本发明提出了一种健脑安神面条及其制备方法。该面条的配方由以下重量份组成:莲子粉3‑5份、黑豆粉5‑10份、燕麦粉10‑15份、小麦粉50‑60份、小米粉40‑50份、冬虫夏草粉3‑5份、牡蛎提取液2‑3份、牛奶3‑5份、蜂蜜1‑2份、谷朊粉5‑8份、瓜尔豆胶0.1‑0.2份、黄原胶0.2‑0.4份、食盐1‑2份、食用碱0.1‑0.3份。针对人们对于食疗的需求,特别是需求具有健脑安神等对于脑部有益的食物,其特点在于既能很好的养护人脑,同时具有较好的口感与味道。

技术领域
本发明涉及保健食品技术领域,具体涉及一种健脑安神面条及其制备方法。
背景技术
随着日常工作和学习压力的增大,对精神的影响也是巨大的,而伴随着现代生活水平的提高,人们对于保健的意识也增强了,对于健脑和安神类的食品需求逐渐增大,但大多数这些类型产品成分复杂,口感或味道也伴随着其成分的不同而产生出各种奇怪的感觉。
如,中国专利《一种养心安神面条及其制备方法》(授权公开号CN103892200B)和中国专利《一种健脑安神薇菜保健面条及其制备方法》(申请公布号CN104323127A)均为利用多种原料复配制成一种面条,但均使用了多种具有苦味的药材用以达到安神健脑的作用,这些苦味成分混合后会在一定程度上使成品面的味道变差,影响进食,因此有必要研究一种使用了常规成分,不含异味成分制得的面条,确保既能有充足的进食欲,能食用足量的面条,同时也能补充足量营养,达到健脑安神的效果。
发明内容
为了解决上述问题,本发明针对人们对于食疗的需求,特别是需求具有健脑安神等对于脑部有益的食物,提出了一种健脑安神面条,其特点在于既能很好的养护人脑,同时具有较好的口感与味道。
本发明可以通过以下技术方案来实现:
一种健脑安神面条,由以下重量份组成:
莲子粉3-5份、黑豆粉5-10份、燕麦粉10-15份、小麦粉50-60份、小米粉40-50份、冬虫夏草粉3-5份、牡蛎提取液2-3份、牛奶3-5份、蜂蜜1-2份、谷朊粉5-8份、瓜尔豆胶0.1-0.2份、黄原胶0.2-0.4份、食盐1-2份、食用碱0.1-0.3份。
优选地,由以下重量份组成:
莲子粉4份、黑豆粉7.5份、燕麦粉12.5份、小麦粉55份、小米粉45份、冬虫夏草粉4份、牡蛎提取液2.5份、牛奶4份、蜂蜜1.5份、谷朊粉6.5份、瓜尔豆胶0.15份、黄原胶0.3份、食盐1.5份、食用碱0.2份。
其中,莲子粉的制备方法为:
将莲子加入少量水中,置于高速组织捣碎机破碎,过100目筛,然后静置沉淀6h,取下层沉淀用蒸馏水清洗,再静置沉淀,反复3次,然后于45℃烘箱中烘干,得到莲子粉。
其中,冬虫夏草粉的制备方法为:
a.将冬虫夏草菌种接种到斜面培养基上,在25℃恒温培养箱中进行活化,将活化的菌种接种到装有PDA培养基的平皿中在25℃恒温培养箱培养至菌丝体长满平皿;
b.将配制好的100ml液体培养基装入250ml三角瓶中,用棉塞塞好瓶口,然后置于1.2atm,121℃下灭菌30min,将灭菌的液体培养基放在超净工作台上常温冷却,取PDA平皿培养的菌落0.5cm3,放入三角瓶液体培养基中,在24℃恒温培养箱中静置培养10天;
c.将培养完的菌丝体连同液体培养基用滤纸过滤,取滤渣用蒸馏水冲洗3次,然后在105℃烘箱内烘1.5-2h至恒重,粉碎,得到冬虫夏草粉。
优选地,冬虫夏草的制备中,使用的液体培养基由以下成分组成:
葡萄糖3g/L、白糖3g/L、蛋白胨1g/L、复合氨基酸粉2g/L、酵母膏2.5g/L、磷酸二氢钾1g/L、硫酸镁0.5g/L、氯化钙0.5g/L、硫酸锌1g/L、硫酸亚铁0.01g/L、硫酸铜0.001g/L、亚硒酸钠0.08g/L、维生素B10.1g/L、水1000mL,pH为6.5。
其中,牡蛎提取液的制备方法为:取牡蛎去壳清洗干净,将牡蛎肉放入匀浆机中打浆,按料液比为1:3加入蒸馏水搅拌均匀,然后加入由中性蛋白酶:碱性蛋白酶=1:1组成的混合酶3000U/g,调节pH至9,在55℃恒温条件下酶解3h,再煮沸5-10min灭酶,冷却至室温,经4000r/min离心20min,取上清液用分子截留量为30KD的超滤装置超滤,取滤液即为牡蛎提取液。
本发明还提供一种健脑安神面条的方法,包括以下步骤:
(1)取牛奶煮至微沸,加入牡蛎酶解液搅拌均匀,冷却至室温后,加入蜂蜜搅拌均匀成糖浆;
(2)取瓜尔豆胶加水溶解后,加入黄原胶、食盐和食用碱,搅拌溶解成混合液;
(3)取莲子粉、黑豆粉、冬虫夏草粉、燕麦粉、小麦粉、小米粉和谷朊粉混合均匀,过100目筛,加入步骤(1)的糖浆和步骤(2)的混合液搅拌均匀,在20-30℃下和面15-20min,得到面团;
(4)将和好的面团置于20-30℃下静置熟化30min;
(5)将熟化后的面团经压面机反复压片,再经切面机上切成宽窄3mm的湿面条;
(6)将湿面条置于鼓风干燥箱中以40℃恒温干燥至面条含水量为5%,得到本发明的健脑安神面条。
本发明所述各主要功效成分作用机理如下:
莲子营养十分丰富,除含有大量淀粉外,还含有β-谷甾醇,生物碱及丰富的钙、磷、铁等矿物质和维生素,具有养心安神、健脑益智、消除疲劳等方面的药用价值。莲子在盲肠、结肠内发酵,产生大量的SCFA,降低了肠道内的pH值,从而提高了矿物质的吸收利用,促进盲肠对镁、钙的吸收,使镁、钙变成可溶性物质,易通过上皮细胞为人体所吸收,莲子还具有排铅的作用,可促进机体中有毒元素铅的排出。
牡蛎含有丰富的蛋白质、糖原、牛磺酸、氨基酸、维生素和微量元素等营养成分,具有巨大的食用价值和药用价值,具有镇静催眠、抗惊厥等药理作用,能够调节大脑皮层功能,从而起到镇静安神的效果;牡蛎中含丰富的锌元素,能促进生长发育和智力发展,对人体具有健脑益智的作用;牡蛎中还含有多种生物活性肽,其中酪蛋白磷酸肽能促进机体对钙、铁等矿物质的吸收。
冬虫夏草是一种特殊的虫和真菌共生的生物体,是高级滋补名贵中药材,其含有虫草酸、虫草多糖等活性成分,及维生素B12、脂肪、蛋白等营养物质。冬虫夏草对中枢神经系统具有镇静、抗惊厥作用,能拮抗苯丙胺的中枢兴奋作用,对抗烟碱所致的惊厥,具有抗心律不齐的作用。
本发明具备以下有益效果:
本发明通过添加莲子粉,通过莲子中所含生物碱具有显著的强心作用,起到强心安神的作用,并能促进机体对有益矿物质的吸收利用,对铅等有毒元素的排出;莲子所含丰富的营养物质能增强记忆力,提高工作效率,起到健脑的作用。
本发明的健脑安神面条添加了牡蛎提取液,为人们提供丰富的营养物质,并提高机体对营养物质的吸收利用率,促进大脑的生长发育,且通过牡蛎中的活性成分调节大脑皮层功能,降低兴奋性,改善睡眠质量,从而起到镇静安神的作用。
本发明添加了冬虫夏草粉,不仅能提供丰富的营养物质,促进大脑发育,还能通过冬虫夏草中的活性成分对中枢神经系统起到镇静作用,降低中枢兴奋性,从而具有镇静安神作用,冬虫夏草中的多糖还能增强人体免疫功能,提高抗病能力。
本发明将莲子粉、牡蛎提取液和冬虫夏草粉复配制成面条,通过莲子粉、牡蛎提取液及冬虫夏草粉中的营养物质,不仅丰富了中枢神经系统的营养,促进大脑发育,达到健脑的效果,还能提高机体对矿物质等营养物质的吸收利用,增强机体的免疫功能,提高抵抗力,并通过莲子粉、牡蛎提取液及冬虫夏草粉中的活性成分,调节大脑皮层功能,降低中枢神经系统兴奋性,从而起到镇静安神的作用。
具体实施方式
为了使本发明实现的技术手段、创作特征、达成目的与功效易于明白了解,下面结合具体实施例,进一步阐述本发明。
实施例1~5为本发明健脑安神面条的配方。

对比例3与实施例1的区别在于,对比例3不含牡蛎提取液成分。

对比例4与实施例1的区别在于,对比例4不含莲子粉、冬虫夏草粉和牡蛎提取物三种成分。
其中,以下述方法制备莲子粉:
将莲子加入少量水中,置于高速组织捣碎机破碎,过100目筛,然后静置沉淀6h,取下层沉淀用蒸馏水清洗,再静置沉淀,反复3次,然后于45℃烘箱中烘干,得到莲子粉。
其中,以下述成分配置液体培养基:
葡萄糖3g/L、白糖3g/L、蛋白胨1g/L、复合氨基酸粉2g/L、酵母膏2.5g/L、磷酸二氢钾1g/L、硫酸镁0.5g/L、氯化钙0.5g/L、硫酸锌1g/L、硫酸亚铁0.01g/L、硫酸铜0.001g/L、亚硒酸钠0.08g/L、维生素B10.1g/L、水1000mL,pH为6.5。
随后,以下述方法制备冬虫夏草粉:
a.将冬虫夏草菌种接种到斜面培养基上,在25℃恒温培养箱中进行活化,将活化的菌种接种到装有PDA培养基的平皿中在25℃恒温培养箱培养至菌丝体长满平皿;
b.将配制好的100ml液体培养基装入250ml三角瓶中,用棉塞塞好瓶口,然后置于1.2atm,121℃下灭菌30min,将灭菌的液体培养基放在超净工作台上常温冷却,取PDA平皿培养的菌落0.5cm3,放入三角瓶液体培养基中,在24℃恒温培养箱中静置培养10天;
c.将培养完的菌丝体连同液体培养基用滤纸过滤,取滤渣用蒸馏水冲洗3次,然后在105℃烘箱内烘1.5-2h至恒重,粉碎,得到冬虫夏草粉。
其中,牡蛎提取液的制备方法为:取牡蛎去壳清洗干净,将牡蛎肉放入匀浆机中打浆,按料液比为1:3加入蒸馏水搅拌均匀,然后加入由中性蛋白酶:碱性蛋白酶=1:1组成的混合酶3000U/g,调节pH至9,在55℃恒温条件下酶解3h,再煮沸5-10min灭酶,冷却至室温,经4000r/min离心20min,取上清液用分子截留量为30KD的超滤装置超滤,取滤液即为牡蛎提取液。
上述一种健脑安神面条的制备方法,包括以下步骤:
(1)取牛奶煮至微沸,加入牡蛎酶解液搅拌均匀,冷却至室温后,加入蜂蜜搅拌均匀成糖浆;
(2)取瓜尔豆胶加水溶解后,加入黄原胶、食盐和食用碱,搅拌溶解成混合液;
(3)取莲子粉、黑豆粉、冬虫夏草粉、燕麦粉、小麦粉、小米粉和谷朊粉混合均匀,过100目筛,加入步骤(1)的糖浆和步骤(2)的混合液搅拌均匀,在20-30℃下和面15-20min,得到面团;
(4)将和好的面团置于20-30℃下静置熟化30min;
(5)将熟化后的面团经压面机反复压片,再经切面机上切成宽窄3mm的湿面条;
(6)将湿面条置于鼓风干燥箱中以40℃恒温干燥至面条含水量为5%,得到本发明的健脑安神面条。
成品面条测试体验
分别按照各组配方制成不同的样品面,公开进行试吃活动,并要求路人在食用全部组别的样品面后,对每一组的口感与味道以1~10进行打分,且同一人的各组打分不重复,最后整体取平均值得到表2。

从表2的试吃体验可以看出,由于对比例4是基础面条配方,不含莲子粉、冬虫夏草粉和牡蛎提取物三种成分,其口感与味道都较为一般;相比之下,对比例1~3分别通过添加莲子粉、冬虫夏草粉和牡蛎提取物三种成分中的任意两种进行改良,其口感与味道有一定的提升,但效果不明显;进一步与实施例对比可以明显感觉到口感与味道的差距,莲子粉、冬虫夏草粉和牡蛎提取物三种成分各自能提高与改善面条的口感与味道,但将其复配后,通过协同作用,能更进一步的从整体上优化面条的品质。
统一招募90个长期工作饮食不规律、工作压力大且不注重脑部保养的青壮年测试志愿者,随机分配到实施例1~5和对比例1~4九个组中,分别以各组样品作为早餐,其余2餐按原有习惯进行,持续1个月后询问并记录各人工作状态不好走神、晚上睡觉失眠的天数,将各组各人的天数平均后得出表3中的亚健康天数。

从上述表3数据可以知道,由于长期工作压力大且没有注重保养,因此不含保养成分的对比例4样品在食用一段时间后,实际上对于该组人群的状态改善并没有任何帮助;通过添加莲子粉、冬虫夏草粉和牡蛎提取物三种成分中的任意两种进行改良,得到的对比例1~3组,则可以发现在长期食用接近一个月后,工作生活状态有一定改善,但明显效果不能达到需求;而更进一步将莲子粉、冬虫夏草粉和牡蛎提取物三种成分复配后统一添加进配方中制得的成品面,可以明显看出,坚持食用不到半个月,各组对应成员的精神状态得到了明显改善,说明通过添加莲子粉、冬虫夏草粉和牡蛎提取物三种成分均能起到一定的改善由于工作生活压力带来的精神状态不佳,但效果不明显,只有通过三者复配,通过协同作用,才能更好地促进精神状态的改善、调节。
综上所述,本发明制备的健脑安神面条能帮助长期生活工作压力大,精神不灵、失眠多梦的人,调理身体状态,有助于增强记忆,提高工作效率。
以上所述实施例仅表达了本发明的几种实施方式,其描述较为具体和详细,但并不能因此而理解为对本发明专利范围的限制。应当指出的是,对于本领域的普通技术人员来说,在不脱离本发明构思的前提下,还可以做出若干变形和改进,这些都属于本发明的保护范围。
Claims (7)
1.一种健脑安神面条,其特征在于,由以下重量份组成:莲子粉3-5份、黑豆粉5-10份、燕麦粉10-15份、小麦粉50-60份、小米粉40-50份、冬虫夏草粉3-5份、牡蛎提取液2-3份、牛奶3-5份、蜂蜜1-2份、谷朊粉5-8份、瓜尔豆胶0.1-0.2份、黄原胶0.2-0.4份、食盐1-2份、食用碱0.1-0.3份。
2.根据权利要求1所述的一种健脑安神面条,其特征在于,由以下重量份组成:莲子粉4份、黑豆粉7.5份、燕麦粉12.5份、小麦粉55份、小米粉45份、冬虫夏草粉4份、牡蛎提取液2.5份、牛奶4份、蜂蜜1.5份、谷朊粉6.5份、瓜尔豆胶0.15份、黄原胶0.3份、食盐1.5份、食用碱0.2份。
3.根据权利要求1或2所述的一种健脑安神面条,其特征在于,所述莲子粉的制备方法为:将莲子加入少量水中,置于高速组织捣碎机破碎,过100目筛,然后静置沉淀6h,取下层沉淀用蒸馏水清洗,再静置沉淀,反复3次,然后于45℃烘箱中烘干,得到莲子粉。
4.根据权利要求1或2所述的一种健脑安神面条,其特征在于,所述冬虫夏草粉的制备方法为:
a.将冬虫夏草菌种接种到斜面培养基上,在25℃恒温培养箱中进行活化,将活化的菌种接种到装有PDA培养基的平皿中在25℃恒温培养箱培养至菌丝体长满平皿;
b.将配制好的100ml液体培养基装入250ml三角瓶中,用棉塞塞好瓶口,然后置于1.2atm,121℃下灭菌30min,将灭菌的液体培养基放在超净工作台上常温冷却,取PDA平皿培养的菌落0.5cm3,放入三角瓶液体培养基中,在24℃恒温培养箱中静置培养10天;
c.将培养完的菌丝体连同液体培养基用滤纸过滤,取滤渣用蒸馏水冲洗3次,然后在105℃烘箱内烘1.5-2h至恒重,粉碎,得到冬虫夏草粉。
5.根据权利要求4所述的一种健脑安神面条,其特征在于,所述液体培养基由以下重量份组成:葡萄糖3g/L、白糖3g/L、蛋白胨1g/L、复合氨基酸粉2g/L、酵母膏2.5g/L、磷酸二氢钾1g/L、硫酸镁0.5g/L、氯化钙0.5g/L、硫酸锌1g/L、硫酸亚铁0.01g/L、硫酸铜0.001g/L、亚硒酸钠0.08g/L、维生素B10.1g/L、水1000mL,pH为6.5。
6.根据权利要求1或2所述的一种健脑安神面条,其特征在于,所述牡蛎提取液的制备方法为:取牡蛎去壳清洗干净,将牡蛎肉放入匀浆机中打浆,按料液比为1:3加入蒸馏水搅拌均匀,然后加入由中性蛋白酶:碱性蛋白酶=1:1组成的混合酶3000U/g,调节pH至9,在55℃恒温条件下酶解3h,再煮沸5-10min灭酶,冷却至室温,经4000r/min离心20min,取上清液用分子截留量为30KD的超滤装置超滤,取滤液即为牡蛎提取液。
7.制备如权利要求1-6任一项所述的一种健脑安神面条的方法,其特征在于,包括以下步骤:
(1)取牛奶煮至微沸,加入牡蛎酶解液搅拌均匀,冷却至室温后,加入蜂蜜搅拌均匀成糖浆;
(2)取瓜尔豆胶加水溶解后,加入黄原胶、食盐和食用碱,搅拌溶解成混合液;
(3)取莲子粉、黑豆粉、冬虫夏草粉、燕麦粉、小麦粉、小米粉和谷朊粉混合均匀,过100目筛,加入步骤(1)的糖浆和步骤(2)的混合液搅拌均匀,在20-30℃下和面15-20min,得到面团;
(4)将和好的面团置于20-30℃下静置熟化30min;
(5)将熟化后的面团经压面机反复压片,再经切面机上切成宽窄3mm的湿面条;
(6)将湿面条置于鼓风干燥箱中以40℃恒温干燥至面条含水量为5%,得到本发明的健脑安神面条。
