7.5份、维生素C 0.5份和复配果冻增稠剂1.5份。
本发明所述的酸樱桃浓缩粉含有更高含量的天然植物褪黑素及低聚原花青素,褪黑素是松果体以色氨酸为原料合成的生理性睡眠因子;所述的酸樱桃浓缩粉能够维持体内的褪黑素平衡,调节恢复昼夜规律,加深睡眠,提高睡眠质量,而所含低聚原花青素抑制机体色氨酸的降解,增强机体内源睡眠营养物质的合成,不形成依赖性。另外,酸樱桃中含有丰富的酚醛类物质如花色苷等,具有良好的清除自由基、抗氧化的作用,是本发明组分中安全高效的植物性改善睡眠质量,延缓皮肤衰老的加速协同成分。
本发明中所述的γ-氨基丁酸与酸樱桃组分合理配伍,发挥更加有效的改善睡眠质量的效果。γ-氨基丁酸是中枢神经系统中很重要的抑制性神经递质,其作用于神经元GABA受体,导致氯离子通道开放,使氯离子流入神经细胞内,引起神经元细胞膜超极化,抑制神经元激动,从而提高睡眠质量。
本发明中所述的核桃肽与其他组分合理配伍,发挥最佳的改善睡眠质量的效果。核桃肽含有大量的谷氨酸,经胃肠道吸收进入大脑后,在脑组织的局部产生抑制性神经递质γ-氨基丁酸,松弛脑神经和神经的紧张状态,提高睡眠质量。
此外,本发明还组合了具有抗氧化性的维生素C、赤藓糖醇,这些原料在本发明制备方法的协助下得以很好地相互协同作用。添加的维生素C在起到改善产品酸味的同时,还具有抗氧化性的作用,在果冻的生产制备过程中,其可以优先与氧化剂反应,避免了酸樱桃浓缩粉被氧化,从而使得酸樱桃浓缩粉的活性得以保持,进一步提高了产品的稳定性。另外维生素C又是胶原蛋白的合成原料,参与脯氨酸羟化以合成胶原蛋白,促进本发明在人体内的吸收。赤藓糖醇作为天然零热量甜味剂,不产生能量,不引起血糖升高,在睡前食用也不会造成胰腺的负担,也不会增加爱美人士的心理负担,有利于人体健康。
优选地,所述胶原三肽酸樱桃果冻,还包含以下重量份的成分:甜味剂0.005-0.045份、酸味剂0.05-2.0份和山梨酸钾0.01-0.05份。
优选地,所述胶原三肽酸樱桃果冻,还包含以下重量份的成分:甜味剂0.008份、酸味剂1.0份和山梨酸钾0.04份。
优选地,所述的胶原三肽平均分子量为250-500Da。
本发明中所述的胶原三肽与其他组分合理配伍。在进入良好睡眠状态下,与觉醒时相比,人体的许多生理功能都发生了减退,机体属于完全放松状态,基础代谢率下降10-20%。本发明所诉的胶原三肽分子量极小,为短线状结构,由3个氨基酸构成,可直接“点对点”被人体吸收,直接被小肠吸收,经血液输送到肌肤,吸收时间更快,快速合成人体所需的胶原蛋白,从而提高皮肤水光度及弹性,改善皮肤皱纹情况,而且摄取量相同的前提下比起普通胶原蛋白肽的吸收率高出4倍。因此即使在睡眠状态下也能达到良好的吸收性。
优选地,所述的复配果冻增稠剂为卡拉胶、魔芋胶、羧甲基纤维素钠和结冷胶的混合物。
更优选地,所述的复配果冻增稠剂卡拉胶、魔芋胶、羧甲基纤维素钠和结冷胶的质量比为卡拉胶:魔芋胶:羧甲基纤维素钠:结冷胶=(2.5-3.5):(2.5-3.5):1:(0.3-0.8)。
增稠剂是形成果冻的必要原料,果冻的口感很大部分取决于增稠剂形成凝胶的弹性、强度。复配的果冻增稠剂相互配合与协调,能在天热或天冷都能形成可逆凝胶,保证果冻的稳定性,以及果冻的弹性与强度适合度,口感适宜。
优选地,所述的甜味剂为三氯蔗糖、甜菊糖苷、阿斯巴甜、甜蜜素和安赛蜜中的至少一种。
优选地,所述的酸味剂为苹果酸、柠檬酸、柠檬酸钠和柠檬酸钾中的至少一种。
本发明的饮料中还加入了甜味剂及酸味剂,它们与上述成分之间相互协调融合,进一步提升了果冻的口感,使果冻酸甜适中,口感细腻爽滑。
此外,本发明还提供了所述的胶原三肽酸樱桃果冻的制备方法,包括如下步骤:
(1)煮胶;取胶原三肽、赤藓糖醇和复配果冻增稠剂,混合均匀,倒入装有纯化水的煮胶锅,加热熬煮,得到胶溶液;
(2)溶解调配;取酸樱桃浓缩粉、γ-氨基丁酸、核桃肽粉、维生素C、甜味剂、酸味剂和山梨酸钾,用80-85℃纯化水溶解,作为备用液;当步骤(1)中制备得到的胶溶液降至80-85℃时,加入备用液混合均匀,制备得到混合液;
(3)灌装封口;将步骤(2)制备得到的混合液在80-85℃条件下分装封口;
(4)杀菌冷却干燥;将步骤(3)中制备得到的果冻分装进行杀菌、冷却干燥,得到所述胶原三肽酸樱桃果冻。
相对于现有技术,本发明的有益效果为:
(1)本发明组合以上各原料,相互协同,能够最有效改善睡眠质量,延缓皮肤衰老,使人能够拥有睡眠充足情况下的良好肌肤状态;
(2)本发明的饮料中还加入了甜味剂及酸味剂,它们与上述成分之间相互协调融合,进一步提升了果冻的口感,使果冻酸甜适中,口感细腻爽滑;
(3)本发明的果冻生产工艺简单,便于操作,适合放大生产,实现大规模生产化。
具体实施方式
为更好的说明本发明的目的、技术方案和优点,下面将结合具体实施例对本发明作进一步说明。
本发明设置实施例1-9,具体实施例1-5制备胶原三肽酸樱桃果冻过程中的组分选择如表1和表2所示,具体实施例6-9中,复配果冻增稠剂的重量份的比例如表3所示,其余组分与实施例2完全相同:

上述胶原三肽酸樱桃果冻,制备方法包括如下步骤:
(1)煮胶;取胶原三肽、赤藓糖醇和复配果冻增稠剂,混合均匀,倒入装有85℃纯化水的煮胶锅,加热熬煮,制备得到胶溶液;
(2)溶解调配;取酸樱桃浓缩粉、γ-氨基丁酸、核桃肽粉和维生素C;甜味剂、酸味剂和山梨酸钾,用85℃纯化水溶解,作为备用液;当步骤(1)中制备得到的胶溶液降至85℃时,加入备用液混合均匀,制备得到混合液;
(3)灌装封口;将步骤(2)制备得到的混合液在85℃条件下分装封口;
(4)杀菌冷却干燥;将步骤(3)中制备得到的果冻分装进行杀菌、冷却干燥,制备得到胶原三肽酸樱桃果冻。
同时,本发明设置对比例1(对比例1中不含胶原三肽,其余组分与实施例2完全相同)、对比例2(对比例2中不含酸樱桃浓缩粉,其余组分与实施例2完全相同)、对比例3(对比例3中不含γ-氨基丁酸,其余组分与实施例2完全相同)、对比例4(对比例4中不含酸樱桃浓缩粉、γ-氨基丁酸,其余组分与实施例2完全相同)、对比例5(对照例中不含胶原三肽、酸樱桃浓缩粉、γ-氨基丁酸,其余组分与实施例2完全相同)。
试验例1口感测试
随机选取100名员工免费品尝本实施例1-3的产品。其中口感得分为1-10分,1分表示口感最差,10分表示口感最好。大部分尝试者均表示本发明产品酸甜爽口,无异味,富有弹性和嚼劲,口感测试结果如表4所示。

试验例2睡眠及美容作用测试
选择100名25-45岁有睡眠质量问题(包括入睡时间长、夜间易醒或早醒、夜间多梦)等亚健康状况的女性作为志愿者进行果冻的效果测试,100名志愿者均分为10组,分别试食实施例1-5和对比例1-5的果冻,每人每天睡前30min食用1袋果冻(20g),持续1个月,佩戴手环入睡,通过记录入睡用时、睡眠质量评分来评价睡眠状态,通过检测皮肤水分来评价皮肤状态的变化。测试期间,所有志愿者的饮食作息习惯均保持一致。测试结果如表5、表6、表7所示:

效果排序(从优到差):改善显著>改善良好>有改善>无明显改善。
由表5和表6可以看出,本发明提供的胶原三肽酸樱桃果冻,对测试者的平均入睡用时以及睡眠效果均有明显改善,相比于对比例,本发明提供的胶原三肽、γ-氨基丁酸和酸樱桃浓缩粉合理配伍,协同作用,发挥更加有效的改善睡眠质量的效果。
由表7分析可以看出,本发明提供的胶原三肽酸樱桃果冻,对测试者的皮肤含水量有明显的改善,相比于对比例,本发明提供的胶原三肽、γ-氨基丁酸和酸樱桃浓缩粉合理配伍,协同作用,达到延缓皮肤衰老的作用。同时,由实施例2和对比例4对比发现,在睡眠状况得到改善的情况下,补充胶原三肽能够达到更好的改善皮肤状态效果。
由此可见,本发明的胶原三肽、酸樱桃浓缩粉和γ-氨基丁酸三者相互协同,共同促进,达到改善睡眠质量、延缓皮肤衰老的作用。
最后所应当说明的是,以上实施例仅用以说明本发明的技术方案而非对本发明保护范围的限制,尽管参照较佳实施例对本发明作了详细说明,本领域的普通技术人员应当理解,可以对本发明的技术方案进行修改或者等同替换,而不脱离本发明技术方案的实质和范围。

1.一种胶原三肽酸樱桃果冻,其特征在于,包含以下重量份的组分:胶原三肽3-10份、酸樱桃浓缩粉1-3份、γ-氨基丁酸0.5-2.0份、核桃肽粉0.2-1.0份、赤藓糖醇5-10份、维生素C 0.1-0.5份和复配果冻增稠剂0.1-2.0份。
2.如权利要求1所述的胶原三肽酸樱桃果冻,其特征在于,包含以下重量份的组分:胶原三肽7.5份、酸樱桃浓缩粉2.5份、γ-氨基丁酸1.5份、核桃肽粉0.8份、赤藓糖醇7.5份、维生素C 0.5份和复配果冻增稠剂1.5份。
3.如权利要求2所述的胶原三肽酸樱桃果冻,其特征在于,还包含以下重量份的成分:甜味剂0.005-0.045份、酸味剂0.05-2.0份和山梨酸钾0.01-0.05份。
4.如权利要求3所述的胶原三肽酸樱桃果冻,其特征在于,还包含以下重量份的成分:甜味剂0.008份、酸味剂1.0份和山梨酸钾0.04份。
5.如权利要求3或4所述的胶原三肽酸樱桃果冻,其特征在于,所述的甜味剂为三氯蔗糖、甜菊糖苷、阿斯巴甜、甜蜜素和安赛蜜中的至少一种。
6.如权利要求3或4所述的胶原三肽酸樱桃果冻,其特征在于,所述的酸味剂为苹果酸、柠檬酸、柠檬酸钠和柠檬酸钾中的至少一种。
7.如权利要求1-4任一项所述的胶原三肽酸樱桃果冻,其特征在于,所述的胶原三肽平均分子量为250-500Da。
8.如权利要求1-4任一项所述的胶原三肽酸樱桃果冻,其特征在于,所述的复配果冻增稠剂为卡拉胶、魔芋胶、羧甲基纤维素钠和结冷胶的混合物。
9.如权利要求8所述的胶原三肽酸樱桃果冻,其特征在于,所述的复配果冻增稠剂卡拉胶、魔芋胶、羧甲基纤维素钠、结冷胶的质量比为卡拉胶:魔芋胶:羧甲基纤维素钠:结冷胶=(2.5-3.5):(2.5-3.5):1:(0.3-0.8)。
10.一种如权利要求1-9任一项所述的胶原三肽酸樱桃果冻的制备方法,其特征在于,包括如下步骤:
(1)煮胶;取胶原三肽、赤藓糖醇和复配果冻增稠剂,混合均匀,倒入装有纯化水的煮胶锅,加热熬煮,得到胶溶液;
(2)溶解调配;取酸樱桃浓缩粉、γ-氨基丁酸、核桃肽粉、维生素C、甜味剂、酸味剂和山梨酸钾,用80-85℃纯化水溶解,作为备用液;当步骤(1)中制备得到的胶溶液降至80-85℃时,加入备用液混合均匀,制备得到混合液;
(3)灌装封口;将步骤(2)制备得到的混合液在80-85℃条件下分装封口;
