腰果又名槚如树、鸡腰果、介寿果,其营养十分丰富,据研究,腰果中脂肪含量高达47%,蛋白质21.2%,碳水化合物22.3%,其所含脂肪多为不饱和脂肪酸,其中油酸占总脂肪酸的67.4%,亚油酸占19.8%,是高血脂、冠心病患者的食疗佳果,腰果中还含有多种维生素以及矿物质,其中维生素B1的含量仅次于芝麻和花生,有补充体力、消除疲劳的效果,适合易疲倦的人食用,而矿物质特别是其中的锰、铬、镁、硒等微量元素,具有抗氧化、防衰老、抗肿瘤和抗心血管病的作用,腰果还具有优良的抗氧化作用,经常食用能使皮肤有光泽、气色变好,并相应地提高机体抗病能力,中医学认为腰果味甘,性平,无毒。可治咳逆、心烦、口渴。《本草拾遗》云:腰果仁主治渴、润肺、去烦、除痰。《海药本草》亦云:主烦躁、心闷、痰鬲、伤寒清涕、咳逆上气。现有腰果作为休闲食品食用时,主要有油炸腰果和炭烧腰果两大类,油炸腰果和炭烧腰果均于热量生成高的坚果类食品,水分含量少,在日常生活中很容易由于过量食用而引发上火、口腔溃疡、咽喉肿痛以及消化不良的现象。

中药包包括如下重量份的原料:党参4~7份、麦芽1~3份、仓术3~5份、莱菔子2~4份、鸡内金3~6份、龙胆草4~6份、鱼腥草2~4份、芡实2~6份、亚麻叶3~5份、决明子3~5份、山楂4~6份。
包裹面糊包括如下重量份的原料:玉米淀粉20~30份、超微茯苓粉15~20份、五香粉3~5份、白砂糖8~12份、盐0.5~1份。

本发明所述的炭烧腰果的制备方法,采用如上原料制备而成,其包括如下步骤:
1)选择新鲜优质腰果备用;
2)按比例称取中药包的原料,粉碎后混合并用双层纱布包裹
将中药包投入浸提锅中进行两次浸提,其中两次浸提的条件均为料液比1:(30~40),浸提温度85~95℃,浸提时间20~30min,每次浸提后取滤液,合并两次浸提后的滤液得到中药浸提液;
3)将1)中腰果投入高压蒸煮锅中,然后加入2)中所述中药浸提液,使中药浸提液刚好没过腰果表面,高压蒸煮3~5min后断电,焖2~3h后将腰果取出冷却;
4)按比例称取包裹面糊的原料,加水后搅拌成糊状物,将经过3)处理后的腰果表面均匀包裹一层糊状物;
5)将烤盘垫上油纸或硅胶垫,将4)中腰果在烤盘上均匀铺平;在烤箱中以180℃烘烤10~12min,取出,冷却即得到成品。
有益效果:本发明所述的一种炭烧腰果,其通过独特配置的药方对新鲜腰果进行针对性处理,使普通的炭烧腰果成为一种药膳腰果,中药包中的功能成分通过蒸煮浸入腰果内部,从而具有促进消化以及下火的作用,本炭烧腰果外部的包裹面糊中含有超微茯苓粉,食用后从超微茯苓粉中的茯苓多糖与腰果中的中药功能成分以及本身的营养成分一起协同作用,从而对人体起到更好的保健作用,且本炭烧腰果炭烧风味浓郁,食用后嘎嘣脆,口齿留香,适口性好,推广后必然受到消费者的欢迎和喜爱。

本实施例的制备方法包括如下步骤,其采用如上原料制备而成,具体包括如下步骤:
1)称取2500g新鲜优质腰果备用;
2)按比例称取中药包的原料,粉碎后混合并用双层纱布包裹;将中药包投入浸提锅中进行两次浸提,其中两次浸提的条件均为料液比1:35,浸提温度90℃,浸提时间25min,每次浸提后取滤液,合并两次浸提后的滤液得到中药浸提液;
3)将1)中腰果投入高压蒸煮锅中,然后加入2)中所述中药浸提液,使中药浸提液刚好没过腰果表面,高压蒸煮4min后断电,焖2h后将腰果取出冷却;

5)将烤盘垫上油纸或硅胶垫,将4)中腰果在烤盘上均匀铺平;在烤箱中以180℃烘烤10min,取出,冷却即得到成品。
实施例二
本实施例由腰果、中药包、包裹面糊以及适量水加工而成,其中中药包中的原料构成如下:党参14g、麦芽4g、仓术10g、莱菔子6g、鸡内金10g、龙胆草12g、鱼腥草8g、芡实10g、亚麻叶10g、决明子10g、山楂8g。包裹面糊的原料构成如下:玉米淀粉154g、超微茯苓粉140g、五香粉35g、白砂糖84g、盐7g。
本实施例的制备方法包括如下步骤,其采用如上原料制备而成,具体包括如下步骤:
1)称取2500g新鲜优质腰果备用;
2)按比例称取中药包的原料,粉碎后混合并用双层纱布包裹;将中药包投入浸提锅中进行两次浸提,其中两次浸提的条件均为料液比1:40,浸提温度95℃,浸提时间30min,每次浸提后取滤液,合并两次浸提后的滤液得到中药浸提液;
3)将1)中腰果投入高压蒸煮锅中,然后加入2)中所述中药浸提液,使中药浸提液刚好没过腰果表面,高压蒸煮3min后断电,焖2h后将腰果取出冷却;
4)按比例称取包裹面糊的原料,加水后搅拌成糊状物,将经过3)处理后的腰果表面均匀包裹一层糊状物;
5)将烤盘垫上油纸或硅胶垫,将4)中腰果在烤盘上均匀铺平;在烤箱中以180℃烘烤12min,取出,冷却即得到成品。

1.一种炭烧腰果,其特征在于,由腰果、中药包、包裹面糊以及适量水加工而成,其中
中药包包括如下重量份的原料:党参4~7份、麦芽1~3份、仓术3~5份、莱菔子2~4份、鸡内金3~6份、龙胆草4~6份、鱼腥草2~4份、芡实2~6份、亚麻叶3~5份、决明子3~5份、山楂4~6份;
包裹面糊包括如下重量份的原料:玉米淀粉20~30份、超微茯苓粉15~20份、五香粉3~5份、白砂糖8~12份、盐0.5~1份。
2.一种炭烧腰果,其特征在于,由腰果、中药包以及包裹面糊加工而成,其中
中药包包括如下重量份的原料:党参6份、麦芽2份、仓术4份、莱菔子4份、鸡内金3份、龙胆草5份、鱼腥草3份、芡实5份、亚麻叶3份、决明子5份、山楂6份;
包裹面糊包括如下重量份的原料:玉米淀粉28份、超微茯苓粉20份、五香粉5份、白砂糖10份、盐0.6份。
3.一种炭烧腰果的制备方法,其特征在于,采用权利要求1或2所述的原料制备而成,其包括如下步骤:
1)选择新鲜优质腰果备用;
2)按比例称取中药包的原料,粉碎后混合并用双层纱布包裹
将中药包投入浸提锅中进行两次浸提,其中两次浸提的条件均为料液比1:(30~40),浸提温度85~95℃,浸提时间20~30min,每次浸提后取滤液,合并两次浸提后的滤液得到中药浸提液;
3)将1)中腰果投入高压蒸煮锅中,然后加入2)中所述中药浸提液,使中药浸提液刚好没过腰果表面,高压蒸煮3~5min后断电,焖2~3h后将腰果取出冷却;
4)按比例称取包裹面糊的原料,加水后搅拌成糊状物,将经过3)处理后的腰果表面均匀包裹一层糊状物;
5)将烤盘垫上油纸或硅胶垫,将4)中腰果在烤盘上均匀铺平;在烤箱中以180℃烘烤10~12min,取出,冷却即得到成品。
