本发明所述一种含法夫酵母虾青素的糖果及其制备方法,原料配方质量百分比为:水苏糖10%‑40%,β‑环糊精10%‑40%,金银花0‑5%,茯苓0‑5%,菊花0‑5%,枸杞0‑5%,食用盐0‑5%,食用香精0‑5%,大枣0‑5%,甘草0‑5%,桑椹0‑5%,山楂0‑5%,黄精0‑5%,肉桂0‑5%,炼乳10%‑40%,白砂糖10%‑40%,氨基酸维生素添加剂0.5‑1%,法夫酵母虾青素微胶囊0.01‑0.1%,本发明各中药食用安全,具有易消化吸收、产品有一定的保健作用,尤其是在清除自由基、延缓衰老等方面,在糖果中添加氨基酸维生素添加剂,有利于进一步增强人体抗氧化能力,糖果中添加的水苏糖具有防龋齿、调节肠胃道功能等有益作用。总之,含法夫酵母虾青素的中药糖果是一种良好的休闲保健食品。
Description
技术领域
本发明涉及糖果技术领域,具体而言是一种含法夫酵母虾青素的糖果及其制备方法。
背景技术
目前,糖果种类非常丰富多样,大多数糖果都是含有一定量的油脂,因此都会添加抗氧化剂。同时,根据我们的调研发现,具有保健功能的糖果非常少。
虾青素,又名虾黄质、龙虾壳色素,是一种类胡萝卜素,具有最强的抗氧化性,其功能作用主要包括:(1)保护眼睛和中枢神经。(2)防紫外线辐射。(3)预防心血管疾病。(4)增强免疫力。(5)缓解疲劳,增强机体代谢。在国内市场几乎未发现含有法夫酵母虾青素的糖果。以下为一些国内市场上糖果的品种和配方:
1、阿尔卑斯顺滑缤纷果园水果牛奶硬糖,配料表:白砂糖、葡萄糖浆、氢化植物油、草莓/柠檬/甜橙/葡萄果汁、稀奶油、食品添加剂、麦芽糊精、食用精油、食用盐。
2、徐福记酥心糖,配料表:炒花生仁、葡萄糖浆、白砂糖、精炼植物油、花生蛋白粉、复合麦片、发酵饼干、椰蓉、食用香精、食用盐。
3、冠生园大白兔奶糖,配料表:液体麦芽糖、白砂糖、全脂乳粉、奶油。
4、金丝猴冰糖雪梨果汁软糖,配料表:麦芽糖浆、白砂糖、雪梨汁、冰糖、糯米粉、食品添加剂(卡拉胶、柠檬酸钠、柠檬酸等)、食用香精香料。
5、果然多CC果卷,配料表:麦芽糊精、白砂糖、液体葡萄糖、苹果浓缩汁、果葡糖浆、水、氢化植物油、食品添加剂(增稠剂(407、415)、抗氧化剂(316)、红花黄)、淀粉、食用香精。
从以上糖果产品及公开配料中均未发现含有法夫酵母虾青素成分的内容。刘道鸣、周小萍的专利《强抗氧化食用油》中,以虾清素为抗氧化功能成分与食用油充分融合而成的具有强抗氧化功能的烹调用保健食用油;闫建国、周亚莉、付升旗、陶晶、任铭新《虾青素在制备防治有机磷农药所致胚胎毒性的药物中的应用》中,虾青素对有机磷农药所致胚胎毒性具有良好的抑制作用;徐学明、黄文哲、杨哪、金征宇、谢正军、赵建伟《一种以纯胶为壁材的微胶囊化虾青素的制备方法》中,微胶囊化虾青素改善其水溶性和稳定性,使得虾青素能够更好的应用于食品饲料等行业,但均未见其加入糖果中运用。
发明内容
本发明克服了现有技术中的缺点,提供了一种含法夫酵母虾青素的糖果及其制备方法,使产品有一定的保健作用,尤其是在清除自由基、延缓衰老等方面。
为了解决上述技术问题,本发明是通过以下技术方案实现的:
一种含法夫酵母虾青素的糖果,原料配方质量百分比为:水苏糖10%-40%,β-环糊精10%-40%,金银花0-5%,茯苓0-5%,菊花0-5%,枸杞0-5%,食用盐0-5%,食用香精0-5%,大枣0-5%,甘草0-5%,桑椹0-5%,山楂0-5%,黄精0-5%,肉桂0-5%,炼乳10%-40%,白砂糖10%-40%,氨基酸维生素添加剂0.5-1%,法夫酵母虾青素微胶囊0.01-0.1%。
进一步,所述氨基酸维生素添加剂包含:赖氨酸0-200mg/100g,缬氨酸0-200mg/100g,苏氨酸0-200mg/100g,酪氨酸0-200mg/100g,亮氨酸0-200mg/100g,维生素B1 0-100mg/100g,辅酶Q10 0-100mg/100g,维生素C 0-100mg/100g,维生素E 0-100mg/100g,所述100g指100g糖果。
一种含法夫酵母虾青素的糖果的制备方法,包括以下步骤:
(1)将所述配比的金银花,茯苓,菊花,枸杞,大枣,甘草,桑椹,山楂,黄精和肉桂按质量百分比混合放于提取罐中加水以1:10-1:15的比例煎熬20-40分钟,在600-700目过滤网过滤分离,得到药食同源中药提取液;
(2)将白砂糖和水苏糖加入步骤(1)所制得的中药提取液中,调节甜度,混合均匀,添加水一起进行熬糖,熬糖时间为60-180分钟,待溶液呈膏状,向其加入氨基酸维生素添加剂、β-环糊精、法夫酵母虾青素微胶囊、食用香精、食用盐、炼乳进行搅拌、脱泡,最后浇注成型。
所述法夫酵母虾青素微胶囊的制作方法包括以下步骤:
(1)壁材制备:将麦芽糊精、β-环糊精、变性淀粉和阿拉伯胶中的2种与蒸馏水混合,按重量比1:0.5-2:2-10混合,搅拌均匀制备得壁材;
(2)壁材乳化剂制备:用吐温、蔗糖醋与司班按重量比3:3:1复配乳化剂,将步骤(1)制得的壁材溶液与乳化剂按重量比1:1-2混合搅拌,至乳化完全;
(3)虾青素溶液制备:将法夫酵母破壁处理后,采用常规萃取工艺制得虾青素溶液,将虾青素溶液与食用油配制成质量浓度为1-10%的虾青素油溶液;
(4)虾青素微胶囊制备:将虾青素油溶液与壁材乳化剂溶液按质量比1:8-12混合并搅拌制成虾青素乳化剂,然后用超高细胞均质机以25000r/min以上的转速均质2-5min,同时控制乳化剂温度在4℃,形成水色油微胶囊,经过喷雾干燥制得虾青素微胶囊。

实施例1:
一种含法夫酵母虾青素的糖果,按照原料百分比计算,包括如下原料:水苏糖20%,β-环糊精15%,金银花5%,茯苓3%,菊花5%,枸杞3%,食用盐2%,食用香精2%,大枣2%,甘草3%,桑椹2%,山楂3%,黄精3%,肉桂2%,炼乳20%,白砂糖10%,氨基酸维生素添加剂0.98%(包含赖氨酸300mg/100g,缬氨酸150mg/100g,苏氨酸150mg/100g,酪氨酸150mg/100g,亮氨酸200mg/100g,维生素B1 10mg/100g,辅酶Q10 20mg/100g,维生素C40mg/100g,维生素E 10mg/100g),法夫酵母虾青素微胶囊0.02%。
其制备步骤如下:
(1)中药处理
将以上中药用万能粉碎机粉碎后,按照原料百分比混合,投入不锈钢提取罐中,加进混合中药重量14倍的去离子水,向罐底回形管中通入蒸气,使水沸腾并保持30分钟,然后冷却到室温,把滤液和滤渣置于700目过滤网过滤,弃去泥浆状物,得到药食同源中药提取液;
(2)糖果制备
将质量百分比为10%白砂糖和20%水苏糖加入步骤(1)所制得的中药提取液中,调节甜度,混合均匀,添加适量水一起置于真空薄膜熬糖锅内进行熬糖,熬糖时间为60-180分钟,待溶液呈膏状,向其加入氨基酸维生素添加剂(包含赖氨酸300mg/100g,缬氨酸150mg/100g,苏氨酸150mg/100g,酪氨酸150mg/100g,亮氨酸200mg/100g,维生素B1 10mg/100g,辅酶Q10 20mg/100g,维生素C 40mg/100g,维生素E 10mg/100g)、β-环糊精、香精、食用盐、炼乳进行快档搅拌,待形成稠厚、稳定的泡沫组织后,改为慢档搅拌脱泡,最后通过糖排机冷却输送带,拉伸成均一、一定规格的长方块,浇注成型包装。
法夫酵母虾青素微胶囊的制作方法包括以下步骤:
(1)壁材制备:将麦芽糊精和阿拉伯胶与蒸馏水混合,按重量比1:1:5混合,搅拌均匀制备得壁材;

(4)虾青素微胶囊制备:将虾青素油溶液与壁材乳化剂溶液按质量比1:10混合并搅拌制成虾青素乳化剂,然后用超高细胞均质机以25000r/min以上的转速均质2-5min,同时控制乳化剂温度在4℃,形成水色油微胶囊,经过喷雾干燥制得虾青素微胶囊。
实施例2:
一种含法夫酵母虾青素的糖果,按照原料百分比计算,包括如下原料:水苏糖26%,β-环糊精16%,金银花5%,茯苓3%,菊花5%,枸杞3%,食用盐2%,食用香精2%,大枣2%,甘草3%,桑椹2%,山楂3%,黄精3%,肉桂2%,炼乳23%,白砂糖13%,氨基酸维生素添加剂0.97%(包含赖氨酸300mg/100g,缬氨酸150mg/100g,苏氨酸150mg/100g,酪氨酸150mg/100g,亮氨酸200mg/100g,维生素B1 10mg/100g,辅酶Q10 20mg/100g,维生素C30mg/100g,维生素E 10mg/100g),法夫酵母虾青素微胶囊0.03%。
其制备步骤如下:
(1)中药处理
将以上中药用万能粉碎机粉碎后,按照原料百分比混合,投入不锈钢提取罐中,加进混合中药重量14倍的去离子水,向罐底回形管中通入蒸气,使水沸腾并保持30分钟,然后冷却到室温,把滤液和滤渣置于700目过滤网过滤,弃去泥浆状物,得到药食同源中药提取液;
(2)糖果制备
将质量百分比为13%白砂糖和26%水苏糖加入步骤(1)所制得的中药提取液中,调节甜度,混合均匀,添加适量水一起置于真空薄膜熬糖锅内进行熬糖,熬糖时间为60-180分钟,待溶液呈膏状,向其加入氨基酸维生素添加剂(包含赖氨酸300mg/100g,缬氨酸150mg/100g,苏氨酸150mg/100g,酪氨酸150mg/100g,亮氨酸200mg/100g,维生素B1 10mg/100g,辅酶Q10 20mg/100g,维生素C 30mg/100g,维生素E 10mg/100g)、虾青素、β-环糊精、香精、食用盐、炼乳进行快档搅拌,待形成稠厚、稳定的泡沫组织后,改为慢档搅拌脱泡,最后通过糖排机冷却输送带,拉伸成均一、一定规格的长方块,浇注成型包装。实施例3:
一种含法夫酵母虾青素的糖果,按照原料百分比计算,包括如下原料:水苏糖23%,β-环糊精16%,金银花5%,茯苓3%,菊花5%,枸杞3%,食用盐2%,食用香精2%,大枣2%,甘草3%,桑椹2%,山楂3%,黄精3%,肉桂2%,炼乳25%,白砂糖15%,氨基酸维生素添加剂0.98%(包含赖氨酸300mg/100g,缬氨酸150mg/100g,苏氨酸150mg/100g,酪氨酸150mg/100g,亮氨酸200mg/100g,维生素B1 10mg/100g,辅酶Q10 20mg/100g,维生素C40mg/100g,维生素E 10mg/100g),法夫酵母虾青素微胶囊0.02%。

2.根据权利要求1所述一种含法夫酵母虾青素的糖果,其特征在于,所述氨基酸维生素添加剂包含:赖氨酸0-200mg/100g,缬氨酸0-200mg/100g,苏氨酸0-200mg/100g,酪氨酸0-200mg/100g,亮氨酸0-200mg/100g,维生素B10-100mg/100g,辅酶Q10 0-100mg/100g,维生素C 0-100mg/100g,维生素E 0-100mg/100g,所述100g指100g糖果。
3.根据权利要求1所述一种含法夫酵母虾青素的糖果的制备方法,其特征在于,包括以下步骤:
(1)将所述配比的金银花,茯苓,菊花,枸杞,大枣,甘草,桑椹,山楂,黄精和肉桂按质量百分比混合放于提取罐中加水以1:10-1:15的比例煎熬20-40分钟,在600-700目过滤网过滤分离,得到药食同源中药提取液;
(2)将白砂糖和水苏糖加入步骤(1)所制得的中药提取液中,调节甜度,混合均匀,添加水一起进行熬糖,熬糖时间为60-180分钟,待溶液呈膏状,向其加入氨基酸维生素添加剂、法夫酵母虾青素微胶囊、β-环糊精、食用香精、食用盐、炼乳进行搅拌、脱泡,最后浇注成型。
4.根据权利要求3所述一种含法夫酵母虾青素的糖果的制备方法,其特征在于,所述法夫酵母虾青素微胶囊的制作方法包括以下步骤:
(1)壁材制备:将麦芽糊精、β-环糊精、变性淀粉和阿拉伯胶中的2种与蒸馏水混合,按重量比1:0.5-2:2-10混合,搅拌均匀制备得壁材;
(2)壁材乳化剂制备:用吐温、蔗糖醋与司班按重量比3:3:1复配乳化剂,将步骤(1)制得的壁材溶液与乳化剂按重量比1:1-2混合搅拌,至乳化完全;
(3)虾青素溶液制备:将法夫酵母破壁处理后,采用常规萃取工艺制得虾青素溶液,将虾青素溶液与食用油配制成质量浓度为1-10%的虾青素油溶液;
(4)虾青素微胶囊制备:将虾青素油溶液与壁材乳化剂溶液按质量比1:8-12混合并搅拌制成虾青素乳化剂,然后用超高细胞均质机以25000r/min以上的转速均质2-5min,同时控制乳化剂温度在4℃,形成水色油微胶囊,经过喷雾干燥制得虾青素微胶囊。
