本发明提供了一种具有美容养颜作用的玫瑰花胶原蛋白肽饮料的制备方法,该产品配料的组分和各组分的质量份为重瓣红玫瑰花提取液76~90份、玫瑰茄提取液4~8份、胶原蛋白肽0.5~4.5份、浓缩果汁1~3份、玫瑰细胞液1~2份、抗性糊精1~2份、L‑阿拉伯糖1~2份、稳定剂0.6~1.2份、海藻糖0.5~1.0份、柠檬酸钠0.05~0.15份、柠檬酸0.1~0.2、三氯蔗糖0.002~0.004份、抗氧化剂0.2~0.4份,其加工工艺步骤包括提取液制备、配料、混合、过滤、灌装、杀菌和冷却。本发明配方科学、制备方法简单,制备的产品不仅含有胶原蛋白肽、膳食纤维和其它多种营养素,而且具有酸甜爽口、玫瑰花香味浓郁、色泽诱人、稳定性高、保质期长的特点,是一种低糖、低热量的美容养颜健康饮品。

技术领域
本发明涉及食品加工技术领域,具体涉及一种具有美容养颜作用的玫瑰花胶原蛋白肽饮料的制备方法。
背景技术
胶原蛋白是动物体内含量最高的蛋白质,约占总蛋白质的25%~30%,广泛分布于动物皮肤、骨骼、软骨、肌腱及血管中,是由甘氨酸、丙氨酸、脯氨酸等16种氨基酸组成的具有三股螺旋结构的天然蛋白质。已有研究表明,胶原蛋白具有美容养颜、延缓衰老、增强免疫等功能。然而,随着年龄增长,人体内的胶原蛋白含量下降,通过饮食补充胶原蛋白是最佳的选择。因此,开发具有美容养颜功效的胶原蛋白产品是当前的研究热点。
重瓣红玫瑰花是一种普通食物资源,含有多种必需氨基酸、维生素和矿物质等营养成分以及黄酮、多酚、多糖等活性物质,具有抗氧化、补气血、美容养颜等作用。目前,玫瑰花主要用于提取精油,其资源还未得到充分利用。
玫瑰茄又称洛神花,含有维生素C、钙、钾、镁、有机酸、花青素、多酚等营养与活性成分,具有清热利尿、增进食欲、抗氧化、降血压、促进酒精代谢等作用,可用于加工各种色泽诱人的饮料。
目前,市场上的胶原蛋白产品多为保健食品,如胶原蛋白粉、胶原蛋白口服液等,此类产品通常带有胶原蛋白特有的腥味及后苦味。申请号为201611197087.1的专利提供了一种玫瑰胶原蛋白饮料的制备方法,该饮品各组分质量份为胶原蛋白肽5~20份、重瓣红玫瑰花提取液1~5份、其余为水,还可添加柠檬酸、针叶樱桃粉、桑葚浓缩清汁、紫薯浓缩清汁、柠檬酸钠、维生素C和糖。该发明玫瑰胶原蛋白饮料的胶原蛋白肽含量高、易于消化吸收,添加的重瓣红玫瑰花提取液可在一定程度上改善产其风味。由于重瓣红玫瑰花提取液中的酚类物质易与大分子的胶原蛋白肽形成沉淀,但该产品中未添加稳定剂,因此产品稳定性较差,存放过程中易出现沉淀。此外,该产品中还添加了白砂糖,故它不适于肥胖者和糖尿病患者饮用。
发明内容
本发明的目的在于克服现有技术的不足,提供一种具有美容养颜作用的玫瑰花胶原蛋白肽饮料的制备方法。本发明运用科学的配方和相对简单的生产工艺解决现有胶原蛋白肽饮料存在的腥味重、后苦味浓、特色风味不突出、稳定性差的问题,制备的产品具有酸甜爽口、玫瑰花香味浓郁、色泽诱人、稳定性高、保质期长的特点。
本发明提供的具有美容养颜作用的玫瑰花胶原蛋白肽饮料,该饮料配料的组分和各组分的质量份为重瓣红玫瑰花提取液76~90份、玫瑰茄提取液4~8份、胶原蛋白肽0.5~4.5份、浓缩果汁1~3份、玫瑰细胞液1~2份、抗性糊精1~2份、L-阿拉伯糖1~2份、稳定剂0.6~1.2份、海藻糖0.5~1.0份、柠檬酸钠0.05~0.15份、柠檬酸0.1~0.2、三氯蔗糖0.002~0.004份、抗氧化剂0.2~0.4份。
其加工工艺步骤包括提取液制备、配料、混合、过滤、灌装、杀菌和冷却。
上述技术方案中,所述提取液制备是分别将重瓣红玫瑰花、玫瑰茄放入其质量30~40倍的水中浸泡20~30 min,然后将其加热至85~95℃,于该温度下保持20~40 min,过滤后得到重瓣红玫瑰花提取液和玫瑰茄提取液。
上述技术方案中,所述配料包括糖料的制备和酸料的制备。
上述技术方案中,所述混合是在搅拌下将酸料缓慢加入糖料中,再缓慢加入玫瑰细胞液,混匀后定容,得到混合料液。
上述技术方案中,杀菌是将灌装后的饮料于85~90℃下保持15~20 min。
上述技术方案中,所述糖料的制备是将稳定剂加入温度为80~85℃的重瓣红玫瑰花提取液中,充分搅拌溶解,然后依次加入抗性糊精、L-阿拉伯糖、三氯蔗糖、海藻糖、柠檬酸钠、胶原蛋白肽,混合均匀;所述酸料的制备是依次将柠檬酸、抗氧化剂、浓缩果汁加入玫瑰茄提取液中,充分搅拌均匀。
上述技术方案中,所述稳定剂是由质量比为1.5:1~2:1的羧甲基纤维素和果胶构成。
上述技术方案中,所述抗氧化剂是由质量比为8:1~10:1为D-异抗坏血酸钠和抗坏血酸构成。
上述技术方案中,所述浓缩果汁为浓缩苹果汁、浓缩水蜜桃汁、浓缩梨汁、浓缩蓝莓汁、浓缩桑葚汁、浓缩百香果汁中的至少一种。
与现有技术相比,本发明具有以下有益效果:
1、本发明提供了一种玫瑰风味突出、口感上佳的具有美容养颜作用的玫瑰花胶原蛋白肽饮料,该产品是将胶原蛋白肽与重瓣红玫瑰花提取液、玫瑰茄提取液、抗性糊精、稳定剂、L-阿拉伯糖、三氯蔗糖、海藻糖、玫瑰细胞液、浓缩果汁、柠檬酸钠、柠檬酸和抗氧化剂复配而成。胶原蛋白肽与其它配料的复配使用可以赋予产品多种营养与风味成分,提高其保健作用,消除胶原蛋白肽特有的腥味及后苦味,改善产品的色泽、香气和滋味,提高其贮藏稳定性。
重瓣红玫瑰花提取液和玫瑰细胞液的使用不仅能赋予产品浓郁的玫瑰风味,减弱胶原蛋白特有的腥味及后苦味,而且还能丰富产品的活性成分;抗性糊精是水溶性的膳食纤维,其适量添加可同时提高产品的膳食纤维含量和稳定性;选用具有较强耐酸性的羧甲基纤维素和果胶作为稳定剂以提高产品粘度,形成稳定的胶体分散体系,防止胶原蛋白肽形成絮状沉淀;L-阿拉伯糖是一种新食品原料,具有较好的耐酸性和耐热性,可抑制人体肠道内蔗糖酶的活性及体内脂肪的合成,从而降低血糖和血脂水平;三氯蔗糖则是一种无能量、高甜度的甜味剂,其与L-阿拉伯糖的联合使用既可减弱胶原蛋白肽特有的后苦味,还能赋予产品低糖、低热量的特点,使其适合于肥胖者和糖尿病患者饮用;海藻糖作为矫味剂,可与玫瑰细胞液及浓缩果汁协同作用消除胶原蛋白肽特有的腥味与后苦味,丰富产品滋味;以柠檬酸钠、柠檬酸作为酸度调节剂,与甜味剂一起赋予饮料爽口的酸甜味,同时还可降低杀菌温度,有利于产品营养与风味物质的保留;抗氧化剂为D-异抗坏血酸钠和抗坏血酸,可防止色素氧化,维持产品色泽的稳定,同时,抗坏血酸还可参与体内胶原蛋白的合成,维护皮肤和血管的健康,增强产品的美容养颜作用。
2、本发明中采用分步溶解,先以重瓣红玫瑰花提取液溶解稳定剂、抗性糊精、L-阿拉伯糖、三氯蔗糖、海藻糖、柠檬酸钠及胶原蛋白肽,再以玫瑰茄提取液溶解柠檬酸、抗氧化剂及浓缩果汁,然后将酸料缓慢加入糖料中,该方法可避免混合溶料时出现局部酸浓度过高而导致胶原蛋白肽的沉淀。
具体实施方式
以下通过实例对本发明所述具有美容养颜作用的玫瑰花胶原蛋白肽饮料制作方法作进一步说明。
实施例1
本实施例中,所述具有美容养颜作用的玫瑰花胶原蛋白肽饮料配料的组分和各组分的质量份为重瓣红玫瑰花提取液90 kg、玫瑰茄提取液4 kg、胶原蛋白肽0.5 kg、浓缩百香果汁1 kg、玫瑰细胞液1 kg、抗性糊精1 kg、L-阿拉伯糖1 kg、羧甲基纤维素0.36 kg、果胶0.24 kg、海藻糖0.5 kg、柠檬酸钠0.05 kg、柠檬酸0.1 kg、三氯蔗糖0.002 kg、D-异抗坏血酸钠0.2 kg、抗坏血酸0.02 kg,其制备方法如下:
(1)提取液制备
称取2.5 kg重瓣红玫瑰花放入100 kg(40倍)饮用水中浸泡20 min,然后将其加热至95℃,于该温度下保持20 min,过滤后得到重瓣红玫瑰花提取液;
称取0.3 kg玫瑰茄放入9 kg(30倍)饮用水中浸泡30 min,然后将其加热至85℃,于该温度下保持40 min,过滤后得到玫瑰茄提取液;
(2)配料
将0.36 kg羧甲基纤维素和0.24 kg果胶放入90 kg加热至85℃的重瓣红玫瑰花提取液中,充分搅拌溶解,然后依次加入1 kg抗性糊精、1 kg L-阿拉伯糖、0.002 kg三氯蔗糖、0.5kg海藻糖、0.05 kg柠檬酸钠、0.5 kg胶原蛋白肽,得到糖料;
依次将0.1 kg柠檬酸、0.2 kg D-异抗坏血酸钠、0.02 kg抗坏血酸、1 kg浓缩百香果汁加入4 kg玫瑰茄提取液中,充分搅拌溶解,得到酸料;
(3)混合
将酸料缓慢加入至糖料中,充分搅拌后向其中滴加1 kg玫瑰细胞液,混匀后定容至100kg,得到混合料液;
(4)杀菌
将灌装后的饮料于85℃下保持20 min,冷却后得到具有美容养颜作用的玫瑰花胶原蛋白肽饮料。
实施例2
本实施例中,所述具有美容养颜作用的玫瑰花胶原蛋白肽饮料配料的组分和各组分的质量份为重瓣红玫瑰花提取液83 kg、玫瑰茄提取液6 kg、胶原蛋白肽2.5 kg、浓缩水蜜桃汁2 kg、玫瑰细胞液1.5 kg、抗性糊精1.5 kg、L-阿拉伯糖1.5 kg、羧甲基纤维素0.57 kg、果胶0.33 kg、海藻糖0.75 kg、柠檬酸钠0.1 kg、柠檬酸0.15 kg、三氯蔗糖0.003 kg、D-异抗坏血酸钠0.27 kg、抗坏血酸0.03 kg,其制备方法如下:
(1)提取液制备
称取2.5 kg重瓣红玫瑰花放入87.5 kg(35倍)饮用水中浸泡25 min,然后将其加热至90℃,于该温度下保持30 min,过滤后得到重瓣红玫瑰花提取液;
称取0.3 kg玫瑰茄放入10.5 kg(35倍)饮用水中浸泡25 min,然后将其加热至90℃,于该温度下保持30 min,过滤后得到玫瑰茄提取液;
(2)配料
将0.57 kg羧甲基纤维素和0.33 kg果胶放入83 kg加热至82℃的重瓣红玫瑰花提取液中,充分搅拌溶解,然后依次加入1.5 kg抗性糊精、1.5 kg L-阿拉伯糖、0.003 kg三氯蔗糖、0.75 kg海藻糖、0.1 kg柠檬酸钠、2.5 kg胶原蛋白肽,得到糖料;
依次将0.15 kg柠檬酸、0.27 kg D-异抗坏血酸钠、0.03 kg抗坏血酸、2 kg浓缩水蜜桃汁加入6 kg玫瑰茄提取液中,充分搅拌溶解,得到酸料。
(3)混合
将酸料缓慢加入至糖料中,充分搅拌后向其中滴加1.5 kg玫瑰细胞液,混匀后定容至100 kg,得到混合料液。
(4)杀菌
将灌装后的饮料于87℃下保持18 min,冷却后得到具有美容养颜作用的玫瑰花胶原蛋白肽饮料。
实施例3
本实施例中,所述具有美容养颜作用的玫瑰花胶原蛋白肽饮料配料的组分和各组分的质量份为重瓣红玫瑰花提取液76 kg、玫瑰茄提取液8 kg、胶原蛋白肽4.5 kg、浓缩梨汁1kg、浓缩蓝莓汁2 kg、玫瑰细胞液2 kg、抗性糊精2 kg、L-阿拉伯糖2 kg、羧甲基纤维素0.8kg、果胶0.4 kg、海藻糖1 kg、柠檬酸钠0.15 kg、柠檬酸0.2 kg、三氯蔗糖0.004 kg、D-异抗坏血酸钠0.32 kg、抗坏血酸0.04 kg,其制备方法如下:
(1)提取液制备
称取3 kg重瓣红玫瑰花放入90 kg(30倍)饮用水中浸泡30 min,然后将其加热至85℃,于该温度下保持40 min,过滤后得到重瓣红玫瑰花提取液;
称取0.3 kg玫瑰茄放入12 kg(40倍)饮用水中浸泡20 min,然后将其加热至95℃,于该温度下保持20 min,过滤后得到玫瑰茄提取液;
(2)配料
将0.8 kg羧甲基纤维素和0.4 kg果胶放入76 kg加热至80℃的重瓣红玫瑰花提取液中,充分搅拌溶解,然后依次加入2 kg抗性糊精、2 kg L-阿拉伯糖、0.004 kg三氯蔗糖、1kg海藻糖、0.15 kg柠檬酸钠、4.5 kg胶原蛋白肽,得到糖料;
依次将0.2 kg柠檬酸、0.32 kg D-异抗坏血酸钠、0.04 kg抗坏血酸、1 kg浓缩梨汁、2kg浓缩蓝莓汁加入8 kg玫瑰茄提取液中,充分搅拌溶解,得到酸料;
(3)混合
将酸料缓慢加入至糖料中,充分搅拌后向其中滴加2 kg玫瑰细胞液,混匀后定容至100kg,得到混合料液;
(4)杀菌
将灌装后的饮料于90℃下保持15 min,冷却后得到具有美容养颜作用的玫瑰花胶原蛋白肽饮料。

1.一种具有美容养颜作用的玫瑰花胶原蛋白肽饮料,其特征在于该产品配料的组分和各组分的质量份为重瓣红玫瑰花提取液76~90份、玫瑰茄提取液4~8份、胶原蛋白肽0.5~4.5份、浓缩果汁1~3份、玫瑰细胞液1~2份、抗性糊精1~2份、L-阿拉伯糖1~2份、稳定剂0.6~1.2份、海藻糖0.5~1.0份、柠檬酸钠0.05~0.15份、柠檬酸0.1~0.2、三氯蔗糖0.002~0.004份、抗氧化剂0.2~0.4份。
2.根据权利要求1所述具有美容养颜作用的玫瑰花胶原蛋白肽饮料,其特征在于该饮料的加工工艺步骤包括提取液制备、配料、混合、过滤、灌装、杀菌和冷却。
3.根据权利要求2所述具有美容养颜作用的玫瑰花胶原蛋白肽饮料,其特征在于所述提取液制备是分别将重瓣红玫瑰花、玫瑰茄放入其质量30~40倍的水中浸泡20~30 min,然后将其加热至85~95℃,于该温度下保持20~40 min,过滤后得到重瓣红玫瑰花提取液和玫瑰茄提取液。

7.根据权利要求4和5所述具有美容养颜作用的玫瑰花胶原蛋白肽饮料,其特征在于所述糖料的制备是将稳定剂加入温度为80~85℃的重瓣红玫瑰花提取液中充分搅拌溶解,然后依次加入抗性糊精、L-阿拉伯糖、三氯蔗糖、海藻糖、柠檬酸钠、胶原蛋白肽,混合均匀;所述酸料的制备是依次将柠檬酸、抗氧化剂、浓缩果汁加入玫瑰茄提取液中,充分搅拌均匀。
8.根据权利要求1和7所述具有美容养颜作用的玫瑰花胶原蛋白肽饮料,其特征在于所述稳定剂是由质量比为1.5:1~2:1的羧甲基纤维素和果胶构成。
9.根据权利要求1和7所述具有美容养颜作用的玫瑰花胶原蛋白肽饮料,其特征在于所述抗氧化剂是由质量比为8:1~10:1为D-异抗坏血酸钠和抗坏血酸构成。
