本发明公开了一种润肠通便高钙低糖的复合果蔬汁瘦身饮料及其制备方法,该复合果蔬汁瘦身饮料由欧李汁、雪莲果汁、山楂汁、乌梅汁、番茄汁、冬瓜汁、胡萝卜汁、蓝莓汁、枸杞汁、洛神花提取物、杭白菊提取物、薏仁粉、罗汉果提取物、蜂蜜、绿茶粉、荷叶粉、甜菊糖浸提液、甜菜红色素浸提液、水和营养添加剂组成。本发明中的复合果蔬汁瘦身饮料是一种酸甜适口、补钙效果显著并且具有润肠通便和瘦身功效的果汁保健饮品。甜味剂甜菊糖和甜菜红色素都是天然植物通过水萃取法提炼出来的,所以非常安全健康。含有能够减肥瘦身的左旋肉碱和共轭亚油酸甘油酯,所以可以用作为减肥瘦身期间的功能饮料,由于添加了雪莲果汁,所以润肠通便效果显著。

背景技术
欧李又称钙果,含钙量很高,其果实含钙量远高于其他水果,核果成熟后近球形,红色或紫红色,欧李的果实大小介于樱桃和李子之间,果实直径1.5cm~1.8cm,欧李可生于阳坡砂地或山地灌丛中,或庭园栽培,产地有:中国黑龙江、吉林、辽宁、内蒙古、河北、山东或河南,欧李的成熟果实风味独特,属于酸酸甜甜的味道,欧李营养丰富,欧李果实中钙和铁的含量为水果之最,每100克果肉中含钙360 毫克、含铁58毫克。但是欧李的口感整体偏酸,而且又很涩,口感较差,如果单独作为水果大量食用,则不是很适合。
雪莲果,学名yacon,即“神果”之意,属菊科,葵花属植物,故又称为菊薯,原产自南美洲的安第斯山脉,是当地印第安人的一种传统根茎食品,已有500年历史,雪莲果属低热量根茎类蔬菜,雪莲果中含大量水溶性植物纤维和丰富的果寡糖及18 种人体必需的氨基酸及钙、铁等丰富矿物质,雪莲果是热带高山植物,成熟时,枝顶会先后开出五朵美丽娇艳的太阳花,煞是可爱。雪莲果的食用部分为根块,形似甘薯。雪莲果能够显著促进肠胃蠕动,润肠通便,不仅能够消除便秘,还可防治下痢,所以雪莲果能够很好的改善肠胃道疾病;雪莲果还具有清肝解毒、降火降血压等功效,是有效的防治面痘、暗疮以及养颜美容的天然保健品;雪莲果能够调理血液、降低血糖、血脂和胆固醇,可预防高血压、糖尿病,对心脑血管疾病和肥胖症等也有一定的疗效。雪莲果大多数都是以鲜食为主,薯块多汁,不含淀粉,生食口感脆嫩、味甜、爽口,味道寡淡,吃起来有一种特殊的淡淡香气,很像甜味比较重,而辣味比较轻的白萝卜,有些人接受不了雪莲果的特殊味道,而且雪莲果的鲜果不易保存,所以这种具有高营养价值和保健功效的根茎类蔬菜并没有被很好的利用。
便秘是一种临床上常见的复杂症状,而不是一种疾病,随着人们生活压力的增加和人们吃的食物比较精细,便秘在人群中的患病率高达27%,但是只有一小部分便秘患者会去医院就诊,便秘可以影响各年龄段的人,女性多于男性,老年多于青壮年,因便秘的发病率高、病因复杂,给患者带来许多苦恼,便秘严重时会影响生活质量,便秘的常见表现为:排便次数减少、粪便量减少、排便艰难、费力、排便不畅、大便干结和排便不净感等,便秘常伴有腹痛或腹部不适,部分患者还伴有失眠、烦躁、多梦、抑郁、焦虑等精神心理障碍。便秘严重的人通常都会使用一些类似泻药的药物或通便产品,这些产品会严重损伤人的肝脏和肾脏,对身体造成非常不利的影响。如果能够将雪莲果制作成一种高纤维的果蔬汁饮料,将使雪莲果这种润肠通便效果显著的根茎类蔬菜具有广阔的市场开发前景。
缺钙容易导致骨质疏松,骨质疏松是一种以低骨量和骨组织微结构破坏为特征,导致骨质脆性增加和易于骨折的全身性骨代谢性疾病,即使是轻微的创伤或无外伤的情况下也容易发生骨折,女性多于男性,常见于绝经后妇女和老年人,各年龄时期均可发病,随着我国老年人口的增加,骨质疏松症的发病率处于上升趋势,在我国乃至全球都是一个值得关注的健康问题。补钙是治疗骨质疏松最有效的方法,但是现有技术中的补钙方法都是通过吃钙片或者食补的方法,长期吃钙片对胃的刺激较大,不适合老年人,而且钙片中真正能够被人体吸收的钙量非常小,补钙效果不明显。食补的方法补钙比较麻烦,效果不明显,很难坚持,所以也不是一种很好的补钙方法。如果能够利用欧李高含钙量的这一特点,将欧李制作成一种高钙果蔬汁饮料,同时也属于一种高钙保健饮品,将成为欧李这种高营养水果的一大发展方向,同时也是骨质疏松及缺钙患者的一大福音。
目前现有技术中对欧李和雪莲果的应用都不够广泛,欧李和雪莲果大多数都是以鲜食为主,欧李的味道酸涩,雪莲果的味道寡淡,都不易被人们接收,而且都不易于贮藏和运输,为丰富欧李和雪莲果的食用范围,开阔欧李和雪莲果的市场份额,可以开发出一种营养丰富并兼具良好保健功能的复合果蔬汁饮料及其制备方法,充分利用欧李和雪莲果的营养价值,满足人们对食品的营养保健需求。

本发明还公开了一种润肠通便高钙低糖的复合果蔬汁瘦身饮料的制备方法,具体包括如下步骤:
(1)将新鲜的红甜菜采用水萃取法提取甜菜红色素,制成红甜菜的甜菜红色素浸提液;
(2)采集甜叶菊的新鲜叶片,然后将采集到的甜叶菊叶片晒干,收集晒干后的甜叶菊叶片采用水萃取法提取甜菊糖,制成甜叶菊的甜菊糖浸提液;
(3)然后将欧李汁、雪莲果汁、山楂汁、乌梅汁、番茄汁、冬瓜汁、胡萝卜汁、蓝莓汁、枸杞汁、洛神花提取物、杭白菊提取物、薏仁粉、罗汉果提取物、蜂蜜、绿茶粉、荷叶粉和营养添加剂按照各自的重量份混合在一起,制成复合果蔬汁混合液;
(4)最后将制好的复合果蔬汁混合液与规定重量份的甜菜红色素浸提液、甜菊糖浸提液和水混合在一起,即制得复合果蔬汁瘦身饮料;
(5)将复合果蔬汁瘦身饮料包装后即制得成品。
本发明制备方法中红甜菜采用水萃取法制作甜菜红色素浸提液的具体步骤为:
(1)浸渍:采用纯净水作为溶剂,将红甜菜切成碎块,将红甜菜碎块放置在装满纯净水的密闭容器中充分浸泡2d~3d,然后进行搅拌,使红甜菜中的甜菜红色素更多的进入到色素萃取液中;
(2)固液分离:色素萃取液通过过滤的方法将固体和液体分离,固液分离后的液体就是初次甜菜红色素浸提液;
(3)二次浸提:将固液分离后的固体再次放入装满纯净水的密闭容器中充分浸泡1d~2d,然后进行搅拌,得到二次色素萃取液,然后对二次色素萃取液通过过滤的方法进行二次固液分离,滤除残渣,固液分离后的液体为二次甜菜红色素浸提液;
(4)混合:将初次甜菜红色素浸提液和二次甜菜红色素浸提液混合在一起作为甜菜红色素浸提液使用。
本发明制备方法中甜叶菊叶片采用水萃取法制备甜菊糖浸提液的具体步骤为:
(1)将甜叶菊叶片剪成碎叶状,将甜叶菊碎叶加入纯净水中,在70℃~80℃的条件下搅拌浸提2小时,过滤,得到甜菊糖浸提液和甜叶菊碎叶残渣;
(2)将甜叶菊碎叶残渣加入纯净水中,在70℃~80℃的条件下搅拌浸提2h,过滤,得到甜菊糖浸提液和甜叶菊碎叶残渣;
(3)重复步骤(2),将甜叶菊碎叶共经过3次浸提,弃去第3次浸提得到的甜叶菊碎叶残渣,将经过3次浸提步骤得到的甜菊糖浸提液混合在一起即可。
本发明复合果蔬汁瘦身饮料中营养添加剂的制备方法为:将海盐、牛磺酸、烟酰胺、硫酸镁、葡萄糖酸锌、玛咖粉、共轭亚油酸甘油酯、左旋肉碱、维生素A、维生素D3、维生素B1、维生素B6和维生素B12按照各自的重量份混合在一起即可。
本发明的有益效果是:本发明中的复合果蔬汁瘦身饮料是一种安全健康、酸甜适口、补钙效果显著并且具有润肠通便和瘦身功效的果汁保健饮品。现有技术的复合果汁饮料中大多数是依靠添加剂调味,添加剂含量高,不够健康。本发明瘦身饮料中的整个甜菊糖和甜菜红色素的提取过程都是采用水萃取法提取,也就是说甜味剂和色素都是天然植物通过水萃取法提炼出来的,所以非常安全健康。本发明中的瘦身饮料是一种热量低、具有保健效果的功能饮品,其营养价值远高于同类产品。本发明将含钙量高的欧李和维生素D3这两者结合在一起,使本发明中的复合果蔬汁能够作为一种纯天然的补钙保健饮品来饮用,本发明的复合果蔬汁中不含蔗糖,甜度高,口感酸甜,而且热量低,含有能够减肥瘦身的左旋肉碱和共轭亚油酸甘油酯,所以可以用作为减肥瘦身期间的功能饮料。在本发明复合果蔬汁中添加了雪莲果汁,所以润肠通便效果显著。雪莲果的营养价值:100克雪莲果含有6~12克果寡糖,但仅含糖分1.5~4克,雪莲果是自然界果蔬中果寡糖含量最高的。日本研究发现,每天服用3~6g的果寡糖,3周之内,人的粪便中有毒致癌化合物的含量可减少40%以上,所以经常喝本发明中的复合果蔬汁瘦身饮料,还有很好的抗癌效果。
维生素D3主要是由人体自身合成的,人体的皮肤含有一种胆固醇,经阳光照射后就变成了维生素D3。所以,如果人体能够充分接受阳光直射皮肤4~6h以上,自身合成的维生素D3就基本上能满足需要。但是,在空气污染、各地天气变化等问题的影响下,各国人群接受日照的时间都在减少,加之很多国家明确规定要限制接受日照的时间,因此在全世界范围内,维生素D3缺乏的现象颇为广泛,而且紫外线照射可能带来的皮肤癌上升等问题。所以无论是成人还是少年儿童,都需要额外补充维生素D3用于日常所需。维生素D3能够提高机体对钙、磷的吸收,使血浆钙和血浆磷的水平达到饱和程度;促进生长和骨骼钙化,促进牙齿健全;通过肠壁增加磷的吸收,并通过肾小管增加磷的再吸收;维持血液中柠檬酸盐的正常水平;防止氨基酸通过肾脏损失。欧李中虽然含钙量高,但是人体对钙离子的吸收需要借助维生素D,所以本发明将复合果蔬汁中加入维生素D3,帮助更好的吸收钙离子。
甜叶菊是菊科,属于多年生草本植物。甜叶菊干叶中的主要成分为甜菊糖苷,甜菊糖苷不仅甜度高、热量低,还具有一定的药理作用。甜菊糖主要有治疗糖尿病、控制血糖、降低血压、抗肿瘤、改善腹泻、提高免疫力和促进新陈代谢等作用,对控制肥胖症、调节胃酸、恢复神经疲劳等有很好的功效,对心脏病、小儿龋齿等也有显著疗效,最重要的是它可消除蔗糖的副作用。南美、东南亚、或远东地区,甜菊糖苷已经被广泛应用于食品和药品领域。中国卫生部在1985年批准了甜菊糖苷为不限量使用的天然甜味剂,又于1990年批准了甜菊糖苷为医药用的甜味剂辅料,甜叶菊作为药物和膳食已被广泛应用。由于甜菊糖苷是一种非糖甜味剂,吃进嘴里不会在口腔内细菌的作用下产生酸,因此采用它制作的复合果蔬汁,不会因产生酸而腐蚀牙齿,可被用来预防儿童龋齿。
本发明中使用的甜菊糖的甜度相当于蔗糖的200~350倍,但甜菊糖的热量仅为蔗糖的1/200~1/300,甜菊糖也是可口可乐无糖饮料的主要甜味剂,甜菊糖在作为甜味剂使用时按照蔗糖放入量的1/300即可,是一种适合糖尿病人吃的甜味剂。同时甜菊糖还适合高血压、动脉硬化、冠心病、龋齿等病的患者使用,是一种可替代蔗糖的健康理想新糖源。红甜菜中的甜菜红色素作为一种健康食用色素的同时其还具有很好的抗氧化性,甜菜红色素据研究表明还具有一定的抗肝癌和降血压效果。加入甜菜红色素以后能够很好的改善复合果蔬汁的颜色,是一种健康天然的食用色素。

7.根据权利要求1-6中任一项权利要求所述的润肠通便高钙低糖的复合果蔬汁瘦身饮料的制备方法,其特征在于:所述制备方法包括如下步骤:
(1)将新鲜的红甜菜采用水萃取法提取甜菜红色素,制成红甜菜的甜菜红色素浸提液;
(2)采集甜叶菊的新鲜叶片,然后将采集到的甜叶菊叶片晒干,收集晒干后的甜叶菊叶片采用水萃取法提取甜菊糖,制成甜叶菊的甜菊糖浸提液;
(3)然后将欧李汁、雪莲果汁、山楂汁、乌梅汁、番茄汁、冬瓜汁、胡萝卜汁、蓝莓汁、枸杞汁、洛神花提取物、杭白菊提取物、薏仁粉、罗汉果提取物、蜂蜜、绿茶粉、荷叶粉和营养添加剂按照各自的重量份混合在一起,制成复合果蔬汁混合液;
(4)最后将制好的复合果蔬汁混合液与规定重量份的甜菜红色素浸提液、甜菊糖浸提液和水混合在一起,即制得复合果蔬汁瘦身饮料;
(5)将复合果蔬汁瘦身饮料包装后即制得成品。
8.根据权利要求7所述的复合果蔬汁瘦身饮料的制备方法,其特征在于:所述红甜菜采用水萃取法制作甜菜红色素浸提液的具体步骤为:
(1)浸渍:采用纯净水作为溶剂,将红甜菜切成碎块,将红甜菜碎块放置在装满纯净水的密闭容器中充分浸泡2d~3d,然后进行搅拌,使红甜菜中的甜菜红色素更多的进入到色素萃取液中;
(2)固液分离:所述色素萃取液通过过滤的方法将固体和液体分离,固液分离后的液体就是初次甜菜红色素浸提液;
(3)二次浸提:将固液分离后的固体再次放入装满纯净水的密闭容器中充分浸泡1d~2d,然后进行搅拌,得到二次色素萃取液,然后对二次色素萃取液通过过滤的方法进行二次固液分离,滤除残渣,固液分离后的液体为二次甜菜红色素浸提液;
(4)混合:将初次甜菜红色素浸提液和二次甜菜红色素浸提液混合在一起作为甜菜红色素浸提液使用。
9.根据权利要求7所述的复合果蔬汁瘦身饮料的制备方法,其特征在于:所述甜叶菊叶片采用水萃取法制备甜菊糖浸提液的具体步骤为:
(1)将甜叶菊叶片剪成碎叶状,将甜叶菊碎叶加入纯净水中,在70℃~80℃的条件下搅拌浸提2小时,过滤,得到甜菊糖浸提液和甜叶菊碎叶残渣;
(2)将甜叶菊碎叶残渣加入纯净水中,在70℃~80℃的条件下搅拌浸提2h,过滤,得到甜菊糖浸提液和甜叶菊碎叶残渣;
(3)重复步骤(2),将甜叶菊碎叶共经过3次浸提,弃去第3次浸提得到的甜叶菊碎叶残渣,将经过3次浸提步骤得到的甜菊糖浸提液混合在一起即可。
10.根据权利要求7所述的复合果蔬汁瘦身饮料的制备方法,其特征在于:所述营养添加剂的制备方法为:将海盐、牛磺酸、烟酰胺、硫酸镁、葡萄糖酸锌、玛咖粉、共轭亚油酸甘油酯、左旋肉碱、维生素A、维生素D3、维生素B1、维生素B6和维生素B12按照各自的重量份混合在一起即可。
