本发明涉及食品加工技术领域,具体地说是一种黑土豆(黑马铃薯)固体饮料及其制备方法。
技术背景
黑土豆其内外呈黑紫色,除含有普通白土豆营养外,还含有抗癌物质花青素,并有防治心脑血管疾患、抗衰老、养颜美容和提高人体免疫力的保健功能。目前用黑土豆为原料生产出的饮料营养单一、含糖多、液体饮料含水份多,营养成份少。
发明内容
本发明要解决的技术问题是,提供一种营养丰富、含糖少、水份含量少、营养成分含量多的黑土豆固体饮料及其制备方法。
本发明采取的技术方案是,一种黑土豆固体饮料,其特征是:由以下重量份的原料黑土豆82-92、白扁豆0.1-0.3、来服根0.1-0.3、荞麦叶0.2-0.4、桑叶0.1-0.3、枸杞叶0.2-0.4、甜叶菊1-2、山药粉2-5、葛根粉2-5、山楂1-2、谷芽0.5-1、果胶0.3-0.6、食用香精0.02-0.05、脱脂奶粉0.5-0.7制成的粉状固体饮料。
以上所述一种黑土豆固体饮料的制备方法为以下步骤:①土豆清洗切碎;②蒸熟软化;③煮制辅料汁;④混料;⑤打浆;⑥干燥;⑦包装;具体操作如下:①土豆清洗切碎:称取新鲜黑土豆82-92份,清洗除去薄皮及芽眼,然后切成碎片;②蒸熟软化:置入蒸笼中,用常压蒸汽蒸熟,使土豆软化;③煮制辅料汁:称取白扁豆0.1-0.3份,莱菔根0.1-0.3份、荞麦叶0.2-0.4份、桑叶0.1-0.3份、枸杞叶0.2-0.4份、甜叶菊1-2份、山楂1-2份、谷芽0.5-1份、果胶0.3-0.6份放入釜锅中,再加入3-5倍于总量的水焖煮30-40分钟,然后过滤得到辅料汁;④混料:按重量称取山药2-5份、葛根粉2-5份、食用香精0.02-0.05份、脱脂奶粉0.5-0.7份进行混合后放入步骤③的辅料汁中,再加入步骤②中的蒸熟软化的黑土豆主料用搅拌机搅拌成混合浆料;⑤打浆:把步骤④中的混合浆料泵入带有25-50目筛底的粉碎机内打成细浆;⑥干燥:把步骤⑤中所打的细浆料在高压容器锅内密闭加热至110℃,用管道输送到喷雾干燥塔内进行喷雾干燥,得到粉状黑土豆固体饮料;⑦包装:把步骤⑥中得到的粉状固体黑土豆饮料分装成10-50克小袋,然后检验装箱即为成品。
采用以上技术方案制备出来的该黑土豆固体饮料,因它的主料是黑土豆,它的辅料中还含有白扁豆、莱菔根、荞麦叶、桑叶、枸杞叶中含有多种微量元素、维生素、氨基酸等,山药粉、葛根粉、山楂、谷芽是药食保健食材,其有补脾健胃功能,果胶是可溶性膳食纤维,有促进肠道蠕动的作用,脱脂奶粉含钙量高,所以该黑土豆固体饮料营养丰富;因为本饮料中没有加入糖,而是加入有甜味的甜叶菊,所以本饮料含糖少;因本饮料是110℃的高温高压液体浆喷雾干燥而成的固体粉状饮料,所以含水份只有8%-10%,所以含水份少,所含营养成分占90%-92%,所以它所含营养成分高。饮用该黑土豆固体饮料时,撕开该固体饮料的小袋,倒入杯中,冲入适量的开水搅拌即可饮用,所以本固体饮料饮用方便。
