本发明涉及食品保健领域,特别是一种山药降血脂粉及其制备方法。
背景技术
山药有“神仙之食”的美名。山药最大的特点是能防止心血管系统脂肪沉淀,保持血管的弹性,防止动脉粥样硬化过早发生,减少皮下脂肪沉积。
许多古典医籍都对山药作了很高的评价。在民间,山药是人所共知的滋补佳品。它含有蛋白质、糖类、维生素、脂肪、胆碱、淀粉酶等成分,还含有碘、钙、铁、磷等人体不可缺少的无机盐和微量元素,它含有足够的纤维,食用后就会产生饱胀感,从而控制进食欲望。其次,山药本身就是一种高营养、低热量的食品,可以放心地多加食用而不会有发胖的后顾之忧。
中医认为山药具有健脾、补肺、固肾、益精等多种功效。并且对肺虚咳嗽、脾虚泄泻、肾虚遗精、带下及小便频繁等症,都有一定的疗补作用。山药健脾、除湿、补气、益肺、固肾、益精的功效,山药含有可溶性纤维,能推迟胃内食物的排空,控制饭后血糖升高。还能助消化、降血糖。用于糖尿病脾虚泄泻,小便频数。控制进食欲作为高营养食品,山药中含有大量淀粉及蛋白质、B族维生素、维生素C、维生素E、葡萄糖、粗蛋白氨基酸、胆汁碱(holine)、尿囊素(allantoin)等。其中重要的营养成分薯蓣皂,是合成女性荷尔蒙的先驱物质,有滋阴补阳、增强新陈代谢的功效;而新鲜块茎中含有的多糖蛋白成分的粘液质、消化酵素等,可预防心血管脂肪沉积,有助于胃肠的消化吸收。
发明内容
本发明的目的是提供一种山药降血脂粉及其制备方法,长期使用具有降血脂、降血糖、助消化的功效。
本发明的目的通过以下技术方案来实现:
一种山药降血脂粉及其制备方法,由山药细粉、中药粉、谷物粉、花粉、调味粉制备而成,所述的中药粉由银杏叶、泽泻、山楂、青皮、绞股蓝、佛手制成,所述的谷物粉由荞麦、黄大豆、黑芝麻、燕麦制成,所述的花粉由玫瑰花、山茶花、荷花、洋槐花制成,所述的调味粉由山楂粉、杨梅粉、青梅粉、柠檬粉、蜂蜜粉制成。
所述的一种山药降血脂粉,按重量百分比,山药细粉20-40%、中药粉10-20%、谷物粉30-40%、花粉10-20%、调味粉5-10%。
所述的一种山药降血脂粉,按最佳重量百分比,山药细粉32%、中药粉13%、谷物粉35%、花粉12%、调味粉8%。
所述的中药粉中,银杏叶32份、泽泻14份、山楂10份、青皮8份、绞股蓝7份、佛手4份。
所述的谷物粉中,荞麦、黄大豆、黑芝麻、燕麦的质量比为2:5:1:2。
所述的花粉中,玫瑰花、山茶花、荷花、洋槐花的质量比为3:2:1:1。

所述的一种山药降血脂粉,其制备方法的主要步骤为:
步骤1、制备山药细粉:
(1)选料:按重量百分比,选择光滑、无病斑、条形直顺的新铁棍鲜山药,去除污泥,清水冲洗干净,去皮并挖除黑色斑眼,备用;
(2)切片:将去皮后的山药,切成0.3-0.4厘米的薄片备用;
(3)固化、烫漂:山药切片后立即浸入0.5%亚硫酸氢钠水溶液中进行变色处理,浸泡2-3小时后捞出;将捞出的山药片用清水漂去药液和胶体,然后放人沸水锅中烫漂6-8分钟,注意不要煮烂,捞出后再用清水漂去黏液;
(4)烘干:将烫漂后的山药片置于65℃的烘箱中,烘18-20小时;
(5)粉碎:将烘干后的山药片置于粉碎机中,初步粉碎;
(5)高温灭菌:取初步粉碎后的山药粉,于110-115℃的温度下高温灭菌;
(6)超微粉碎:将灭菌后的山药粉,置于超微粉碎机中,粉碎后得到山药细粉,备用;
步骤2、制备中药粉:
(1)选料:按重量百分比,选取优质的银杏叶、泽泻、山楂、青皮、绞股蓝、佛手,洗净并除杂;
(2)提取:取洗净并除杂后的银杏叶、泽泻、山楂、青皮、绞股蓝、佛手,混合在一起,加入13倍的纯净水,中火煎煮2小时,过滤,得第一次提取液;滤渣加9倍的水,中火煎煮1小时,过滤,得第二次提取液;滤渣加6倍的水,小火煎煮30分钟,过滤,得第三次提取液;
(3)混合、离心分离:取第一次提取液、第二次提取液、第三次提取液,置于混合机中混合10-20分钟,得混合液;将混合液置于离心分离机中,离心分离20-25分钟,得离心分离液,备用;
(4)浓缩、干燥:取离心分离液,真空浓缩至相对密度为1.2-1.25的稠膏,然后进行喷雾干燥,干燥后置于超微粉碎机中粉碎,粉碎后得到中药粉,备用;
步骤3、制备谷物粉:
(1)选料:按重量百分比,取优质的荞麦、黄大豆、黑芝麻、燕麦,分别使用清水浸泡2-3天,备用;
(2)磨浆:取浸泡后的荞麦、黄大豆、黑芝麻、燕麦,分别置于磨浆机中磨浆;
(3)干燥、粉碎:取荞麦浆、黄大豆浆、黑芝麻浆、燕麦浆,分别置于冷冻干燥机中,冷冻干燥后分别置于超微粉碎机中粉碎,得到荞麦细粉、黄大豆细粉、黑芝麻细粉、燕麦细粉,备用;
(4)混合、灭菌:将荞麦细粉、黄大豆细粉、黑芝麻细粉、燕麦细粉置于三维混合机中混合30分钟,混合后采用紫外线灭菌的方式进行灭菌,灭菌时间为15-20分钟,得到谷物粉,备用;
步骤4、制备花粉:按重量百分比,取新鲜的玫瑰花、山茶花、荷花、洋槐花,于阳光下晒干,然后置于超微粉碎机中粉碎,粉碎后混合均匀,制得花粉;
步骤5、制备调味粉:按重量份数,选取优质的山楂粉、杨梅粉、青梅粉、柠檬粉、蜂蜜粉,混合均匀,制得调味粉,备用;
步骤6、总混、灭菌、装袋:按重量百分比,取制备好的山药细粉、中药粉、谷物粉、花粉、调味粉,置于混合机中,混合30分钟,混合后采用紫外线灭菌的方式灭菌,灭菌后装袋,塑封包装,制得一种山药降血脂粉。

有疏肝理气,和胄止痛,燥湿化痰的功效,用于肝胃气滞,胸胁胀痛,胃脘痞满,食少呕吐,咳嗽痰多。
在谷物粉中:
荞麦含有丰富的膳食纤维,其含量是一般精制大米的10倍;荞麦含有的铁、锰、锌等微量元素也比一般谷物丰富;还含有B族维生素、维生素E、铬、磷、钙、铁、赖氨酸、氨基酸、脂肪酸、亚油酸、烟碱酸、烟酸、芦丁等。
黄大豆磷脂中含有85%-90%磷脂酰胆碱以及鳞脂酰乙醇胺、磷脂糖甙等;磷脂是一种天然营养活性剂,是建筑聪明大脑的重要物质;由于人的大脑20~30%由磷脂构成,所以多食富含磷脂的食物比如大豆可使脑中乙酰胆喊的释放增加,从而提高人的记忆和接受能力。
黑芝麻,
含有大量的脂肪和蛋白质,还含有糖类、维生素A、维生素E、卵磷脂、钙、铁、铬等营养成分;有健胃、保肝、促进红细胞生长的作用,同时可以增加体内黑色素,有利于头发生长。
燕麦,
含粗蛋白质达15.6%,脂肪8.5%,还有淀粉释放热量以及磷、铁、钙等元素,燕麦中的B族维生素、尼克酸、叶酸、泛酸都比较丰富,特别是维生素E,每100克燕麦粉中高达15毫克;此外燕麦粉中还含有谷类食粮中均缺少的皂甙(人参的主要成分)。
本发明的有益效果:本发明的一种山药降血脂粉,由山药细粉、中药粉、谷物粉、花粉、调味粉制备而成,内部含有蔬菜粉、谷物粉、中药粉,营养价值极高,还含有花粉、调味粉,口感好、气味香,长期使用还具有降血脂、降血糖、助消化的功效。

步骤1、制备山药细粉:
(1)选料:按重量百分比,选择光滑、无病斑、条形直顺的新铁棍鲜山药,去除污泥,清水冲洗干净,去皮并挖除黑色斑眼,备用;
(2)切片:将去皮后的山药,切成0.3-0.4厘米的薄片备用;

(3)干燥、粉碎:取荞麦浆、黄大豆浆、黑芝麻浆、燕麦浆,分别置于冷冻干燥机中,冷冻干燥后分别置于超微粉碎机中粉碎,得到荞麦细粉、黄大豆细粉、黑芝麻细粉、燕麦细粉,备用;
(4)混合、灭菌:将荞麦细粉、黄大豆细粉、黑芝麻细粉、燕麦细粉置于三维混合机中混合30分钟,混合后采用紫外线灭菌的方式进行灭菌,灭菌时间为15-20分钟,得到谷物粉,备用;
步骤4、制备花粉:按重量百分比,取新鲜的玫瑰花、山茶花、荷花、洋槐花,于阳光下晒干,然后置于超微粉碎机中粉碎,粉碎后混合均匀,制得花粉;
步骤5、制备调味粉:按重量份数,选取优质的山楂粉、杨梅粉、青梅粉、柠檬粉、蜂蜜粉,混合均匀,制得调味粉,备用;
步骤6、总混、灭菌、装袋:按重量百分比,取制备好的山药细粉、中药粉、谷物粉、花粉、调味粉,置于混合机中,混合30分钟,混合后采用紫外线灭菌的方式灭菌,灭菌后装袋,塑封包装,制得一种山药降血脂粉。
