背景技术
中国的酒文化历史悠久,酒的种类繁多,各种酒精含量的酒都有。虽然适量饮酒可以舒筋活血、消除疲劳、促进血液循环,但在现实生活中,人们为了礼仪、气氛等的需要,饮酒过量是经常存在的事。尤其是酗酒后驾车更易发生交通意外等事故。饮酒过量,在乙醇和酒中其他有害成分的作用下,轻者头痛、头昏、呕吐、胃部不适,重者会发生酒精中毒危及生命。长期的过量饮酒会导致脂肪肝、胃溃肠、伤害神经系统、大脑皮质萎缩等,据调查,心脑血管病人多数在饮酒后引起中风、偏瘫等疾病。因此,除了减少酒的摄入外,在不可避免的场合饮酒后应采取措施及时将酒精排出体外,以降低酒精对身体的伤害。目前,市场上已有许多解酒的药,但解酒药大多为西药,因负作用较大而不易被人们接受;另外人们还主要以常识上的浓茶、白醋、咖啡等进行解酒,这些食品的醒酒效果尚未得到证实,而且醒酒的作用效果并不理想,且咖啡因等刺激性物质会对肾脏造成伤害。因而,开发一种解酒效果好的保健食品显得尤为重要。
发明内容
针对现有技术中存在的问题,本发明提供了一种可醒酒护肝的保健饮料及其制备方法。该保健饮料以芹菜汁、番茄汁、苹果汁、蓝莓汁、扫帚菜提取液、荷叶提取液为主要原料,加以蜂蜜、柠檬酸调配制得。该产品既有保肝护脏、快速解酒醒酒功能,又能减轻醉酒后胃胀恶心、呕吐、头昏脑胀、口渴的醒酒护肝饮料。
本发明采用以下技术方案:
一种可醒酒护肝的保健饮料,它是由以下重量百分比的原料制成:芹菜汁10-15%、番茄汁10-15%、苹果汁20-30%、蓝莓汁10-20%、扫帚菜提取液3-8%、荷叶提取液6-10%、蜂蜜3-5%、柠檬酸0.2-0.5%、余量水。
优选的,所述的保健饮料是由以下重量份的原料制成:芹菜汁12%、番茄汁13%、苹果汁25%、蓝莓汁15%、扫帚菜提取液6%、荷叶提取液8%、蜂蜜4%、柠檬酸0.4%、余量水。
上述的保健饮料的制备方法,它包括以下步骤:
(1)选取新鲜的芹菜,去根,摘叶,洗净后切成1-2cm的小段,然后放入95-100℃水中烫2-3分钟,取出后将芹菜段放入打汁机中加入3倍量清水后打汁,过滤后得芹菜汁备用;
(2)将番茄去蒂,切成小块然后放入打汁机中直接打浆,然后用150目筛过滤得到番茄汁,备用;
(3)选取优质苹果,去核切成小块放入打浆机中,加入3倍量的清水搅拌打浆,然后过150目筛得苹果汁,备用;
(4)选取无腐烂、无虫害、新鲜的蓝莓,清洗后捞出控干水分,加入3倍于其重量的95℃的水中烫漂10min后,用筛板孔径为0.8mm的打浆机打浆破碎成蓝莓果浆,然后用100目筛过滤得蓝莓汁;
(5)选取新鲜嫩的扫帚菜,洗净,将扫帚菜和冷水按照料液比为1g:20ml混合浸泡1~2小时,后大火煎煮至沸腾后换慢火继续煎煮30分钟,抽滤后得一次提取液和滤渣,然后向滤渣中加入5倍于其重量的冷水,以大火煎至沸腾后换小火煎煮30分钟,抽滤后得二次提取液;将一次提取液和二次提取液混合加热至沸腾后15分钟即得扫帚菜提取液,备用;
(6)挑选优质荷叶,将其切成细丝,将荷叶和冷水按照料液比为1g:20ml混合浸泡1~2小时,后大火煎煮至沸腾后换慢火继续煎煮30分钟,抽滤后得一次提取液和滤渣,然后向滤渣中加入5倍于其重量的冷水,以大火煎至沸腾后换小火煎煮30分钟,抽滤后得二次提取液;将一次提取液和二次提取液混合加热至沸腾后15分钟即得荷叶菜提取液,备用;
(7)将上述制备的芹菜汁、番茄汁、苹果汁、蓝莓汁、扫帚菜提取液、荷叶提取液按比例混合均匀,然后向其中加入蜂蜜、柠檬酸和适量水调配,200目筛进一步精滤;
(8)将精滤后的混合饮料在20-25MPa的高压均质机内均质15-20min,真空脱气2-3min,脱气温度65℃,80℃以上灌装后于100℃灭菌5-10s后冷却,装瓶即得成品。
本发明的有益效果是:本发明保健饮料营养成分丰富,多种果蔬和植物提取液配合使用,富含多种维生素,能加快酒精在体内的分解速度,快速从体内排出,同时缓解胃部对酒精的吸收,并解除醉酒引起的胃胀恶心、头痛脑胀、口干等不适感觉,缓解过量饮酒造成的心率加快、血压升高,保护因酒精引起的肝脏损伤。且本发明不含任何刺激性物质,食用口感好,无刺激性气味,酸甜可口,既有果蔬天然的香气和营养成分,又形成了新的风味,适于现代人多元化的口味需求。本发明几种成分配伍使用后起到协同增效的作用,其醒酒解酒护肝的效果要明显高于所有组分的作用效果总和,是一种良好的解酒护肝的保健饮料。

下面结合具体实施例对本发明做进一步的详细说明。
实施例1
一种可醒酒护肝的保健饮料,它是由以下重量百分比的原料制成:芹菜汁10-15%、番茄汁10-15%、苹果汁20-30%、蓝莓汁10-20%、扫帚菜提取液3-8%、荷叶提取液6-10%、蜂蜜3-5%、柠檬酸0.2-0.5%、余量水。
上述的保健饮料的制备方法,它包括以下步骤:

(8)将精滤后的混合饮料在20-25MPa的高压均质机内均质15-20min,真空脱气2-3min,脱气温度65℃,80℃以上灌装后于100℃灭菌5-10s后冷却,装瓶即得成品。
实施例2
一种可醒酒护肝的保健饮料,它是由以下重量百分比的原料制成:芹菜汁10-15%、番茄汁10-15%、苹果汁20-30%、蓝莓汁10-20%、扫帚菜提取液3-8%、荷叶提取液6-10%、蜂蜜3-5%、柠檬酸0.2-0.5%、余量水。
上述的保健饮料的制备方法同实施例1。
实施例3
一种可醒酒护肝的保健饮料,它是由以下重量百分比的原料制成:芹菜汁10-15%、番茄汁10-15%、苹果汁20-30%、蓝莓汁10-20%、扫帚菜提取液3-8%、荷叶提取液6-10%、蜂蜜3-5%、柠檬酸0.2-0.5%、余量水。
上述的保健饮料的制备方法同实施例1。
将上述实施例1-3所制备的保健饮料进行感官质量评价。评价打分标准如表1:

由经过筛选和训练的30人专业感官评价员组成评价小组对其整体的风味、酸度、甜度进行评价打分,该结果中配方1-3分别为上述实施例1-3,评价得分结果见表2。

从表2中可以看出,配方1-3的整体风味得分均在4.6分以上,口感较好,是一种非常适宜长期饮用的保健饮品。
解酒功效试验研究
取100只小鼠,随机分为10组,各组小鼠雌雄比例、平均体重基本相同。分别给10组小鼠以0.35ml/10g的52度的泸州老窖特曲酒灌胃,观察小鼠的情况,以翻正反射消失作为小鼠的醉酒标准。在小鼠醉酒后5分钟后分别将生理盐水、实施例1-3制得的醒酒护肝保健饮料、本发明所用的单一芹菜汁、番茄汁、苹果汁、蓝莓汁、扫帚菜提取液和荷叶提取液给药,给药量为0.4ml/10g。以小鼠醉酒的时间为起点,小鼠的醒酒时间为终点(以小鼠翻正反射重新出现为小鼠的醒酒标准),记录小鼠的醒酒时间。其具体实验结果如下表3所示。

从上述表3中的结果可以看出,与生理盐水组比较,实施例1-3组和芹菜汁、番茄汁、蓝莓汁、扫帚菜提取液的解酒效果均比较明显,其中的实施例1-3组中的解酒效果更佳显著,其醒酒时间要优于其他任何单一组分或者所有组分的效果总和,这说明本发明的保健饮料配方各原料协同作用,可有效地延缓乙醇的吸收、促进乙醇的代谢,起到明显的解酒效果。
护肝功效试验研究
经过连续28天的给药给酒实验后,试验分组及方法同上述解酒试验,每组待试小鼠禁食12h,次日解剖小鼠,观察内脏器官病变情况,取肝脏进行肝匀浆后测定LPO含量,制成肝切片进行电镜观察肝组织细胞变性情况。试验结果如表4所示。

从上述表4的试验结果可以看出,本发明的保健饮料给药后,各给药组小鼠内脏大小适度,未观察到异常现象,与生理盐水组比较,肝匀浆LPO均明显较低,这说明本发明的保健饮料对降低LPO有一定的功效,具有较好的抗氧化和保肝功能,有助于提高动物体内自由基的清除能力,降低其脂质过氧化速度,从而减轻长期大量饮酒造成的酒精性肝损伤。芹菜汁、番茄汁、蓝莓汁虽然也对肝匀浆LPO值的降低有一定效果,但并不明显,且其对胆囊、胰脏、肝脏的保护作用也较小。因而,本发明制备的醒酒护肝保健饮料对于减轻长期大量饮酒造成的肝损伤有一定的保护作用。
Claims (3)
1.一种可醒酒护肝的保健饮料,其特征在于,它是由以下重量百分比的原料制成:芹菜汁10-15%、番茄汁10-15%、苹果汁20-30%、蓝莓汁10-20%、扫帚菜提取液3-8%、荷叶提取液6-10%、蜂蜜3-5%、柠檬酸0.2-0.5%、余量水。
2.根据权利要求1所述的保健饮料,其特征在于,它是由以下重量份的原料制成:芹菜汁12%、番茄汁13%、苹果汁25%、蓝莓汁15%、扫帚菜提取液6%、荷叶提取液8%、蜂蜜4%、柠檬酸0.4%、余量水。
3.一种权利要求1或2所述的保健饮料的制备方法,其特征在于,它包括以下步骤:
(1)选取新鲜的芹菜,去根,摘叶,洗净后切成1-2cm的小段,然后放入95-100℃水中烫2-3分钟,取出后将芹菜段放入打汁机中加入3倍量清水后打汁,过滤后得芹菜汁备用;
(2)将番茄去蒂,切成小块然后放入打汁机中直接打浆,然后用150目筛过滤得到番茄汁,备用;
(3)选取优质苹果,去核切成小块放入打浆机中,加入3倍量的清水搅拌打浆,然后过150目筛得苹果汁,备用;
(4)选取无腐烂、无虫害、新鲜的蓝莓,清洗后捞出控干水分,加入3倍于其重量的95℃的水中烫漂10min后,用筛板孔径为0.8mm的打浆机打浆破碎成蓝莓果浆,然后用100目筛过滤得蓝莓汁;
(5)选取新鲜嫩的扫帚菜,洗净,将扫帚菜和冷水按照料液比为1g:20ml混合浸泡1~2小时,后大火煎煮至沸腾后换慢火继续煎煮30分钟,抽滤后得一次提取液和滤渣,然后向滤渣中加入5倍于其重量的冷水,以大火煎至沸腾后换小火煎煮30分钟,抽滤后得二次提取液;将一次提取液和二次提取液混合加热至沸腾后15分钟即得扫帚菜提取液,备用;
(6)挑选优质荷叶,将其切成细丝,将荷叶和冷水按照料液比为1g:20ml混合浸泡1~2小时,后大火煎煮至沸腾后换慢火继续煎煮30分钟,抽滤后得一次提取液和滤渣,然后向滤渣中加入5倍于其重量的冷水,以大火煎至沸腾后换小火煎煮30分钟,抽滤后得二次提取液;将一次提取液和二次提取液混合加热至沸腾后15分钟即得荷叶菜提取液,备用;
(7)将上述制备的芹菜汁、番茄汁、苹果汁、蓝莓汁、扫帚菜提取液、荷叶提取液按比例混合均匀,然后向其中加入蜂蜜、柠檬酸和适量水调配,200目筛进一步精滤;
(8)将精滤后的混合饮料在20-25MPa的高压均质机内均质15-20min,真空脱气2-3min,脱气温度65℃,80℃以上灌装后于100℃灭菌5-10s后冷却,装瓶即得成品。
