本发明涉及菠萝蜜种仁加工技术领域,特别涉及一种具有催乳作用的菠萝蜜种仁椰球及其制作方法。
背景技术
菠萝蜜(Artocarpus heterophyllus)是桑科、菠萝蜜属的常绿乔木,又称木菠萝,树菠萝,是世界著名热带果树。缅甸、泰国等热带国家均有栽培。我们国内广东、广西、海南、云南、福建和四川南部以及中国台湾省也有栽培。其形状为椭圆形至圆形,或不规则形状,长30-100cm,直径25-50cm,颜色为浅黄色,表面有坚硬的六角形瘤状凸体,其果实平均单果鲜重为8.5kg、单苞重26.2g、苞肉厚0.28cm,全果苞数160个、全果种子重1.01kg、可溶性固形物19.2%、还原糖12.12%、维生素C 0.0387mg/100ml、总酸(以柠檬酸计)0.01733%,可食部分占全果的比例(苞肉/全果)40.7%、(苞肉+种子/全果)53.3%果肉内部包含种仁,种仁为椭圆形,长约3cm,还有层种皮包裹,据相关资料记载种仁营养价值高,含有碳水化合物65.86%、蛋白质12.26%、脂肪1.17%、还原糖5.67%、粗纤维2.7%、灰分3.2%。因为菠萝蜜种子淀粉含量高,其味类似板栗,可代粮食,是一种“木本粮食”果树,但直接水煮的口感并没有受到很多人喜爱,往往被丢弃,导致极大的浪费,故急需一种对其进行改进,提高其应用价值。
发明内容
鉴以此,本发明提出一种具有催乳作用的菠萝蜜种仁椰球及其制作方法,解决上述技术问题。
本发明的技术方案是这样实现的:一种具有催乳作用的菠萝蜜种仁椰球,包括以下重量份的原料:通草2~8份、当归10~20份、生地5~15份、白芍3~10份、川芎10~20份、山药10~20份、肉桂3~10份、甘草5~15份、桔梗10~20份、青皮5~15份和菠萝蜜种仁300~700份。
进一步的,包括以下重量份的原料:通草5~8份、当归14~18份、生地10~15份、白芍5~8份、川芎15~18份、山药15~18份、肉桂5~8份、甘草5~10份、桔梗13~18份、青皮8~12份和菠萝蜜种仁400~600份。
进一步的,包括以下重量份的原料:通草5份、当归15份、生地10份、白芍5份、川芎15份、山药15份、肉桂5份、甘草10份、桔梗15份、青皮10份和菠萝蜜种仁500份。
本发明提供一种具有催乳作用的菠萝蜜种仁椰球的制作方法,包括以下步骤:首先取菠萝蜜种仁去皮,并将中药原料制成中药液,去皮后的菠萝蜜种仁经渗药、微油炸处理,最后烘干,制得成品。
进一步的,所述微油炸的具体步骤为:将渗药后的菠萝蜜种仁干燥后裹上粉浆,所述粉浆包括以下的原料:糯米粉、小麦粉、白砂糖和水,按重量份计,糯米粉25~35份、小麦粉25~35份,其糯米粉和小麦粉的总重量与水的重量比为(0.8~1.2):1,白砂糖的添加量为粉浆总重量的15~25%;待油温为55~65℃时,按菠萝蜜种仁的质量百分比计,加入0.002%~0.004%TBHQ和0.01%~0.02%柠檬酸,并搅拌、加热,投入菠萝蜜种仁,进行微炸,微炸后捞出,裹上椰蓉。
进一步的,微油炸温度为170~190℃,微油炸时间为8~12s。
进一步的,所述中药液的具体配制步骤为:按重量份比,先把通草、当归、生地、白芍、川芎、山药、肉桂、甘草、桔梗、青皮加入水中,该水的重量与中药原料总重量比为(7~9):1,浸泡1.5~2.5h,再中火煎煮,沸腾后调为小火煮至1~2h,得滤液和滤渣,在滤渣中加水继续中火煎煮至沸腾,该水的重量与中药原料总重量比为(3~5):1,再转小火煮0.5~1.5h,再滤液去渣,合并2次滤液,然后按中药液的质量百分比计,添加4%~6%白砂糖、3%~5%木糖醇和0.04%~0.06%盐,得中药液。
进一步的,所述渗药的具体步骤为:将菠萝蜜种仁和中药液混合,加热蒸煮30~50min,冷却后冷藏22~26h。
进一步的,所述去皮的具体步骤为:将菠萝蜜种仁置于质量浓度为10~20%的NaOH溶液中,加热并不断搅拌,待其种皮脱落后分离出菠萝蜜种仁,立即水洗,搓擦菠萝蜜种仁使皮与果肉分开。
进一步的,所述烘干的具体步骤为:将裹上椰蓉的菠萝蜜种仁进行烘干处理,其烘干温度为50~60℃,时间为2~4h。
与现有技术相比,本发明的有益效果是:
本发明以菠萝蜜种仁为原料,结合通草、当归、生地、白芍、川芎、山药、肉桂、甘草、桔梗、青皮药食兼用食材,相互协同,使中药的药效成分渗进菠萝蜜种仁,强化整体的催乳功效。本发明菠萝蜜种仁椰球色泽均匀,白色椰蓉包被,里层褐色;有中药味,并且有原有种仁的香味和淡淡的椰香,无焦味无异味;口感软糯;外表椰蓉包裹均匀,较规则。本发明菠萝蜜种仁椰球的硬度、酸价、羰基价以及过氧化值等理化指标均显优。本发明制得菠萝蜜种仁椰球品质佳,保留种仁原有风味和椰香。且本发明还避免了大量菠萝蜜种仁丢弃而浪费。
另外,采用本发明的菠萝蜜种仁去皮工艺,去皮率高,且去皮后可保留种仁原色,去皮效果佳,且避免了种仁提前变熟,利于后面渗药;本发明微油炸工艺,进一步提高产品整体品质,制得产品色泽为金黄褐色,裹粉均匀,有中药味并且保留种仁原有风味,口感软糯,硬度适中;本发明的渗药工艺,进一步提高菠萝蜜种仁的渗药效果,制得产品中药味较浓,并且保留种仁原有风味,口感适中。

实施例1
一种具有催乳作用的菠萝蜜种仁椰球,包括以下重量份的原料:通草2份、当归10份、生地5份、白芍3份、川芎10份、山药10份、肉桂3份、甘草5份、桔梗10份、青皮5份和菠萝蜜种仁300份。

S1、原料选择:选择菠萝蜜全熟干苞种皮自然裂开、个体较大、略圆的完整菠萝蜜种仁,用自来水洗净菠萝蜜种仁表面,待用;
S2、去皮:将S1步骤处理后的菠萝蜜种仁置于质量浓度为15%的NaOH溶液中,用电磁炉加热并不断搅拌,待其种皮脱落后迅速倒入钢筛,即分离出菠萝蜜种仁,立即用自来水冲洗,使得无碱液残留,搓擦种仁使皮与果肉分开;
S3、中药液的配制:按重量份比,先把通草、当归、生地、白芍、川芎、山药、肉桂、甘草、桔梗、青皮加入水中,该水的重量与中药原料总重量比为8:1,在不锈钢锅里浸泡2h,再在电磁炉用中火500W煎煮,沸腾后调为小火200W煮至1.5h,得滤液和滤渣,在滤渣中加水继续中火煎煮至沸腾,该水的重量与中药原料总重量比为4:1,再转小火200W煮1h,再滤液去渣,合并2次滤液,然后按中药液的质量百分比计,添加5%白砂糖、4%木糖醇和0.05%盐,得中药液;
S4、渗药:将S2步骤去皮后的菠萝蜜种仁和S3步骤制得的中药液混合,加热蒸煮40min,冷却后冷藏24h;
S5、微油炸:将S4步骤渗药后的菠萝蜜种仁干燥后裹上粉浆,所述粉浆包括以下的原料:糯米粉、小麦粉、白砂糖和水,按菠萝蜜种仁重量份计,糯米粉30份、小麦粉30份,其糯米粉和小麦粉的总重量与水的重量比为1:1,白砂糖的添加量为粉浆总重量的20%;待油温为60℃时,按菠萝蜜种仁的质量百分比计,加入0.003%TBHQ和0.015%柠檬酸,并搅拌、加热,投入种仁,进行微炸,微油炸温度为180℃,微油炸时间为10s,微炸后捞出,裹上椰蓉;
S6、烘干:将S5步骤裹上椰蓉的菠萝蜜种仁进行烘干处理,其烘干温度为烘干温度为55℃,时间为3h,使其至水份含量为35~40%。
S7、包装:采用高温蒸煮袋进行抽真空密封包装,按每袋5颗的量装入蒸煮袋内,采用抽真空密封包装机进行排气密封包装。
实施例6
本实施例与实施例5的区别在于,其具体的制备步骤如下:

S4、渗药:将S2步骤去皮后的菠萝蜜种仁和S3步骤制得的中药液混合,加热蒸煮30min,冷却后冷藏22h;
S5、微油炸:将S4步骤渗药后的菠萝蜜种仁干燥后裹上粉浆,所述粉浆包括以下的原料:糯米粉、小麦粉、白砂糖和水,按菠萝蜜种仁重量份计,糯米粉25份、小麦粉25份,其糯米粉和小麦粉的总重量与水的重量比为0.8:1,白砂糖的添加量为粉浆总重量的15%;待油温为55℃时,按菠萝蜜种仁的质量百分比计,加入0.002%TBHQ和0.01%柠檬酸,并搅拌、加热,投入种仁,进行微炸,微油炸温度为170℃,微油炸时间为12s,微炸后捞出,裹上椰蓉;
S6、烘干:将S5步骤裹上椰蓉的菠萝蜜种仁进行烘干处理,其烘干温度为50℃,时间为4h,使其至水份含量为35~40%。
S7、包装:采用高温蒸煮袋进行抽真空密封包装,按每袋5颗的量装入蒸煮袋内,采用抽真空密封包装机进行排气密封包装。
实施例7
本实施例与实施例5的区别在于,其具体的制备步骤如下:

S4、渗药:将S2步骤去皮后的菠萝蜜种仁和S3步骤制得的中药液混合,加热蒸煮50min,冷却后冷藏26h;
S5、微油炸:将S4步骤渗药后的菠萝蜜种仁干燥后裹上粉浆,所述粉浆包括以下的原料:糯米粉、小麦粉、白砂糖和水,按菠萝蜜种仁重量份计,糯米粉35份、小麦粉35份,其糯米粉和小麦粉的总重量与水的重量比为1.2:1,白砂糖的添加量为粉浆总重量的25%;待油温为65℃时,按菠萝蜜种仁的质量百分比计,加入0.004%TBHQ和0.02%柠檬酸,并搅拌、加热,投入种仁,进行微炸,微油炸温度为190℃,微油炸时间为8s,微炸后捞出,裹上椰蓉;
S6、烘干:将S5步骤裹上椰蓉的菠萝蜜种仁进行烘干处理,其烘干温度为60℃,时间为2h,使其至水份含量为35~40%。
S7、包装:采用高温蒸煮袋进行抽真空密封包装,按每袋5颗的量装入蒸煮袋内,采用抽真空密封包装机进行排气密封包装。

本实施例与实施例5的区别在于,在S5步骤中,微油炸:将S4步骤渗药后的菠萝蜜种仁干燥后裹上粉浆,所述粉浆包括以下的原料:糯米粉、小麦粉、白砂糖和水,按菠萝蜜种仁重量份计,糯米粉35份、小麦粉35份,其糯米粉和小麦粉的总重量与水的重量比为1.5:1,白砂糖的添加量为粉浆总重量的25%;待油温为65℃时,按菠萝蜜种仁的质量百分比计,加入0.006%TBHQ和0.04%柠檬酸,并搅拌、加热,投入种仁,进行微炸,微油炸温度为200℃,微油炸时间为10s,微炸后捞出,裹上椰蓉。
对比例1
本对比例与实施例5的区别在于,所述具有催乳作用的菠萝蜜种仁椰球包括以下重量份的原料:通草10份、当归10份、生地10份、白芍10份、川芎10份、山药10份、肉桂10份、甘草10份、桔梗10份、青皮10份和菠萝蜜种仁200份。
将本发明的实施例1~8以及对比例1制得的菠萝蜜种仁椰球进行品质测试,测试结果如下:
一、感官品质
邀请90位品评员对实施例1~8以及对比例1菠萝蜜种仁椰球的感官品质进行鉴评,实施例1~8以及对比例1依次分为9组,每组10位品评员,以肉眼观察、品尝、闻味道为主,对产品色泽、气味、口感、外形进行感官评定,每位品评员在品评样品时要独立进行,不可相互讨论,记录中要写清每个样品的特征。并记录成绩,计算品评员各项平均分以及平均总分,进行结果分析。菠萝蜜种仁椰球感官品质评分标准如下表:

本发明菠萝蜜种仁椰球色泽均匀,白色椰蓉包被,里层褐色;有中药味,并且有原有种仁的香味和淡淡的椰香,无焦味无异味;口感软糯;外表椰蓉包裹均匀,较规则。
二、理化指标
硬度的测定:采用谷物硬度计测量;羰基价的测定:参照GB 5009.230-2016;酸价的测定:参照GB5009.229-2016;过氧化值的测定:参照GB 5009.227-2016。实施例1~8以及对比例1菠萝蜜种仁椰球的理化指标检测结果如下表:
三、催乳效果测试
随机邀请100名哺乳期妇女,分为10组,每组10人;第1~9组分别食用实施例1~8以及对比例1的菠萝蜜种仁椰球,每天食用60克,为试验组;第10组食用直接水煮的菠萝蜜种仁60克,同时每日服用“通草5g、当归15g、生地10g、白芍5g、川芎15g、山药15g、肉桂5g、甘草10g、桔梗15g、青皮10g熬制的中药汤1剂”,为对照组;试验时间约1个月。
试验指标,考虑到人的体重、身高、体质差异,所产奶量是不同的,所以试验指标采用了自身对照法,设计的试验指标为:
CR=试验后产奶量/试验前产奶量%
试验过程:记录试验前10天的产奶量,取平均值,作为空白对照值。试验一个星期后,开始记录产奶量,连续记录10天,取平均,作为试验值。
上述结果表明,本发明菠萝蜜种仁椰球具有很好的催乳效果。本发明以菠萝蜜种仁为原料,结合通草、当归、生地、白芍、川芎、山药、肉桂、甘草、桔梗、青皮药食兼用食材,协同增效,具有较强的催乳功效。
综上,本发明以菠萝蜜种仁为原料,结合通草、当归、生地、白芍、川芎、山药、肉桂、甘草、桔梗、青皮药食兼用食材,相互协同,使中药的药效成分渗进菠萝蜜种仁,制得菠萝蜜种仁椰球品质佳,保留种仁原有风味和椰香,且具有较强的催乳功效。
