现代研究证实花卉中含有较为丰富的氨基酸、维生素、矿物质和微量元素,同时还含有脂肪、核酸、生长因子、酶类物质和抑菌物质等生物活性成分,有学者研究报道,花卉还具有独特的药理功能,许多花卉不仅具有清热解毒、理气养血之功效,还具有清目提神、健胃、增强免疫力的功能,经常食用花卉能松弛人们的紧张情绪,还有美容、健肤、促进血液循环等作用。近年来少量天然花卉饮品、食品在市场很受欢迎。开发更多的含有花卉营养功能的食品和饮品是人们生活不断提高的要求,也是人们健康、健美生活的追求。然而,这些产品都因季节、地域环境,货源渠道的局限不能得到普及应用,很难形成市场消费的普遍性,为此,研究开发一种花卉酒,给人们提供不受季节时令地域限制的饮品来满足人们的需求。
蜂蜜为蜜蜂科昆虫中华蜂蜜Apis Ceran Fabr或意大利蜂Apis melliferal.所酿的蜜。其化学成分转化糖、挥发油、蜡质、有机酸、花粉粒,并且含泛酸、烟酸、乙酰胆碱、维生素A、D、E等。尚含淀粉酶、蔗糖转化酶、葡萄糖氧化酶、过氧化氢酶、酸性磷酸脂酶、多种氨基酸、Ca、Fe、Zn、Mn、Cu、Se和Mo等微量元素,以及La、Ce等稀土元素。其药理作用有对创面有收敛、营养和促进愈合的作用;有润滑性祛痰和缓泻作用;能消除体内自由基、抗氧化作用。性味甘,平。具有补中、润燥,止痛,解毒的功能,临床常用于腔腹虚痛,肺燥干咳,肠燥便秘等。
随着人们生活水平的提高,健康养生、美容健体已成为人们的时尚追求,人们对保健食品的欲望和需求不断增长,特别是对一些天然的健康食品更是备受人们的青睐,蜂蜜由于源于天然的蜜蜂采食花粉糖源在蜂巢中所酿的甜物质分泌物体,具有很多成分能被机体吸收,且具有护肤美容、抗消炎、促进组织再生,促进消化、提高免疫力、改善睡眠、保肝、抗疲劳、促进儿童生长发育、保护心血管、润肺止咳等诸多功效,特别是蜂蜜是高血糖人群能够食用的甜食,蜂蜜是老幼皆宜的甜味补益食品,因此蜂蜜的年消费量在不断的增加。根据放蜂的季节和花源不同,所产的蜂蜜含的花粉也不尽相同,如洋槐花蜜、梨花蜜、荔枝花蜜、芝麻花蜜、枣花蜜、荞麦花蜜、油菜花蜜、向日葵花蜜等等。但因受季节和花卉资源的限制,针对性花蜜很难保障消费市场的需求。利用花卉和蜂蜜进行巧妙的配合加工制备成花卉蜜,能够使得花卉蜜的市场得到相应的有益补充。本发明采用花卉中较为丰富的活性营养成分融合到蜂蜜中,达到花卉和蜂蜜的有机结合,虽然不及蜜蜂采食花粉糖源而酿造的天然花蜜,但就经过特定的加工过程所产生的效果,对提高蜂蜜的还原糖的提升以及对花卉中有机活性成分的提取,对提升一般蜂蜜的营养价值,增加花卉的营养功效是有一定的价值的。能够呈现花卉和蜂蜜的有益功效。
发明内容
本发明的目的是提供一种由花卉和蜂蜜配合加工成花卉蜂蜜的方法,该加工工艺制得的花卉蜜,可有效提升蜂蜜中的花卉有效成分和蜂蜜的风味,增加蜂蜜营养功效,既丰富了蜂蜜的品种,同时为人们提供花卉和蜂蜜有机融合制品的需求,满足人们健康饮食的需求。
本发明的目的在于提供一种花卉蜜的加工方法。
本发明的目的是通过以下技术方案实现的:
一种花卉蜜的加工方法,其特征是由花卉和蜂蜜的重量比为花卉:蜂蜜=1-10:90-99比例配比,按以下加工方法制得:(1)先将花卉经剔除残枝、残梗、残叶等杂质,采用烘干机,于40-50℃条件下热风烘干至含水量在2%以下;(2)将烘干的花卉采用普通粉碎设备粉碎成30目-50目粉,得花卉粉;(3)将蜂蜜和水置入蒸气夹层锅中,按蜂蜜和水的重量比加入1:0.25比例的纯净水,(蜜水总量不能超过锅容积的1/2),加热至沸,用板筐过滤器滤过,再抽入锅中继续加热,待温度升至110℃-115℃时,将步骤(2)得到的花卉粉倒入热蜜中,快速搅拌10-60s,停止加热,然后通过夹层依次通入温水和冷水 ,让其快速冷却至常温,于常温处浸渍7天;(4)将浸渍后的蜂蜜加热至60℃保温20分钟,然后选用60目-80目筛过滤,弃渣得蜜汁;(5)再将蜜汁用200目筛过滤,抽入锅内,在40-60℃条件下搅拌煎熬,逐渐蒸去部分水分,待含水量在20-22%,比重在1.32-1.34,停止加热,趁热装瓶,待冷却后包装,即得产品。

本发明采用植物花卉的干花或鲜花为主要原料之一,与蜂蜜按重量比组合按本发明方法加工成不同比例的花卉蜜,其性状为透明、粘稠的液体,无死蜂、幼虫、蜡屑及其他的杂质,其气味芳香,滋味甘甜,具有植物花卉特有的花香味,无异味,无刺激性,具有较好外观和品质风味。由于本发明的方法,采用蜂蜜与水的混合液在短时高温加热而后段采取低温煎熬而减少水分,故产品的呈透明的外面,色泽较浅呈透明色,其粘稠度与常蜜基本无异,具有较好的外观质感。
本发明产品不仅保留了花卉品种特有的芳香气味,同时在高温瞬时炸取和常温长时间浸渍萃取花卉的营养物质,使花卉有益的活性物质有效的融合到蜂蜜中,特别是本发明采用了40℃-60℃低温浓缩过程,能很好地使蜂蜜中的减少对酶的破坏或不受损失,使蜂蜜中的酶含量得到保证。不仅为蜂蜜制品增添了新的特色,同时,让人们在食用蜂蜜时得到花卉的营养与精华,为人们养生、保健的需求增添了新的保健食品的选择。本发明不仅大大提升了花卉原料的附加值,还为农产品深加工开拓了新的途径。本发明加工工艺简单,耗能低,能够实现工业化生产,具有较好经济和社会效益前景。

实施例1
(1)首先取菊花干花,剔除残枝茎和残叶等杂质,采用烘干机于40℃条件下热风烘干至含水量在2%以下;(2)将烘干后的菊花10kg采用万能粉碎机粉碎成35目粉,得菊花粉;(3)取蜂蜜90kg置入蒸气夹层锅(夹层锅容积500L)中,加纯净水22.5kg,搅拌均匀,经锅夹层通蒸气加热至沸,用板筐过滤器进行过滤,过滤后的蜜再抽入锅中继续加热,待温度升至110-115℃时,将步骤(2)得到的菊花粉倒入热蜜中,并快速搅拌10s,然后停止加热,经锅夹层依次先通入温水,再通入冷水使锅内蜂蜜快速冷却至常温,然后盖上锅盖,置常温处浸渍7天;(4)将浸渍后蜂蜜,加热至60℃保温20分钟,然后用60目筛过滤,弃渣得蜜汁;(5)再将蜜汁用200目筛过滤,然后将蜜汁再抽入锅内,在60℃条件下不断搅拌煎熬,逐渐蒸去部分水分,待蜜的含水量在20-22%、比重在1.32-1.34范围时,即停止加热,趁热装瓶,待冷却后包装,即得产品。

(1)首先取人参花干花,剔除花梗、残叶等杂质,采用烘干机于45℃条件下热风烘干至含水量在2%以下;(2)将烘干后的人参花3kg采用万能粉碎机粉碎成45目粉,得人参花粉;(3)取蜂蜜97kg置入蒸气夹层锅(夹层锅容积500L)中,加纯净水24.25kg,搅拌均匀,经锅夹层通蒸气加热至沸,用板筐过滤器进行过滤,过滤后的蜜再抽入锅中继续加热,待温度升至110-115℃时,将步骤(2)得到的人参花粉倒入热蜜中,并快速搅拌15s,然后停止加热,经锅夹层依次先通入温水,再通入冷水使锅内蜂蜜快速冷却至常温,然后盖上锅盖,置常温处浸渍7天;(4)将浸渍后的蜂蜜,加热至60℃保温20分钟,然后用70目筛过滤,弃渣得蜜汁;(5)再将蜜汁用200目筛过滤,然后将蜜汁再抽入锅内,在40℃条件下不断搅拌煎熬,逐渐蒸去部分水分,待蜜的含水量在20-22%、比重在1.32-1.34范围时,即停止加热,趁热装瓶,待冷却后包装,即得产品。
实施例5
(1)首先取南瓜花鲜花,剔除花梗等杂质,采用烘干机于50℃条件下热风烘干至含水量在2%以下;(2)将烘干后的南瓜花10kg采用万能粉碎机粉碎成35目粉,得南瓜花粉;(3)取蜂蜜90kg置入蒸气夹层锅(夹层锅容积500L)中,加纯净水22.5kg,搅拌均匀,经锅夹层通蒸气加热至沸,用板筐过滤器进行过滤,过滤后的蜜再抽入锅中继续加热,待温度升至110-115℃时,将步骤(2)得到的南瓜花粉倒入热蜜中,并快速搅拌60s,然后停止加热,经锅夹层依次先通入温水,再通入冷水使锅内蜂蜜快速冷却至常温,然后盖上锅盖,置常温处浸渍7天;(4)将浸渍后的蜂蜜,加热至60℃保温20分钟,然后用60目筛过滤,弃渣得蜜汁;(5)再将蜜汁用200目筛过滤,然后将蜜汁再抽入锅内,在60℃条件下不断搅拌煎熬,逐渐蒸去部分水分,待蜜的含水量在20-22%、比重在1.32-1.34范围时,即停止加热,趁热装瓶,待冷却后包装,即得产品。

(1)首先分别取三七花干花和丹参花干花,剔除残梗、残叶等杂质,采用烘干机于42℃条件下热风烘干至含水量在2%以下;(2)将烘干的三七花1kg和丹参花4kg分别采用万能粉碎机粉碎成40目粉,得三七花粉和丹参花粉;(3)取蜂蜜95kg置入蒸气夹层锅(夹层锅容积500L)中,加纯净水23.75kg,搅拌均匀,经锅夹层通蒸气加热至沸,用板筐过滤器进行过滤,过滤后的蜜再抽入锅中继续加热,待温度升至110-115℃时,将步骤(2)得到的三七花粉和丹参花粉倒入热蜂中,并快速搅拌30s,然后停止加热,经锅夹层依次先通入温水,再通入冷水使锅内蜂蜜快速冷却至常温,然后盖上锅盖,置常温处浸渍7天;(4)将浸渍后蜂蜜,加热至60℃保温20分钟,然后用80目筛过滤,弃渣得蜜汁;(5)再将蜜汁用200目筛过滤,然后将蜜汁再抽入锅内,在55℃条件下不断搅拌煎熬,逐渐蒸去部分水分,待蜜的含水量在20-22%、比重在1.32-1.34范围时,即停止加热,趁热装瓶,待冷却后包装,即得产品。

(1)首先分别取桃花干花,剔除花托、杂叶等杂质,茶花剔除残枝茎、残叶等杂质,当归花剔除花茎及残叶等杂质,采用烘干机于40℃条件下热风烘干至含水量在2%以下;(2)将烘干后的桃花2kg、茶花2kg和当归花4kg分别粉碎成50目粉,得桃花粉、茶花粉和当归花粉;(3)取蜂蜜92kg置入蒸气夹层锅(夹层锅容积500L)中,加纯净水23kg,搅拌均匀,经锅夹层通入蒸气加热至沸,用板筐过滤器进行过滤,过滤后的蜜再抽入锅中继续加热,待温度升至110-115℃时,将步骤(2)得到的桃花粉、茶花粉和当归花粉倒入热蜜中,并快速搅拌15s,然后停止加热,经锅夹层依次先通入温水,再通入冷水使锅内蜂蜜快速冷却至常温,然后盖上锅盖,置常温处浸渍7天;(4)将浸渍后蜂蜜,加热至60℃保温20分钟,然后用80目筛过滤,弃渣得蜜汁;(5)再将蜜汁用200目筛过滤,然后将蜜汁再抽入锅内,在45℃条件下不断搅拌煎熬,逐渐蒸去部分水分,待蜜的含水量在20-22%、比重在1.32-1.34范围时,即停止加热,趁热装瓶,待冷却后包装,即得产品。
Claims (5)
1.一种花卉蜜的加工方法,其特征是主要以花卉和蜂蜜为原料,由花卉和蜂蜜的重量比为花卉:蜂蜜=1-10:90-99比例配比,按以下加工方法制得:(1)先将花卉经剔除残枝、残梗、残叶等杂质,采用烘干机,于40-50℃条件下热风烘干至含水量在2%以下;(2)将烘干的花卉采用普通粉碎设备粉碎成30目-50目粉,得花卉粉;(3)将蜂蜜和水置入蒸气夹层锅中,按蜂蜜和水的重量比加入1:0.25比例的纯净水,蜜水总量不能超过锅容积的1/2,加热至沸,用板筐过滤器滤过,再抽入锅中继续加热,待温度升至110℃-115℃时,将步骤(2)得到的花卉粉倒入热蜜中,快速搅拌10-60s,停止加热,然后通过夹层依次通入温水和冷水 ,让其快速冷却至常温,于常温处浸渍7天;(4)将浸渍后的蜂蜜加热至60℃保温20分钟,然后选用60目-80目筛过滤,弃渣得蜜汁;(5)再将蜜汁用200目筛过滤,抽入锅内,在40-60℃条件下搅拌煎熬,逐渐蒸去部分水分,待含水量在20-22%,比重在1.32-1.34,停止加热,趁热装瓶,待冷却后包装,即得产品。
