Abstract
一种富硒酵母豆粉,是以黄豆为主要原料,先将黄豆制成豆浆,加入有机硒,再用酵母发酵豆浆并吸收有机硒中的硒元素成为富硒酵母,接着过滤去渣,通过巴氏灭菌后加入适量的糖,最后浓缩干燥而成。通过实施本发明,豆浆经过发酵后干燥制成粉状后,比普通豆浆粉所含的营养成分要高出1倍以上,蛋白质亦增加1倍以上,人体更容易吸收消化。豆浆经过发酵后,微小颗粒的粗蛋白、粗纤维都分解转化为分子更小的氨基酸和酶等营养物质,去渣时此营养物质都留在了豆浆中,因此等量的原料,经过发酵的豆浆浓缩干燥后所得的粉量更多,而且口感更细腻,豆香更醇厚。再者,豆浆经过富硒酵母发酵后,所得的酵母豆浆粉具有保健作用,亦是药食同源的完美结合。
Description
技术领域
本发明涉及一种具有养生保健功效的豆浆粉的生产方法,具体是一种富硒酵母豆粉的生产方法。
背景技术
豆浆粉是指以大豆为主要原料制成粉状的即冲即饮速食饮品,是在豆浆的基础上加工而成,食用安全,健康、营养、便捷,老少皆宜。黄豆有“豆中之王”之称,被人们叫做“植物肉”、“绿色的乳牛”,营养价值最丰富。干黄豆中含高品质的蛋白质约40%,为其他粮食之冠。现代营养学研究表明,一斤黄豆相当于二斤多瘦猪肉,或三斤鸡蛋,或十二斤牛奶的蛋白质含量。脂肪含量也在豆类中占首位,出油率达20%;此外,豆浆含有丰富的植物蛋白和磷脂,还含有维生素A、B、D、E及钙、磷、铁等微量元素。所以,豆浆营养非常丰富,且易于消化吸收。
豆浆是中国人民喜爱的一种饮品,又是一种老少皆宜的营养食品,在欧美享有“植物奶”的美誉。此外,豆浆还是一种具有防治高血脂、高血压、动脉硬化、缺铁性贫血、气喘等疾病的理想食品。
传统的豆浆粉生产方法是:1、脱皮去除黄豆中的机械杂质、灰尘和黄豆胚芽,以及外皮里含有的对人体有害的嘌呤碱等成分。2、泡豆磨浆过滤去渣3、采用高温杀菌脱臭技术,除去了大豆中的豆腥味及苦涩味,杀死大豆从土壤中带入的虫卵及有害物质。4、干燥匀质得成品
这种生产方法工艺简单,其不足之处是生产出来的豆浆粉的口感较差、黄豆的营养成份利用率低,保健效果相对较差。
此外,大豆中的蛋白质属于植物蛋白,不利于人体的消化吸收。一些肾病、或其是肾功能不全的人,其肾脏排泄废物的功能会比较差,而普通豆浆粉冲成的豆浆分解出来的东西很多,这些人喝了这种豆浆之后,如果肾脏没办法全部将其排泄掉,就会造成血液中的尿素氮等增高,肾功能不全就会加重肾负担,引发肾功能衰竭。
发明内容
为了克服上述的豆浆粉所存在的不足之处,本发明提供全新的一种富硒酵母豆粉的生产方法,具体包括:该豆浆是以黄豆为主要原料,先将黄豆制成豆浆,加入有机硒,再用酵母发酵豆浆并吸收有机硒中的硒元素成为富硒酵母,接着过滤去渣,通过巴氏灭菌后加入适量的糖,最后浓缩干燥而成。
所述的有机硒是通过生物转化与氨基酸结合而成,一般以硒蛋氨酸的形式存在。富硒酵母片就是一有机态硒制剂,具生物利用度高、毒性低、疗效确切等优点,具有保护细胞膜完整性,清除自由基,加快脂质过氧化物分解、抗氧化、增强机体免疫功能、心肌功能等药理作用。硒在预防人体癌症、心血管疾病、克山病与大骨节病方面有重要作用;1996年,美国亚利桑那大学“亚利桑那癌症中心”Clark教授对1312例癌症患者进行了长达8年大规模对照试验,结果表明,每日补充200微克硒的富硒酵母,癌症的死亡率下降了50%,其中硒对前列腺癌、肺癌和直肠癌防治十分明显。而对未患癌症的人,总发病率下降了37%。此项开拓性的研究被称为“硒防癌里程碑”研究,强烈地刺激国际社会关注硒的研究和应用。硒的补充以前主要靠亚硒酸钠,但是这是一种毒性较大的化学物质,会对人体造成一定的伤害。于是人们普遍倾向于通过酵母来转化硒元素,即将无机硒转化为有机硒,这样硒就大大降低了毒性,更大程度的发挥硒抗肿瘤、抗氧化的功能。事实上,通过酵母将无机的微量元素转化成生物态的微量元素,是一种复杂的生命过程,大致原理是这样的,科学家们在酵母的生长过程中添加一些无机的微量元素比如硒,使酵母能吸收它们,这些无机硒到达酵母体内后,便与酵母的蛋白质和多糖结合,形成生命结合态,也就是说,硒成为了酵母的一种营养成分。我们再食用这些富含硒的酵母,就和吃含硒营养丰富的肉一样,是非常安全的。
而酵母是一种可食用的、营养丰富的单细胞微生物,营养学上把它叫做“取之不尽的营养源”。除了蛋白质、碳水化合物、脂类以外,酵母还富含多种维生素、矿物质和酶类。有实验证明,每1公斤干酵母所含的蛋白质,相当于5公斤大米、2公斤大豆或2.5公斤猪肉的蛋白质含量。因此,通过酵母发酵并制备得出的馒头、面包中所含的营养成分比大饼、面条要高出3-4倍,蛋白质增加近2倍。
发酵后的酵母还是一种很强的抗氧化物,可以保护肝脏,有一定的解毒作用。酵母里的硒、铬等矿物质能抗衰老、抗肿瘤、预防动脉硬化,并提高人体的免疫力。豆浆发酵后,影响钙、镁、铁等元素吸收的植酸可被分解,从而提高人体对这些营养物质的吸收和利用。
相关文献中还体现出,食用酵母的作用主要为:
(1)使制品疏松:酵母在面团发酵中产生大量的二氧化碳,并由于面筋网络组织的形成,而被留在网状组织内,使烘烤食品组织疏松多孔,体积增大。酵母还有增加面筋扩展的作用,使发酵时所产生的二氧化碳能保留在面团内,提高面团的持气能力。如用化学数疏松剂则无此作用。
(2)改善风味作用:面团在发酵过程中,经历了一系列复杂的生物化学反应,产生了面包制品特有的发酵香味。同时,便形成了面包制品所特有的芳香,浓郁,诱人食欲的烘烤香味。
(3)增加营养价值:因为酵母的主要成分是蛋白质,几乎占了酵母干物质的一半含量,而且人体必需氨基酸含量充足,尤其是谷物中较缺乏的赖氨酸含量较多。另一方面,含有大量的维生素B1,维生素B2及尼克酸。所以,酵母能提高发酵食品的营养价值。
本发明是通过以下技术方案来实现的:
一种富硒酵母豆粉,技术方案中在于:该豆浆是以黄豆为主要原料,先将黄豆制成豆浆,加入有机硒,再用酵母发酵豆浆并吸收有机硒中的硒元素成为富硒酵母,接着过滤去渣,通过巴氏灭菌后加入适量的糖,最后浓缩干燥而成。
具体实施步骤如下:
1、制备豆浆:将1000克黄豆清洗干净,再以黄豆和水为1∶2的比例,把黄豆放置水中渗泡2-8个小时,把浸泡过水的黄豆放入锅中并加入适量的清水,接着加热把黄豆煮熟,待锅中的黄豆降温至30-38度后,再在黄豆中加入适量的清水,最后磨成豆浆备用。
2、发酵:在上述豆浆中加入含硒2毫克的有机硒,再用0.1-0.5%的酵母持续发酵豆浆2-10个小时,酵母在发酵过程中吸收有机硒中的硒元素成为富硒酵母,得到富硒酵母豆浆。
3、过滤:将上述富硒酵母豆浆过滤去渣得纯富硒酵母豆浆。
4、加糖:在上述纯富硒酵母豆浆经过巴氏灭菌后加入30%的糖得含糖富硒酵母豆浆。
5、成品富硒酵母豆浆粉:把含糖富硒酵母豆浆浓缩干燥制成成品富硒酵母豆粉。
本发明的有益效果是:
1、通过实施本发明,豆浆经过发酵后干燥制成粉状后,比普通豆浆粉所含的营养成分要高出1倍以上,蛋白质亦增加1倍以上,人体更容易吸收消化。
2、通过实施本发明,在豆浆里加入有机硒,再用酵母发酵豆浆并吸收有机硒中的硒元素成为富硒酵母,这些无机硒到达酵母体内后,便与酵母的蛋白质和多糖结合,形成生命结合态,使硒成为了酵母的一种非常安全的营养成分。重要的是,使普通豆浆变成一种具有保健功效的富硒养生豆浆,并以养生豆浆制备成富硒养生豆浆粉。硒是是人体必需的微量元素。硒参与合成人体内多种含硒酶和含硒蛋白。其中谷胱甘肽过氧化物酶,在生物体内催化氢过氧化物或脂质过氧化物转变为水或各种醇类,消除自由基对生物膜的攻击,保护生物膜免受氧化损伤;硒参与构成碘化甲状腺胺酸脱碘酶。硒能提高人体免疫,促进淋巴细胞的增殖及抗体和免疫球蛋白的合成。硒对结肠癌、皮肤癌、肝癌、乳腺癌等多种癌症具有明显的抑制和防护的作用,其在机体内的中间代谢产物甲基烯醇具有较强的抗癌活性。硒因此被科学家称之为人体微量元素中的“防癌之王”。此外,科学证实:正是由于″硒″的高抗氧化作用,适量补充能起到防止器官老化与病变,延缓衰老,增强免疫,抵御疾病,抵抗有毒害重金属,减轻放化疗副作用,防癌抗癌。所以,富硒养生豆浆粉对亚健康的人、中老年人及许多疾病有保健效果,是药食同源的完美结合。1996年基因科学家测定酵母基因与人类基因具有同源性,特别是肠胃病、糖尿病、心脏病等许多遗传性疾病与酵母基因高度同源;当今人们普遍认同长期吃转基因食品会导致人体基因变异致病;同理,长期吃同源基因食品也应该能缓慢的修复病变基因。豆浆经过酵母发酵并吸收有机硒中的硒元素成为富硒酵母后,所得的富硒豆浆粉具有保健作用,亦是药食同源的完美结合,富硒豆浆粉也由此增值,并可产生显著的经济效益。
2、传统的豆浆粉属于植物蛋白,有些人吃了加糖的豆浆,会有返胃酸、不好消化等不良现象。通过实施本发明,豆浆经过发酵后,豆浆中的植物蛋白转化为氨基酸和酶,人吃了经过发酵的豆浆转化成富硒酵母豆浆粉,不会有喝普通豆浆产生返胃酸、不好消化等不良现象,而且还能有效的保护肠胃。
3、豆浆中有许多粗蛋白、粗纤维等微小颗粒的营养物质,普通的工艺生产豆浆粉去渣时都把这些营养物质去除了,通过实施本发明,豆浆经过酵母发酵后,微小颗粒的粗蛋白、粗纤维都分解转化为分子更小的氨基酸和酶等营养物质,去渣时此营养物质都留在了豆浆中;因此等量的原料,经过发酵的豆浆浓缩干燥后所得的粉量更多,而且口感更细腻,豆香更醇厚。
4、通过实施本发明,豆浆经过酵母发酵制成粉后,分解出来的东西就会转化为人体更加容易吸收的营养物质,比如,黄豆中的植物蛋白转化为氨基酸和酶;同时,经过酵母发酵而得的酵母豆浆还具有消炎、清热解毒的功效,一些肾病、或其是肾功能不全的人喝了酵母豆浆之后,减轻了肾脏负担,排尿顺畅,自然增强肾功能。
5、通过实施本发明,豆浆在发酵过程中,经过一系列生物化学反应,生产出来的酵母豆浆其香味更浓郁,口感更醇厚。
6、豆浆经过酵母发酵后,产生大量的优质氨基酸和酶,有帮助消化、消炎清热解毒、解酒、保护肝脏、抗肿瘤等功效,对亚健康的人、中老年人及许多疾病有保健效果。1996年基因科学家测定酵母基因与人类基因具有同源性,特别是肠胃病、糖尿病、心脏病等许多遗传性疾病与酵母基因高度同源;当今人们普遍认同长期吃转基因食品会导致人体基因变异致病;同理,长期吃同源基因食品也应该能缓慢的修复病变基因。通过实施本发明,豆浆经过发酵制成粉状后,所得的酵母豆浆粉具有上述保健作用,亦是药食同源的完美结合。

下面结合实施例对本发明的方法进一步说明。
一种富硒酵母豆粉,技术方案中在于:该豆浆是以黄豆为主要原料,先将黄豆制成豆浆,加入有机硒,再用酵母发酵豆浆并吸收有机硒中的硒元素成为富硒酵母,接着过滤去渣,通过巴氏灭菌后加入适量的糖,最后浓缩干燥而成。
具体实施方式如下:
1、制备豆浆:将1000克黄豆清洗干净,再以黄豆和水为1∶2的比例,把黄豆放置水中渗泡2-8个小时,把浸泡过水的黄豆放入锅中并加入适量的清水,接着加热把黄豆煮熟,待锅中的黄豆降温至30-38度后,再在黄豆中加入适量的清水,最后磨成豆浆备用。
2、发酵:在上述豆浆中加入含硒2毫克的有机硒,再用0.1-0.5%的酵母持续发酵豆浆2-10个小时,酵母在发酵过程中吸收有机硒中的硒元素成为富硒酵母,得到富硒酵母豆浆。
3、过滤:将上述富硒酵母豆浆过滤去渣得纯富硒酵母豆浆。
4、加糖:在上述纯富硒酵母豆浆经过巴氏灭菌后加入30%的糖得含糖富硒酵母豆浆。
5、成品富硒酵母豆浆粉:把含糖富硒酵母豆浆浓缩干燥制成成品富硒酵母豆粉。
以上所诉仅为本发明的较佳实例,并非对本发明的范围进行限定。
Claims (1)
1.一种富硒酵母豆粉,其特征在于:该豆浆粉是以黄豆为原料,先将黄豆制成豆浆,再用富硒酵母片发酵,接着过滤去渣,通过巴氏灭菌后加入适量的糖,最后浓缩干燥而成;
具体实施步骤如下:
(1)制备豆浆:将黄豆清洗干净,再以黄豆和水为1∶3的比例,把黄豆放置水中渗泡2-8个小时,把浸泡过水的黄豆放入锅中并加入适量的清水,接着加热把黄豆煮熟,待锅中的黄豆降温至30-38度后,再把黄豆捞起并兑适量的清水,最后磨成豆浆备用;
(2)发酵:在上述豆浆中加入0.1-0.5%的富硒酵母片,并持续发酵2-10个小时得到富硒酵母豆浆;
(3)成品富硒酵母豆浆:在上述富硒酵母豆浆中加入10-35%的糖,然后经过灭菌制成成品富硒酵母豆浆;
(4)过滤:将上述富硒酵母豆浆过滤去渣得纯富硒酵母豆浆;
(5)加糖:在上述纯富硒酵母豆浆经过巴氏灭菌后加入30%的糖得含糖富硒酵母豆浆;
(6)成品富硒酵母豆浆粉:把含糖富硒酵母豆浆浓缩干燥制成成品富硒酵母豆粉。
