本发明的酒曲制作的白酒,口味浓香醇厚,口感好;具有通筋活血的作用,可以有效祛除风湿、类风湿等疾病;适量饮用具有美容养颜,促进血液循环,防止动脉硬化等功效。
本发明酒曲的制备方法以及白酒的制作方法简单易行,成本低。

具体实施方式
需要说明的是,在不冲突的情况下,本申请中的实施例及实施例中的特征可以相互组合。下面将结合实施例来详细说明本发明。
本发明的优选实施例提供了一种酒曲,原料包括以重量份计的下列组分:公丁1~1.6份,母丁0.3~1.5份,细辛0.8~2份,南星0.5~2份,苏子0.8~2份,麻黄0.5~1.5份,川芎1~3份,草芎0.3~1.8份,香付1~2份,红花1~2份,草果0.6~2.4份,马钱子0.8~2.5份,麦芽1.5~3.5份,桂子1~3.5份,皂角0.3~1.8份,菖朋0.8~2.5份,巴豆1.2~3.6份,荆芥0.8~2份,甘草1.4~2.8份,茵陈0.3~1.8份,三七0.6~2.3份,肉桂0.8~3份,桂枝0.8~3份,甘松0.8~2.5份,苏梗0.5~1.5份,独活0.4~2.2份,砂仁0.3~1.8份,防风0.3~1.8份,紫苏0.6~1.5份,灵芝0.1~1.5份,粮食800~1200份,粮食为大米、小麦、稻谷中的至少一种。
上述酒曲由纯中草药制作而成,营养丰富,具有滋补、强身健体的作用,同时增加了酒曲所制得的白酒的香气,使口感香酵可口。本发明的酒曲原料取材容易,并且通过优化酒曲的配方和制备工艺,得到的酒曲保质时间长,不易霉烂。
优选地,酒曲的原料包括以重量份计的下列组分:公丁1.2~1.6份,母丁0.6~1.2份,细辛1.3~1.8份,南星1~2份,苏子1~2份,麻黄0.8~1.2份,川芎1.5~2.5份,草芎0.5~1.5份,香付1~2份,红花1~2份,草果1.5~2.4份,马钱子1.8~2.2份,麦芽1.5~3.5份,桂子1.6~2.5份,皂角0.6~1.4份,菖朋1.5~2.5份,巴豆1.5~2.6份,荆芥1~2份,甘草1.6~2.5份,茵陈0.6~1.4份,三七1.2~2份,肉桂1.2~2份,桂枝1.5~2.3份,甘松1~2份,苏梗0.5~1.5份,独活0.6~1.5份,砂仁0.6~1.5份,防风0.5~1.2份,紫苏0.6~1.5份,灵芝0.1~1份,粮食800~1200份,粮食为大米、小麦、稻谷中的至少一种。
优选地,酒曲的原料包括以重量份计的下列组分:公丁1.4份,母丁1份,细辛1.5份,南星1.5份,苏子1.5份,麻黄1份,川芎2份,草芎1份,香付1.5份,红花1.5份,草果2份,马钱子2份,麦芽2.5份,桂子2份,皂角1份,菖朋2份,巴豆2份,荆芥1.5份,甘草2份,茵陈1份,三七1.5份,肉桂1.5份,桂枝2份,甘松1.5份,苏梗1份,独活1份,砂仁1份,防风1份,紫苏1份,灵芝0.5份,粮食1000份,粮食为大米、小麦、稻谷中的至少一种。上述酒曲的原料配方保质时间最长,所制得的白酒口感最好。
根据本发明的另一方面,还公开了上述酒曲的制备方法,包括以下步骤:将原料中除粮食以外的各组分分别粉碎得到种曲干粉,将粮食浸泡后粉碎得到粮食粉末;将种曲干粉与粮食粉末按配比混合得到混合粉,将混合粉中加入水制得酒饼,将酒饼送入曲室培养直至成熟,即得到酒曲。上述酒曲的制备方法简单易行,条件易控,成本很低。
优选地,混合粉中加入水制得酒饼的步骤中,控制酒饼的含水量以重量百分比计为40%~55%。上述酒饼的含水量会直接影响到酒饼的发酵以及得到的酒曲的质量,因此含水量要控制在上述范围内。
优选地,酒饼送入曲室培养直至成熟的步骤中,曲室的温度控制在28℃~31℃,培养时间为40h~48h。上述曲室的温度不宜过低或者过高,以免影响酒饼的发酵。曲室的温度低于28℃,酒饼上霉菌菌丝不生长或生长缓慢,同时也会影响后续酵母的繁殖速度;曲室的温度高于31℃,也会抑制酒饼上霉菌的生长以及后续酵母的繁殖。
优选地,酒饼送入曲室培养直至成熟的步骤中,酒饼的培养时间小于24h时,酒饼的温度控制在33℃~37℃;酒饼的培养时间为24h以上时,酒饼的温度控制在33℃~35℃。上述酒饼在培养发酵的过程中,需要控制其温度,以免影响霉菌的生长以及酵母的繁殖。
上述酒饼送入曲室培养,曲室的温度为28℃~31℃,培养20h~24h,霉菌菌丝生长旺盛,酒饼温度控制在33℃~37℃;24h后,为了促使酒饼中酵母繁殖,曲室的温度控制在28℃~31℃,酒饼的温度控制在33℃~35℃,保存24h;然后降低酒饼的温度,酒曲成熟。将成熟的酒曲取出后在烘房干燥或者晒干,贮藏备用。
根据本发明的另一方面,还公开了利用上述酒曲制作白酒的方法,包括以下步骤:将酒醅原料蒸熟摊晾,按照酒醅原料与酒曲的重量比100∶0.4~0.8下曲,控制温度20℃~40℃下发酵,然后入坛发酵,即得到白酒。
上述利用本优选实施例的酒曲制作白酒的方法,简单易控,成本较低;制备得到的白酒口味浓香醇厚,口感好;具有通筋活血的作用,可以有效祛除风湿、类风湿等疾病;适量饮用具有美容养颜,促进血液循环,防止动脉硬化等功效。
优选地,酒醅原料为稻谷、高粱、玉米中的至少一种。
优选地,控制温度20℃~40℃下发酵的步骤中,发酵时间为24h~30h。上述发酵时间过长或者过短,会影响白酒的口感和保健效果。
优选地,入坛发酵的步骤中,发酵时间为5天~9天。上述发酵时间过长或者过短,会影响白酒的口感和保健效果。
实施例
以下实施例中各化学试剂均为市售。
实施例1
本实施例的酒曲原料包括以重量份计的下列组分:公丁1.4份,母丁1份,细辛1.5份,南星1.5份,苏子1.5份,麻黄1份,川芎2份,草芎1份,香付1.5份,红花1.5份,草果2份,马钱子2份,麦芽2.5份,桂子2份,皂角1份,菖朋2份,巴豆2份,荆芥1.5份,甘草2份,茵陈1份,三七1.5份,肉桂1.5份,桂枝2份,甘松1.5份,苏梗1份,独活1份,砂仁1份,防风1份,紫苏1份,灵芝0.5份,大米1000份。
上述酒曲的制备方法,包括以下步骤:将原料中除大米以外的各组分分别粉碎得到种曲干粉,将大米浸泡4h后粉碎得到米粉;将种曲干粉与米粉按配比混合得到混合粉,将混合粉中加入水拌匀制得酒饼,酒饼表面撒混合粉避免酒饼粘连,控制酒饼的含水量为46%。将酒饼送入曲室培养,曲室的温度控制在30℃左右,培养24h,霉菌菌丝生长旺盛,酒饼温度控制在37℃以下。24h以后为了促使酒饼中酵母繁殖,将酒饼的温度控制在35℃以下再保存24h,然后将酒饼温度降低,酒饼成熟,即得到酒曲。成熟的酒曲烘房干燥或者晒干后贮藏备用。
实施例2
本实施例的酒曲原料包括以重量份计的下列组分:公丁1.6份,母丁0.6份,细辛1.8份,南星2份,苏子1份,麻黄0.8份,川芎2.5份,草芎1份,香付2份,红花1份,草果2.4份,马钱子1.8份,麦芽3.5份,桂子2.5份,皂角1.4份,菖朋2.5份,巴豆2.6份,荆芥1份,甘草2.5份,茵陈0.6份,三七2份,肉桂2份,桂枝1.5份,甘松2份,苏梗1.5份,独活1.5份,砂仁1.5份,防风1份,紫苏0.6份,灵芝1份,大米1000份。
本实施例酒曲的制备方法与实施例1相同。
实施例3
本实施例的酒曲原料包括以重量份计的下列组分:公丁1份,母丁0.3份,细辛2份,南星0.5份,苏子2份,麻黄0.5份,川芎3份,草芎1.8份,香付2份,红花2份,草果0.6份,马钱子2.5份,麦芽2份,桂子3.5份,皂角1.8份,菖朋2.5份,巴豆3.6份,荆芥2份,甘草1.4份,茵陈1.8份,三七2.3份,肉桂3份,桂枝3份,甘松2.5份,苏梗1.5份,独活2.2份,砂仁1.8份,防风1.8份,紫苏1.5份,灵芝1.5份,大米1200份。
本实施例酒曲的制备方法与实施例1相同。
将实施例1至3制备的酒曲分别通过以下步骤酿制白酒:将稻谷和高粱蒸熟摊晾至28℃,按照稻谷和高粱与酒曲的重量比100∶0.8下曲,料曲拌匀,摊晾发酵,控制发酵温度35℃,温度过高时要及时翻动,发酵时间控制在24h。然后入坛发酵7天,便可吊酒,即得到白酒。吊酒时接头去尾,有助于酒的质量。
利用实施例1至3制备的酒曲酿制的白酒口味浓香醇厚,口感好;具有通筋活血的作用,可以有效祛除风湿、类风湿等疾病;适量饮用具有美容养颜,促进血液循环,防止动脉硬化等功效。

1.一种酒曲,其特征在于,原料包括以重量份计的下列组分:
公丁1~1.6份,母丁0.3~1.5份,细辛0.8~2份,南星0.5~2份,苏子0.8~2份,麻黄0.5~1.5份,川芎1~3份,草芎0.3~1.8份,香付1~2份,红花1~2份,草果0.6~2.4份,马钱子0.8~2.5份,麦芽1.5~3.5份,桂子1~3.5份,皂角0.3~1.8份,菖朋0.8~2.5份,巴豆1.2~3.6份,荆芥0.8~2份,甘草1.4~2.8份,茵陈0.3~1.8份,三七0.6~2.3份,肉桂0.8~3份,桂枝0.8~3份,甘松0.8~2.5份,苏梗0.5~1.5份,独活0.4~2.2份,砂仁0.3~1.8份,防风0.3~1.8份,紫苏0.6~1.5份,灵芝0.1~1.5份,粮食800~1200份,所述粮食为大米、小麦、稻谷中的至少一种。
2.根据权利要求1所述的酒曲,其特征在于,原料包括以重量份计的下列组分:
公丁1.2~1.6份,母丁0.6~1.2份,细辛1.3~1.8份,南星1~2份,苏子1~2份,麻黄0.8~1.2份,川芎1.5~2.5份,草芎0.5~1.5份,香付1~2份,红花1~2份,草果1.5~2.4份,马钱子1.8~2.2份,麦芽1.5~3.5份,桂子1.6~2.5份,皂角0.6~1.4份,菖朋1.5~2.5份,巴豆1.5~2.6份,荆芥1~2份,甘草1.6~2.5份,茵陈0.6~1.4份,三七1.2~2份,肉桂1.2~2份,桂枝1.5~2.3份,甘松1~2份,苏梗0.5~1.5份,独活0.6~1.5份,砂仁0.6~1.5份,防风0.5~1.2份,紫苏0.6~1.5份,灵芝0.1~1份,粮食800~1200份,所述粮食为大米、小麦、稻谷中的至少一种。
3.根据权利要求1所述的酒曲,其特征在于,原料包括以重量份计的下列组分:
公丁1.4份,母丁1份,细辛1.5份,南星1.5份,苏子1.5份,麻黄1份,川芎2份,草芎1份,香付1.5份,红花1.5份,草果2份,马钱子2份,麦芽2.5份,桂子2份,皂角1份,菖朋2份,巴豆2份,荆芥1.5份,甘草2份,茵陈1份,三七1.5份,肉桂1.5份,桂枝2份,甘松1.5份,苏梗1份,独活1份,砂仁1份,防风1份,紫苏1份,灵芝0.5份,粮食1000份,所述粮食为大米、小麦、稻谷中的至少一种。
4.权利要求1至3中任一项所述的酒曲的制备方法,其特征在于,包括以下步骤:
将原料中除粮食以外的各组分分别粉碎得到种曲干粉,将粮食浸泡后粉碎得到粮食粉末;
将所述种曲干粉与所述粮食粉末按配比混合得到混合粉,在所述混合粉中加入水制得酒饼,将所述酒饼送入曲室培养直至成熟,即得到所述酒曲。
5.根据权利要求4所述的酒曲的制备方法,其特征在于,
所述混合粉中加入水制得酒饼的步骤中,控制所述酒饼的含水量以重量百分比计为40%~55%。
6.根据权利要求4所述的酒曲的制备方法,其特征在于,
所述酒饼送入曲室培养直至成熟的步骤中,曲室的温度控制在28℃~31℃,培养时间为40h~48h。
7.根据权利要求4所述的酒曲的制备方法,其特征在于,
所述酒饼送入曲室培养直至成熟的步骤中,所述酒饼的培养时间小于24h时,所述酒饼的温度控制在33℃~37℃;所述酒饼的培养时间为24h以上时,所述酒饼的温度控制在33℃~35℃。
8.利用权利要求1至3中任一项所述的酒曲或者权利要求4至7中任一项所述的制备方法制备得到的酒曲制作白酒的方法,其特征在于,包括以下步骤:
将酒醅原料蒸熟摊晾,按照酒醅原料与酒曲的重量比100∶0.4~0.8下曲,控制温度20℃~40℃下发酵,然后入坛发酵,即得到所述白酒。
9.根据权利要求8所述的制作白酒的方法,其特征在于,
所述酒醅原料为稻谷、高粱、玉米中的至少一种。
10.根据权利要求8所述的制作白酒的方法,其特征在于,
所述控制温度20℃~40℃发酵的步骤中,发酵时间为24h~30h;和/或
所述入坛发酵的步骤中,发酵时间为5天~9天。
