Abstract
本发明公开了一种护肝醒酒软糖及其制备工艺,将拐枣、葛根、桑葚、蒲公英、车前草、虎杖、女贞子、柴胡、黄苓、生姜、党参、甘草、大枣、灵芝经过微生物发酵提取、过滤、减压浓缩后得到药食用植物组方提取液,配以适量的葡萄糖、果糖、卡拉胶等物质,将其开发成醒酒护肝、利尿利胆、补充能量新型软糖产品。本发明以软糖为载体剂型,不仅含有足量的功效物质,还对人体过度消耗的能量进行及时补充。采用微生物发酵提取技术,对药食用植物资源高效利用,获得的新产品便于携带、食用方便,口感美味,解酒护肝效果显著,生产工艺成熟,便于规模化生产,具有广阔的市场应用前景。

技术领域
本发明属于保健食品加工领域,具体的涉及一种护肝醒酒软糖及其制备工艺。
背景技术
俗话说小酌怡情,贪杯伤身。饮酒可好可坏,每天少量喝酒,可以促进血液循环,加快新成代谢,扩张血管,但过量饮酒就会导致很多疾病,主要伤害人体肝脏,造成脂肪堆积在肝脏引起脂肪肝以及伤害到胃粘膜等,严重情况会导致大脑的呼吸中枢受到抑制,造成呼吸停止,同时,饮酒后人体的血糖含量会急剧下降也有可能危害到生命危险。因此需要一种既可以解酒护肝,同时又能补充血糖,提升机体能量的解酒食品是大多数饮酒者的追求。
人体内若是具备乙醇脱氢酶,就能使乙醇分解成乙醛。乙醛再经过乙醛脱氢酶的分解,变成乙酸。乙酸对人体没有危害,然后又会被分解成二氧化碳和水。乙醇和乙醛对人体危害最大。缺少乙醛脱氢酶的人就比较多。这种乙醛脱氢酶的缺少,使乙醛不能被完全分解为乙酸,而是以乙醛继续留在体内,使人喝酒后产生恶心欲吐、昏迷不适等醉酒症状。通常可以通过增加乙醇脱氢酶,或者尿液排出乙醇,同时补充能量达到醒酒目的。
目前市场上的解酒制品主要是采用具有解酒护肝功效的中药为主要材料开发的产品,重庆市中药研究院公开了一项专利“一种醒酒和养胃保肝的保健复合饮料及其制备方法”专利号:CN201310608410.X,具体涉及到的产品是由七种中药材的水提取液以及少量蜂蜜和维生素C配制而成,每1000份饮料由以下重量份数的原料制备:粉葛10-25份、拐枣5-35份、葛花5-25份、乌梅5-20份、佛手10-30份、高良姜10-25份、甘草5-30份、蜂蜜5-25份、维生素C1-20份;该产品主要是利用七种中药提取液的解酒功效来制作,没有涉及到机体能量物质的直接补充。
另外专利“一种护肝醒酒天然组合物及制品与制备方法”专利号:CN201410713511.8公开的护肝醒酒组合物由玉米低聚肽粉、葛根粉和牡蛎精粉组成。将玉米低聚肽粉、葛根粉和牡蛎精粉混合,即得到护肝醒酒天然组合物。也只是单纯具有解酒护肝功效。
专利“一种防醉醒酒颗粒饮料”,专利号:CN96121205.5公开的也是以中草药陈皮、茯苓、葛根等为主成分制成,能有效地阻碍肌体对醇的吸收和加速体内乙醇的代谢,起到防醉和醒酒的双重作用。
因此综合分析目前市场上主要醒酒护肝制品主要是利用中药材单纯的解酒护肝,没有考虑到人体醉酒后血糖含量会急剧下降引起的血糖含量低的问题,致使大多数的醒酒护肝产品,饮酒者服用后感觉酒醒了,但是会觉得身体乏力,无精神,没有真正的达到护肝醒酒的效果。
拐枣,即枳椇,富含葡萄糖、蔗糖、果糖、有机酸、无机盐和维生素等活性成分,可入药,能生津止渴,清热除烦,具有清凉利尿、降血压、保肝、解酒、抗肿瘤、抗衰老和保护神经等作用。其功效说明最早见于《唐本草》,李时珍在《本草纲目》中提到拐枣具有解酒、醒酒、护肝、利尿等功效。历代医学家常把它用在解酒方中作为主药。目前采用拐枣开发的解酒护肝产品甚多,杭州市农业科学研究院公开的专利“从拐枣中提取解酒毒物质的方法”,专利号:CN201010571561.9公开拐枣中提取解酒毒物质的方法,制得拐枣提取物主要为黄酮类复合物,具有解酒毒和护肝功效。
功效评价试验结果表明,拐枣解酒毒功能物质能提高大白鼠长期嗜酒后血液中ADH活性乙醇脱氢酶(ADH)活性和超氧化物歧化酶(SOD)活性,加速乙醇的分解代谢代谢速度,降低血液中乙醇含量和中间代谢产物乙醛在体内积聚时间,从而减少丙二醛(MDA)的积累,起到解酒毒的作用。肝组织HE染色结果表明拐枣解酒毒功能物质能减少大白鼠长期嗜酒后肝细胞脂,因此拐枣被大多数的解酒护肝产品所采用,专利“一种拐枣保健饮料及其加工方法”,专利号:CN201010137209.4公开的是一种拐枣保健饮料及其加工方法,饮料呈浅褐色,澄清透明,具有拐枣果实应有的香气与滋味,具有醒酒安神、防止手足抽搐痉挛、通利二便、清热除烦、增强机体的抗病能力、生津止渴、抗脂质过氧化和降低血压等作用。因此对于拐枣的利用开发主要是饮料,拐枣酒,以及一些口服液,冲剂等,目前还没有拐枣及其组方的软糖相关产品。
综合分析以上现有技术,市面上所存在的醒酒产品存在以下问题,首先是食用不方便,多是以中药制剂为主,需要热水冲服食用;其次是苦涩味、药味过重导致口感不好或会引起胃不适;最后也是关键的就是醒酒功效不全面,没有一款产品既可以护肝、养胃、利尿、补充能量多方位解决醉酒后的不适症状的产品。
目前解酒护肝产品存在的三大难题:
第一:目前的护肝醒酒产品主要是以中药按照一定的配方制作,产品口感苦涩难咽,药味太重,有反胃、呕吐等不良现象;
第二:食用和携带不方便,目前多数的醒酒护肝产品都是以冲剂或者口服液为主,食用的时候需要开水冲泡或携带量大;
第三:单纯醒酒不提供能量,目前的解酒护肝产品注重解酒功能,没有既能护肝,又能利尿养胃,同时缺乏补充能量的产品。
软糖是一种柔软、有弹性和韧性的可载足量的功效物质,还对人体过度消耗的能量进行有效补充的功能性糖果,目前市场上的软糖多以明胶、糖浆等原料为主,经多个工序操作,构成具有不同形状、质构和香味的,精美而耐保藏的固体糖果,具有弹性和咀嚼感。具有健康养生功效的软糖主要是以养生堂成长快乐、好娃益软糖型营养品、迪士尼金色100健康咀嚼软片为首的营养软糖是一种柔软、有弹性和韧性的功能性(保健)糖果,以罗赛洛明胶为主原料,根据不同的配方、添加功效成分,经多个工序操作,构成具有不同形态、颜色和口感的,精美而耐保藏的糖果型保健食品,具有弹性和咀嚼感。罗赛洛明胶是以牛骨熬合而成,富含胶原蛋白;再按配方添加如维生素AD、维生素C、多维、钙、乳酸钙等营养功效成分,制成各种有针对性功效的营养品。目前还没有将药食用醒酒植物组合物,特别是经过发酵处理后的组合物添加到软糖中做成的功能性产品。
发明内容
本发明的目的在于提供一种护肝醒酒软糖及其制备工艺,解决目前解酒护肝产品存在的三大难题,本发明将具有醒酒护肝、利尿解毒的药食用植物的组合配方,采用微生物发酵方式,通过自源性乙醇和醋酸的环境下将有效成分提取,过滤和减压浓缩后得到护肝醒酒药食用植物组方提取液,配以适量的葡萄糖、果糖等糖类物质,将其开发成方便食用,美味可口,既可醒酒又可补充能量的护肝醒酒软糖。
本发明的目的及解决其主要技术问题是采用以下技术方案来实现的:一种护肝醒酒软糖,以护肝醒酒药食用植物组方提取液和葡萄糖为主要原料,并配以卡拉胶、果胶、黄原胶按照一定的比例组成的复配胶,以及食品添加剂薄荷香精和三梨酸钾作为辅料加工而成,护肝醒酒软糖配方配比:护肝醒酒药食用植物组方提取液为10-40份,葡萄糖的10-30份,果葡糖浆40-60份,复配胶1-3份,薄荷香精0.01-0.1份,三梨酸钾0.01-0.05份,纯净水20-50份;
其中所述护肝醒酒药食用植物组方提取液制作按以下质量比组成:拐枣30-40份、葛根10-20份、桑葚5-10份、蒲公英2-8份、车前草2-8份、虎杖1-3份、女贞子2-8份、柴胡2-8份、黄苓5-8份、生姜6-10份、党参2-8份、甘草3-5份、大枣5-15份、灵芝3-10份;按以上质量组方将这些药食用植物组方混合后,按照质量比取10份加入20-30份的纯净水,3-5份白糖,接种酵母菌在20-30℃的温度下密封发酵5-7天后,接入醋酸菌在18-25℃的温度下通氧发酵5-7天,将发酵液过滤、减压浓缩至密度为1.1 -1.2,得组方提取液备用;
其中所述复配胶配方质量配比:卡拉胶60-80份,果胶10-20份,黄原胶10-20份。
所述的果葡糖浆浓度为F60的果葡糖浆。
上述的一种护肝醒酒软糖按下列步骤制备:
A.制备护肝醒酒药食用植物组方提取液:
首先,挑选成熟、无病虫害的拐枣、葛根、桑葚,去杂清洗后按照配配方比例混合后打浆备用;
其次,将蒲公英、车前草、虎杖、女贞子、柴胡、黄苓、生姜、党参、甘草、大枣、灵芝在40-60℃的温度下烘烤至水分含量在10%以下,按照配方比例混合后,采用万能粉碎机粉碎后按照比例加入到拐枣、葛根、桑葚混合果浆中;
最后,将含有蒲公英、车前草、虎杖、女贞子、柴胡、黄苓、生姜、党参、甘草、大枣、灵芝粉末、拐枣、葛根、桑葚混合果浆,按照比例加入水和白糖;接种酵母菌在20-30℃的温度下密封发酵5-7天,然后接入醋酸菌在18-25℃的温度下通氧发酵5-7天,将发酵液过滤、减压浓缩后得到护肝醒酒药食用植物组方提取液;
B.煮胶:将卡拉胶、果胶、黄原胶按照比例组成复配胶,按照重量比为1/10加纯净水浸泡30-60min后,将其煮沸备用;
C.熬糖:将葡萄糖和果葡糖浆按照配方中的比例混合后在小火熬煮沸腾后保持5-10min,将护肝醒酒药食提取液与糖浆混合熬煮3-5min后充分混合;
D.调配:准确称量护肝醒酒药食用植物组方提取液与糖浆混合液的总重量,按照配方加入煮好的复配胶,充分搅拌使其混合后继续煮沸3-5min;
E.调味:护肝醒酒药食用植物组方提取液、糖浆以及复配胶的混合液冷却至70-90℃,按照配方加入薄荷香精与三梨酸钾调整产品风味;
F.注模成型:将调整好风味的产品糖浆液注入模具成型,冷却3-5分钟后脱模得到软糖初产品;
J.烘烤:将软糖初产品在温度为40-60℃的条件下烘烤20-30小时后进入包装环节;
H.包装成品:将完成烘烤程序的软糖外层包裹糯米纸后,密封包装得到最终产品。
本发明主要原料的药用功效如下:
拐枣:富含葡萄糖、蔗糖、果糖、有机酸、无机盐和维生素等活性成分,具有清凉利尿、降血压、保肝、解酒、抗肿瘤、抗衰老和保护神经等作用。其功效说明最早见于《唐本草》,李时珍在《本草纲目》中提到拐枣具有解酒、醒酒、护肝、利尿等功效。
葛根:味甘微辛,气清香,主入脾胃经,解表退热,解酒毒,调节人体机能,增强体质。《千金方》载:治酒醉不醒;《药性论》载:"治天行上气,呕逆,开胃下食,主解酒毒,止烦渴;治胃虚热渴,酒毒呕吐。"葛根能有效地拮抗酒精引起的肝和睾丸组织脂质过氧化损害,葛根含大豆甙,它能分解乙醛毒性,能阻止酒精对大脑抑制功能的减弱;能抑制肠胃对酒精的吸收,促进血液中酒精的代谢和排泄。
桑葚:别名风姜、良姜、始载于《名医别录》。味辛性温,人脾、胃经。具有散寒止痛,温中止呕的功效。《大明本草》有治转筋泻痢、反胃呕食,解酒毒,消宿食的记载。
蒲公英:又称尿床草,对于利尿可是有非常好的效果,它具有丰富的胡萝卜素和Vc及矿物质,对消化不良、便秘都有改善的作用,据《本草纲目》记载,它性平味甘微苦,有清热解毒、消肿散结及催乳作用,对治疗乳腺炎十分有效。无论煎汁口服,还是捣泥外敷,皆有效验。此外,蒲公英还有利尿、缓泻、退黄疸、利胆等功效。
车前草:有很好的利尿作用,正常人内服车前子煎剂10g,有利尿作用,《本草汇言》:车前子,行肝疏肾,畅郁和阳,同补肾药用,令强阴有子;同和肝药用,治目赤目昏;同清热药用,止痢疾火郁;同舒筋药用能利湿行气,健运足膝,有速应之验也。
虎杖:具有很好的利尿解毒功效,其中《药性论》:治大热烦躁,止渴,利小便,压一切热毒。
女贞子:果实含齐墩果酸、甘露醇、葡萄糖、棕榈酸、硬脂酸、油酸及亚麻酸.果皮含熊果酸(Ursolic acid)、齐墩果酸、乙酰齐墩果酸。研发发现齐墩果酸2mg/只皮下注射,连续6-9周,对高脂食物及四氯化碳造成的大鼠肝硬变有防治作用。
柴胡:有效成分挥发油,柴胡皂苷对伤寒、副伤寒疫苗、大肠杆菌液、发酵牛奶、酵母等所致发热有明显解热作用;抗肝损伤,柴胡注射液1 ml/只皮下注射连续5天可显著降低四氯化碳引起的大鼠血清GPT升高,肝细胞变性及坏死也明显减轻,肝细胞内糖原及核糖核酸含量也接近正常。
黄苓:黄苓茶含有丰富的活性矿物质,能够刺激、强健神经,能够有效地缓解忙碌生活中常有的紧张不安、精神过敏、癔病、神经衰弱、抑郁、危机感等情绪。
生姜:含有的姜辣素对口腔和胃粘膜有刺激作用,能促进消化液分泌,增进食欲。可使肠张力、节律和蠕动增加。有末梢性镇吐作用,有效成分为姜酮和姜烯酮的混合物,能促进血液循环。
党参:党参含多糖类、酚类、甾醇、挥发油、维生素B1、B2,多种人体必须的氨基酸、黄芩素葡萄糖甙、皂甙及微量生物碱、微量元素等。能增强机体抵抗力;有调节胃肠运动,抗溃疡,抑制胃酸分泌,降低胃蛋白酶活性等作用。
甘草:甘草味甘甜,性平和,入心、脾、肺、胃四经。生用偏凉,可泻火解毒、缓急止痛;炙用偏温,能散表寒、补中益气,善于调和药性,解百药之毒。
大枣:红枣中所含的糖类、脂肪、蛋白质是保护肝脏的营养剂。它能促进肝脏合成蛋白,增加血清红蛋白与白蛋白含量,调整白蛋白与球蛋白比例,有预防输血反应、降低血清谷丙转氨酶水平等作用。
灵芝:《本草纲目》记载灵芝有解百毒的作用。灵芝可以清除血中毒素,对受损的肝脏细胞起修复营养的作用。研究发现,灵芝能帮助人体快速分解出乙醇脱氢酶和乙醛脱氢酶,可以快速分解人体内的酒精。所含的灵芝多糖,它能提高机体免疫力,提高机体耐缺氧能力,消除自由基、抗辐射,解毒,提高肝脏骨髓血液合成DNA、RNA蛋白能力,延长寿命,解酒效果较好。
本发明与现有技术相比具有明显的优点和有益效果。由以上技术方案可知,本发明将护肝醒酒药食用植物组方采用微生物发酵方式进行有效成分提取,发酵液过滤、减压浓缩后,配以适量的葡萄糖,果糖等糖类物质,将其开发成方便食用、美味可口、既可醒酒又可补充能量的护肝醒酒软糖,具体的有益效果有以下二点:
第一:携带方便,食用可口。软糖独立小包装,可以直接装在兜里便于携带,可以直接打开包装嚼着吃;由于采用的原料是经过发酵处理的,苦涩味和药味均减少,再配以添加少量的薄荷给人一种愉悦的清凉感,同时具有拐枣的果香风味,产品清凉可口,风味鲜美。
第二:效果显著。护肝醒酒药食用植物组方中所涉及的植物原料,具有利尿解毒,护肝养胃等功效,能解酒毒,配以葡萄糖等形成的软糖产品,能及时补充能量且载药量大(每颗软糖净含量10g左右),达到护肝醒酒效果。

具体实施方式
以下结合附图及较佳实施例,对依据本发明提出的一种护肝醒酒软糖及其制备工艺具体实施方式、特征及其功效,详细说明如后。
参见图1,一种护肝醒酒软糖,以护肝醒酒药食用植物组方提取液和葡萄糖为主要原料,并配以卡拉胶、果胶、黄原胶按照所述比例组成的复配胶,以及食品添加剂薄荷香精和三梨酸钾作为辅料加工而成,护肝醒酒软糖配方配比:护肝醒酒药食用植物组方提取液为10-40份,葡糖糖的10-30份,果葡糖浆40-60份,复配胶1-3份,薄荷香精0.01-0.1份,三梨酸钾0.01-0.05份,纯净水20-50份;
其中所述护肝醒酒药食用植物组方提取液制作按以下质量比组成:拐枣30-40份、葛根10-20份、桑葚5-10份、蒲公英2-8份、车前草2-8份、虎杖1-3份、女贞子2-8份、柴胡2-8份、黄苓5-8份、生姜6-10份、党参2-8份、甘草3-5份、大枣5-15份、灵芝3-10份;按以上质量组方将这些药食用植物组方混合后,按照质量比取10份加入20-30份的纯净水,3-5份白糖,接种酵母菌在20-30℃的温度下密封发酵5-7天后,接入醋酸菌在18-25℃的温度下通氧发酵5-7天,将发酵液过滤、减压浓缩至密度为1.1 -1.2,得组方提取液备用。
其中所述复配胶配方质量配比:卡拉胶60-80份,果胶10-20份,黄原胶10—20份;
所述的果葡糖浆浓度为F60的果葡糖浆。
上述的一种护肝醒酒软糖按下列步骤制备:
A.制备护肝醒酒药食用植物组方提取液:
首先,挑选成熟、无病虫害的拐枣、葛根、桑葚,去杂清洗后按照配配方比例混合后打浆备用;
其次,将蒲公英、车前草、虎杖、女贞子、柴胡、黄苓、生姜、党参、甘草、大枣、灵芝在40-60℃的温度下烘烤至水分含量在10%以下,按照配方比例混合后,采用万能粉碎机粉碎后按照比例加入到拐枣、葛根、桑葚混合果浆中;
最后,将含有蒲公英、车前草、虎杖、女贞子、柴胡、黄苓、生姜、党参、甘草、大枣、灵芝粉末、拐枣、葛根、桑葚混合果浆,按照比例加入水和白糖;接种酵母菌在20-30℃的温度下密封发酵5-7天,然后接入醋酸菌在18-25℃的温度下通氧发酵5-7天,将发酵液过滤、减压浓缩后得到护肝醒酒药食用植物组方提取液;
B.煮胶:将卡拉胶、果胶、黄原胶按照比例组成复配胶,按照重量比为1/10加纯净水浸泡30-60min后,将其煮沸备用;
C.熬糖:将葡萄糖和果葡糖浆按照配方中的比例混合后在小火熬煮沸腾后保持5-10min,将护肝醒酒药食提取液与糖浆混合熬煮3-5min后充分混合;
D.调配:准确称量护肝醒酒药食用植物组方提取液与糖浆混合液的总重量,按照配方加入煮好的复配胶,充分搅拌使其混合后继续煮沸3-5min;
E.调味:护肝醒酒药食用植物组方提取液、糖浆以及复配胶的混合液冷却至70-90℃,按照配方加入薄荷香精与三梨酸钾调整产品风味;
F.注模成型:将调整好风味的产品糖浆液注入模具成型,冷却3-5分钟后脱模得到软糖初产品;
J.烘烤:将软糖初产品在温度为40-60℃的条件下烘烤20-30小时后进入包装环节;
H.包装成品:将完成烘烤程序的软糖外层包裹糯米纸后,密封包装得到最终产品。
实施例1:
(1) 制备护肝醒酒药食提取液:
首先,挑选成熟、无病虫害的拐枣、葛根、桑葚,去杂清洗后按照配配方拐枣40份、葛根20份、桑葚10份比例混合后打浆备用;将蒲公英、车前草、虎杖、女贞子、柴胡、黄苓、生姜、党参、甘草、大枣、灵芝在60℃的温度下烘烤至水分含量在10%以下,按照配方:拐枣40份、葛根20份、桑葚10份、蒲公英8份、车前草8份、虎杖3份、女贞子8份、柴胡8份、黄苓8份、生姜10份、党参8份、甘草5份、大枣15份、灵芝10份;比例混合后,采用万能粉碎机粉碎后加入到拐枣、葛根、桑葚混合果浆中,将含有蒲公英、车前草、虎杖、女贞子、柴胡、黄苓、生姜、党参、甘草、大枣、灵芝粉末的拐枣、葛根、桑葚混合果浆,按照比例100份混合液、300份的纯净水、50份白糖比例加入水和白糖;接种酵母菌在30℃的温度下密封发酵5天,然后接入醋酸菌在25℃的温度下通氧发酵5天,发酵液过滤、减压浓缩后得到密度为1.1护肝醒酒药食用植物组方提取液;
(2) 制备软糖环节的加工工艺:
煮胶:将卡拉胶,果胶,黄原胶按照比例组成复配胶,按照重量比为1/10加纯净水浸泡60min后,将其煮沸备用;熬糖:将葡萄糖和果葡糖浆按照配方中的比例混合后在小火熬煮沸腾后保持10min,将护肝醒酒药食用植物组方提取液与糖浆混合熬煮5min后充分混合;调配:准确称量组方提取液与糖浆混合液的总重量,按照配方加入煮好的复配胶,充分搅拌使其混合后继续煮沸5min;调味:组方提取液、糖浆以及复配胶的混合液冷却至90℃,按照配方加入薄荷香精与三梨酸钾调整产品风味;注模成型:将调整好风味的产品糖浆液注入模具成型,冷却5分钟后脱模得到软糖初产品;烘烤:将软糖初产品在温度为60℃的条件下烘烤30小时后进入包装环节;包装成品:将完成烘烤程序的软糖外层包裹糯米纸后,密封包装得到最终产品。

首先,挑选成熟、无病虫害的拐枣、葛根、桑葚,去杂清洗后按照配配方拐枣30份、葛根10份、桑葚5份比例混合后打浆备用;将蒲公英、车前草、虎杖、女贞子、柴胡、黄苓、生姜、党参、甘草、大枣、灵芝在40℃的温度下烘烤至水分含量在10%以下,按照配方:拐枣30份、葛根10份、桑葚5份、蒲公英2份、车前草2份、虎杖1份、女贞子2份、柴胡2份、黄苓5份、生姜6份、党参2份、甘草3份、大枣5份、灵芝3份;比例混合后,采用万能粉碎机粉碎后加入到拐枣、葛根、桑葚混合果浆中,将含有蒲公英、车前草、虎杖、女贞子、柴胡、黄苓、生姜、党参、甘草、大枣、灵芝粉末的拐枣、葛根、桑葚混合果浆,按照比例100份混合液、200份的纯净水、30份白糖比例加入水和白糖;接种酵母菌在20℃的温度下密封发酵7天,然后接入醋酸菌在18℃的温度下通氧发酵7天,发酵液过滤、减压浓缩后得到密度为1.15护肝醒酒药食用植物组方提取液;
(2) 制备软糖环节的加工工艺:
煮胶:将卡拉胶,果胶,黄原胶按照比例组成复配胶,按照重量比为1/10加纯净水浸泡30min后,将其煮沸备用;熬糖:将葡萄糖和果葡糖浆按照配方中的比例混合后在小火熬煮沸腾后保持5min,将组方提取液与糖浆混合熬煮3min后充分混合;调配:准确称量组方提取液与糖浆混合液的总重量,按照配方加入煮好的复配胶,充分搅拌使其混合后继续煮沸3min;调味:组方提取液、糖浆以及复配胶的混合液冷却至70℃,按照配方加入薄荷香精与三梨酸钾调整产品风味;注模成型:将调整好风味的产品糖浆液注入模具成型,冷却3分钟后脱模得到软糖初产品;烘烤:将软糖初产品在温度为40℃的条件下烘烤30小时后进入包装环节;包装成品:将完成烘烤程序的软糖外层包裹糯米纸后,密封包装得到最终产品。
实施例3:
(1) 制备护肝醒酒药食用植物组方提取液:
首先,挑选成熟、无病虫害的拐枣、葛根、桑葚,去杂清洗后按照配配方拐枣35份、葛根15份、桑葚8份比例混合后打浆备用;将蒲公英、车前草、虎杖、女贞子、柴胡、黄苓、生姜、党参、甘草、大枣、灵芝在50℃的温度下烘烤至水分含量在10%以下,按照配方:拐枣35份、葛根15份、桑葚8份、蒲公英4份、车前草5份、虎杖2份、女贞子6份、柴胡4份、黄苓6份、生姜8份、党参5份、甘草4份、大枣10份、灵芝7份;比例混合后,采用万能粉碎机粉碎后加入到拐枣、葛根、桑葚混合果浆中,将含有蒲公英、车前草、虎杖、女贞子、柴胡、黄苓、生姜、党参、甘草、大枣、灵芝粉末的拐枣、葛根、桑葚混合果浆,按照比例100份混合液、250份的纯净水、35份白糖比例加入水和白糖;接种酵母菌在25℃的温度下密封发酵6天,然后接入醋酸菌在20℃的温度下通氧发酵6天,发酵液过滤、减压浓缩后得到密度为1.2护肝醒酒药食用植物组方提取液;
(2) 制备软糖环节的加工工艺:
煮胶:将卡拉胶,果胶,黄原胶按照比例组成复配胶,按照重量比为1/10加纯净水浸泡40min后,将其煮沸备用;熬糖:将葡萄糖和果葡糖浆按照配方中的比例混合后在小火熬煮沸腾后保持7min,将组方提取液与糖浆混合熬煮4min后充分混合;调配:准确称量组方提取液与糖浆混合液的总重量,按照配方加入煮好的复配胶,充分搅拌使其混合后继续煮沸4min;调味:组方提取液、糖浆以及复配胶的混合液冷却至80℃,按照配方加入薄荷香精与三梨酸钾调整产品风味;注模成型:将调整好风味的产品糖浆液注入模具成型,冷却4分钟后脱模得到软糖初产品;烘烤:将软糖初产品在温度为50℃的条件下烘烤25小时后进入包装环节;包装成品:将完成烘烤程序的软糖外层包裹糯米纸后,密封包装得到最终产品。
以下是依据《保健食品检验与评价技术规范》(卫生部2003年版)进行动物实验,主要考察本发明对饮酒后大鼠模型的血液中最高乙醇浓度变化,以及血液中有关酶活含量的变化。
1.实验动物:清洁级健康SD大鼠20只,体重180-220g。
2.实验方法:设计二个试验组,每个实验组大白鼠10只,雌雄各半,饲养30天后,测定大白鼠多项指标。
试验组,每天每只大白鼠吃2颗本发明软糖后,灌喂高度白酒10mL,然后在服用2颗本发明软糖,半小时后测定其血液中最高乙醇浓度变化,以及血糖含量的各项指标的变化。
对照组,每天每只大白鼠灌喂高度白酒10mL,不服用本发明的软糖,半小时后测定其血液中最高乙醇浓度变化,以及血液中有关酶活含量的各项指标的变化。
3.实验结果见下表
通过上表可以看出,试验组乙醇的最高含量明显低于对照组,试验组与对照组相比乙醇的最高含量降低了37.9%,试验组相对于对照组,加速了乙醇的分解代谢速度,从而减少了丙二醛的积累,试验组与对照组相比丙二醛降低了21.8%,同时试验组大鼠血液中超氧化物歧化酶SOD活性和乙醇脱氢酶活性相对于对照组大鼠血液中超氧化物歧化酶SOD活性和乙醇脱氢酶活性均有所提高,试验组与对照组相比首次排尿时间提前了30分钟以上,综合分析试验组和对照组大鼠的血液中的各项指标均可以得出产品具有护肝醒酒,利尿解毒的有益效果。

Claims (2)
1.一种护肝醒酒软糖,以护肝醒酒植物组方提取液和葡萄糖为主要原料,并配以卡拉胶、果胶、黄原胶按照一定比例组成的复配胶,以及食品添加剂薄荷香精和山梨酸钾作为辅料加工而成,护肝醒酒软糖配方配比:护肝醒酒植物组方提取液为10-40份,葡萄糖10-30份,果葡糖浆40-60份,复配胶1-3份,薄荷香精0.01-0.1份,山梨酸钾0.01-0.05份,纯净水20-50份;
其中所述护肝醒酒植物组方提取液由以下质量比的原料制成:拐枣30-40份、葛根10-20份、桑葚5-10份、蒲公英2-8份、车前草2-8份、虎杖1-3份、女贞子2-8份、柴胡2-8份、黄苓5-8份、生姜6-10份、党参2-8份、甘草3-5份、大枣5-15份、灵芝3-10份;按以上质量组方将这些植物组方混合后,按照质量比取10份加入20-30份的纯净水,3-5份白糖,接种酵母菌在20-30℃的温度下密封发酵5-7天后,接入醋酸菌在18-25℃的温度下通氧发酵5-7天,将发酵液过滤、减压浓缩至密度为1.1 -1.2,得组方提取液备用;
其中所述复配胶配方质量配比:卡拉胶60-80份,果胶10-20份,黄原胶10-20份;
按下列步骤制备:
A.制备护肝醒酒植物组方提取液:
首先,挑选成熟、无病虫害的拐枣、葛根、桑葚,去杂清洗后按照配配方比例混合后打浆备用;
其次,将蒲公英、车前草、虎杖、女贞子、柴胡、黄苓、生姜、党参、甘草、大枣、灵芝在40-60℃的温度下烘烤至水分含量在10%以下,按照配方比例混合后,采用万能粉碎机粉碎后按照比例加入到拐枣、葛根、桑葚混合果浆中;
最后,将上述混合物按照比例加入纯净水和白糖;接种酵母菌在20-30℃的温度下密封发酵5-7天,然后接入醋酸菌在18-25℃的温度下通氧发酵5-7天,将发酵液过滤、减压浓缩后得到护肝醒酒植物组方提取液;
B.煮胶:将卡拉胶、果胶、黄原胶按照比例组成复配胶,按照重量比为1/10加纯净水浸泡30-60min后,将其煮沸备用;
C.熬糖:将葡萄糖和果葡糖浆按照配方中的比例混合后在小火熬煮沸腾后保持5-10min,将护肝醒酒植物组方提取液与糖浆混合熬煮3-5min后充分混合;
D.调配:准确称量护肝醒酒植物组方提取液与糖浆混合液的总重量,按照配方加入煮好的复配胶,充分搅拌使其混合后继续煮沸3-5min;
E.调味:护肝醒酒植物组方提取液、糖浆以及复配胶的混合液冷却至70-90℃,按照配方加入薄荷香精与山梨酸钾调整产品风味;
F.注模成型:将调整好风味的产品糖浆液注入模具成型,冷却3-5分钟后脱模得到软糖初产品;
J.烘烤:将软糖初产品在温度为40-60℃的条件下烘烤20-30小时后进入包装环节;
H.包装成品:将完成烘烤程序的软糖外层包裹糯米纸后,密封包装得到最终产品。
2.根据权利要求1所述的一种护肝醒酒软糖,其特征在于:所述的果葡糖浆为F60的果葡糖浆。
