本发明涉及一种食品的加工方法,尤其是涉及一种玫瑰平菇晶的制作方法。
背景技术
平菇,属伞菌目,侧耳科,是日常食用菌中最普通的一种。平菇菌盖为贝壳状,幼时为青灰色,后变成浅灰色,老时黄色;菌柄侧生,菌面平而薄,边缘不内卷,平展,菌褶粗疏。肉质较不老,嫩滑可口,有类似牡蛎的香味,平菇以色白、白厚质嫩,味道鲜美者为佳。平菇无论食素炒还是制成荤菜,都十分鲜嫩诱人,加之价钱便宜,是百姓餐桌上的佳品。
平菇的作用:平菇性平,味甘,具有补虚、抗癌的功效,能改善人体新陈代谢,增强体质,调节大脑神经;平菇含有多糖体,对肿瘤细胞有很强的抑制作用,且具有免疫特性;平菇还有追风散寒、舒筋活络的作用,可治腰腿疼痛、手足麻木、经络不适等病症。此外,平菇对肝炎、慢性胃炎、胃及十二指溃疡、软骨病、高血压都有一定的疗效,对降低血胆固醇和 防治尿道结石也有一定效果,对女性更年期综合症也可起到调理作用。
玫瑰,果实可食,无糖,富含维他命C,常用于香草茶、果酱、果冻、果汁和面包等,其花朵主要用于食品及提炼香精玫瑰油,玫瑰油要比等重量黄金价值高,故玫瑰有“金花”之称。玫瑰的作用:玫瑰花味甘微苦、性温,最明显的功效就是理气解郁、活血散淤和调经止痛。玫瑰花的药性非常温和,能够温养人的心肝血脉,舒发体内郁气,起到镇静、安抚、抗抑郁的功效。女性在月经前或月经期间常会有些情绪上的烦躁,喝点玫瑰花可以起到调节作用。在工作和生活压力大的时候,也可以多喝点玫瑰花,安抚、稳定情绪。
新鲜的平菇不易贮藏,用于加工成玫瑰平菇晶可实现对平菇原料的综合利用,食用方便,且便于储存,提高其经济价值。

一种玫瑰平菇晶的制作方法,其特征在于:采用的配方是30%平菇、42%麦芽糖、12%玫瑰香精、9%低筋面粉、5%豆浆、1%蜂蜜及0.4%柠檬酸和0.6%苹果酸,其加工工艺流程分三步:一是平菇→热水浸提→浓缩液;二是麦芽糖→热熔→熬糖→糖液;三是将平菇浓缩液和麦芽糖液混合、制粒→干燥→过筛→包装→成品,具体操作步骤为:

C、混合、制粒:将平菇浓缩液加入糖液、高筋面粉、豆浆及其他配料,搅拌均匀,移至冷却池隔锅冷却,待液体已成面团时,立即过筛制粒;
D、包装:将颗粒烘干,过筛,将大小适中的颗粒装袋封存出售。
