本发明涉及食品加工技术领域,尤其是一种降脂养生粥及其制备方法。
背景技术
海参属海参纲,是生活在海边至8000米的海洋棘皮动物,距今已有六亿多年的历史,海参以海底藻类和浮游生物为食,海参全身长满肉刺,广布于世界各海洋中,我国南海沿岸种类最多,约有二十余种海参可供食用,海参同人参、燕窝、鱼翅齐名,是世界八大珍品之一,海参不仅是珍贵的食品,也是名贵的药材,根据《本草纲目拾遗》中记载:海参,味甘咸,补肾,益精髓,摄小便,壮阳疗痿,其性温补,足敌人参,故名海参,海参具有提高记忆力、延缓性腺衰老,防止动脉硬化以及抗肿瘤等作用,随着海参价值知识的普及,海参逐渐进入百姓餐桌。轻脂米外观色泽同普通大米一样,其原理在于通过调整肥胖者体内营养结构,促使体内组织液环境趋于平衡与健康化,从而形成新的应答习惯,创造有利于脂肪代谢功能恢复正常的体内环境。随着生活水平的不断提高,肥胖的人越来越多,多数人减肥会选择节食减肥,但是节食减肥需要忍受饥饿的痛苦,并且会由于摄入体内的营养不足而导致生病,这样会对身体健康造成危害。
发明内容
为了克服现有技术的不足,本发明提供了一种降脂养生粥及其制备方法,该降脂养生粥富含十六种氨基酸,十多种矿物质微量元素和丰富的食物纤维,可通过调整肥胖者体内的营养结构,促使体内组织液环境趋于平衡与健康化,进而形成新的应答习惯,创造机体有利于脂肪代谢功能恢复正常的体内环境,对人体内部的脂肪代谢功能予以启动、激活、强化,从而真正实现健康化、不反弹的减脂瘦身效果。
本发明解决其技术问题所采用的技术方案是:一种降脂养生粥及其制备方法,包括以下原料:海参、轻脂米、鸡、鸭、猪棒骨、精肉、金华火腿、瑶柱、红枣、生姜、葱、料酒、盐、水和纯净水;
其制备步骤为:
步骤1.原料挑选:
海参,选自深海野生海参;挑选新鲜优质的老鸡、鸭、猪棒骨和精肉;挑选优质的金华火腿和瑶柱;选择新鲜的生姜和葱;挑选规格相同、大小相近的紫红色、饱满颗粒的红枣;
步骤2.海参处理:
a.用刀沿着海参的腹部中间剖开2-4cm,去除海参的内脏,用清水洗净海参内部残留物,得到清洗去脏后的海参;
b.摘除参嘴,用清水洗干净,得到去除参嘴的海参;
c.将去除参嘴的海参放入沸腾的纯净水中煮40-50min,得到缩小的海参;
d.将缩小后的海参用纯净水清洗,放入纯净水的冰水混合物中浸泡24-48h,每隔7-9h换一次纯净水;
e.将泡发好的海参沥干水分,切片,备用;
步骤3.高汤预处理:
a.将老鸡和鸭去除内脏,退毛洗净后,分别将其头部、脖子、屁股以及屁股周边的肥油清除,再将老鸡和鸭从中间劈成两半,再次清除残留的血水和内脏,清水洗净后,分别剁块,备用;
b.将猪棒骨、精肉、金华火腿、瑶柱、红枣、生姜和葱用清水洗净,瑶柱沥干水分,备用;
c.将精肉和金华火腿分别切块,备用;将生姜去皮,切片,备用;将葱切段,备用;将红枣去核,备用;
步骤4.原料综合处理:
a.将处理好的鸡块、鸭块、猪棒骨、精肉分别放入水中,倒入料酒,缓慢升温至水微沸,微沸后保持5-10min,并在此过程中撇除水表面杂质;微煮处理后,对微煮后的鸡块、鸭块、猪棒骨、精肉再用清水洗净;
b.将海参片用纯净水浸泡1-2h,取出海参片,沥干水分,备用;海参浸泡水保留,备用;
c.将瑶柱用清水浸泡1-2h,取出瑶柱,沥干水分,备用;瑶柱浸泡水保留,备用;
步骤5.熬制高汤:
a.将洗净的鸡块、鸭块、金华火腿、猪棒骨、精肉和处理好的瑶柱、红枣、生姜片、葱放入水中,并加入瑶柱浸泡水和海参浸泡水,使得水面没过原料,并高出原料6-10cm;
b.用大火将水煮沸,再转为小火保持汤面微沸;微沸过程中,不得翻动原料,并对汤表面的杂质不停撇除;
c.微煮3-5h后,停火,加盐调味;
d.滤除高汤中原料等物品,获得高汤,置于常温下自然降温后,将表面凝结的薄膜清除;
步骤6.包装灭菌:将高汤、海参片、轻脂米分别杀菌处理,真空包装,冷冻保存。
进一步,本发明的原料的配比:海参0.5-1.5只、轻脂米25-50g、老鸡30-100g、鸭30-100g、猪棒骨50-150g、精肉30-100g、金华火腿30-100g、瑶柱150-250g、红枣3-6个、生姜3-5g、葱3-8g、料酒15-30g、盐3-6g、水和纯净水。
本发明各原料的分析:
海参:海参含胆固醇极低,为一种典型的高蛋白、低脂肪、低胆固醇食物,肉质细嫩,易于消化,海参“甘,咸,温,补肾益精,壮阳疗痿”,《随息居饮食谱》中说:海参能“滋阴补血,健阳润燥,调经,养胎,利产”,因海参似海带、海藻等海产品,含有一定量的碘,故还有促使新陈代谢旺盛、血液流畅的作用。
轻脂米:轻脂米的主要营养成分分配为高蛋白质、高纤维素、高维生素、高矿物质和高活性肽,高蛋白质水解后的物质可调整人体组织液浓度,增强肌肉细胞活性,促进脂肪分解代谢,抑制促进脂肪形成的荷尔蒙分泌;高纤维素裹挟脂肪减少肠道内吸收,增加肠胃蠕动,促进体内垃圾毒素排出;高维生素促进脂肪燃烧与热量转化,避免脂肪囤积;高矿物质维持机体的酸碱平衡及组织细胞渗透压,活化脂肪酶,促进脂肪代谢;高活性肽是一类特殊小分子蛋白,具有100%无障碍吸收优点,可快速渗透皮下、脏器、血液等全身组织,促进脂肪细胞内甘油三酯释放与转化,活性肽可以产生一定的机械强度,增强细胞强度和弹性,抗细胞老化,承托人体曲线,能承载多种微量元素加速吸收,兼具蛋白质营养功能但更加出色。
老鸡:鸡肉中含有较高的谷氨酸鲜味成分,它是高汤鲜美滋味的主要来源,通常禽类成年后比幼小时肉质中所含的鲜味物质更多。
鸭子:鸭肉虽与鸡肉一样同属禽类,但是肉质中的赖氨酸含量较多,可以令高汤中的鲜味口感更丰富,鸭肉搭配海参还可以补五气,祛火热,滋养五脏。
猪棒骨:猪骨中含有丰富的钙、铁、脂肪和磷脂等营养物质,可有效的增加高汤浓度,提高营养价值,其中的磷脂更是很好的乳化剂,可促使油脂乳化,使熬好的高汤呈稳定的乳白色。
金华火腿:火腿内含丰富的蛋白质和脂肪,多种维生素和矿物质;火腿制作经冬历夏,经过发酵分解,营养成分更易被人体所吸收,具有养胃生津、益肾壮阳、固骨髓、健足力、愈创口等作用;火腿在长达数月的发酵过程,在酸、碱或酶的共同作用下,分解出多达18种氨基酸,其中8种是人体不能自行合成的必备氨基酸。
精肉:精肉含有丰富的B族维生素,能调节新陈代谢,维持皮肤和肌肉的健康,增强免疫系统和神经系统的功能,促进细胞生长和分裂,预防贫血发生,而且精肉中的血红蛋白比植物中的更好吸收,因此补铁效果好。
瑶柱:瑶柱性味甘咸平,功能滋阴补肾、健脾调中,《本草从新》说它能“下气调中,利五脏,疗消渴”之效,《本草求原》说它有“滋真阴,止小便”之功,瑶柱含丰富蛋白质和少量碘质,功效与海藻、海带接近,但它含有非常浓郁的香味,味道更可口、更鲜美,无论做主料或配料都能突出或增添菜肴的美味,干瑶柱所含热量是腊肠或腊肉的一半,而脂肪含量更只是腊肉的二十分之一,是女性非常理想的健康减肥修身之妙品。
红枣:红枣有很好的补血功效,同时它还能够抗癌降血压,降低胆固醇。
本发明的有益效果是,一种降脂养生粥及其制备方法,将海参和肉类的营养全面结合,在保证味道鲜美、无任何添加剂的情况下,丰富蛋白质种类,保证减肥时机体所需各种营养物质,同时促进全身组织间的脂肪细胞内甘油三酯的释放与转化,并启动脂肪代谢功能高效发挥,强化了机体内脂肪代谢所需的数十种酶和辅酶的作用,在丰富的营养摄入的基础上促进代谢的作用,可在不节食的情况下,保证只掉脂肪不掉营养,并且还具有抗癌、养颜、通脉、抗衰老等功能。
具体实施方式
下面结合具体实施方式详细说明本发明的技术方案,但保护范围不被此限制。
一种降脂养生粥及其制备方法,包括以下原料:海参、轻脂米、鸡、鸭、猪棒骨、精肉、金华火腿、瑶柱、红枣、生姜、葱、料酒、盐、水和纯净水;其配比为:海参1只、轻脂米30g、老鸡50g、鸭50g、猪棒骨100g、精肉50g、金华火腿50g、瑶柱200g、红枣5个、生姜5g、葱5g、料酒20g、盐5g、水和纯净水;
其制备步骤为:
步骤1.原料挑选:
海参,选自深海野生海参;挑选新鲜优质的老鸡、鸭、猪棒骨和精肉;挑选优质的金华火腿和瑶柱;选择新鲜的生姜和葱;挑选规格相同、大小相近的紫红色、饱满颗粒的红枣;
步骤2.海参处理:
a.用刀沿着海参的腹部中间剖开3cm,去除海参的内脏,用清水洗净海参内部残留物,得到清洗去脏后的海参;
b.摘除参嘴,用清水洗干净,得到去除参嘴的海参;
c.将去除参嘴的海参放入沸腾的纯净水中煮45min,得到缩小的海参;
d.将缩小后的海参用纯净水清洗,放入纯净水的冰水混合物中浸泡32h,每隔8h换一次纯净水;
e.将泡发好的海参沥干水分,切片,备用;
步骤3.高汤预处理:
a.将老鸡和鸭去除内脏,退毛洗净后,分别将其头部、脖子、屁股以及屁股周边的肥油清除,再将老鸡和鸭从中间劈成两半,再次清除残留的血水和内脏,清水洗净后,分别剁块,备用;
b.将猪棒骨、精肉、金华火腿、瑶柱、红枣、生姜和葱用清水洗净,瑶柱沥干水分,备用;
c.将精肉和金华火腿分别切块,备用;将生姜去皮,切片,备用;将葱切段,备用;将红枣去核,备用;
步骤4.原料综合处理:
a.将处理好的鸡块、鸭块、猪棒骨、精肉分别放入水中,倒入料酒,缓慢升温至水微沸,微沸后保持7min,并在此过程中撇除水表面杂质;微煮处理后,对微煮后的鸡块、鸭块、猪棒骨、精肉再用清水洗净;
b.将海参片用纯净水浸泡1.5h,取出海参片,沥干水分,备用;海参浸泡水保留,备用;
c.将瑶柱用清水浸泡1.5h,取出瑶柱,沥干水分,备用;瑶柱浸泡水保留,备用;
步骤5.熬制高汤:
a.将洗净的鸡块、鸭块、金华火腿、猪棒骨、精肉和处理好的瑶柱、红枣、生姜片、葱放入水中,并加入瑶柱浸泡水和海参浸泡水,使得水面没过原料,并高出原料8cm;
b.用大火将水煮沸,再转为小火保持汤面微沸;微沸过程中,不得翻动原料,并对汤表面的杂质不停撇除;
c.微煮4h后,停火,加盐调味;
d.滤除高汤中原料等物品,获得高汤,置于常温下自然降温后,将表面凝结的薄膜清除;
步骤6.包装灭菌:将高汤、海参片、轻脂米分别杀菌处理,真空包装,冷冻保存。
本发明的食用方法:将轻脂米倒入碗中加入30ml沸水,浸泡10分钟,然后取出高汤和海参片自然解冻,解冻后放入锅中加热烧开,将烧好的高汤和海参倒入泡好的米中,加入葱和香菜末即可食用。

Claims (2)
1.一种降脂养生粥及其制备方法,其特征在于,其包括以下原料:海参、轻脂米、鸡、鸭、猪棒骨、精肉、金华火腿、瑶柱、红枣、生姜、葱、料酒、盐、水和纯净水;
其制备步骤为:
步骤1.原料挑选:
海参,选自深海野生海参;挑选新鲜优质的老鸡、鸭、猪棒骨和精肉;挑选优质的金华火腿和瑶柱;选择新鲜的生姜和葱;挑选规格相同、大小相近的紫红色、饱满颗粒的红枣;
步骤2.海参处理:
