Abstract
本发明公开了一种刺梨饮料及其制备方法,包括刺梨汁、二氧化硫、柠檬酸、白砂糖和水。其制备方法是首先选取8‑9成熟刺梨鲜果,冲洗干净,放入破碎机进行破碎,然后加压,收集果汁;将果汁密封在池中静置7天;然后加入明胶处理;再过滤,得刺梨汁;将刺梨汁、二氧化硫、柠檬酸、白砂糖和水按所述配比混合,搅匀,消毒后包装即可。本发明的产品色泽清亮透明、酸甜适口;营养丰富,含有大量人体必需的碳水化合物、维生素及微量元素;且本发明的方法工艺简单,便于规模化生产。实验表明:刺梨对氨基比林和亚硝酸盐所致肝中毒和肝癌有防护作用,对铅中毒有预防和治疗作用。可作为预防铅中毒和治疗铅中毒的辅助药剂;驱铅效果更好,且无毒副作用。
Description
技术领域
本发明涉及一种饮料及其制备方法,特别是一种刺梨饮料及其制备方法。
背景技术
我国地缘广阔,野生果资源十分丰富,但由于多种原因,野生果资源未得到充分利用。如刺梨有健胃、消食、滋补,止泻的功效。特别是刺梨富含超氧化物歧化酶(简称SOD),SOD是国际公认具有抗衰、防癌作用的活性物质,还具有抗病毒、抗辐射的作用,在心血管、消化系统和各种肿瘤疾病防治方面,应用十分广泛。刺梨的果实同时也是加工保健食品的上等原料,成熟的刺梨肉质肥厚、味酸甜、果实富含糖、维生素、胡萝卜素、有机酸和20多种氨基酸、10余种对人体有益的微量元素,以及过氧化物歧化酶。尤其是维生素C含量极高,是当前水果中最高的,每100克鲜果中含量841.58毫克~3541.13毫克,是柑橘的50倍,猕猴桃的10倍,具有“维生素C之王”的美称。但是因刺梨鲜果成熟后周身长满硬刺,堆放运输时,相互刺破果皮,使富含营养物的果汁流出,极易被微生物污染变质导致刺梨鲜果难以保存和运输,加之找不到合适的加工方法而使刺梨资源浪费严重。
发明内容
本发明的目的在于,提供一种刺梨饮料及其制备方法。本发明的产品有保健作用的、口感好,其制备方法简单,适合规模化生产。
本发明的技术方案:一种刺梨饮料,其主要组分包括:刺梨汁、二氧化硫、柠檬酸、白砂糖和水。
前述的刺梨饮料,所述各主要组份的含量为1000g水中加入:
刺梨汁 100-200g;
二氧化硫 30-40mg;
柠檬酸 60-120g;
白砂糖 80-180g。
前述的刺梨饮料,所述各主要组份的含量为1000g水中加入:
刺梨汁 150g;
二氧化硫 35mg;
柠檬酸 100g;
白砂糖 150g。
一种制备前述的刺梨饮料的方法,所述方法步骤如下:
(1)选择颜色青黄,8-9成熟刺梨鲜果,剔除腐烂及未熟果实;
(2)将步骤(1)中选好的刺梨用软水冲洗干净,除去泥沙及粘附在果皮上的污物;
(3)将步骤(2)中洗净的果实放入破碎机进行破碎,然后将破碎的果肉在压榨机上加压,压榨出汁后,收集果汁;
(4)将步骤(3)中得到的果汁密封在池中静置7天;
(5)在经步骤(4)处理过的果汁中加入明胶处理,以便细小悬浮物形成大块复合物而沉降;
(6)将经步骤(5)沉降后的果汁过滤,除去固形物,得刺梨汁;
(7)将刺梨汁、二氧化硫、柠檬酸、白砂糖和水按所述配比混合,搅匀,消毒后包装即可。
本发明的有益效果:本发明的产品饮料色泽清亮透明、酸甜适口;营养丰富,含有大量人体必需的碳水化合物、维生素及微量元素;且本发明的方法工艺简单,便于规模化生产。
实验表明:刺梨对氨基比林和亚硝酸盐所致肝中毒和肝癌有防护作用,对铅中毒有预防和治疗作用。可作为预防铅中毒和治疗铅中毒的辅助药剂;驱铅效果更好,且无毒副作用。

二氧化硫 35mg;
柠檬酸 100g;

一种刺梨饮料,其配比为每1000g水中加入:
刺梨汁 200g;
二氧化硫 40mg;
柠檬酸 120g;
白砂糖 80g。
这种配比的刺梨饮料口味偏酸。
实施例3
一种刺梨饮料,其配比为每1000g水中加入:
刺梨汁 100g;
二氧化硫 30mg;
柠檬酸 60g;
白砂糖 180g。
这种配比的刺梨饮料口味偏甜。

一种制备刺梨饮料的方法,步骤如下:
