本发明涉及食品保健领域,特别是涉及一种黑木耳清肺粉及其制备方法。
背景技术
木耳,别名黑木耳、光木耳。真菌学分类属担子菌纲,木耳目,木耳科。色泽黑褐,质地柔软,味道鲜美,营养丰富,可素可荤,不但为中国菜肴大添风采,而且能养血驻颜,令人肌肤红润,容光焕发,并可防治缺铁性贫血等,具有很多药用功效。
木耳蛋白质的含量是牛奶的六倍,钙、磷、铁纤维素含量也不少,此外,还有甘露聚糖、葡萄糖、木糖等醣类,及卵磷脂、麦角甾醇和维生素C等,木耳具有预防动脉粥样硬化的功效。蛋白质丰富,而且富含多种维生素和矿物质,特别是铁元素含量极高,每100克干木耳含铁达185毫克,是肉类的100
倍。黑木耳是缺铁性贫血患者的极佳食品。黑木耳还有润肠解毒功能。黑木耳中的腺嘌呤核苷有显著的抑制血栓形成的作用,因此,还是中老年人的优良保健食品。黑木耳对胆结石、肾结石、膀胱结石、粪石等内源性异物也有比较显著的化解功能。黑木耳还含有多种矿物质,能对各种结石产生强烈的化学反应,剥脱、分化、侵蚀结石,使结石缩小,排出。
黑木耳被营养学家誉为“素中之荤”和“素中之王”,每100克黑木耳中含铁185毫克,它比绿叶蔬菜中含铁量最高的黑木耳高出20倍,比动物性食品中含铁量最高的猪肝还高出约7倍,是各种荤素食品中含铁量最多的。中医认为,黑木耳味甘性平,有凉血、止血作用,主治咯血、吐血、衄血、血痢、崩漏、痔疮出血、便秘带血等,是因其含铁量高,可以及时为人体补充足够的铁质,所以它是一种天然补血食品。
黑木耳含有丰富的植物胶原成分,它具有较强的吸附作用,对无意食下的难以消化的头发、谷壳、木渣、沙子、金属屑等异物也具有溶解与氧化作用。常吃黑木耳能起到清理消化道、清胃涤肠的作用。特别是对从事矿石开采、冶金、水泥制造、理发、面粉加工、棉纺毛纺等空气污染严重工种的工人,经常食用黑木耳能起到良好的保健作用。
黑木耳中含有丰富的纤维素和一种特殊的植物胶原,这两种物质能够促进胃肠蠕动,促进肠道脂肪食物的排泄、减少食物中脂肪的吸收,从而防止肥胖;同时,由于这两种物质能促进胃肠蠕动,防止便秘,有利于体内大便中有毒物质的及时清除和排出,从而起到预防直肠癌及其它消化系统癌症的作用。所以,老年人特别是有便秘习惯的老年人,坚持食用黑木耳,常食木耳粥,对预防多种老年疾病、抗癌、防癌,延缓衰老都有良好的效果。

本发明的目的是提供一种黑木耳清肺粉及其制备方法,长期使用具有清肺润肺、化痰止咳、清理肠胃的功效。
本发明的目的通过以下技术方案来实现:
一种黑木耳清肺粉及其制备方法,由黑木耳细粉、中药粉、谷物粉、花粉、调味粉制备而成,所述的中药粉由桔梗、牡丹皮、陈皮、橘红、桑白皮、玉竹制成,所述的谷物粉由荞麦、黄大豆、黑芝麻、燕麦制成,所述的花粉由玫瑰花、山茶花、荷花、洋槐花制成,所述的调味粉由山楂粉、杨梅粉、青梅粉、柠檬粉、蜂蜜粉制成。
所述的一种黑木耳清肺粉,按重量百分比,黑木耳细粉20-40%、中药粉10-20%、谷物粉30-40%、花粉10-20%、调味粉5-10%。
所述的一种黑木耳清肺粉,按最佳重量百分比,黑木耳细粉32%、中药粉13%、谷物粉35%、花粉12%、调味粉8%。

所述的一种黑木耳清肺粉,其制备方法的主要步骤为:
步骤1、制备黑木耳细粉:
(1)选料:按重量百分比,选取新鲜的、无病虫害的优质黑木耳,置于浓度为2-4%的盐水中浸泡5-10分钟,取出后使用清水冲洗3-5遍,然后置于温水中浸泡2-3小时,备用;
(2)晾晒:将浸泡后的黑木耳置于阳光下晒干;
(3)粉碎:将晒干后的黑木耳置于粉碎机中,初步粉碎;
(4)高温灭菌:取初步粉碎后的黑木耳粉,于110-115℃的温度下高温灭菌;
(5)超微粉碎:将灭菌后的黑木耳粉,置于超微粉碎机中,粉碎后得到黑木耳细粉,备用;
步骤2、制备中药粉:
(1)选料:按重量百分比,选取优质的桔梗、牡丹皮、陈皮、橘红、桑白皮、玉竹,洗净并除杂;
(2)提取:取洗净并除杂后的桔梗、牡丹皮、陈皮、橘红、桑白皮、玉竹,混合在一起,加入13倍的纯净水,中火煎煮2小时,过滤,得第一次提取液;滤渣加9倍的水,中火煎煮1小时,过滤,得第二次提取液;滤渣加6倍的水,小火煎煮30分钟,过滤,得第三次提取液;
(3)混合、离心分离:取第一次提取液、第二次提取液、第三次提取液,置于混合机中混合10-20分钟,得混合液;将混合液置于离心分离机中,离心分离20-25分钟,得离心分离液,备用;
(4)浓缩、干燥:取离心分离液,真空浓缩至相对密度为1.2-1.25的稠膏,然后进行喷雾干燥,干燥后置于超微粉碎机中粉碎,粉碎后得到中药粉,备用;
步骤3、制备谷物粉:
(1)选料:按重量百分比,取优质的荞麦、黄大豆、黑芝麻、燕麦,分别使用清水浸泡2-3天,备用;
(2)磨浆:取浸泡后的荞麦、黄大豆、黑芝麻、燕麦,分别置于磨浆机中磨浆;
(3)干燥、粉碎:取荞麦浆、黄大豆浆、黑芝麻浆、燕麦浆,分别置于冷冻干燥机中,冷冻干燥后分别置于超微粉碎机中粉碎,得到荞麦细粉、黄大豆细粉、黑芝麻细粉、燕麦细粉,备用;
(4)混合、灭菌:将荞麦细粉、黄大豆细粉、黑芝麻细粉、燕麦细粉置于三维混合机中混合30分钟,混合后采用紫外线灭菌的方式进行灭菌,灭菌时间为15-20分钟,得到谷物粉,备用;
步骤4、制备花粉:按重量百分比,取新鲜的玫瑰花、山茶花、荷花、洋槐花,于阳光下晒干,然后置于超微粉碎机中粉碎,粉碎后混合均匀,制得花粉;
步骤5、制备调味粉:按重量份数,选取优质的山楂粉、杨梅粉、青梅粉、柠檬粉、蜂蜜粉,混合均匀,制得调味粉,备用;
步骤6、总混、灭菌、装袋:按重量百分比,取制备好的黑木耳细粉、中药粉、谷物粉、花粉、调味粉,置于混合机中,混合30分钟,混合后采用紫外线灭菌的方式灭菌,灭菌后装袋,塑封包装,制得一种黑木耳清肺粉。
在中药粉中,
桔梗,宣肺,利咽,祛痰,排脓,用于咳嗽痰多,胸闷不畅,咽痛,音哑,肺痈吐脓,牡丹皮,具有清热凉血、活血化淤、退虚热等功效,陈皮,理气健脾,燥湿化痰,用于脘腹胀满,食少吐泻,咳嗽痰多,橘红,理气宽中,燥湿化痰,用于咳嗽痰多,食积伤酒,呕恶痞闷,桑白皮,泻肺平喘,利水消肿,用于肺热咳喘,面目浮肿,小便不利等症,玉竹,养阴润燥,生津止渴,用于肺胃阴伤,燥热咳嗽,咽干口渴,内热消渴。
在谷物粉中:
荞麦含有丰富的膳食纤维,其含量是一般精制大米的10倍;荞麦含有的铁、锰、锌等微量元素也比一般谷物丰富;还含有B族维生素、维生素E、铬、磷、钙、铁、赖氨酸、氨基酸、脂肪酸、亚油酸、烟碱酸、烟酸、芦丁等。
黄大豆磷脂中含有85%-90%磷脂酰胆碱以及鳞脂酰乙醇胺、磷脂糖甙等;磷脂是一种天然营养活性剂,是建筑聪明大脑的重要物质;由于人的大脑20~30%由磷脂构成,所以多食富含磷脂的食物比如大豆可使脑中乙酰胆喊的释放增加,从而提高人的记忆和接受能力。
黑芝麻,
含有大量的脂肪和蛋白质,还含有糖类、维生素A、维生素E、卵磷脂、钙、铁、铬等营养成分;有健胃、保肝、促进红细胞生长的作用,同时可以增加体内黑色素,有利于头发生长。
燕麦,
含粗蛋白质达15.6%,脂肪8.5%,还有淀粉释放热量以及磷、铁、钙等元素,燕麦中的B族维生素、尼克酸、叶酸、泛酸都比较丰富,特别是维生素E,每100克燕麦粉中高达15毫克;此外燕麦粉中还含有谷类食粮中均缺少的皂甙(人参的主要成分)。

6.根据权利要求1所述的一种黑木耳清肺粉,其特征在于:所述的花粉中,玫瑰花、山茶花、荷花、洋槐花的质量比为3:2:1:1。
7.根据权利要求1所述的一种黑木耳清肺粉,其特征在于:所述的调味粉中,山楂粉、杨梅粉、青梅粉、柠檬粉、蜂蜜粉的质量比为3:5:5:1:1。
8.根据权利要求1-7所述的一种黑木耳清肺粉及其制备方法,其特征在于:其制备方法的主要步骤为:
步骤1、制备黑木耳细粉:
(1)选料:按重量百分比,选取新鲜的、无病虫害的优质黑木耳,置于浓度为2-4%的盐水中浸泡5-10分钟,取出后使用清水冲洗3-5遍,然后置于温水中浸泡2-3小时,备用;
(2)晾晒:将浸泡后的黑木耳置于阳光下晒干;
(3)粉碎:将晒干后的黑木耳置于粉碎机中,初步粉碎;
(4)高温灭菌:取初步粉碎后的黑木耳粉,于110-115℃的温度下高温灭菌;
(5)超微粉碎:将灭菌后的黑木耳粉,置于超微粉碎机中,粉碎后得到黑木耳细粉,备用;
步骤2、制备中药粉:
(1)选料:按重量百分比,选取优质的桔梗、牡丹皮、陈皮、橘红、桑白皮、玉竹,洗净并除杂;
(2)提取:取洗净并除杂后的桔梗、牡丹皮、陈皮、橘红、桑白皮、玉竹,混合在一起,加入13倍的纯净水,中火煎煮2小时,过滤,得第一次提取液;滤渣加9倍的水,中火煎煮1小时,过滤,得第二次提取液;滤渣加6倍的水,小火煎煮30分钟,过滤,得第三次提取液;
(3)混合、离心分离:取第一次提取液、第二次提取液、第三次提取液,置于混合机中混合10-20分钟,得混合液;将混合液置于离心分离机中,离心分离20-25分钟,得离心分离液,备用;
(4)浓缩、干燥:取离心分离液,真空浓缩至相对密度为1.2-1.25的稠膏,然后进行喷雾干燥,干燥后置于超微粉碎机中粉碎,粉碎后得到中药粉,备用;
步骤3、制备谷物粉:
(1)选料:按重量百分比,取优质的荞麦、黄大豆、黑芝麻、燕麦,分别使用清水浸泡2-3天,备用;
(2)磨浆:取浸泡后的荞麦、黄大豆、黑芝麻、燕麦,分别置于磨浆机中磨浆;
(3)干燥、粉碎:取荞麦浆、黄大豆浆、黑芝麻浆、燕麦浆,分别置于冷冻干燥机中,冷冻干燥后分别置于超微粉碎机中粉碎,得到荞麦细粉、黄大豆细粉、黑芝麻细粉、燕麦细粉,备用;
(4)混合、灭菌:将荞麦细粉、黄大豆细粉、黑芝麻细粉、燕麦细粉置于三维混合机中混合30分钟,混合后采用紫外线灭菌的方式进行灭菌,灭菌时间为15-20分钟,得到谷物粉,备用;
步骤4、制备花粉:按重量百分比,取新鲜的玫瑰花、山茶花、荷花、洋槐花,于阳光下晒干,然后置于超微粉碎机中粉碎,粉碎后混合均匀,制得花粉;
步骤5、制备调味粉:按重量份数,选取优质的山楂粉、杨梅粉、青梅粉、柠檬粉、蜂蜜粉,混合均匀,制得调味粉,备用;
步骤6、总混、灭菌、装袋:按重量百分比,取制备好的黑木耳细粉、中药粉、谷物粉、花粉、调味粉,置于混合机中,混合30分钟,混合后采用紫外线灭菌的方式灭菌,灭菌后装袋,塑封包装,制得一种黑木耳清肺粉。
