据2015版《中国药典》记载:陈皮性温,归肺脾二经,有理气健脾、燥湿化痰之功;鸡内金据《中国药典》记载:性平,归脾、胃、小肠、膀胱经,健胃消食,涩精止遗,通淋化石。用于食积不消,呕吐下痢,小儿疳积;麦芽据《中国药典》记载:性平,归脾、胃经,行气消食,健脾开胃,回乳消胀。用于食积不消,脘腹胀痛,脾虚食少,肝郁气痛;紫苏叶据《中国药典》记载:性温,归肺、脾经,解表散寒,行气和胃,用于风寒感冒,咳嗽呕恶,妊娠呕吐,鱼蟹中毒。甘草据《中国药典》记载:性甘,归心、肺、脾、胃经,补脾益气,清热解毒,祛痰止咳,缓急止痛,调和诸药。用于脾胃虚弱,倦态乏力,心急气短,咳嗽痰多,脘腹、四肢挛急疼痛,痈肿疮毒,缓解药物毒性、烈性。甘蔗据《中华本草》记载:性甘;寒,归肺、脾、胃经,清热生津;润燥和中;解毒。罗汉果花清热解毒、化痰止咳、清肝润肺、防暑降温、调压降脂;神曲据《中华本草》记载:性甘、辛,温。归脾、胃经。健脾和胃;消食化积。主治饮食积滞,脘腹胀满,消化不良。

本发明的目的是提出一种鲜甘庶汁柑饼的制作方法,具有很好的开胃健脾的效果。
为了达到上述设计目的,本发明采用的技术方案下:
一种鲜甘庶汁柑饼的制作方法,包括以下步骤:
步骤一、制备甘蔗汁;
步骤二、制备陈皮;
步骤三、向锅中加入500克水,并把神曲、麦芽、鸡内金、紫苏叶、罗汉果花加入锅中,浸泡30分钟,用武火煮沸转文火,煮30分钟关火,用网筛分离取汁液,放置待用;
步骤四、压饼:新鲜柑洗净后,以柑蒂为中心,中心相连放射性竖直切5刀,保留柑上下完整,用手掌心把柑压扁成饼状,柑核随之挤出,用费水杀青,再次挤去水分后压扁,沥水3小时后,用盐腌制10小时,再次过清水挤去水分,将其放在烘焙机盘上,用60摄氏度烘4小时,放置待用;
步骤五、煮饼:锅中加入800克甘蔗汁,用武火煮沸转文火,煮50分钟,浓缩汁液,浓缩过程中用木勺不断搅拌,加入甘草粉和步骤二、三的备料,用武火煮沸,加入步骤四已烘焙好的柑饼,用文火煮30分钟关火,盖好锅盖,闷20分钟后,打开锅盖,用筷子把柑饼翻转,再用文火煮30分钟关火,盖好锅盖,闷20分钟后,打开锅盖,使其均匀吸收汁液;
步骤六、烤饼:在烘盘上垫上竹网,然后把步骤六制得的柑饼排放在竹网上,放入烘焙机,用50摄氏度,烘6小时即完成。

步骤四、压饼:新鲜柑洗净后,以柑蒂为中心,中心相连放射性竖直切5刀,保留柑上下完整,用手掌心把柑压扁成饼状,柑核随之挤出,用沸水杀青,再次挤去水分后压扁,沥水3小时后,用盐腌制10小时,再次过清水挤去水分,将其放在烘焙机盘上,用60摄氏度烘4小时,放置待用;
