一种健康养生馒头的生产方法,(1)主要原料按质量百分比小麦粉95~99%、桑叶粉或红薯叶粉0.1~5%、木瓜粉0.1~5%、西兰花粉0.1~5%。桑叶粉(或红薯叶粉)、木瓜粉和西兰花粉总质量与小麦粉质量比为1~4﹕100;(2)按每100g主原料,添加酵母1~2.5g、奶粉2~5g、盐0.1~0.3g、改良剂0.1~0.3g、泡打粉0.5~0.9g、甜菊糖0.02~0.05g,木糖醇2~6g、水等;(3)将主原辅料混匀,面团揉至表面光滑,于30~40℃、湿度70~80%发酵,手工成型再35~45℃、湿度75~85%醒发,汽蒸。本发明产品营养成分丰富,能增加人的食欲和起到养生保健的功能。

本发明属于食品技术领域,涉及一种健康养生木瓜馒头的生产方法。
背景技术
干桑叶中含粗蛋白25%~45%,碳水化合物20%~25%,粗脂肪5%,以及丰富的钾、钙和维生素C等,还有铜、锌、硼、锰等多种微量元素。桑叶中含有蜕皮固酮、羽扁豆酮以及靶香甙、桑甙等多种氨基酸、维生素、绿原酸、叶酸、延胡索酸、内消旋肌酸、植物雌激素等人体所需物质,因此桑叶的药用价值极其广泛,有清肺润燥、止咳、去热、化痰、治盗汗;补肝、清肝明目、治疗头晕眼花、失眠、消除眼部疲劳;消肿、清血、治疗痢疾、腹痛、减肥、除脚气、利大、小肠;抗应激、抗衰老、抗菌抗病毒、增强机体耐力、凉血、降血压、降血脂、预防心肌梗塞和脑溢血、祛头痛、长发;降血糖、抗糖尿病 。
红薯叶为旋花科一年生草本植物红薯的叶子,其营养和保健作用一直备受人们关注,据研究发现,红薯叶中营养成分全面,含有丰富的蛋白质,粗纤维,钙、铁、磷、镁等矿物质,维生素C、维生素B1、维生素B2等维生素成分以及绿原酸、多糖、黄酮类化合物、类胡萝卜素、生物碱、蒽醌、香豆素和萜类内酯等营养物质。因此红薯叶有很高的生物活性,红薯叶有增强机体免疫能力,促进人体新陈代谢,调节血糖、降血脂、降胆固醇、止血、解毒、抗氧化、预防细胞癌变、保护视力和预防夜盲症、对预防动脉硬化和脑血栓都有重要的作用。
木瓜有健脾消食的作用。木瓜中的木瓜蛋白酶,可将脂肪分解为脂肪酸。木瓜中含有一种酵素,能消化蛋白质,有利于人体对食物进行消化和吸收,因此有健脾消食之功。吃了太多的肉,脂肪容易堆积在下半身,木瓜里的酵素,可帮助分解肉食,减低胃肠的工作量,让肉感的双腿慢慢变得更有骨感。它独有的番木瓜碱具有抗肿瘤功效,并能阻止人体致癌物质亚硝酸胺的合成,对淋巴性白血病细胞具有强烈抗癌活性。木瓜所含的齐墩果成分是一种具有护肝降酶、抗炎抑茵、降低血脂、软化血管等功效的化合物。
发明内容
本发明的目的是提供一种健康养生馒头的生产方法。
本发明所述的健康养生馒头的生产方法,包括以下步骤。
(1)按质量百分比,主原料包括:小麦粉95~99% 、桑叶粉或红薯叶粉0.1~5% 、木瓜粉0.1~5% 、西兰花粉0.1~5%。桑叶粉或红薯叶粉、木瓜粉和西兰花粉总质量与小麦粉质量比为1﹕100~4﹕100。
(2)按每100g主原料,添加辅料:酵母1~2.5g、奶粉2~5g、盐0.1~0.3g、改良剂0.1~0.3g、泡打粉0.5~0.9g、甜菊糖0.02~0.05g,木糖醇2~6g,水50~60g。
(3)按上述主原料、辅料的比例取料,混匀,将面团揉至表面光滑,置于温度为30~40℃、湿度为70~80%条件下发酵,之后,手工成型再放入温度为35~45℃、湿度为75~85%的条件下醒发,最后汽蒸10~30min得到健康养生馒头。
优选地,按质量百分比,主原料:桑叶粉或红薯叶粉0.1~2% 、木瓜粉0.1~2% 、西兰花粉0.1~2%,桑叶粉或红薯叶粉、木瓜粉和西兰花粉总量与小麦粉的质量比例为1.2:100,发酵后得到的健康养生馒头口感最佳。此外,每100g主原料中,添加富硒酵母9.5~10mg,富锌酵母0.1~0.2g,安琪酵母1~2g,可使每100g馒头中含有11.558~12.166ug硒,1.217~2.433mg锌,强化健康养生馒头的硒和锌元素。
本发明的有益效果是:(1)本方法生产的健康养生馒头具有增强机体免疫能力,促进人体新陈代谢,调节血糖,抗衰老抗癌和预防心脑血管疾病等功能。(2)本生产的健康养生馒头的工艺操作简单,生产周期短,产品成本低,适合工艺化大规模生产。
具体实施方式
本发明将通过以下实施例作进一步说明。
实施例 1。
一种健康养生馒头,由以下原料制成:高筋面粉100g,桑叶粉或红薯叶粉0.4g、木瓜粉0.4g、西兰花粉0.4g,富锌酵母0.164g,富硒酵母0.01g,安琪酵母1.84g,奶粉3.036g,盐0.202g,改良剂0.202g,泡打粉0.81g,甜菊糖0.04g,木糖醇4.858g,水54g。
首先将高筋面粉和桑叶粉或红薯叶粉、木瓜粉、西兰花粉充分混匀,再加入奶粉、盐、泡打粉、甜菊糖、木糖醇等配料,混合均匀。将酵母和改良剂混合,用16g的温水活化10min,再将酵母液和所有原料置于揉面机中和面30min,然后放置温度30℃,相对湿度75%的发酵箱中发酵1h,取出面团手工赶除气泡并揉至成型,放于温度40℃,相对湿度80%的醒发箱中醒发20min,取出放入蒸锅中汽蒸20min后关火,等待5min馒头即可出锅。
实施例 2。
一种健康养生木瓜馒头,由以下重量的原料制成:高筋面粉105g,桑叶1g、木瓜0.45g、西兰花0.45g,富锌酵母0.174g,富硒酵母0.01g,安琪酵母1.799g,奶粉3.207g,盐0.214g,改良剂0.214g,泡打粉0.855g,甜菊糖0.043g,木糖醇5.131g,水57g。
首先将高筋面粉和桑叶粉或红薯叶粉、木瓜粉、西兰花粉充分混匀,再加入奶粉、盐、泡打粉、甜菊糖、木糖醇等配料,混合均匀。将酵母和改良剂混合,用20g的温水活化12min,再将酵母液和所有原料置于揉面机中和面35nin,然后放置温度35℃,相对湿度80%的发酵箱中发酵1.5h,取出面团手工赶除气泡并揉至成型,放于温度45℃,相对湿度85%的醒发箱中醒发23min,取出放入蒸锅中汽蒸23min后关火,等待5min馒头即可出锅。

1.一种健康养生馒头的生产方法,其特征是包括以下步骤:(1)按质量百分比,主原料包括:小麦粉95~99% 、桑叶粉或红薯叶粉0.1~5% 、木瓜粉0.1~5% 、西兰花粉0.1~5%;桑叶粉或红薯叶粉、木瓜粉和西兰花粉总质量与小麦粉质量比为1﹕100~4﹕100;(2)按每100g主原料,添加辅料:酵母1~2.5g、奶粉2~5g、盐0.1~0.3g、改良剂0.1~0.3g、泡打粉0.5~0.9g、甜菊糖0.02~0.05g,木糖醇2~6g,水50~60g;(3)按上述主原料、辅料的比例取料,混匀,将面团揉至表面光滑,置于温度为30~40℃、湿度为70~80%条件下发酵,之后,手工成型再放入温度为35~45℃、湿度为75~85%的条件下醒发,最后汽蒸10~30min得到健康养生馒头。
