背景技术
文献记载,红枣具有补中益气、养胃健脾、养血壮神、润心肺、生津液、悦颜色、解药毒、调和百药的作用;红枣有增强体能、加强肌力的功效。红枣属红色食物,传统中医认为,五脏中的心与五色中的赤相对应,多吃红色食物,可起到养心血,益心气的效果。红色食物多数属低热量食物,并富含膳食纤维、钾等促进新陈代谢、降脂、排便的成分,有助于保护心脑血管。阿胶最早载于《神农本草经》,性味甘平,有滋阴养血,补肺润燥,止血安胎之功效,被称为补血圣药。红枣、阿胶的补血作用为人们所熟知,通过补血而滋润皮肤已是爱美女士们早已公开的秘密。红枣富含的多种维生素及矿物质,再加红枣、阿胶补气补血的特殊作用,也为手术后患者的身体康复提供了强劲动力。随着人们健康意识的增强,天然健康营养系列饮料逐渐收到人们推崇。据有关部门预测,未来五年全球健康饮料将以高于普通饮料增长速度一倍以上的速度增长。红枣含有丰富的营养成份,具有很高的营养保健价值。红枣系列营养饮料的开发具有广阔的市场前景。
本发明克服现有技术不足,以红枣、生姜等为主要原料,合理配以其它具有健康营养原料,提供一种红枣生姜浓浆生产工艺,产品营养丰富、口感纯正、风味独特,为市场提供了一种新型红枣营养饮料新品种。
发明内容
本发明目的在于提供一种红枣生姜浓浆生产工艺,营养成分全面、食用方便、易于吸收,补中益气、驱寒止呕、美容养颜,适合四季冲饮的营养食品。
所述红枣生姜浓浆,含有生姜1%~12%、薄荷1%~10%、益生元0.5%~5%、蜂蜜1%~10%、果葡糖浆3%~15%,余量为浓缩枣汁,总量为100%。
所述益生元为低聚异麦芽糖、低聚果糖、低聚半乳糖中的一种或几种;优选为低聚异麦芽糖。
所述红枣生姜浓浆,还含有阿胶1%~15%、酸枣仁1%~15%、枸杞1%~10%中的一种或几种。
所述红枣生姜浓浆,和/或还含有山楂1%~10%、山药1%~6%、栀子1%~5%、茯苓1%~5%中的一种或几种。
所述红枣生姜浓浆,还含有维生素A0.00005%~0.005%、维生素B30.005%~0.1%、维生素C0.05%~0.5%、维生素D30.000005%~0.00002%、牛磺酸0.1%~1.5%中的一种或几种。
所述红枣生姜浓浆,还含有钙0.5%~1%、铁0.005%~0.5%、锌0.005%~0.5%中的一种或几种。
所述红枣生姜浓浆,还含有稳定剂:羧甲基纤维素钠(CMC)、黄原胶、β-环状糊精;所述稳定剂用量:羧甲基纤维素钠0.2%~0.5%、黄原胶0.1%~0.5%、β-环状糊精0.5%~2%。
所述稳定剂是在多次试验基础上优选出的,三种稳定剂搭配混合使用,利用胶体间相互协同增效作用,强化了增稠、乳化、稳定、耐酸、耐热作用,可有效防止浓浆分层、水析、沉淀等现象产生,具有稳定、悬浮、改善口感的作用,能有效解决产品的沉淀、析水等质量问题,并且在口感上赋予产品饱满的质感。

本发明所述红枣生姜浓浆,生产工艺,包括以下步骤:
(1)调配:
按配方称取原料;
将浓缩枣汁加热至55℃~65℃,加入生姜汁、薄荷汁、益生元、蜂蜜、果葡糖浆搅拌均匀,升温至85℃~95℃保持0.5~2h,使充分混匀融合;
和/或再加入阿胶、酸枣、枸杞中的一种或几种;
和/或再加入山楂汁、山药汁、栀子汁、茯苓汁中的一种或几种;
和/或再加入维生素A、维生素B3、维生素C、维生素D3、牛磺酸中的一种或几种;
和/或再加入矿物质钙、铁、锌中的一种或几种;
和/或再加入稳定剂(羧甲基纤维素钠、黄原胶、β-环状糊精);
搅拌均匀,于85℃~95℃保持0.5~1h,使其充分混匀融合;
所述生姜汁、薄荷汁、酸枣仁汁、枸杞汁、山楂汁、山药汁、栀子汁、茯苓汁制备方法为,分别以生姜、薄荷、酸枣仁、枸杞、山楂、山药、栀子、茯苓为原料,采用超声提取、三效旋转流降膜浓缩制得;
所述超声提取方法为,将原料(生姜、薄荷、酸枣仁、枸杞、山楂、山药、栀子、茯苓)破碎或粉碎,(过20目筛),加5~10倍水,于85℃~95℃,超声浸提二次,每次1~2h,超声频率60~80khz;将提取液合并,采用三效旋转流降膜浓缩至45~65°Bx,而得;
所述三效旋转流降膜浓缩为,一效温度控制在90℃~95℃,真空度-0.02Mpa,二效温度控制在80℃~85℃,真空度-0.06Mpa,三效温度控制在55℃~60℃,真空度-0.09Mpa;
传统的热水浸提汁方法由于提取温度较高,提取时间较长,营养成分损失严重,影响了原料营养、风味和药效;超声助提方法能够减少提取时间,提高浸提效率和药汁品质;
(2)胶磨:即用胶体磨研磨;
胶磨前最好要确保料液的固形物含量60~70°Bx;调整磨盘刻度到最佳时,开始胶磨;胶磨时,注意调节合适的细度,太粗解决不了问题,太细容易造成液体外溢,不利于生产;一定要调到合适的细度;胶磨完成后,把磨盘调松,用冷水冲洗干净,以备下次使用;浓浆胶磨时主要有两个目的:第一,物料通过胶磨后,浆液内的胶体,在一定外力的作用下,各种小微粒,被磨碎,彼此之间与糖液形成了更加均一,稳定的混合物,起到均质的作用;第二,物料在高速离心作用下,形成了大量的泡沫,有利于浓浆脱气,为后续的静置、减少浓浆气泡奠定了基础;
(3)杀菌;
所述杀菌为将胶磨后浆液升温杀菌,温度80~95℃,时间30~60min;升温杀菌也有利于脱气;
所述杀菌也可以采用超高温瞬时杀菌工艺:温度120~135℃,时间10~30s;
杀菌必要时可加入消泡剂乳化硅油,用量0.3‰~1‰;
(4)静置;
所述静置为杀菌后浆液静置30~35min,最好保持温度90~92℃;罐内的蒸气可从安全阀中放出;
(5)灌装;
所述灌装温度80~85℃;灌装浓度一般70~75%;
(6)冷却;

水浴冷却主要目的:①瓶盖内胶皮垫的抗热性并不是很好,长时间的高温,会使瓶内的胶垫其物理性能有所改变,即对瓶子的气密性有影响,所以要及时降温;②及时降温,会使瓶子内在短时间内形成真空,有效地保证了产品的质量;③水浴冷却时,灌装时瓶子外壁粘有的少量糖液,会在水中溶解,使瓶子外壁保持相对干净,不受微生物的感染;

所述浓缩枣汁生产方法包括:
原料分选:挑选无虫害、无鼠咬、无霉烂、无变质枣果;把好原料关,是确保产品质量的重要环节;所述枣优选为有机转换红枣;
清洗与浸泡:将枣置40~50℃温水中清洗干净;清洗过程中可进一步挑选去除不合格枣;可选用带有叶轮的清洗缸为清洗设备;所述浸泡为将清洗后枣置40~50℃温水中浸泡10~60min;一般可按干枣∶水=1∶3~10比例进行浸泡;浸泡有益效果:浸泡可使枣果吸水膨胀、软化,有利于提高出汁率;
微波处理:将浸泡处理过的红枣进行微波处理,微波功率为400~800w,时间为1~15min;在微波处理下,红枣细胞组织由于相互间的高速运动和摩擦而破碎,细胞溃解使内容物溢出,从而提高红枣的出汁率;微波处理还可以增加红枣果香和色泽,香味更加浓郁;
浸提:为超声助提,料水比一般为1∶1~10;超声频率40~100khz,优选60~80khz,提取温度85~95℃,时间1~2h;传统的热水浸提枣汁方法由于提取温度较高,提取时间较长,红枣营养成分损失严重,影响了枣汁的营养和风味;超声助提方法能够减少提取时间,提高浸提效率和枣汁品质;
枣汁分离:浸提后趁热过滤,温度优选65~80℃;可选用双联过滤器,80目的过滤网;趁热过滤流速快,解决了因枣汁中果胶等物质含量高,易发生堵塞,造成过滤困难的技术问题;
浓缩:先采用三效旋转流降膜浓缩至30~40°Bx,其中一效温度控制在90~95℃,真空度-0.02Mpa,二效温度控制在80~85℃,真空度-0.06Mpa,三效温度控制在55~60℃,真空度-0.09Mpa;再采用单效浓缩至65°Bx以上,单效浓缩时真空度0.06~0.08MPa;浓缩后得浓缩枣汁;
流体浓缩工艺较多,常见的有常压浓缩、单效或多效升膜浓缩、单效或多效降膜浓缩、膜浓缩、冷冻浓缩等工艺方式,根据红枣汁物料特性和工业化实现的可能性以及综合能耗,选用三效旋转流降膜浓缩工艺及装置,可有效地避免枣汁在浓缩过程中易粘壁焦糊的现象,大大提高了浓缩效率,降低了能源消耗;采用三效旋转流降膜浓缩与单效浓缩相结合的技术方案,可提高枣汁浓度,避免黏糊及糊壁现象,减少浪费,提升枣汁质量。

薄荷:薄荷为唇形科(Labiatae)多年生宿根性草本植物薄荷属(Mentha)的地上部分,是一种有特种经济价值的芳香作物。薄荷是中华常用中药之一,全草入药,辛,凉。归肺、肝经,有发散风热,清利咽喉,透疹解毒,疏肝解郁和止痒等功效,适用于感冒发热、头痛、咽喉肿痛、无汗、风火赤眼、风疹、皮肤发痒、疝痛、下痢及瘰疬等症,外用有轻微的止痛作用,用于神经痛等。药理作用:1.对中枢神经系统的作用:内服少量薄荷有兴奋中枢神经的作用,通过末稍神经使皮肤毛细血管扩张,促进汗腺分泌,增加散热,有发汗解热作用.薄荷油少量内服,同样有发汗、解热和中枢兴奋作用;2.局部作用:薄荷制剂局部应用可使皮肤粘膜的冷觉感受器产生冷觉反射,引起皮肤粘膜血管收缩;薄荷油对皮肤有刺激作用,并可慢慢渗透入皮肤内,引起长时间的充血;薄荷油外用能麻醉神经末梢,具有清凉、消炎、止痛和止痒作用;薄荷油的主成分薄荷脑对皮肤有相似的作用;3.解痉作用:薄荷及其有效成分均有解痉作用.薄荷的乙醇提取物对乙酰胆碱或组胺所致豚鼠离体回肠收缩有显著抑制作用.另外,薄荷还有保肝、利胆、抗炎、抗菌、抗病毒等作用。

酸枣仁:山枣、酸枣子、别大枣、刺枣,为鼠李科植物酸枣ZiziphuspsinosaHu的干燥成熟种子;性平,味甘、酸,归肝、胆、心经。酸枣仁含多量脂肪油、蛋白质、甾醇、三萜化合物(白桦脂醇、白桦脂酸)、酸枣皂甙、维生素C等。功效:①镇静、催眠作用;②镇痛、抗惊厥、降温作用;③对心血管系统的影响酸枣仁可引起血压持续下降,心传导阻滞;④对烧伤的影响酸枣仁单用或与五味子合用,均能提高烫伤小白鼠的存活率,延长存活时间,还能推迟大白鼠烧伤性休克的发生和延长存活时间,并能减轻小白鼠烧伤局部的水肿;⑤对子宫有兴奋作用。
枸杞:学名Lyciumchinense,是茄科枸杞属的多分枝灌木植物。杞子是常用的营养滋补佳品,在民间常用其煮粥、熬膏、泡酒或同其他药物、食物一起食用。枸杞子自古就是滋补养人的上品,有延衰抗老的功效,所以又名“却老子”。功效:滋补肝肾,益精明目。用于虚劳精亏,腰膝酸痛,眩晕耳鸣,内热消渴,血虚萎黄,目昏不明。作用:1、对免疫功能的影响:有增强非特异性免疫作用;2、延缓衰老作用;3、抗肝损伤;4、降血糖、抗肿瘤、促进造血功能等作用。

山药:为薯蓣科植物薯蓣DioscoreaoppositaThunb.的干燥根茎。山药味甘、性平,入肺、脾、肾经;不燥不腻,具有健脾补肺、益胃补肾、固肾益精、聪耳明目、助五脏、强筋骨、长志安神、延年益寿的功效;主治脾胃虚弱、倦怠无力、食欲不振、久泄久痢、肺气虚燥、痰喘咳嗽、肾气亏耗、腰膝酸软、下肢痿弱、消渴尿频、遗精早泄、带下白浊、皮肤赤肿、肥胖等病症。《本草纲目》概括五大功用“益肾气,健脾胃,止泄痢,化痰涎,润皮”山药煮粥或者用冰糖煨熟后服用,对身体差、肠炎、肾亏等慢性病均有疗效。药理作用:1.补益脾胃:治疗脾胃虚弱、泄泻、体倦、食少、虚汗;2.益肺滋肾:本品不寒不燥,味甘质润,可治疗肺肾虚损的消渴、遗精、带下等病证;3.益肺止咳:山药含有皂甙、黏液质,有润滑,滋润的作用,故可益肺气,养肺阴,治疗肺虚痰嗽久咳之症;4.降低血糖:山药含有粘液蛋白,有降低血糖的作用,可用于治疗糖尿病,是糖尿病人的食疗佳品;5.延年益寿:山药含有大量的黏液蛋白、维生素及微量元素,能有效阻止血脂在血管壁的沉淀,预防心血疾病,取得益志安神、延年益寿的功效;6.抗肝昏迷,近年研究发现山药具有镇静作用,可来抗肝昏迷。
栀子:别名黄栀子、山栀、白蟾,是茜草科植物栀子的果实。目前,栀子的果实是传统中药,属卫生部颁布的第一批药食两用资源,具有护肝、利胆、降压、镇静、止血、消肿等作用,在中医临床常用于治疗黄疸型肝炎、扭挫伤、高血压、糖尿病等症。归经:心经;肝经;肺经;胃经;三焦经。功效:泻火除烦;清热利湿;凉血解毒。主治:热病心烦;肝火目赤;头痛;湿热黄疳;淋证;血痢尿血;口舌生疮;疮疡肿毒;扭伤肿痛。化学成分:含多种环烯醚萜甙类成分,主要为栀子甙,即京尼平1-葡萄糖甙,含量高达6%,并含去羟栀子甙、京尼平-1-β-龙胆双糖甙、鸡矢藤次甙甲酯、栀子新甙、栀子酮甙、去乙酰车叶草甙酸甲酯等;另含番红花甙、番红花酸、熊果酸等。药理:1.利胆作用,栀子及所含环烯醚萜甙等成分均有利胆作用;2.对胃肠道和胰腺的作用,栀子能促进胰腺分泌,京尼平甙有显著降低胰淀粉酶的作用,而其酶解产物京尼平的增加胰胆流量作用最强,持续时间较短.在胰腺炎时栀子有提高机体抗病能力、改善肝脏和胃肠系统的功能以及减轻胰腺炎等药理作用;3.对中枢神经系统的作用,栀子醇提取物能减少小鼠自发活动,具有镇静作用,且与环己巴比妥钠有协同作用,能延长睡眠时间,尚能对抗戊四氮的惊厥;4.抗病原微生物作用,栀子对金黄色葡萄球菌、脑膜炎双球菌、卡他球菌等有抑制作用;另外,栀子乙醇提取物,水提取物,乙酸乙酯部分和京尼平甙有一定的抗炎和治疗软组织损伤的作用,其提取物制成油膏,可加速软组织的愈合;5.对心血管系统的作用,栀子提取物能降低心肌收缩力,降血压;6.栀子有一定的止血作用。
茯苓:俗称云苓、松苓、茯灵,为寄生在松树根上的菌类植物,形状像甘薯,外皮黑褐色,里面白色或粉红色。古人称茯苓为“四时神药”,因为它功效非常广泛,不分四季,将它与各种药物配伍,不管寒、温、风、湿诸疾,都能发挥其独特功效。茯苓味甘、淡、性平,入心、肺、脾经。入药具有利水渗湿、益脾和胃、宁心安神之功用。可治小便不利,水肿胀满,痰饮咳逆,呕逆,恶阻,泄泻,遗精,淋浊,惊悸,健忘等症。现代医学研究:茯苓能增强机体免疫功能,茯苓多糖有明显的抗肿瘤及保肝脏作用。
铁:是人体内含量最多的微量元素,主要以铁蛋白和含铁血红素存在于肝、脾和骨骼内。孕前缺铁易导致早产、孕期母体体重增长不足以及新生儿低出生体重。缺铁性贫血也是妊娠期最常见的一种并发症,在妊娠后半期约有25%的孕妇因吸收不良,或因来源缺乏致使铁的摄入量不足,产生缺铁性贫血。

维生素D3:又名烟碱酸胺、胆骨化醇。主要有以下生理功能:提高肌体对钙、磷的吸收,使血浆钙和血浆磷的水平达到饱和程度;促进生长和骨骼钙化,促进牙齿健全;通过肠壁增加磷的吸收,并通过肾小管增加磷的再吸收;维持血液中柠檬酸盐的正常水平;维生素D3是活性的7-脱氢胆固醇。
叶酸:妊娠的头4周是胎儿神经管分化和形成的重要时期,此期叶酸缺乏可增加胎儿发生神经管畸形及早产的危险。特别强化叶酸,可降低胎儿神经管畸形的发生率及早产的危险。帮助促进排便,孕妇肠道健康的好伴侣。育龄妇女应从计划妊娠开始尽可能早地多摄取富含叶酸的食物及从孕前3个月开始每日补充叶酸400μg,并持续至整个孕期。
牛磺酸:牛磺酸具有多种生理功能,是人体健康必不可少的一种营养素。主要生理功能:促进婴幼儿脑组织和智力发育,牛磺酸在脑内的含量丰富、分布广泛,能明显促进神经系统的生长发育和细胞增殖、分化,且呈剂量牛磺酸依赖性,在脑神经细胞发育过程中起重要作用。研究表明:早产儿脑中的牛磺酸含量明显低于足月儿,这是因为早产儿体内的半肤氨酸亚磺酸脱氢酶(CSAD)尚未发育成熟,合成牛磺酸不足以满足机体的需要,需由母乳补充。母乳中的牛磺酸含量较高,尤其初乳中含量更高。如果补充不足,将会使幼儿生长发育缓慢、智力发育迟缓。牛磺酸与幼儿、胎儿的中枢神经及视网膜等的发育有密切的关系,长期单纯的牛奶喂养,易造成牛磺酸的缺乏;提高神经传导和视觉机能;防止心血管病;影响脂类的吸收;改善内分泌状态,增强人体免疫;影响糖代谢;改善记忆的功能;牛磺酸防治缺铁性贫血有明显效果,它不仅可以促进肠道对铁的吸收,还可增加红细胞膜的稳定性;牛磺酸还是人体肠道内双歧菌的促生因子,优化肠道内细菌群结构;还具有抗氧化、延缓衰老作用。
大枣所含环腺苷酸(camp)能阻止血小板内血栓素A2的形成,减少血小板的聚集,具有明显的抗血栓形成作用。
膳食纤维:是风靡世界的第七大营养素,它能促进肠蠕动,及时排除有害物质,具有抑制淀粉酶的作用,从而预防便秘、肥胖等,为女性保持窈窕身材的有益营养素,被誉为人体中的“专业清道夫”。枣富含膳食纤维,对清肠通便大有益处,是肠道健康的好伴侣。
本发明精选生姜、薄荷、益生元、蜂蜜、果葡糖浆等原料,和/或配合阿胶、酸枣仁、枸杞、山楂、维生素、矿物质等原料,以药食同源的浓缩枣汁为载体,合理搭配组方,各原料之间相互协调、协同作用,研制开发出即营养全面、功能协调,具有很好适口性,有助于补中益气、驱寒止呕、美容养颜、益气生津、清热解毒、健脾益胃、调理肠胃、敛肺滋阴、提高机体免疫力、抗肿瘤、保肝脏等效果的红枣生姜浓浆新产品。本发明特别地解决了现有浓浆类似相关产品由于原料或配伍不当,产品疗效和口感不佳,没有全面考虑产品营养性与适口性等问题。特别地,本发明产品对缓解女性经期出现痛经等现象有较好的食疗作用,食用方便,即冲即饮。本发明产品便于服用、便于携带、利于吸收。长期食用本发明红枣生姜浓浆有利于提高机体营养水平,有利于提高人口素质。
本发明红枣生姜浓浆产品食用方法:即可以直接食用,也可根据个人需求用冷、热开水冲调,或加入到牛奶、奶茶等中食用。推荐日食用量10~100g。
具体实施方式
以下实施例对本发明做进一步的说明。
实施例1
浓缩枣汁生产方法包括:
原料分选:挑选无虫害、无鼠咬、无霉烂、无变质枣果;
清洗与浸泡:将枣置40~50℃温水中清洗干净;清洗过程中可进一步挑选去除不合格枣;可选用带有叶轮的清洗缸为清洗设备;将清洗后枣置40~50℃温水中浸泡30min;可按干枣∶水=1∶10比例进行浸泡;
微波处理:将浸泡处理过的红枣进行微波处理,微波功率为600w,时间为10min;
浸提:为超声助提,料水比为1∶10;超声频率80khz,提取温度85~95℃,时间1h;
枣汁分离:浸提后趁热过滤,温度优选65~80℃;可选用双联过滤器,80目的过滤网;浓缩:先采用三效旋转流降膜浓缩至30~35°Bx,其中一效温度控制在90~95℃,真空度-0.02Mpa,二效温度控制在80~85℃,真空度-0.06Mpa,三效温度控制在55~60℃,真空度-0.09Mpa;再采用单效浓缩至65°Bx以上,单效浓缩时真空度0.06~0.08MPa;浓缩后得浓缩枣汁。
生姜汁制备方法为,将生姜破碎,加5~6倍水,于85℃~90℃,超声浸提二次,每次2h,超声频率60khz;将提取液合并,采用三效旋转流降膜浓缩至45~50°Bx,得生姜汁。
薄荷汁制备方法为,将薄荷粉碎,(过20目筛),加8~10倍水,于90℃~95℃,超声浸提二次,每次1h,超声频率80khz;将提取液合并,采用三效旋转流降膜浓缩至55~65°Bx得薄荷汁。
酸枣仁汁制备方法为,将酸枣仁粉碎,(过20目筛),加5~6倍水,于85℃~90℃,超声浸提二次,每次2h,超声频率60khz;将提取液合并,采用三效旋转流降膜浓缩至45~50°Bx,得酸枣仁汁。
枸杞汁制备方法为,将枸杞粉碎,(过20目筛),加8~10倍水,于90℃~95℃,超声浸提二次,每次1h,超声频率80khz;将提取液合并,采用三效旋转流降膜浓缩至55~65°Bx,得枸杞汁。
山楂汁制备方法为,将山楂粉碎,(过20目筛),加5倍水,于95℃,超声浸提二次,每次2h,超声频率65khz;将提取液合并,采用三效旋转流降膜浓缩至50°Bx,得山楂汁。
山药汁制备方法为,将山药粉碎,(过20目筛),加10倍水,于85℃,超声浸提二次,每次2h,超声频率60khz;将提取液合并,采用三效旋转流降膜浓缩至55°Bx,得山药汁。
栀子汁制备方法为,将栀子粉碎,(过20目筛),加5~10倍水,于85℃~95℃,超声浸提二次,每次1~2h,超声频率60~80khz;将提取液合并,采用三效旋转流降膜浓缩至45~65°Bx,得栀子汁。
茯苓汁制备方法为,将茯苓粉碎,(过20目筛),加8~10倍水,于90℃~95℃,超声浸提二次,每次1h,超声频率80khz;将提取液合并,采用三效旋转流降膜浓缩至55~65°Bx得茯苓汁。
实施例2
浓缩枣汁生产方法包括:

枸杞汁制备方法为,将枸杞粉碎,(过20目筛),加5~8倍水,于95℃,超声浸提二次,每次2h,超声频率60khz;将提取液合并,采用三效旋转流降膜浓缩至60°Bx,得枸杞汁。
山楂汁制备方法为,将山楂粉碎,(过20目筛),加8倍水,于90℃,超声浸提二次,每次1h,超声频率70khz;将提取液合并,采用三效旋转流降膜浓缩至65°Bx,得山楂汁。
山药汁制备方法为,将山药粉碎,加8倍水,于80℃,超声浸提二次,每次1.5h,超声频率65khz;将提取液合并,采用三效旋转流降膜浓缩至60°Bx,得山药汁。
栀子汁制备方法为,将栀子粉碎,(过20目筛),加5~10倍水,于85℃~95℃,超声浸提二次,每次1~2h,超声频率60~80khz;将提取液合并,采用三效旋转流降膜浓缩至55~65°Bx,得栀子汁。
茯苓汁制备方法为,将茯苓粉碎,(过20目筛),加8~10倍水,于90℃~95℃,超声浸提二次,每次1h,超声频率80khz;将提取液合并,采用三效旋转流降膜浓缩至55~65°Bx得茯苓汁。
实施例3
一种红枣生姜浓浆,含有生姜12%、薄荷10%、低聚异麦芽糖3%、蜂蜜1%、果葡糖浆15%,余量为浓缩枣汁,总量为100%。
一种红枣生姜浓浆生产工艺,包括以下步骤:
(1)调配:按配方称取原料;将浓缩枣汁加热至55℃~65℃,加入生姜汁、薄荷汁、低聚异麦芽糖、蜂蜜、果葡糖浆搅拌均匀,升温至85℃~95℃保持0.5~2h,使充分混匀融合;
(2)胶磨:用胶体磨研磨;胶磨前最好要确保料液的固形物含量70~75°Bx;调整磨盘刻度到最佳时,开始胶磨;胶磨完成后,把磨盘调松,用冷水冲洗干净,以备下次使用;
(3)杀菌:将胶磨后浆液升温杀菌,温度80~95℃,时间30~60min;
所述杀菌也可以采用超高温瞬时杀菌工艺:温度120~135℃,时间10~30s;
杀菌必要时可加入消泡剂乳化硅油,用量0.3‰~1‰;
(4)静置:杀菌后浆液静置30~35min,最好保持温度90~92℃;罐内的蒸气可从安全阀中放出;
(5)灌装:灌装温度80~85℃;灌装浓度一般70~75%;
(6)冷却:灌装后浓浆在常温下至少放置15min,然后,再水浴冷却,水浴温度25~30℃;
(7)包装。
实施例4
一种红枣生姜浓浆,含有生姜1%、薄荷2%、低聚异麦芽糖0.5%、蜂蜜2%、果葡糖浆10%,余量为浓缩枣汁,总量为100%。

一种红枣生姜浓浆,含有生姜8%、薄荷5%、低聚异麦芽糖5%、蜂蜜6%、果葡糖浆7%,余量为浓缩枣汁,总量为100%。

一种红枣生姜浓浆,含有生姜5%、薄荷6%、低聚异麦芽糖2%、低聚果糖1%、蜂蜜5%、果葡糖浆10%;还含有阿胶10%、酸枣仁15%、枸杞1%、维生素A0.001%、维生素C0.4%、牛磺酸1.0%中的一种或几种;余量为浓缩枣汁,总量为100%。
一种红枣生姜浓浆生产工艺,包括以下步骤:调配,按配方称取原料;将浓缩枣汁加热至55℃~60℃,加入生姜汁、薄荷汁、低聚异麦芽糖、蜂蜜、果葡糖浆搅拌均匀,升温至85℃~95℃保持0.5~2h,使充分混匀融合;再加入阿胶、酸枣仁、枸杞、低聚异麦芽糖、蜂蜜、果葡糖浆、维生素A、维生素C、牛磺酸1.0%中的一种或几种,升温至85℃~90℃保持0.5~1h,使充分混匀融合;其余步骤同实施例3。
实施例7
一种红枣生姜浓浆,含有生姜8%、薄荷4%、低聚异麦芽糖1.5%、低聚果糖1%、低聚半乳糖0.5%、蜂蜜5%、果葡糖浆10%;还含有阿胶8%、酸枣仁10%、枸杞10%、山楂1、山药2%、栀子1%、茯苓1%、维生素B30.1%、维生素C0.05%、维生素D30.000005%中的一种或几种;余量为浓缩枣汁,总量为100%。

一种红枣生姜浓浆,含有生姜92%、薄荷6%、低聚异麦芽糖2.5%、蜂蜜10%、果葡糖浆8%,还含有羧甲基纤维素钠0.3%、黄原胶0.5%、β-环状糊精1%,还含有阿胶5%、酸枣仁6%、枸杞5%、山楂5%、山药2%、栀子3%、茯苓1%、维生素A0.005%、维生素B30.1%、维生素C0.05%、维生素D30.000005%、牛磺酸1.5%中的一种或几种,余量为浓缩枣汁,总量为100%。
一种红枣生姜浓浆生产工艺,包括以下步骤:调配,按配方称取原料;将浓缩枣汁加热至55℃~60℃,加入生姜汁、薄荷汁、益生元、蜂蜜、果葡糖浆搅拌均匀,升温至85℃~95℃保持0.5~2h,使充分混匀融合;再加入稳定剂羧甲基纤维素钠、黄原胶、β-环状糊精;再加入阿胶、酸枣仁、枸杞、山楂、山药、栀子、茯苓、维生素A、维生素B3、维生素C、维生素D3、牛磺酸中的一种或几种,搅拌均匀,于85℃~95℃保持0.5~1h,使其充分混匀融合;其余步骤同实施例3。
Claims (1)
1.一种红枣生姜浓浆生产工艺,包括以下步骤:
(1)调配:按配方称取原料,配方为:生姜1%~12%、薄荷1%~10%、益生元0.5%~5%、蜂蜜1%~10%、果葡糖浆3%~15%;所述益生元为低聚异麦芽糖、低聚果糖、低聚半乳糖中的一种或几种;还含有阿胶1%~15%、酸枣仁1%~15%、枸杞1%~10%中的一种或几种;含有山楂1%~10%、山药1%~6%、栀子1%~5%、茯苓1%~5%中的一种或几种;含有维生素A0.00005%~0.005%、维生素B30.005%~0.1%、维生素C0.05%~0.5%、维生素D30.000005%~0.00002%、牛磺酸0.1%~1.5%中的一种或几种;还含有钙0.5%~1%、铁0.005%~0.5%、锌0.005%~0.5%中的一种或几种;还含有稳定剂:羧甲基纤维素钠(CMC)、黄原胶、β-环状糊精;所述稳定剂用量:羧甲基纤维素钠0.2%~0.5%、黄原胶0.1%~0.5%、β-环状糊精0.5%~2%;余量为浓缩枣汁,总量为100%;
将浓缩枣汁加热至55℃~65℃,加入生姜汁、薄荷汁、益生元、蜂蜜、果葡糖浆搅拌均匀,升温至85℃~95℃保持0.5~2h,使充分混匀融合;再加入阿胶、酸枣、枸杞中的一种或几种;再加入山楂汁、山药汁、栀子汁、茯苓汁中的一种或几种;再加入维生素A、维生素B3、维生素C、维生素D3、牛磺酸中的一种或几种;再加入矿物质钙、铁、锌中的一种或几种;再加入稳定剂羧甲基纤维素钠、黄原胶、β-环状糊精;搅拌均匀,于85℃~95℃保持0.5~1h,使其充分混匀融合;
所述生姜汁、薄荷汁、酸枣仁汁、枸杞汁、山楂汁、山药汁、栀子汁、茯苓汁制备方法为,分别以生姜、薄荷、酸枣仁、枸杞、山楂、山药、栀子、茯苓为原料,采用超声提取、三效旋转流降膜浓缩制得;
所述超声提取方法为,将生姜、薄荷、酸枣仁、枸杞、山楂、山药、栀子、茯苓破碎或粉碎,过20目筛,加5~10倍水,于85℃~95℃,超声浸提二次,每次1~2h,超声频率60~80khz;将提取液合并,采用三效旋转流降膜浓缩至45~65°Bx,而得;
所述三效旋转流降膜浓缩为,一效温度控制在90℃~95℃,真空度-0.02Mpa,二效温度控制在80℃~85℃,真空度-0.06Mpa,三效温度控制在55℃~60℃,真空度-0.09Mpa;
(2)胶磨:用胶体磨研磨;胶磨前确保料液的固形物含量70~75°Bx;调整磨盘刻度开始胶磨;胶磨完成后,把磨盘调松,用冷水冲洗干净,以备下次使用;
(3)杀菌:将胶磨后浆液升温杀菌,温度80~90℃,时间30~35min;或采用超高温瞬时杀菌工艺:温度120~135℃,时间10~30s;
(4)静置:杀菌后浆液静置30~35min,保持温度90~92℃;罐内的蒸气可从安全阀中放出;
(5)灌装:灌装温度80~85℃;灌装浓度70~75%;
(6)冷却:灌装后浓浆在常温下至少放置15min,然后,再水浴冷却,水浴温度25~30℃;
(7)包装。
