本发明所属食品与保健食品研究开发技术领域。本发明涉及一种高丽红参芝麻抗衰老功能食品的制备方法。将高丽红参进行水提取,得到水提取液,浓缩;将红参浓缩液,加入乳酸菌发酵,得到乳酸菌发酵红参提取物;将海星、扇贝、芝麻、小麦胚芽通过胶体磨或振动磨或气流磨粉碎为微米级粉末;将木糖醇与发酵红参提取物和海星、扇贝、芝麻、小麦胚芽微米级颗粒混合,过筛,干燥,分装,即为高丽红参抗衰老功能食品,制备冲剂或胶囊剂或片剂或饮料。

技术领域
本发明所属食品与保健食品研究开发技术领域。本发明涉及一种高丽红参芝麻抗衰老功能食品的制备方法。本发明产品具有补气、抗衰老、补脑、增强记忆力、强身健体的功能。
背景技术
1高丽红参系由产自韩国的高丽鲜参经蒸、烘烤加工而成,在加工高丽红参过程中,有新的抗癌活性成分产生。高丽红参不凉也不热,属于温性;高丽参虽性温但补性强,益气助火。高丽参又分白参和红参,脾虚火旺者宜用白参,因“生用气凉,微苦补阴”;脾虚肺怯者宜用红参,“熟用气温,味甘补阳”。总体来说,高丽参更适合老年气虚症状明显的人服用,能强壮体质,增强免疫力。
高丽红参的功效:
(1)益智健脑:对记忆力减退和运动协调能力下降的人以及经常喝酒或接触带乙醇成分的食物、药物的人,高丽红参具有提高脑力工作能力、增强记忆力和改善脑缺血性障碍的功效
(2)镇痛:一些专家通过做传感神经细胞试验发现,高丽参对身体各种疼痛症状都有所帮助。
(3)防癌和抗癌:高丽红参的皂苷成分和非皂苷成分有抑制多种癌细胞的增殖活性,同时也可抑制癌细胞转移。另外,高丽红参与抗癌剂同服用,抗癌效果要好于单独用抗癌剂(丝裂霉素)。这是因为肿瘤化疗中癌细胞易形成耐受,高丽红参与抗癌剂同服用,增强对癌细胞的杀伤力、减轻抗癌剂的副作用。
(4)增强免疫力:高丽红参提取物可恢复因服用具有免疫毒性的抗癌剂(丝裂霉素)而下降的细胞性免疫反应,尤其乙醚提取物可激活或增强细胞性免疫,及自然杀伤细胞的活性,对提高免疫力有很大的功效。
(5)控制糖尿病:高丽红参含有促进胰岛素分泌和类似胰岛素作用的物质,其中人参皂苷能改善高血糖,有效地控制糖尿病的发生。
(6)健肝:高丽参成分中有抗肝炎活性,具有解毒、保护肝脏及促进肝再生、恢复的作用。此外,高丽红参还有解酒、消除宿醉的作用。
(7)调节血压:高丽红参具有扩张血管作用,能改善血液循环,其中的皂苷成分通过促进血管内皮细胞释放一氧化氮,可达到降血压作用。
(8)抗疲劳及抗压:经研究发现,持续服用高丽红参可以提高运动能力和缓解疲劳,对促进运动员疲劳累积的恢复和预防运动性贫血有很大帮助;此外,高丽红参还可以增强对低温(5℃、O℃、-10℃)及高温(35℃)等不利环境的耐受力,通过对压力或环境变化进行精妙调节,提高抗压能力,维持机体稳定性。
(9)改善女性更年期障碍:据调查,有更年期障碍症状的女性在服用高丽红参后,有80%的人承认服用高丽红参后症状明显改善。专家称,这些女性如根据症状来调整用量,还可提高疗效。
(10)改善男性性功能障碍:高丽红参可防止因压力导致的男性性功能障碍。经临床试验,勃起障碍患者(90人)服用高丽红参后,在勃起程度、性欲及满意度等方面都有所改善。
(11)抗氧化及抗衰老:高丽红参具有抑制有害活性氧的增多和脂类过氧化的抗氧化效果。
2海星海盘车含海星皂苷多种,该皂类有毒,从中分离出皂苷A和B两种物质。另一种皂苷可水解出葡萄糖、木糖、鼠李糖等。海星类动物含酸性粘多粮,为一种不可透析的大分子物质。罗氏海盘车(asteriasrollestoni)的生殖腺中,经测定,含有无机元素Zn、Mn、Al、Cd、Fe、Mg、Ca、Se、Pb、Cu、Ni、Ti、Co、Li、Cr等,以及多种氨基酸。罗盘车壳含多种微量元素:Zn、Mn、Cd、Fe、Pb、Cu、Ni、Ti、Co、Li、Cr、Te、As、Ba、Bi、Sb、Si、Ge、Nb、Sn、Be、Zr、Cs、TL、Rb、Sr、Ca等;并含氨基酸,其中苏氨酸、缬氨酸、甲硫氨酸约占30%,蛋白质总含量为19.66%。海星类均含有一种逃逸反应物质,为一种氨基多糖类。海星粘多糖及海星皂有抗癌活性。海星制剂对小鼠肝癌有抑制作用,并可以提高CTX和ADM的化疗时的疗效,提高其对肿瘤的抑制率。其皂苷类抗癌作用在于细胞样作用。海星提取液可对抗泼泥松引起的小鼠脾脏减轻和抑制小鼠肝脏氧化脂反应。长棘海星还可以延长小鼠常压缺氧状态下的生存率。海星中的酸性粘多糖有调节免疫功能作用。罗氏海盘车能明显提高小鼠负重游泳能力,提高小鼠腺体的总重量,提高小鼠全血SOD的含量;增加小鼠的体重;对小鼠阳虚造型者,具有明显的壮阳作用;可促进小鼠睾丸的发育,有助于缓解阳虚小鼠的肌肉萎缩。
近年来,海星的药用价值逐步被重视,不少海洋药物或食品企业开发了海星营养素胶囊等产品,对祛病强身有显著的功效。
3扇贝扇贝是扇贝属的双壳类软体动物的代称,约有400余种。该科的60余种是世界各地重要的海洋渔业资源之一,壳、肉、珍珠层具有极高的利用价值。扇贝又名海扇,其肉质鲜美,营养丰富,它的闭壳肌干制后即是“干贝”,被列入八珍之一。贝类软体动物中,含一种具有降低血清胆固醇作用的代尔太7-胆固醇和24-亚甲基胆固醇,它们兼有抑制胆固醇在肝脏合成和加速排泄胆固醇的独特作用,从而使体内胆固醇下降。它们的功效比常用的降胆固醇的药物谷固醇更强。人们在食用贝类食物后,常有一种清爽宜人的感觉,这对解除一些烦恼症状无疑是有益的。
4芝麻芝麻(学名:Sesamumindicum)脂麻科,是胡麻的籽种。芝麻是我国四大食用油料作物的佼佼者,是我国主要油料作物之一。芝麻产品具较高的应用价值。它的种子含油量高达61%。我国自古就有许多用芝麻和芝麻油制作的名特食品和美味佳肴,一直著称于世。
(1)芝麻含有大量的脂肪和蛋白质,还有膳食纤维、维生素B1.B2.尼克酸、维生素E、卵磷脂、钙、铁、镁等营养成分;芝麻中的亚油酸有调节胆固醇的作用。
(2)芝麻中含有丰富的维生素E,能防止过氧化脂质对皮肤的危害,抵消或中和细胞内有害物质游离基的积聚,可使皮肤白皙润泽,并能防止各种皮肤炎症。
(3)芝麻还具有养血的功效,可以治疗皮肤干枯、粗糙、令皮肤细腻光滑、红润光泽。
芝麻味甘、性平,入肝、肾、肺、脾经;有补血明目、祛风润肠、生津通乳、益肝养发、强身体,抗衰老之功效;可用于治疗身体虚弱、头晕耳鸣、高血压、高血脂、咳嗽、身体虚弱、头发早白、贫血萎黄、津液不足、大便燥结、乳少、尿血等症。
(4)抗衰老芝麻中含量最多,成为主要成分的维生素e,又常被人们称为防止衰老的维生素。它对改善血液循环、促进新陈代谢有很好的效果。还有不饱和脂肪酸的亚油酸,它有调节胆固醇的功能,因而又被称为“永葆青春的营养源”。人体试验结果证实,芝麻素被血液输送至肝脏时,可代谢成抗氧化物质,其抗氧化效果大大强于维生素E,而且熟芝麻的抗氧化效果最好。常吃芝麻,还能清除细胞内衰老物质“自由基”,保持机体活力。
(5)抗动脉硬化和高血压芝麻中含有的丰富的卵磷脂和亚油酸,不但可治疗动脉粥样硬化,补脑,增强记忆力,而且有防止头发过早变白、脱落及美容润肤、保持和恢复青春活力的作用。
除芝麻外,含有亚麻酸的食品虽然很多,但都不如芝麻的效果好。之是因为芝麻同时含有亚麻酸和维生素e,两者同时存在,不但防止了亚麻酸容易氧化的缺点,有起到协同作用,加强了对动脉硬化和高血压的治疗效果。由于芝麻油有降低胆固醇的作用,故血管硬化,高血压患者食之有益。
5小麦胚芽小麦胚芽又称麦芽粉、胚芽,金黄色颗粒状。麦芽是小麦发芽及生长的器官之一,约占整个麦粒的2.5%,营养价值非常的高。胚芽是小麦生命的根源,是小麦中营养价值最高的部分。
小麦胚芽营养丰富,富含蛋白质、多种氨基酸、维生素B1、维生素B2、膳食纤维、铁、钾、锌以及含硫抗氧化物——谷胱甘肽等营养成分。据营养学家分析,小麦胚芽的蛋白质可与鸡蛋相媲美,50克小麦胚芽的蛋白质含量相当于4个鸡蛋的蛋白质含量。小麦胚芽含有8种人体必需的氨基酸,且比例合理,它所含维生素B1、维生素B2、铁、钾的量远远超过面粉。小麦胚芽制成的小麦胚芽油中维生素E含量是植物油的冠军,被冠以“长寿维生素宝库”的名字。
《本草纲目》记载,麦胚可以治疗心悸、失眠,养心安神,养肝气,止泻,降压,健胃。现代研究表明可以在以下几个方面有特殊功能。
(1)优质蛋白质重要来源。小麦胚芽粉可代替脱脂奶粉、鸡蛋蛋白成分,广泛用于面包、饼干、糕点、并可以产生特殊的清香味,是中老年人、儿童、孕妇、体弱者理想补品。
(2)护肤美容。小麦胚芽中的全价维生素E(αβγδ四种类型均具有)在护肤美容中的作用是不可忽视的,与维生素C协同作用,减少皮肤感染,滋润皮肤中的胶原纤维和弹力纤维,改善维护皮肤弹性,促进皮肤内血液循环。使皮肤看起来更加细腻、富有弹性。
(3)抗氧化,延缓衰老。小麦胚芽中的谷胱甘肽能催化有机过氧化物还原,其抗氧化能力比维生素E强500倍,是一种延缓衰老的有效功能因子。
(4)清除胆固醇,预防脑血管疾病。小麦胚芽中的亚麻酸被誉为“血管清道夫”,使血管保持“年轻”。小麦胚芽中的粗纤维、胆碱也有利于体内胆固醇的清除,对防止动脉粥样硬化和冠心病大有裨益。
(5)抗肿瘤作用。小麦胚芽中含有的小麦凝集素具有抗微生物和抗诱变等多种生物效应,与脂肪细胞反应,有类似胰岛素的作用,能刺激葡萄糖氧化酶降低血糖含量,能诱导巨噬细胞溶解肿瘤细胞。维生素E的解除重金属(如镉、铅等)毒性的作用和抑制亚硝酸化反应功能,使其对各种肿瘤均有一定的防治效果。
(6)抗疲劳,增加机体免疫功。小麦胚芽中二十八烷醇是世界公认的抗疲劳功能性物质,具有良好的生物降解性,具有增强耐力、精力和体力,提高反应灵敏性和应激能力。麦胚凝集素可以影响肠道及消化细胞的生理形态和功能,增强免疫细胞的免疫活性。
(7)整合解毒,保护肝脏。维生素E有助于肝脏解除食物中防腐剂、增白剂、残留杀虫剂、化肥、工业毒素等的毒性,谷胱甘肽易与碘乙酸、芥子气、一氧化碳、有机溶剂、铅、汞、砷等重金属盐络合,参与生物转化作用,从而将有毒物质转化为无害物质,排除体外。
(8)保护大脑,增加记忆力。小麦胚芽中的丰富胆碱通过血液循环进入脑血管与醋酸结合,形成乙酰胆碱,乙酰胆碱在大脑含量越高,信息传递越快,记忆力越强。谷胱甘肽能有效提高脑细胞活力,促进婴幼儿发育。
发明内容
1、一种高丽红参芝麻抗衰老功能食品的制备方法,其特征如下:
(1)原辅料重量为高丽红参6-9g、海星9-15g、扇贝9-15g、芝麻6-9g、小麦胚芽6-9g、乳酸菌0.3-0.9g、葡萄糖12-18g、木糖醇3-6g;
(2)将(1)中的高丽红参进行水提取3-4次,每次加水量为红参重量的6-8倍,时间为每次3-4h,60-80℃,得到水提取液,合并,浓缩至每毫升水提取液相当于含有1g红参的量;
(3)将(2)中的红参浓缩液,加入葡萄糖12-18g和乳酸菌0.3-0.9g发酵72-96h,得到乳酸菌发酵红参提取物,浓缩,干燥,混匀;
(4)将(1)中的海星、扇贝、芝麻、小麦胚芽通过胶体磨或振动磨或气流磨粉碎为微米级粉末,干燥、混匀;
(5)将(1)中的木糖醇与(3)中的发酵红参提取物和(4)中海星、扇贝、芝麻、小麦胚芽微米级粉末混合,过筛,干燥,分装,即为高丽红参抗衰老功能食品,制备冲剂或胶囊剂或片剂或饮料。
具体实施方式
本发明所述的涉及一种高丽红参芝麻抗衰老功能食品的制备方法包括以下实施例,下面的实施例可进一步说明本发明,但不以任何方式限制本发明。
实施例1:
1、一种高丽红参芝麻抗衰老功能食品的制备方法,其特征如下:
(1)原辅料重量为高丽红参6g、海星9g、扇贝9g、芝麻6g、小麦胚芽6g、乳酸菌0.3g、葡萄糖12g、木糖醇3g;
(2)将(1)中的高丽红参进行水提取3次,每次加水量为红参重量的6倍,时间为每次3h,60℃,得到水提取液,合并,浓缩至每毫升水提取液相当于含有1g红参的量;
(3)将(2)中的红参浓缩液,加入葡萄糖12g和乳酸菌0.3g发酵72h,得到乳酸菌发酵红参提取物,浓缩,干燥,混匀;
(4)将(1)中的海星、扇贝、芝麻、小麦胚芽通过胶体磨或振动磨或气流磨粉碎为微米级粉末,干燥、混匀;
(5)将(1)中的木糖醇与(3)中的发酵红参提取物和(4)中海星、扇贝、芝麻、小麦胚芽微米级粉末混合,过筛,干燥,分装,即为高丽红参抗衰老功能食品,制备冲剂或胶囊剂或片剂或饮料。
实施例2:
1、一种高丽红参芝麻抗衰老功能食品的制备方法,其特征如下:
(1)原辅料重量为高丽红参9g、海星15g、扇贝15g、芝麻9g、小麦胚芽9g、乳酸菌0.9g、葡萄糖18g、木糖醇6g;
(2)将(1)中的高丽红参进行水提取4次,每次加水量为红参重量的8倍,时间为每次4h,80℃,得到水提取液,合并,浓缩至每毫升水提取液相当于含有1g红参的量;
(3)将(2)中的红参浓缩液,加入葡萄糖18g和乳酸菌0.9g发酵72-96h,得到乳酸菌发酵红参提取物,浓缩,干燥,混匀;
(4)将(1)中的海星、扇贝、芝麻、小麦胚芽通过胶体磨或振动磨或气流磨粉碎为微米级粉末,干燥、混匀;
(5)将(1)中的木糖醇与(3)中的发酵红参提取物和(4)中海星、扇贝、芝麻、小麦胚芽微米级粉末混合,过筛,干燥,分装,即为高丽红参抗衰老功能食品,制备冲剂或胶囊剂或片剂或饮料。

(1)原辅料重量为高丽红参6-9g、海星9-15g、扇贝9-15g、芝麻6-9g、小麦胚芽6-9g、乳酸菌0.3-0.9g、葡萄糖12-18g、木糖醇3-6g;
(2)将(1)中的高丽红参进行水提取3-4次,每次加水量为红参重量的6-8倍,时间为每次3-4h,60-80℃,得到水提取液,合并,浓缩至每毫升水提取液相当于含有1g红参的量;
(3)将(2)中的红参浓缩液,加入葡萄糖12-18g和乳酸菌0.3-0.9g发酵72-96h,得到乳酸菌发酵红参提取物,浓缩,干燥,混匀;
(4)将(1)中的海星、扇贝、芝麻、小麦胚芽通过胶体磨或振动磨或气流磨粉碎为微米级粉末,干燥、混匀;
(5)将(1)中的木糖醇与(3)中的发酵红参提取物和(4)中海星、扇贝、芝麻、小麦胚芽微米级粉末混合,过筛,干燥,分装,即为高丽红参抗衰老功能食品,制备冲剂或胶囊剂或片剂或饮料。
