Abstract
本发明一种无苦味复合多肽粉,涉及固体饮料食品领域,特别是指一种无苦味复合多肽粉。由下述重量配比的原料制成的,乳清蛋白粉15‑30份,骨胶原蛋白肽30‑60份,大豆多肽4‑7份,酪蛋白磷酸肽1‑2份,玉米肽1‑3份,小麦多肽1‑3份,菊粉20‑50份,维生素C 1‑2份,甘氨酸0.5‑2份,低聚异麦芽糖20‑50份,三氯蔗糖0.1‑0.2份。此配方在多肽的基础上,加入乳清蛋白、菊粉、低聚麦芽糖、维生素C、甘氨酸,无需其他的调味剂,即可大幅地遮掩多肽产品的苦味,加入三氯蔗糖后呈现橘子味,口感更佳,同时此配方还具有增强免疫力的功能,可用于食品、保健食品、特殊膳食、特殊医学用途食品等领域。

技术领域
本发明涉及固体饮料食品领域,具体涉及一种无苦味复合多肽粉。
背景技术
多肽是α-氨基酸以肽键连接在一起而形成的化合物,它也是蛋白质水解的中间产物。多肽作为生物体内一类重要的活性物质,对人类常见病的防治、促进发育、保健养生、延缓衰老、健康长寿等起着非常重要的作用。大量研究报道,多肽化合物易被人体消化吸收,具有预防肥胖(尤梁惠,多肽在肥胖研究中的新趋势,2017)、降低血胆固醇(宋玲钰,降胆固醇活性花生多肽制备工艺的研究,2016)、降低血压(王茵,鱼皮胶原多肽的降血压效果研究,2014)、增加骨密度和预防骨质疏松(冯艳琴,鹿瓜多肽注射液对脊柱椎体骨折康复过程中骨密度及血管内皮生长因子表达的影响,2016;李斌,鹿茸多肽提取物抗去卵巢大鼠骨质疏松作用的研究,2017)等作用。大豆肽、酪蛋白磷酸肽、骨胶原蛋白肽、玉米多肽和小麦多肽不仅能快速提供蛋白营养纠正负氮平衡,而且能够起到抗氧化、增强肌力、缓解疲劳、保肝护肝、提高免疫力等功效。但目前市面上的大多数多肽产品存在口感差、苦味较重等问题,采用一般的调味方法都无法遮掩其不良口感,严重影响了食用者的味觉体验。
乳清蛋白以其优质的蛋白质组成,极高的生物利用价值和特殊的生理功能,受到国际上的广泛关注,在运动营养、医疗保健和食品加工等方面的应用前景广阔。乳清蛋白营养价值高,消化吸收快,必需氨基酸含量高,含免疫球蛋白等多种生物活性蛋白,同时还含有丰富的含硫氨基酸,具有改善心血管、糖尿病、婴儿营养、抗衰老、提高免疫力等保健功能。
菊粉和低聚异麦芽糖不仅能调节肠道菌群混乱,还有助于提高肠道双歧杆菌的含量,实现双重肠道保护。除此之外,菊粉能降低血糖值、淡化血糖的浓度,具有增强消化和排便功能、增强新陈代谢功能、快速恢复创伤伤口、改善血管障碍、保护肝功能等功效。低聚异麦芽糖由于很难或不被人体消化吸收,所提供的能量值很低或根本没有,故可以在低能量食品中发挥作用,最大限度地满足了那些喜爱甜品而又担心发胖者的要求,还可供糖尿病人、肥胖病人和低血糖病人食用。低聚异麦芽糖还可作为食品的保湿因子,用于需保湿时间长的食品,以延长食品的保质期。
维生素C是一种水溶性维生素,可促进骨胶原的生物合成,利于组织创伤口更快愈合,促进氨基酸中酪氨酸和色氨酸的代谢,延长机体寿命,增强机体对外界环境的抗应激能力和免疫力。同时还可改善脂肪和类脂,特别是胆固醇的代谢,预防心血管病。
甘氨酸作为一种营养增补剂,在医学上常用于治疗重症肌无力和进行性肌肉萎缩;治疗胃酸过多症,慢性肠炎(常与抗酸剂合用);与阿司匹林合用,可减少其对胃的刺激;治疗儿童高脯氨酸血症;作为生成非必需氨基酸的氮源,加入混合氨基酸注射液中。在食品方面,主要用于调味等方面,因其为具有氨基和羧基的两性离子,故有很强的缓冲性,对食盐和醋等的味感能起缓冲作用;利用其金属螯合作用,可起到抗氧化作用,添加于奶油、干酪、人造奶油可延长保存期3-4倍。
三氯蔗糖是一种白色粉末状产品,极易溶于水、乙醇和甲醇,是唯一以蔗糖为原料生产的功能性甜味剂,其甜度是蔗糖的600倍,且甜味纯正,甜味特性与蔗糖类似,没有任何苦味;无热量,不龋齿,稳定性好,尤其在水溶液中特别稳定。经过长时间的毒理试验证明其安全性极高,是目前最优秀的功能性甜味剂,现已有美国、加拿大、澳大利亚、俄罗斯、中国等三十多个国家批准使用。三氯蔗糖已广泛应用于饮料、食品、医药、化妆品等行业,由于三氯蔗糖是一种新型非营养性甜味剂,在保健食品和医药中的应用不断扩大,是肥胖症、心血管病和糖尿病患者的理想食品添加剂。
发明内容
本发明的目的是为了克服传统多肽产品苦味重、功效单一的缺点,提供一种无苦味复合多肽粉的食品配方,此配方一方面可有效地遮掩多肽产品的苦味,另一方面具有增强免疫力的作用。
为了实现上述发明目的,本发明所采用的技术方案如下:
一种无苦味复合多肽粉,是由下述重量配比的原料制成的,
乳清蛋白粉15-30份,
骨胶原蛋白肽30-60份,
大豆多肽4-7份,
酪蛋白磷酸肽1-2份,
玉米多肽1-3份,
小麦多肽1-3份,
菊粉20-50份,
维生素C 1-2份,
甘氨酸0.5-2份,
低聚异麦芽糖20-50份,
三氯蔗糖0.1-0.2份。
本发明的优点:此配方在多肽的基础上,加入乳清蛋白、菊粉、低聚麦芽糖、维生素C、甘氨酸,无需其他的调味剂,即可大幅地遮掩多肽产品的苦味,加入三氯蔗糖后呈现橘子味,口感更佳,同时此配方还具有增强免疫力的功能,可用于食品、保健食品、特殊膳食、特殊医学用途配方食品等领域。

在以下的实施例中,未详细描述的各种过程和方法是本领域中公知的常规方法。所用试剂的来源、商品名以及有必要列出其组成成分者,均在首次出现时标明,其后所用相同试剂如无特殊说明,均以首次标明的内容相同。
本实施例的原料均购自江苏江大五棵松生物科技有限公司。
本实施例的苦味评定参照邓勇和冯学武(大豆多肽分子质量分布与苦味的确定,2001)的方法。具体测定方法为:挑选对苦味敏感的5位评定者,取待评定液2~3mL置于口中,10s后吐出,漱口后取之苦味程度相近的标准液(以奎宁为基准物质,配制成不同浓度,当其浓度为3×10-6M时,刚好无苦味)品尝,如确定两苦味相近,即可将待评定液的苦味值定为该标准液的苦味值,否则需取其他标准液再尝,直至确定苦味值。结果取5位评定者的平均值。
实施例1
分别称取乳清蛋白粉1.5g,骨胶原蛋白肽3g,大豆多肽0.4g,酪蛋白磷酸肽0.1g,玉米多肽0.1g,小麦多肽0.1g,菊粉2g,维生素C 0.1g,甘氨酸0.05g,低聚异麦芽糖2g份,三氯蔗糖0.01g,混匀,经感官评定,无明显苦味。
实施例2
分别称取乳清蛋白粉3g,骨胶原蛋白肽6g,大豆多肽0.7g,酪蛋白磷酸肽0.2g,玉米多肽0.3g,小麦多肽0.3g,菊粉5g,维生素C 0.2g,甘氨酸0.2g,低聚异麦芽糖5g,三氯蔗糖0.02g,混匀,经感官评定,无苦味。
实施例3
分别称取乳清蛋白粉2g,骨胶原蛋白肽5g,大豆多肽0.6g,酪蛋白磷酸肽0.15g,玉米多肽0.2g,小麦多肽0.2g,菊粉3g,维生素C 0.15g,甘氨酸0.1g,低聚异麦芽糖3g份,三氯蔗糖0.015g,混匀,经感官评定,无苦味。
实施例4
分别称取乳清蛋白粉2.5g,骨胶原蛋白肽4g,大豆多肽0.6g,酪蛋白磷酸肽0.15g,玉米多肽0.2g,小麦多肽0.2g,菊粉4g,维生素C 0.15g,甘氨酸0.15g,低聚异麦芽糖4g份,三氯蔗糖0.015g,混匀,经感官评定,无苦味。
实施例5
通过小鼠动物试验,对本发明实施例1配方在提高免疫力方面的生理作用进行验证,具体结果如下:
(一)复合多肽粉对正常小鼠胸腺/体重和脾脏/体重的影响

由表1可知,经口给予小鼠不同剂量的复合多肽粉30天后,与对照组比较,各剂量组胸腺/体重和脾脏/体重比值均无显著差异(p>0.05)。该实验结果呈阴性。
(二)复合多肽粉对正常小鼠血清溶血素的影响

由表2可知,经口给予小鼠不同剂量的复合多肽粉30天后,与对照组比较,各剂量组血清溶血素水平均无显著差异(p>0.05)。该实验结果呈阴性。
(三)复合多肽粉对ConA诱导的小鼠淋巴细胞转化的影响

由表3可见,受试物各剂量组光密度差值均高于溶剂对照组,结果经方差分析及两两比较统计学处理,低剂量组小鼠光密度差值与溶剂对照组相比显著降低(p<0.01)。该实验结果呈阳性。
(四)复合多肽粉对正常小鼠迟发型变态反应(DTH)的影响

由表4可见,受试物各剂量组小鼠耳廓肿胀程度均高于溶剂对照组,结果经两两比较统计学处理,低、中、高剂量组小鼠耳廓肿胀程度与溶剂对照组相比均显著增加(p<0.05,p<0.05,p<0.01)。该项实验结果呈阳性。
(五)复合多肽粉对正常小鼠HK细胞活性的影响

由表5可见,受试物低、高剂量组小鼠NK细胞活性均高于溶剂对照组,结果经方差分析及两两比较统计学处理,低剂量组小鼠NK细胞活性与溶剂对照组相比显著增加(p<0.05)。该项实验结果呈阳性。
试验表明,经口给予小鼠不同剂量的复合多肽粉30d,对小鼠体重增长、胸腺/体重比值、脾/体重比值均无影响;细胞免疫功能实验中ConA诱导的小鼠脾淋巴细胞转化实验为阳性,二硝基氟苯诱导小鼠迟发性变态反应实验为阳性;体液免疫功能实验中血清溶血素测定实验为阴性;NK细胞活性测定实验为阳性。根据保健食品增强免疫功能评价标准,该复合多肽粉具有增强免疫力的功能。
从以上数据可以看出,本发明之复合多肽粉对小鼠体重增长、胸腺/体重比值、脾/体重比值均无影响,能够增强机体的免疫能力。

乳清蛋白粉15-30份,
骨胶原蛋白肽30-60份,
大豆多肽4-7份,
酪蛋白磷酸肽1-2份,

小麦多肽1-3份,
菊粉20-50份,
维生素C 1-2份,
甘氨酸0.5-2份,
低聚异麦芽糖20-50份,
三氯蔗糖0.1-0.2份。
