背景技术
蛇皮果,又名沙叻,是棕榈科蛇皮果属植物,是东南亚著名水果。果实球形、陀螺形或卵球形,顶端具残留柱头,外果皮薄,以覆瓦状反折的鳞片,鳞片顶尖光滑或呈刺状尖,中果皮薄,内果皮不明显。蛇皮果的果肉是白中带黄色,但是咬下去是很爽脆的感觉,而肉质很乾硬,非常的酸涩。蛇皮果有美容的效果。蛇皮果果肉含对人体皮肤有益成分,印尼本地姑娘经常将它作为美容水果食用。 它是水果中钾含量最高的品种之一,果胶含量也很丰富,对人脑十分有益,有“记忆之果”的美称。具有美容益肤、清醒头脑的功效。
太白花,为石蕊科植物石蕊的枝状体。地衣体子器柄圆柱形,长5-8cm,分枝稠密,枝腋有小穿孔,上半部黄绿色,下半部灰白色,基部逐渐腐朽。子器顶生,褐色,干时稍硬,易脆,湿时呈海绵状。太白花味淡,性平。具有平肝、健胃、调经、止血的功效,主治高血压症、头晕目眩、偏头痛、目疾、虚劳、鼻衄、白带、月经不调。
一匹草,为兰科植物帽卷瓣兰的全草。帽卷瓣兰,附生植物。根茎粗壮,粗4-5mm。假鳞茎宽卵形或狭卵形,长约3cm,基部被多数纤维。顶生1叶;具短柄;叶片革质,长圆形,长13-20cm,宽约3.5cm,先端微凹,全缘。一匹草味甘,性平,归肺、脾经。具有润肺止咳、益肾补虚、消食、祛风活血的功效,主治风热咳嗽、肺燥咳嗽、肺痨咳嗽、百日咳、肾亏体虚、小儿食积、风湿痹痛、跌打损伤。
白术,本品为菊科植物白术的干燥根茎。本品为不规则的肥厚团块,长3-13cm,直径1.5-7cm。表面灰黄色或灰棕色,有瘤状突起及断续的纵皱和沟纹,并有须根痕,顶端有残留茎基和芽痕。质坚硬不易折断,断面不平坦,黄白色至淡棕色,有棕黄色的点状油室散在;烘干者断面角质样,色较深或有裂隙。白术味甘、性温,归脾、胃二经。具有健脾益气、燥湿利水、安胎的功效,常用于脾虚食少、腹胀泄泻、痰饮眩悸、水肿、自汗、胎动不安。
蜜饯也称果脯,古称蜜煎。汉族民间糖蜜制水果食品。流传于各地,历史悠久。以桃、杏、李、枣或冬瓜、生姜等果蔬为原料,用糖或蜂蜜腌制后而加工制成的食品。除了作为小吃或零食直接食用外,蜜饯也可以用来放于蛋糕、饼干等点心上作为点缀。以蛇皮果为主要原料,太白花、一匹草、白术为保健原料,生产出一种甘甜风味蛇皮果蜜饯,目前还未见报道和产品上市。
发明内容
本发明以蛇皮果、甘草为原料,同时添加太白花、一匹草、白术开发出一种甘甜风味蛇皮果蜜饯。填补了国内使用这类原料制作蜜饯的一项空白。
一种甘甜风味蛇皮果蜜饯,采用以下步骤制作:
A.蛇皮果预处理:取新鲜成熟的蛇皮果,清洗干净,去皮,切成厚度1-2厘米的蛇皮果片;
B. 盐浸、晾晒:向洗净的蛇皮果片中,加入蛇皮果片重量5-8%的食盐,盐浸 3-5 天,捞出浸渍好的蛇皮果片,放入烧开的水中,加热至沸,捞出放置冷水中漂洗,沥干,后放入烘干箱进行烘制,烘至蛇皮果干水分将至30%以下即可;
C.中药材预处理:按一定比例取中药材太白花、一匹草、白术,清洗干净,加入原料中药材重5-15倍的水,熬煮30-60分钟,除去中药渣,制得中药汁;
D.糖液配料:取适当重量的白砂糖,白砂糖重20-30倍的水、2-5倍的中药汁、2-3倍的果胶溶液,充分搅拌均匀,制得中药糖液;
E. 腌渍,晒干:取蛇皮果干80-100重量份、糖液60-70重量份,倒入不锈钢夹层锅中,中火熬制20-30分钟,后小火继续煮10-20分钟,后取出沥干,后放入烘干箱进行烘制,烘至含水量低于18%,烘制过程中适当翻面,制得甘甜风味蛇皮果蜜饯;
F.包装:将甘甜风味蛇皮果蜜饯至于无菌环境中,用食品级包装物进行包装;
G.检验、贮存:对包装好的蛇皮果蜜饯进行检验,检验合格后常温贮存于阴凉、干燥、避光处。
本发明步骤C一定比例的中药材配比为以下原料重量比: 太白花30-35%、一匹草30-35%、白术30-40%。

B. 盐浸、晾晒:向洗净的蛇皮果片中,加入蛇皮果片重量8%的食盐,盐浸 5 天,捞出浸渍好的蛇皮果片,放入烧开的水中,加热至沸,捞出放置冷水中漂洗,沥干,后放入烘干箱进行烘制,烘至蛇皮果干水分将至30%以下即可;
C.中药材预处理:按重量比例取中药材太白花14%、一匹草17%、白术19%、小绿笈18%、大叶钩藤16%、佛手花16%,清洗干净,加入原料中药材重5-15倍的水,熬煮45分钟,除去中药渣,制得中药汁;
D.糖液配料:取适当重量的白砂糖,白砂糖重25倍的水、3倍的中药汁、2倍的果胶溶液,充分搅拌均匀,制得中药糖液;
E. 腌渍,晒干:取蛇皮果干90kg、糖液65kg,倒入不锈钢夹层锅中,中火熬制26分钟,后小火继续煮15分钟,后取出沥干,后放入烘干箱进行烘制,烘至含水量低于18%,烘制过程中适当翻面,制得甘甜风味蛇皮果蜜饯;
F.包装:将甘甜风味蛇皮果蜜饯至于无菌环境中,用食品级包装物进行包装;
G.检验、贮存:对包装好的蛇皮果蜜饯进行检验,检验合格后常温贮存于阴凉、干燥、避光处。
小绿笈,又名小石斛、石链子、石寸连。是兰科石豆兰属植物石串莲的假鳞茎。根茎纤细,粗约1.5mm。假鳞茎卵形,长1-2cm,粗5-10mm,彼此相距5-9cm,基部有多数须根。小绿笈味甘、性平。具有润肺止咳、消炎止痛、接骨的功效,常用于咳嗽、外用治乳腺炎、骨折、扭伤、疮、疖、脓肿。
大叶钩藤,攀援状大藤本,高12-15米。小枝压扁,有褐色疏粗毛,每一节上有双钩,钩幼时亦有疏粗毛。叶革质,宽椭圆形或长椭圆形,长10-16厘米,宽6-12厘米,先端锐尖,基部。圆形或心形,上面近光滑,下面有褐黄色粗毛;托叶2裂。大叶钩藤味甘、性凉。具有清热平肝、熄风镇惊的功效,主治抽搐、高血压、神经性头痛、骨髓炎。
佛手花,为芸香科植物佛手的花朵和花蕾。于早晨日出前疏花时采收,或拾取落花,晒干或炕干。干燥花朵,长约1.5厘米,花柄短,约2-5毫米;花萼杯状,或略呈五角形,略有皱纹;花瓣5,长披针形,长1-1.2厘米,宽3-5毫米,两边向内卷曲,外表淡棕黄色,有棕褐色麻点;雄蕊多数,黄白色,长0.8-1厘米,着生于花盘周围;子房上部狭尖,体轻,质脆。气香,味微苦。以朵大、完整、香气浓厚者为佳。佛手花味甘,性平。具有疏肝理气、和胃快隔的功效,主治肝胃气痛、食欲不振。
本发明实施例2的作用机理:
蛇皮果,美容益肤、清醒头脑;太白花,平肝健胃、调经止血;一匹草,润肺止咳、益肾补虚;白术,健脾益气、燥湿利水;小绿笈,润肺止咳、消炎止痛;大叶钩藤,清热平肝、熄风镇惊;佛手花,疏肝理气、和胃快隔。利用以上七味中药相互配伍,协同生效,通过调节脾的健运,肺的肃降,促进肝的升发,固达清醒头脑、平肝健胃的功效。
本发明实施例2经19位睡眠不足引起的头晕乏力的人群,连续食用10天,每日20克,症状明显缓解人数为14人,有效率为73.68%;连续食用20天,每日20克,症状明显缓解人数为16人,有效率为84.21%。
实施例3,一种甘甜风味蛇皮果蜜饯,采用以下步骤制作:
A.蛇皮果预处理:取新鲜成熟的蛇皮果,清洗干净,去皮,切成厚度2厘米的蛇皮果片;
B. 盐浸、晾晒:向洗净的蛇皮果片中,加入蛇皮果片重量8%的食盐,盐浸 5 天,捞出浸渍好的蛇皮果片,放入烧开的水中,加热至沸,捞出放置冷水中漂洗,沥干,后放入烘干箱进行烘制,烘至蛇皮果干水分将至30%以下即可;
C.中药材预处理:按重量比例取中药材太白花16%、一匹草19%、白术15%、小绿笈20%、大叶钩藤18%、佛手花19%、山药17%、千日红16%,清洗干净,加入原料中药材重15倍的水,熬煮60分钟,除去中药渣,制得中药汁;
D.糖液配料:取适当重量的白砂糖,白砂糖重30倍的水、5倍的中药汁、3倍的果胶溶液,充分搅拌均匀,制得中药糖液;
E. 腌渍,晒干:取蛇皮果干100kg、糖液70kg,倒入不锈钢夹层锅中,中火熬制30分钟,后小火继续煮20分钟,后取出沥干,后放入烘干箱进行烘制,烘至含水量低于18%,烘制过程中适当翻面,制得甘甜风味蛇皮果蜜饯;
F.包装:将甘甜风味蛇皮果蜜饯至于无菌环境中,用食品级包装物进行包装;
G.检验、贮存:对包装好的蛇皮果蜜饯进行检验,检验合格后常温贮存于阴凉、干燥、避光处。
山药,略呈圆柱形,弯曲而稍扁,长15-30cm,直径1.5-6cm。表面黄白色或淡黄色,有纵沟、纵皱纹及须根痕,偶有浅棕色外皮残留。体重,质坚实,不易折断,断面白色,粉性。无臭,味淡、微酸,嚼之发黏。光山药呈圆柱形,两端平齐,长9-18cm,直径1.5-3cm。表面光滑,白色或黄白色。山药味甘,性平。归脾、肺、肾三经。具有补脾养胃、生津益肺、补肾涩精的功效,常用于脾虚食少、久泻不止、肺虚喘咳、肾虚遗精、带下、尿、虚热消渴。
千日红,一年生直立草本植物,高20-60厘米,茎粗壮,有分枝,枝略成四棱形,有灰色糙毛,幼时更密,节部稍膨大。叶片纸质,长椭圆形或矩圆状倒卵形,顶端急尖或圆钝,凸尖,基部渐狭,边缘波状,两面有小斑点、白色长柔毛及缘毛,有灰色长柔毛。花多数,密生,成顶生球形或矩圆形头状花序,常紫红色,有时淡紫色或白色。千日红味甘,性平,具有平肝明目、止咳祛痰、定喘的功效,主治支气管哮喘。
本发明实施例3的作用机理:

Claims (3)
1.一种甘甜风味蛇皮果蜜饯,其特征在于,采用以下步骤制作:
A.蛇皮果预处理:取新鲜成熟的蛇皮果,清洗干净,去皮,切成厚度1-2厘米的蛇皮果片;
B. 盐浸、晾晒:向洗净的蛇皮果片中,加入蛇皮果片重量5-8%的食盐,盐浸 3-5 天,捞出浸渍好的蛇皮果片,放入烧开的水中,加热至沸,捞出放置冷水中漂洗,沥干,后放入烘干箱进行烘制,烘至蛇皮果干水分将至30%以下即可;
C.中药材预处理:按一定比例取中药材太白花、一匹草、白术,清洗干净,加入原料中药材重5-15倍的水,熬煮30-60分钟,除去中药渣,制得中药汁;
D.糖液配料:取适当重量的白砂糖,白砂糖重20-30倍的水、2-5倍的中药汁、2-3倍的果胶溶液,充分搅拌均匀,制得中药糖液;
E. 腌渍,晒干:取蛇皮果干80-100重量份、糖液60-70重量份,倒入不锈钢夹层锅中,中火熬制20-30分钟,后小火继续煮10-20分钟,后取出沥干,后放入烘干箱进行烘制,烘至含水量低于18%,烘制过程中可适当翻面,制得甘甜风味蛇皮果蜜饯;
F.包装:将甘甜风味蛇皮果蜜饯至于无菌环境中,用食品级包装物进行包装;
G.检验、贮存:对包装好的蛇皮果蜜饯进行检验,检验合格后常温贮存于阴凉、干燥、避光处。
2.根据权利要求1所述的一种甘甜风味蛇皮果蜜饯,其特征在于:所述步骤C一定比例的中药材配比为以下原料重量比: 太白花30-35%、一匹草30-35%、白术30-40%。
3.根据权利要求1所述的一种甘甜风味蛇皮果蜜饯,其特征在于:所述步骤F食品级包装物可以是塑料袋、塑料盒或玻璃罐中任意一种。
