背景技术
格瓦斯采用俄式大面包(大列巴)为基质,经糖化、乳酸菌、多菌株混合发酵而成。格瓦斯采用生物工程技术,传统发酵工艺加工,为国内目前唯一大面包酿造的饮品。营养价值丰富,常饮对健康有益。含有丰富的蛋白质、维生素、氨基酸、乳酸菌、钙等对人体有益的成分。具有开胃、健脾、降血压、消除疲劳等作用。
然而,对于进一步提高格瓦斯饮料的保健作用的研究却很少,主要原因为各种保健成分的价格昂贵,如何提高格瓦斯饮料的营养和保健价值,而且保证其成本低廉是目前格瓦斯饮料发展存在的问题。
发明内容
有鉴于此,本发明实施例提供一种格瓦斯饮料,在保证其成本低廉的前提下大大提高了格瓦斯饮料的保健效果。
本发明实施例还提供了一种格瓦斯饮料的制备方法
本发明方法是通过如下方案实现的:
一种格瓦斯饮料,包括如下重量份的组分:
麦芽糖45-50重量份,红糖1-3重量份,蜂蜜0.08-0.12重量份,酵母0.1-0.15重量份。
进一步的,所述红糖为赤砂糖。
进一步的,所述的蜂蜜为杂花蜜。
一种麦芽格瓦斯饮料的制备方法,包括如下步骤:
(1)将90重量份的麦芽与500-700重量份的水混匀,煮沸2-3h,加入0.08-0.12重量份的酒花和80-120重量份的麸皮煮沸10-20min,冷却至50-60℃,加入1-3重量份的红糖在40-42℃下厌氧发酵10-14h,即得麦芽汁发酵液;
(2)向所述麦芽汁发酵液中加入40-50重量份的蜂蜜和25-35重量份的白砂糖,煮沸10-15min,降温至40-42℃条件下厌氧发酵10-14h,然后降温至-0.6-0℃,经过滤、杀菌后即得所述格瓦斯饮料。
进一步的,所述厌氧发酵采用酵母菌或乳酸菌进行发酵。
进一步的,所述杀菌后进行过滤,所述过滤采用硅藻土进行过滤。

下面结合具体实施例对本发明作进一步详细描述,但不作为对本发明的限定。
实施例1
一种麦芽格瓦斯饮料的制备方法,包括如下步骤:
(1)将9kg的麦芽与600kg的水混匀,进行糖化处理,所述糖化处理温度为65℃,糖化处理时间为90min;煮沸2h,加入10g的酒花和10kg的麸皮煮沸18min,冷却至55℃,加入30g的赤砂糖在40-42℃下加入活化的酵母菌厌氧发酵12h,即得麦芽汁发酵液;赤砂糖呈棕红色或黄褐色,甜而略带糖蜜味,无明显黑点,它除了具备碳水化合物的功用可以提供热能外,还含有微量元素,如铁、铬和其他矿物质等。营养价值却比白糖、砂糖高得多;具有益气、缓中、化食、补血破淤之功效;有健脾暖胃,止疼、行血、活血散寒的效用,提高了格瓦斯饮料的保健价值。
(2)向所述麦芽汁发酵液中加入5kg的杂花蜜和3kg的白砂糖,煮沸15min,降温至40-42℃条件下加入活化的乳酸菌厌氧发酵14h,然后降温至-0.4℃,经硅藻土过滤、120℃杀菌30min后即得所述格瓦斯饮料,其糖度为6度;多种植物同时开花而取到的蜂蜜,其中单一植物花蜜的优势不明显,称为杂花蜜或百花蜜,色泽深,是多种花蜜的混合蜂蜜,味甜,具有天然蜜的香气,花粉组成复杂,一般有5~6种以上花粉,杂花蜜功效:养肝护肝、润肺化痰、润肠通便、缓急止痛、解毒。
红糖是未经精炼的粗糖,保留了较多的维生素和矿物质。人们一般认为,红糖适合月经不调和刚生了孩子的妇女吃。其实红糖更适合老人,特别是适合年老体弱、大病初愈的人吃。
红糖性温、味甘、入脾,具有益气补血、健脾暖胃、缓中止痛、活血化淤的作用。老人对各种微量元素和维生素的摄入逐渐减少,平时应注意在饮食中补充,以维持正常代谢功能,延缓衰老。
作为优选,所述的格瓦斯饮料中加入酸味剂进行调味。
作为优选,所述的格瓦斯饮料中充入二氧化碳气体后进行灌装,灌装后进行高温灭菌。
实施例2
(1)将18kg的麦芽与1200kg的水混匀,所述糖化处理温度为50℃,糖化处理时间为110min;煮沸3h,加入10g的酒花和10kg的麸皮煮沸18min,冷却至50℃,加入30g的阿胶红糖在40-42℃下加入活化的酵母菌厌氧发酵14h,即得麦芽汁发酵液;阿胶红糖属于保健红糖,具有和血滋阴,除风润燥,适合人群:适合除儿童及糖尿病人外的所有人群。
(2)向所述麦芽汁发酵液中加入10kg的杂花蜜和6kg的白砂糖,煮沸15min,降温至40-42℃条件下加入活化的乳酸菌厌氧发酵12h,然后降温至0℃,经硅藻土过滤、120℃杀菌30min后即得所述格瓦斯饮料,其糖度为4度;蜂蜜基本为蜜蜂采集花蜜,经自然发酵而成的黄白色黏稠液体。蜜被誉为“大自然中最完美的营养食品”,蜂蜜既是良药,又是上等饮料,可延年益寿,还可用于美容的保健品。
蜂蜜因蜜源、环境之不同,其化学组成有很大差异.其主要成分是果糖和葡萄糖,两者含量合计约占70%.尚含少量蔗糖(〈8%)、麦芽糖、糊精、树胶以及含氮化合物、有机酸(约5%)、水分(16%~25%)、挥发油、色素、蜡、天然香料、植物残片(特别是花粉粒)、酵母、酶类、无机盐等;蜂蜜是一种营养丰富的食品。蜂蜜中的果糖和葡萄糖容易被人体吸收。1公斤成熟的蜂蜜发热量为3,280大卡。
蜂蜜对某些慢性病还有一定的疗效。常服蜂蜜对于心脏病、高血压、肺病、眼病、肝脏病、痢疾、便秘、贫血、神经系统疾病、胃和十二指肠溃疡病等都有良好的辅助医疗作用。
添加红糖和蜂蜜大大提高了格瓦斯饮料的保健效果,采用的蜂蜜和红糖为并不会造成成本的大幅度提高。
其中添加的蜂蜜还可以为单花蜜、巢蜜等,红糖还可以为红糖粉、碗糖等等,本领域技术人员可以根据饮料的供应人群和营养需要进行选择。
上述实施例中得到的格瓦斯饮料中均含有以下重量份的组分:麦芽糖45-50重量份,红糖1-3重量份,蜂蜜0.08-0.12重量份,酵母0.1-0.15重量份。
本发明中未进行限定的均为本领域中常用的技术手段即可达到的,本领域人员可以根据需要进行选择,比如杀菌选择高压杀菌、高压脉冲电场杀菌技术、喷淋杀菌等等。
以上实施例仅为本发明的示例性实施例,不用于限制本发明,本发明的保护范围由权利要求书限定。本领域技术人员可以在本发明的实质和保护范围内,对本发明做出各种修改或等同替换,这种修改或等同替换也应视为落在本发明的保护范围内。
Claims (10)
1.一种格瓦斯饮料,其特征在于,包括如下重量份的组分:
麦芽糖45-50重量份,红糖1-3重量份,蜂蜜0.08-0.12重量份,酵母0.1-0.15重量份。
2.根据权利要求1所述的拉瓦斯饮料,其特征在于,所述红糖为赤砂糖。
3.根据权利要求1所述的拉瓦斯饮料,其特征在于,所述的蜂蜜为杂花蜜。
4.一种麦芽格瓦斯饮料的制备方法,其特征在于,包括如下步骤:
(1)将90重量份的麦芽与500-700重量份的水混匀,煮沸2-3h,加入0.08-0.12重量份的酒花和80-120重量份的麸皮煮沸10-20min,冷却至50-60℃,加入1-3重量份的红糖在40-42℃下厌氧发酵10-14h,即得麦芽汁发酵液;
(2)向所述麦芽汁发酵液中加入40-50重量份的蜂蜜和25-35重量份的白砂糖,煮沸10-15min,降温至40-42℃条件下厌氧发酵10-14h,然后降温至-0.6-0℃,经过滤、杀菌后即得所述格瓦斯饮料。
5.根据权利要求4所述的拉瓦斯饮料的制备方法,其特征在于,所述厌氧发酵采用酵母菌或乳酸菌进行发酵。
6.根据权利要求4所述的拉瓦斯饮料的制备方法,其特征在于,所述杀菌后进行过滤,所述过滤采用硅藻土进行过滤。
7.根据权利要求4所述的拉瓦斯饮料的制备方法,其特征在于,所述的将90重量份的麦芽与500-700重量份的水混匀后,先进行糖化处理再进行煮沸,所述糖化处理温度为50-65℃,糖化处理时间为90-110min。
8.根据权利要求4所述的拉瓦斯饮料的制备方法,其特征在于,所述的格瓦斯饮料中加入酸味剂进行调味。
9.根据权利要求4所述的拉瓦斯饮料的制备方法,其特征在于,所述的格瓦斯饮料中充入二氧化碳气体后进行灌装,灌装后进行高温灭菌;其中所述的格瓦斯饮料糖度为4-8度。
10.根据权利要求4所述的拉瓦斯饮料的制备方法,其特征在于,所述杀菌采用巴氏杀菌。
