本发明属于食品加工技术领域,涉及一种面条,具体涉及一种高钙营养面条及其制备方法。
背景技术
钙是生物必需的元素,是人类骨、齿的主要无机成分,也是神经传递、肌肉收缩、血液凝结、激素释放和乳汁分泌等所必需的元素。钙约占人体质量的1.4%,参与新陈代谢,每天必须补充钙。人体中钙含量不足或过剩都会影响生长发育和健康。
面条是我国居民的传统主食之一,以小麦粉为原料通过压延形成的面制品,以其良好的口感及方便性深受欢迎。由于膳食结构存在问题,我国钙缺乏现象严重,普通面粉制成的面条,天然钙质含量不足以补充人体每天新陈代谢所需的钙量,特别是孕妇、哺乳期妇女、幼儿、学生、中老年人更是如此。
现有的高钙面条通常是在面条加工的时候放入无机钙粉,从而提高面条的钙含量,而人体对无机钙(碳酸钙)的吸收利用率较低,导致钙含量依旧不足。
发明内容
本发明的目的是提供一种高钙营养面条,使人们能从主食中吸收到每天所需的足够钙质。
为了实现上述目的,本发明采用如下技术方案:一种高钙营养面条,由以下组分按重量份制成:中筋粉80~100份、玉米粉20~30份、大豆粉15~20份、三髓提取物15~20份、苦荞粉10~15份、亚麻籽粉10~15份、山药粉5~10份、魔芋粉3~6份、蛋清2~3份、大豆分离蛋白粉2~3份、食用盐1~2份、食用碱1~2份。
优选的,所述的高钙营养面条,由以下组分按重量份制成:中筋粉90份、玉米粉25份、大豆粉16份、三髓提取物20份、苦荞粉12份、亚麻籽粉12份、山药粉8份、魔芋粉4.5份、蛋清2.5份、大豆分离蛋白粉3份、食用盐1.5份、食用碱1.5份。
所述的三髓提取物是通过以下步骤提取得到:(1)将牛骨粉25~35份、骨胶35~45份、麦芽糊精35~45份混合后进行喷雾干燥,得到复合骨粉;(2)取新鲜的牛脑髓、骨髓及脊髓洗净后冷冻,切碎,按2:1:2的比例混合后置于萃取罐中,分离其中的脂肪和胆固醇,得到磷脂粗品;将磷脂粗品按重量比1:3~4加入石油醚中进行分离萃取,过滤,滤液水浴加热后即得磷脂;将磷脂放入冷冻仓中,按照室温、-1~-3℃、-17~-19℃进行梯度冷冻,然后进行真空干燥,真空干燥箱内压力小于30Pa,温度为28~31℃,干燥时间18~22h,得到复合磷脂粉;(3)将复合骨粉与复合磷脂粉按重量比8~9:1复配,得到三髓提取物。
所述的三髓提取物、苦荞粉、亚麻籽粉、山药粉和魔芋粉的粒径为300~500目。
所述的苦荞粉、亚麻籽粉、山药粉可通过现有技术制备得到。
本发明的另一目的是提供上述高钙营养面条的制备方法,工艺简单,可工业化生产。
为了实现上述目的,本发明采用如下技术方案:一种高钙营养面条的制备方法,包括以下步骤:
(1)分别称取中筋粉、玉米粉和大豆粉,灭菌,磨粉,过80~100目筛,待用;
(2)先按重量份分别称取中筋粉、玉米粉和大豆粉,加入和面机中预混合5~10min,再按重量份加入三髓提取物、苦荞粉、亚麻籽粉和山药粉,在40~60r/min的转速下混合10~15min;按照1kg中筋粉兑0.3~0.4L水的标准,取1/4体积的水预先溶解食用盐和食用碱,然后将盐碱水加入和面机中,在28~32℃、80~100r/min的条件下混合3~5min;取3/4体积的水预先溶胀魔芋粉,然后将魔芋粉溶胀液加入和面机中,最后按重量份加入蛋清和大豆分离蛋白粉,在18~20℃、80~100r/min的条件下混合15~20min,得到面团;
(3)将面团转入圆盘式熟化机中,转速5~8r/min,熟化温度25℃,熟化时间15~25min,将熟化的面团通过多道压辊压成厚度为5~6mm的面片;将面片静置熟化10~20min,将熟化的面片通过多道压辊压成厚度为0.8~1.2mm的面片,每次辊轧的压延比不超过3:1;
(4)将辊轧好的面片切成面条,切好的湿面条通过传动链条自动挂杆,面条挂好后立即将下面剪齐;
(5)采用中温中速烘干法进行烘干,先于温度25~30℃、相对湿度80~85%条件下预干燥60~90min,再于温度37~40℃、相对湿度75~80%条件下干燥150~180min,最后于温度20~25℃、相对湿度55~60%条件下干燥90~120min;
(6)将烘干的面条下架,然后切成不同规格的成品挂面,称量后包装。
本发明中各原料组分的功效分析:
中筋粉:用小麦磨出来的粉,小麦富含淀粉、蛋白质、脂肪、矿物质、钙、铁、硫胺素、核黄素、烟酸、维生素A及维生素C等,中筋粉的蛋白质含量为9.5~12.0%。
玉米:玉米中含有大量的卵磷脂、亚油酸、谷物醇、维生素E、膳食纤维等,具有降血压、降血脂、抗动脉硬化、预防肠癌、美容养颜、延缓衰老等多种保健功效。
大豆:大豆富含蛋白质、无机盐、维生素之外,在豆油中还有较多的不饱和脂肪酸,既能降低血胆固醇,又能降低血甘油三脂,所含的谷固醇也有降脂作用。
三髓提取物:富含钙、磷等矿物质,能够提高免疫力、骨密度及降低骨流失。
苦荞:药食两用作物,含有丰富的生物类黄酮,苦荞黄酮主要为芦丁、槲皮素、桑色素、坎菲醇、金丝桃苷、牡荆素、儿茶素、白藜芦醇,有降血糖、降血脂、抗氧化、增强免疫力、冶疗心脑血管疾病等作用。
亚麻籽:富含油脂和α-亚麻酸、亚麻木酚素(1wt%~4wt%)、亚麻籽胶(8wt%~14wt%)、亚麻籽膳食纤维(27wt%左右)等多种生物活性功能成分,具有调节血脂、调节血糖、抗癌、抗过敏、抗衰老、改善记忆和皮肤屏障功能等诸多生理活性和药理活性。
山药:含有蛋白质、糖类、维生素、脂肪、胆碱、淀粉酶等成分,还含有碘、钙、铁、磷等人体不可缺少的无机盐和微量元素既是食用的佳蔬,又是常用的药材,具有补脾养胃、补肺益肾的功效,可用于治疗脾虚久泻、慢性肠炎、肺虚咳喘、慢性胃炎、糖尿病等,是人所共知的滋补佳品。
魔芋:含有丰富的葡萄甘露聚糖,又称魔芋多糖,是极好的“水溶性膳食纤维”,热量极低,有超强的保水性和膨胀力,能促进肠道蠕动,有明显通便、减肥、降脂、排毒、养颜、和预防肠癌的多种保健功能。
大豆分离蛋白:以低温脱溶大豆粕为原料生产的一种全价蛋白,属于植物蛋白,蛋白质含量在90%以上,氨基酸种类有近20种,并含有人体必需的八种氨基酸,且不含胆固醇,适宜高胆固醇、高血压、心血管疾病患者、骨质疏松患者、减肥人群、中老年人群食用。
本发明的有益效果是:
1)本发明的高钙营养面条,采用天然绿色原料,经科学的营养配比而成,营养全面,富含蛋白质、氨基酸、维生素、矿物质等营养成分,长期食用有补充钙质、促进骨骼发育、降低三高的作用,含有的维生素A、C、E等成分,可促进钙质吸收,各营养成分协同作用可实现降糖降脂、强身健体的保健作用。
2)本发明的高钙营养面条,加入由骨粉、骨胶、磷脂复配的三髓提取物,富含钙、磷等矿物质,更适合人体吸收,能够提高骨密度及降低骨流失。
3)本发明的高钙营养面条制备工艺简单,技术成熟,易于实施。
具体实施方式
下面结合具体实施例对本发明作进一步详细说明。
以下实施例中,中筋粉、玉米粉、大豆粉、魔芋粉、大豆分离蛋白粉、食用盐、食用碱均为市售产品。苦荞粉、亚麻籽粉、山药粉可通过现有技术制备得到。
三髓提取物是通过以下步骤提取得到:(1)将牛骨粉25~35份、骨胶35~45份、麦芽糊精35~45份混合后进行喷雾干燥,得到复合骨粉;(2)取新鲜的牛脑髓、骨髓及脊髓洗净后冷冻,切碎,按2:1:2的比例混合后置于萃取罐中,分离其中的脂肪和胆固醇,得到磷脂粗品;将磷脂粗品按重量比1:3~4加入石油醚中进行分离萃取,过滤,滤液水浴加热后即得磷脂;将磷脂放入冷冻仓中,按照室温、-1~-3℃、-17~-19℃进行梯度冷冻,然后进行真空干燥,真空干燥箱内压力小于30Pa,温度为28~31℃,干燥时间18~22h,得到复合磷脂粉;(3)将复合骨粉与复合磷脂粉按重量比8~9:1复配,得到三髓提取物。
实施例1
一种高钙营养面条,由以下组分按重量组成:中筋粉90kg、玉米粉25kg、大豆粉16kg、三髓提取物20kg、苦荞粉12kg、亚麻籽粉12kg、山药粉8kg、魔芋粉4.5kg、蛋清2.5kg、大豆分离蛋白粉3kg、食用盐1.5kg、食用碱1.5kg。
其中,所述的三髓提取物、苦荞粉、亚麻籽粉、山药粉和魔芋粉的粒径为500目。
上述高钙营养面条的制备方法,包括以下步骤:
(1)分别称取中筋粉、玉米粉和大豆粉,灭菌,磨粉,过100目筛,待用;
(2)先按重量份分别称取中筋粉、玉米粉和大豆粉,加入和面机中预混合10min,再按重量份加入三髓提取物、苦荞粉、亚麻籽粉和山药粉,在50r/min的转速下混合15min;按照1kg中筋粉兑0.35L水的标准,取1/4体积的水预先溶解食用盐和食用碱,然后将盐碱水加入和面机中,在30℃、80r/min的条件下混合5min;取3/4体积的水预先溶胀魔芋粉,然后将魔芋粉溶胀液加入和面机中,最后按重量份加入蛋清和大豆分离蛋白粉,在20℃、80r/min的条件下混合20min,得到面团;
(3)将面团转入圆盘式熟化机中,转速5r/min,熟化温度25℃,熟化时间20min,将熟化的面团通过多道压辊压成厚度为5mm的面片;将面片静置熟化15min,使面粉的淀粉颗粒、蛋白充分吸收水分,将熟化的面片通过多道压辊压成厚度为1mm的面片,每次辊轧的压延比不超过3:1;
(4)将辊轧好的面片切成面条,切好的湿面条通过传动链条自动挂杆,面条挂好后立即将下面剪齐;
(5)采用中温中速烘干法进行烘干,先于温度28℃、相对湿度85%条件下预干燥75min,再于温度39℃、相对湿度80%条件下干燥150min,最后于温度25℃、相对湿度58%条件下干燥100min;
(6)将烘干的面条下架,然后切成不同规格的成品挂面,称量后包装。
实施例2
一种高钙营养面条,由以下组分按重量组成:中筋粉80kg、玉米粉30kg、大豆粉20kg、三髓提取物15kg、苦荞粉10kg、亚麻籽粉10kg、山药粉5kg、魔芋粉3kg、蛋清2kg、大豆分离蛋白粉2kg、食用盐1kg、食用碱1kg。
其中,所述的三髓提取物、苦荞粉、亚麻籽粉、山药粉和魔芋粉的粒径为300目。
上述高钙营养面条的制备方法,包括以下步骤:
(1)分别称取中筋粉、玉米粉和大豆粉,灭菌,磨粉,过80目筛,待用;
(2)先按重量份分别称取中筋粉、玉米粉和大豆粉,加入和面机中预混合5min,再按重量份加入三髓提取物、苦荞粉、亚麻籽粉、山药粉和魔芋粉,在60r/min的转速下混合10min;按照1kg中筋粉兑0.3L水的标准,取1/4体积的水预先溶解食用盐和食用碱,然后将盐碱水加入和面机中,在28℃、80r/min的条件下混合5min;取3/4体积的水预先溶胀魔芋粉,然后将魔芋粉溶胀液加入和面机中,最后按重量份加入蛋清和大豆分离蛋白粉,在18℃、80r/min的条件下混合20min,得到面团;
(3)将面团转入圆盘式熟化机中,转速8r/min,熟化温度25℃,熟化时间15min,将熟化的面团通过多道压辊压成厚度为5mm的面片;将面片静置熟化10min,使面粉的淀粉颗粒、蛋白充分吸收水分,将熟化的面片通过多道压辊压成厚度为0.8mm的面片,每次辊轧的压延比不超过3:1;
(4)将辊轧好的面片切成面条,切好的湿面条通过传动链条自动挂杆,面条挂好后立即将下面剪齐;
(5)采用中温中速烘干法进行烘干,先于温度25℃、相对湿度80%条件下预干燥60min,再于温度37℃、相对湿度75%条件下干燥180min,最后于温度20℃、相对湿度60%条件下干燥120min;
(6)将烘干的面条下架,然后切成不同规格的成品挂面,称量后包装。
实施例3
一种高钙营养面条,由以下组分按重量份制成:中筋粉100kg、玉米粉20kg、大豆粉20kg、三髓提取物20kg、苦荞粉15kg、亚麻籽粉15kg、山药粉10kg、魔芋粉6kg、蛋清3kg、大豆分离蛋白粉3kg、食用盐2kg、食用碱2kg。
其中,所述的三髓提取物、苦荞粉、亚麻籽粉、山药粉和魔芋粉的粒径为400目。
上述高钙营养面条的制备方法,包括以下步骤:
(1)分别称取中筋粉、玉米粉和大豆粉,灭菌,磨粉,过80目筛,待用;
(2)先按重量份分别称取中筋粉、玉米粉和大豆粉,加入和面机中预混合10min,再按重量份加入三髓提取物、苦荞粉、亚麻籽粉、山药粉和魔芋粉,在40r/min的转速下混合15min;按照1kg中筋粉兑0.3L水的标准,取1/3体积的水预先溶解食用盐和食用碱,然后将盐碱水加入和面机中,在32℃、100r/min的条件下混合3min;取3/4体积的水预先溶胀魔芋粉,然后将魔芋粉溶胀液加入和面机中,最后按重量份加入蛋清和大豆分离蛋白粉,在20℃、100r/min的条件下混合15min,得到面团;
(3)将面团转入圆盘式熟化机中,转速5r/min,熟化温度25℃,熟化时间25min,将熟化的面团通过多道压辊压成厚度为6mm的面片;将面片静置熟化20min,将熟化的面片通过多道压辊压成厚度为1.2mm的面片,每次辊轧的压延比不超过3:1;
(4)将辊轧好的面片切成面条,切好的湿面条通过传动链条自动挂杆,面条挂好后立即将下面剪齐;
(5)采用中温中速烘干法进行烘干,先于温度30℃、相对湿度80%条件下预干燥90min,再于温度40℃、相对湿度75%条件下干燥150min,最后于温度25℃、相对湿度55%条件下干燥90min;
(6)将烘干的面条下架,然后切成不同规格的成品挂面,称量后包装。
Claims (5)
1.一种高钙营养面条,其特征在于,由以下组分按重量份制成:中筋粉80~100份、玉米粉20~30份、大豆粉15~20份、三髓提取物15~20份、苦荞粉10~15份、亚麻籽粉10~15份、山药粉5~10份、魔芋粉3~6份、蛋清2~3份、大豆分离蛋白粉2~3份、食用盐1~2份、食用碱1~2份。
2.根据权利要求1所述的一种高钙营养面条,其特征在于,中筋粉90份、玉米粉25份、大豆粉16份、三髓提取物20份、苦荞粉12份、亚麻籽粉12份、山药粉8份、魔芋粉4.5份、蛋清2.5份、大豆分离蛋白粉3份、食用盐1.5份、食用碱1.5份。
3.根据权利要求1所述的一种高钙营养面条,其特征在于,所述的三髓提取物是通过以下步骤提取得到:(1)将牛骨粉25~35份、骨胶35~45份、麦芽糊精35~45份混合后进行喷雾干燥,得到复合骨粉;(2)取新鲜的脑髓、骨髓及脊髓洗净后冷冻,切碎,按2:1:2的比例混合后置于萃取罐中,分离其中的脂肪和胆固醇,得到磷脂粗品;将磷脂粗品按重量比1:3~4加入石油醚中进行分离萃取,过滤,滤液水浴加热后即得磷脂;将磷脂放入冷冻仓中,按照室温、-1~-3℃、-17~-19℃进行梯度冷冻,然后进行真空干燥,真空干燥箱内压力小于30Pa,温度为28~31℃,干燥时间18~22h,得到复合磷脂粉;(3)将复合骨粉与复合磷脂粉按重量比8~9:1复配,得到三髓提取物。
4.根据权利要求1所述的一种高钙营养面条,其特征在于,所述的三髓提取物、苦荞粉、亚麻籽粉、山药粉和魔芋粉的粒径为300~500目。
5.一种权利要求1至4任一项所述的高钙营养面条的制备方法,其特征在于,包括以下步骤:
(1)分别称取中筋粉、玉米粉和大豆粉,灭菌,磨粉,过80~100目筛,待用;
(2)先按重量份分别称取中筋粉、玉米粉和大豆粉,加入和面机中预混合5~10min,再按重量份加入三髓提取物、苦荞粉、亚麻籽粉和山药粉,在40~60r/min的转速下混合10~15min;按照1kg中筋粉兑0.3~0.4L水的标准,取1/4体积的水预先溶解食用盐和食用碱,然后将盐碱水加入和面机中,在28~32℃、80~100r/min的条件下混合3~5min;取3/4体积的水预先溶胀魔芋粉,然后将魔芋粉溶胀液加入和面机中,最后按重量份加入蛋清和大豆分离蛋白粉,在18~20℃、80~100r/min的条件下混合15~20min,得到面团;
(3)将面团转入圆盘式熟化机中,转速5~8r/min,熟化温度25℃,熟化时间15~25min,将熟化的面团通过多道压辊压成厚度为5~6mm的面片;将面片静置熟化10~20min,将熟化的面片通过多道压辊压成厚度为0.8~1.2mm的面片,每次辊轧的压延比不超过3:1;
(4)将辊轧好的面片切成面条,切好的湿面条通过传动链条自动挂杆,面条挂好后立即将下面剪齐;
(5)采用中温中速烘干法进行烘干,先于温度25~30℃、相对湿度80~85%条件下预干燥60~90min,再于温度37~40℃、相对湿度75~80%条件下干燥150~180min,最后于温度20~25℃、相对湿度55~60%条件下干燥90~120min;
(6)将烘干的面条下架,然后切成不同规格的成品挂面,称量后包装。
