本发明是一种高蛋白质复合面粉。它由小麦面粉、大豆粉、黑豆粉、鹰嘴豆粉、大豆分离蛋白质粉、苦益菜粉,按重量组百分比为75-85%、1-5%、5-10%、1-5%、5-10%组成高完全蛋白质复合面粉。含有很高的优质完全蛋白质和更加全面的营养素。易于人体吸收,是一种老少皆宜,可做主食,又有降血脂、降血压、抗癌、抗衰老、健脑益智、清热解毒、活血、护肝、提高记忆力、预防老年痴呆、防止便秘、促进胰岛素分泌、减轻妇女更年期症状、减肥、养颜等保健功能的多功能食品。

本发明涉及食品加工领域,确切地说是一种高完全蛋白质复合面粉。
背景技术
近几十来,随着我国经济高速发展,人们的生活水平不断提高,物质丰富,而人们的健康状况却不理想。其主要原因就是动物性蛋白质摄入过高所造成的。因我们人类属杂食类动物,不能每天都摄入动物性食物。目前我国居民因饮食结构不合理所造成的健康问题成在着双重压力,一部分人群因动物蛋白摄入过高,使高血脂、高血压、糖尿病、癌症、肥胖等疾病的发病率每年都在以百分之十几的速度逐年高发。而另一部分人群又因知道动物蛋白摄入过高对健康的危害,严控摄入动物性食物,结果又造成蛋白质摄入不足而引发儿童生长发育不良,成年人免疫力低下,长期处于亚健康状态。我国每年因国民健康问题造成的经济损失巨大,以是非常严重了。以引起了我国高层的重视,如我国前任卫生部常务副部长高强同志多年前就指出中国人需要一场饮食革命。目前世界多国的营养学专家也认定人们的健康状况60%是由饮食结构所决定的。因此我国目前急需推出一款主食品,即能满足人们每餐优质完全蛋白质的需求,又可做主食,又有保健功能的食品,来改变我们不合理膳食结构,提高国民体质。
高完全蛋白质复合面粉就是针对以上问题而研发的,如果本发明得到普及上述问题就可以得到大幅度的改善。
发明内容
本发明的目的在于提供一种由小麦面粉、大豆粉、黑豆粉、鹰嘴豆粉和大豆分离蛋白质粉、苦益菜粉,用科学的比例混合而成的高完全蛋白质复合面粉,在不影响其口感的前提下,使其蛋白质和几种豆类及苦益菜的保健功能最大化。为国民提供一种安全健康的食品。
本发明的目的是由以下配方来实现的,一种高完全蛋白质复合面粉,其物征在于它包含的重量组百分比为:
小麦粉75-85%
大豆粉5-10%
黑豆粉1-5%
鹰嘴豆粉1-5%
苦益菜粉1-5%
大豆分离蛋白质粉5-10%。
最佳配比为:
小麦粉80%
大豆粉7%
黑豆粉3%
鹰嘴豆粉3%
苦益菜粉1%
大豆分离蛋白质粉6%
采用本发明的高完全蛋白质复合面粉,加工的食品包括挂面、方便面、面包、馒头、包子、糕点。
它的生产工艺与常规生产工艺基本相同,是本领域技术人员熟知的技术。按所给定的重量组百分比,取小麦面粉、黄豆粉、黑豆粉、鹰嘴豆粉、大豆分离蛋白质粉、苦益菜粉混合即可。对小麦面粉的风味和口感没有任何影响,对人体有营养和保健作用,无任何有害和毒副作用,符合食品要求。
高完全蛋白质复合面粉每百克营养成分检测结果是:它的脂肪比普通小麦面粉提高了3.5倍。比大米提高了8.26倍,脂溶性维生素比普通小麦面粉提高了10.21倍,比大米提高4.15倍,水溶性维生素比普通小麦面粉提高了77%,矿物质比普通小麦面粉提高了2.28倍。比大米提高了2.93倍。另本发明的高完全蛋白质复合面粉中还含有大豆卵磷脂、大豆异黄酮、大豆植酸、大豆皂苷、大豆低聚糖、、腺嘌呤、胆碱、肌醇等具有保健功能的营养素。大米和小麦面粉中均不含这些营养成分,而高完全蛋白质复合面粉中却含量较丰富。含人体可利用蛋白质比小麦面粉提高了4.1倍,比大米提高了3.3倍,以高出我们常吃的鸡蛋和猪肉,并且不含胆固醇。是一种足以替代并优于动物蛋白质的优质完全蛋白质。这种蛋白质就是目前和未来我们人类所需最理想,对人体的成长和健康最有利的天然植物性优质完全蛋白质。从而改变了我国著名的营养学专家陈仁惇老先生所说的,补充优质完全蛋白质则不太容易,变成了非常容易。
本发明的一种高完全蛋白质复合面粉的主要特点是:小麦和豆类及苦益菜是不同科类的可食植物(注:可食植物属性越远营养素互补的效果越好),如果单独食用,它们的蛋白质所含氨基酸缺少1-2种人体所需的8种必需氨基酸,是一种不完全蛋白质,因此它们的蛋白质利用率都很低,如果将它们按权利要求2最佳重量百份比混合后,利用氨基酸及各类营养素互补的原理,所获得的高完全蛋白质复合粉,其氨基酸值和各种营养素得到了大幅度的提高,也大幅度的提高了小麦和豆类的生物价值。本发明中所使用的三种豆类,除了它们具有共同的保健功能外还各有所长,如大豆有天然保健品之称。黑豆具有明目、黑发、补肾、等保健功能。鹰嘴豆可补中益气、温肾壮阳、延年益寿、有长寿豆之美誉。苦益菜也是一种药食两用的山中野菜珍品,具有清热、抗病毒、活血行淤、促进肝细胞再生、防止肝细胞变性、改善肝功能。神农本草经说它,主治五脏邪气、久服安心、益气、轻身、耐老。近代医学证实,它对金黄色葡萄球菌、绿脓杆菌、大肠杆菌和白血病细胞有抑制作用。以上事实说明本发明是一款不可多得的即可做主食、又可获得充足的优质完全蛋白质,还具有多种保健功能的多功能食品。高完全蛋白质复合面粉每百克含18、65克蛋白质其中含大豆蛋白质10、65克。而大豆蛋白质以被认为是人类所需最理想的蛋白质,受到世人的瞩目和关注。如早在1999年美国食品与药物管理局就确认大豆为健康食品,同年10月又正式批准颁布有关大豆食品用于食品标签及标贴中的健康通告。该通告为每份至少含有6.25克大豆蛋白质的食品将被允许使用下列两种标签用语中的一种:

本发明的高蛋白质复合面粉用传统工艺加工的食品应用情况:
1、用于生产的挂面和方便面,有韧性、爽滑、不糊汤;
2、用于生产蒸馍和烤面包,松软、可口;
3、用于生产各类饼干盒糕点,酥香、味美。
经用高完全蛋白质复合面粉用传统工艺加工的食品,具有营养均衡,易于人体吸收,老少皆宜。豆麦香味浓郁、爽滑、松软可口。
以上产品试制,通过我们全家人一年多的试吃,健康状况得到了明显改善,人们品尝后都赞不绝口。
具体实施方式
实施例一 按重量(kg)称取小麦粉75、大豆粉10、黑豆粉5、鹰嘴豆粉1、大豆分离蛋白质粉7,苦益菜粉2充分混合配成100kg高蛋白质复合面粉。
实施例二 按重量(kg)称取小麦粉80、大豆粉7、黑豆粉3、鹰嘴豆粉3、大豆分离蛋白质粉6,苦益菜粉1,充分混合配成100kg高蛋白质复合面粉。
实施例三 按重量(kg)称取小麦粉80、大豆粉5、黑豆粉5、鹰嘴豆粉2、大豆分离蛋白质粉5,苦益菜粉3,充分混合配成100kg高蛋白质复合面粉。
实施例四 按重量(kg)称取小麦粉85、大豆粉5、黑豆粉2、鹰嘴豆粉2、大豆分离蛋白质粉4,苦益菜粉2,充分混合配成100kg高蛋白质复合面粉。
实施例五 选用上述实施例1-4任一种高蛋白质复合面粉,用传统方法加工成食品,可做成挂面、方便面、面包、馒头、包子、糕点等食品。

1.一种高完全蛋白质复合面粉,其特征在于它包含的重量百分比:
小麦粉75-85%
黄豆粉5-10%
大豆粉1-5%
鹰嘴豆粉1-5%
苦益菜粉1-5%
大豆分离蛋白质粉5-10%。
2.根据权利要求1所述的高完全蛋白质复合面粉,其特征在于它包含的最佳重量百分比:
小麦粉80%
大豆粉7%
黑豆粉3%
鹰嘴豆粉3%
苦益菜粉1%
大豆分离蛋白质粉6%。
3.采用权利要求1-2任意一项所述的高完全蛋白质复合面粉,加工的食品包括挂面、方便面、面包、馒头、包子、糕点。
