Abstract
本发明涉及一种益生菌配方乳粉以及制备方法,包括有乳粉原料、乳粉辅料以及营养强化剂,其特征在于:营养强化剂包括有至少一种或多种益生菌以及牛磺酸、维生素A、维生素D、维生素E、维生素C、叶酸、碳酸钙、硫酸亚铁、硫酸锌中的一种或多种,百分比为各组分占乳粉的质量百分比,与现有技术相比,本发明的优点在于一、物料经过嗜热链球菌和保加利亚乳杆菌的发酵,产酸、产香,使产品具有独特的滋味和气味,更具消费者喜爱;二、干混进去的动物双歧杆菌Bb‑12、乳双歧杆菌、嗜酸乳杆菌、植物乳杆菌、两栖双歧杆菌、鼠李糖乳杆菌、干酪乳杆菌、婴儿双歧杆菌具有以下功能。
Description
技术领域
本发明属于配方乳粉技术领域,具体涉及一种益生菌配方乳粉及其制造方法。
背景技术
益生菌配方乳粉是以生牛乳、生羊乳、全脂乳粉、全脂羊乳粉中的一种或几种为主要原料,以脱盐乳清粉、乳清蛋白粉、低聚异麦芽糖、低聚果糖等为辅料,加入适量的维生素和矿物质及其他营养物质,在包装前干混进乳双歧杆菌或动物双歧杆菌而制成的粉状食品。
传统的益生菌乳粉除了强化部分维生素和矿物质外,干混添加一定量的乳双歧杆菌或动物双歧杆菌,普遍存在两大缺陷:一、由于该产品没有经过乳酸菌的前期发酵,所以制成的产品在食用时口感单调、香味不足;二、菌种单一,无法满足不同个体人群肠道微环境的变化。鉴于以上问题,有必要设计一种新型的益生菌乳粉,优化菌种品种,科学调整菌种比例,合理设计添加时间,提高产品感官水平,满足不同个体人群肠道微环境,有助身体健康。
发明内容
本发明所要解决的一个技术问题是针对上述现有技术现状而提供一种更能适用于不同个体人群肠道微环境的益生菌配方乳粉。
本发明所要解决的另一个技术问题是针对上述现有技术现状而提供一种制备上述益生菌配方乳粉的制备方法。
本发明解决上述技术问题所采用的技术方案为:该益生菌配方乳粉,包括有乳粉原料13.25%~25.97%、乳粉辅料18.36%~40.38%以及营养强化剂15.40%~28.55%,其特征在于:所述营养强化剂包括有至少一种或多种益生菌以及牛磺酸、维生素A、维生素D、维生素E、维生素C、叶酸、碳酸钙、硫酸亚铁、硫酸锌中的一种或多种,所述的百分比为各组分占乳粉的质量百分比。
进一步地,所述益生菌包括嗜热链球菌、保加利亚乳杆菌、动物双歧杆菌Bb-12、乳双歧杆菌、嗜酸乳杆菌、植物乳杆菌、两栖双歧杆菌、鼠李糖乳杆菌、干酪乳杆菌、婴儿双歧杆菌、青春双歧杆菌中的一种或多种。
进一步地,所述嗜热链球菌的添加量为2.5%~3%,所述保加利亚乳杆菌的添加量为 2.5%~3%,所述动物双歧杆菌Bb-12的添加量为3.1%~5%,所述乳双歧杆菌的添加量为 4.125%~6%,所述嗜酸乳杆菌的添加量为3.125%~6%,所述植物乳杆菌的添加量为 3.125%~5%,所述两栖双歧杆菌的添加量为3.225%~7%,所述鼠李糖乳杆菌的添加量为 3.125%~8%,所述干酪乳杆菌的添加量为3.625%~9%,所述婴儿双歧杆菌的添加量为 3.125%~5%,所述青春双歧杆菌的添加量为3.125%~5%,所述的百分比为各组分占益生菌的质量百分比。
进一步地,所述乳粉原料包括生牛乳、生羊乳、全脂乳粉、全脂羊乳粉中的一种或几种。
进一步地,所述乳粉辅料包括脱盐乳清粉为0.00~30.89%、乳清蛋白粉4.48~12.29%、精炼植物油2.09~4.43%、低聚异麦芽糖0.41~0.80%、低聚果糖0.3~0.8%、菊粉0.15~0.30%,所述的百分比为各组分占乳粉辅料的质量百分比。
本发明为解决第二个技术问题而提供一种益生菌配方乳粉的制备方法,其特征在于:包括有如下步骤:
(1)原辅料检验,对采购的所述乳粉原料、乳粉辅料按照接收标准进行检验,其中益生菌用专用冷柜冷冻保存,确保其活性;
(2)配料,取上述比例的将生牛乳、生羊乳、全脂乳粉、全脂羊乳粉中的一种或几种,同脱盐乳清粉、乳清蛋白粉、精炼植物油、低聚异麦芽糖、低聚果糖、菊粉、维生素、矿物质用纯净水溶化,均质;
(3)发酵,均质以后的物料加入嗜热链球菌和保加利亚乳杆菌,在42℃发酵40分钟左右,检测滴定酸度为45°T时,进行杀菌;
(4)浓缩干燥,发酵好的物料通过双效浓缩蒸发器,进行杀菌、浓缩,再由干燥塔蒸发干燥,形成粉状产品得物料A;
(5)干混,将步骤(4)中获得的粉状物料A经冷却、振筛后与按照1∶0.05~0.1比例的动物双歧杆菌Bb-12、乳双歧杆菌、嗜酸乳杆菌、植物乳杆菌、两栖双歧杆菌、鼠李糖乳杆菌、干酪乳杆菌、婴儿双歧杆菌混合均匀,得物料B;
(6)包装,将混好的物料B充填、封罐、打印、装箱、入库。
与现有技术相比,本发明的优点在于一、物料经过嗜热链球菌和保加利亚乳杆菌的发酵,产酸、产香,使产品具有独特的滋味和气味,更具消费者喜爱;二、干混进去的动物双歧杆菌Bb-12、乳双歧杆菌、嗜酸乳杆菌、植物乳杆菌、两栖双歧杆菌、鼠李糖乳杆菌、干酪乳杆菌、婴儿双歧杆菌具有以下功能:1、平衡肠道菌群及恢复正常的肠道 PH值,缓解腹泻症状;2、可帮助人体分解乳糖,缓解乳糖不耐症;3、长期给体内补充活性益生菌,能够帮助修复生殖系统微环境,预防生殖系统感染;4、益生菌可以通过刺激肠道内的免疫机能,将过低或过高的免疫活性调节至正常状态,增强人体免疫力;5、益生菌可以抑制有害菌在肠道内的繁殖,减少毒素,促进肠道蠕动,从而提高肠道机能,改善排便状况,促进肠道消化系统健康。

具体实施方式
以下结合附图实施例对本发明作进一步详细描述。
实施例1
本实施例的益生菌配方乳粉包括乳粉原料、乳粉辅料以及营养强化剂,本实施例中优选活菌数大于等于1×109cfu/100g乳粉。
如图1所示,益生菌配方乳粉的具体制造方法下:
(1)原辅料检验,对采购的原辅材料按照原辅材料接收标准进行检验,特别是抗生素的检测,不合格的原辅材料不得使用。益生菌用专用冷柜冷冻保存,确保其活性。
(2)配料,将4200kg生牛乳(或生羊乳)或475kg全脂乳粉(或全脂羊乳粉),同250kg的脱盐乳清粉、75kg的乳清蛋白粉、50kg的精炼植物油、50kg的低聚异麦芽糖、25kg 的低聚果糖、70kg的菊粉以及牛磺酸、维生素A、维生素D、维生素E、维生素C、叶酸、碳酸钙、硫酸亚铁、硫酸锌,按0.3∶1的比例用纯净水溶化,均质。
(3)发酵,均质以后的物料加入一定量的嗜热链球菌和保加利亚乳杆菌,在42℃发酵 40分钟左右,检测滴定酸度为45°T时,进行杀菌。
(4)浓缩干燥,杀菌以后的物料通过双效浓缩蒸发器,进行杀菌、浓缩,再由干燥塔蒸发干燥,形成粉状产品。
(5)干混,从干燥塔出来的粉状物料经冷却、振筛后与一定量的动物双歧杆菌Bb-12、乳双歧杆菌、嗜酸乳杆菌、植物乳杆菌、两栖双歧杆菌、鼠李糖乳杆菌、干酪乳杆菌、婴儿双歧杆菌混合均匀。
(6)包装,混好的物料,经自动包装机(或灌装机)充填,自动封口机封罐,激光打码机打印生产日期(或批号),装箱,入库。
实施例2
其余与实施例1相同,不同之处在于,发酵益生菌的添加总量为1.5×109cfu/100g,干混益生菌的添加总量为1×108cfu/100g。
实施例3
其余与实施例1相同,不同之处在于,用青春双歧杆菌替换动物双歧杆菌Bb-12、乳双歧杆菌、嗜酸乳杆菌、植物乳杆菌、两栖双歧杆菌、鼠李糖乳杆菌、干酪乳杆菌、婴儿双歧杆菌中的任意一种。
综上,本发明公开了一种益生菌配方乳粉,该配方乳粉中添加了十种活性益生菌,采用前期发酵技术,使产品具有独特的滋味和气味,更具消费者喜爱;干混进去的益生菌,能缓解腹泻症状;缓解乳糖不耐症;预防生殖系统感染;增强人体免疫力;促进肠道消化系统健康。有助人体健康。
Claims (6)
1.一种益生菌配方乳粉,包括有乳粉原料13.25%~25.97%、乳粉辅料18.36%~40.38%以及营养强化剂15.40%~28.55%,其特征在于:所述营养强化剂包括有至少一种或多种益生菌以及牛磺酸、维生素A、维生素D、维生素E、维生素C、叶酸、碳酸钙、硫酸亚铁、硫酸锌中的一种或多种,所述的百分比为各组分占乳粉的质量百分比。
2.根据权利要求1所述的益生菌配方乳粉,其特征在于:所述益生菌包括嗜热链球菌、保加利亚乳杆菌、动物双歧杆菌Bb-12、乳双歧杆菌、嗜酸乳杆菌、植物乳杆菌、两栖双歧杆菌、鼠李糖乳杆菌、干酪乳杆菌、婴儿双歧杆菌、青春双歧杆菌中的一种或多种。
3.根据权利要求1所述的益生菌配方乳粉,其特征在于:所述嗜热链球菌的添加量为2.5%~3%,所述保加利亚乳杆菌的添加量为2.5%~3%,所述动物双歧杆菌Bb-12的添加量为3.1%~5%,所述乳双歧杆菌的添加量为4.125%~6%,所述嗜酸乳杆菌的添加量为3.125%~6%,所述植物乳杆菌的添加量为3.125%~5%,所述两栖双歧杆菌的添加量为3.225%~7%,所述鼠李糖乳杆菌的添加量为3.125%~8%,所述干酪乳杆菌的添加量为3.625%~9%,所述婴儿双歧杆菌的添加量为3.125%~5%,所述青春双歧杆菌的添加量为3.125%~5%,所述的百分比为各组分占益生菌的质量百分比。
4.根据权利要求1所述的益生菌配方乳粉,其特征在于:所述乳粉原料包括生牛乳、生羊乳、全脂乳粉、全脂羊乳粉中的一种或几种。
5.根据权利要求1所述的益生菌配方乳粉,其特征在于:所述乳粉辅料包括脱盐乳清粉为0.00~30.89%、乳清蛋白粉4.48~12.29%、精炼植物油2.09~4.43%、低聚异麦芽糖0.41~0.80%、低聚果糖0.3~0.8%、菊粉0.15~0.30%,所述的百分比为各组分占乳粉辅料的质量百分比。
6.制备根据权利要求1~5任意一项权利要求所述的益生菌配方乳粉的制备方法,其特征在于:包括有如下步骤:
(1)原辅料检验,对采购的所述乳粉原料、乳粉辅料按照接收标准进行检验,其中益生菌用专用冷柜冷冻保存,确保其活性;
(2)配料,取上述比例的将生牛乳、生羊乳、全脂乳粉、全脂羊乳粉中的一种或几种,同脱盐乳清粉、乳清蛋白粉、精炼植物油、低聚异麦芽糖、低聚果糖、菊粉、维生素、矿物质,用纯净水溶化,均质;
(3)发酵,均质以后的物料加入嗜热链球菌和保加利亚乳杆菌,在42℃发酵40分钟左右,检测滴定酸度为45°T时,进行杀菌;
