Abstract
本发明提供的一种枸杞子的气调保鲜包装方法,属于食品保鲜领域,主要由以下步骤完成:a.枸杞子包装,包装袋是由从内向外依次为牛皮纸层、铝箔层及聚乙烯层复合而成的复合膜袋;b.在包装袋内充入混合气体,所述混合气体为N295%‑97%、CO23%‑5%;c.采用60Co‑γ射线辐射处理;提供了安全有效、存储时间长、有效防止枸杞子吸潮结块、氧化变色的一种枸杞子的气调保鲜包装方法。
Description
技术领域:
本发明的一种枸杞子的气调保鲜包装方法属于食品保鲜领域,尤其涉及一种枸杞子的气调保鲜包装方法。
背景技术:
枸杞子主要成分:①含多糖,由酸性杂多糖与多肽或蛋白质构成的复合多糖,为其活性成分;②生物碱:如甜菜碱(betaine);③胡萝卜素;④脂肪酸;⑤多种游离氨基酸;⑥微量元素;其中枸杞子富含的枸杞多糖是一种水溶性多糖,由阿拉伯糖、葡萄糖、半乳糖、甘露糖、木糖、鼠李糖这6种单糖成分组成,具有生理活性,能够增强非特异性免疫功能,提高抗病能力,抑制肿瘤生长和细胞突变,是枸杞的主要活性成分,但枸杞子在受热或受潮时其表面返软、发粘、颜色变浑、呈现油状物质并发出油败气味的现象,影响枸杞子功效的同时,甚至可能产生不良反应;
枸杞子“泛油变色”主要原因是枸杞子吸湿、氧化后多糖类成分的外溢、类胡萝卜素等的降低,使枸杞外观发粘泛油样、 “变色”;
现有枸杞子为解决上述问题多采用密封、加干燥剂、冷藏、喷涂或真空包装等较为单一的方式,并未从根本上解决枸杞在运输、存储中的“泛油变色”,如抽真空如果对真空度控制不好,易造成枸杞子挤压导致多糖外溢;如专利申请号为CN201410845142.8,发明名称为一种防治枸杞干果吸潮结块、氧化变色的方法,通过涂抹包衣材料解决枸杞干果易吸潮结块、氧化变色、不便于长期储存的缺陷,这种在枸杞表面进行包衣或喷涂介质,不仅增加了枸杞包装的成本,且包衣或喷涂材料是否有可能造成健康安全隐患也有待考证;
气调保鲜包装国外又称MAP或CAP,国内称气调包装或置换气体包装、充气包装。是采用具有气体阻隔性能的包装材料包装食品,根据客户实际需求将一定比例O2+ CO2+ N2,N2+CO2,O2+ CO2混合气体充入包装内,防止食品在物理、化学、生物等方面发生质量下降或减缓质量下降的速度,从而延长食品货架期,提升食品价值;
气调保鲜包装广泛应用在如肉食品、水果、蔬菜、蛋糕、茶叶和乳制品等领域,如申请号为CN201110339357.9,发明名称为一种枸杞鲜果箱式气调保鲜方法,主要将气调保鲜应用于枸杞鲜果的保鲜,但在干果储存、保质方面应用较少,尤其在干枸杞子的存储、保鲜、保质未见报导;
本发明的目的在于提供存储时间长、不易结块有效防止“泛油变色”的一种枸杞子的存储方法。
发明内容:
本发明的目的在于提供安全有效、存储时间长、有效防止枸杞子吸潮结块、氧化变色的一种枸杞子的气调保鲜包装方法。
一种枸杞子的气调保鲜包装方法,主要由以下步骤完成:
1、枸杞子包装,包装袋是由从内向外依次为牛皮纸层、铝箔层及聚乙烯层复合而成的复合膜袋;
2、在包装袋内充入混合气体,所述混合气体为N295%-97%、CO23%-5%。
3、枸杞子采用60Co-γ射线辐射处理;
所述枸杞子含水量为:12%-22%;
优选枸杞子含水量为:15%-18%;
优选混合气体为:N297%、CO23%。
由于实行以上技术,牛皮纸与铝箔遮光的同时,铝箔彻底阻断外部湿气,聚乙烯层增加膜袋的韧度,使包装密封性更好、更安全;N2的化学性质不活泼,常温下很难跟其他物质发生反应,是良好的填充保护气体,防止枸杞子氧化;CO2能够溶于各类脂肪或水,形成酸性较弱的碳酸,能抑制霉菌,腐败细菌等微生物的活性,从而进一步对枸杞子形成保护,从而从根本上防止枸杞子的“泛油变色”。

实施例1:
一种枸杞子的气调保鲜包装方法,主要由以下步骤完成:
1、枸杞子包装,包装袋是由从内向外依次为牛皮纸层、铝箔层及聚乙烯层复合而成的复合膜袋;
2、在包装袋内充入混合气体,所述混合气体为N295%、CO25%。
3、枸杞子采用60Co-γ射线辐射处理;
所述枸杞子含水量为:12%-22%
实施例2:
步骤与实施例1相同,所述混合气体为N297%、CO23%;
实施例3:
步骤与实施例1相同,所述含水量为15%-18%,混合气体为N297%、CO23%;
由于实行以上技术,牛皮纸与铝箔遮光的同时,铝箔彻底阻断外部湿气,聚乙烯层增加膜袋的韧度,使包装密封性更好、更安全;N2的化学性质不活泼,常温下很难跟其他物质发生反应,是良好的填充保护气体,防止枸杞子氧化;CO2能够溶于各类脂肪或水,形成酸性较弱的碳酸,能抑制霉菌,腐败细菌等微生物的活性,从而进一步对枸杞子形成保护,从而从根本上防止枸杞子的“泛油变色”。

1.一种枸杞子的气调保鲜包装方法,其特征在于:主要由以下步骤完成:
a.枸杞子包装:包装袋是由从内向外依次为牛皮纸层、铝箔层及聚乙烯层复合而成的复合膜袋;
b.在包装袋内充入混合气体:所述混合气体为N295%-97%、CO23%-5%;
c.采用60Co-γ射线辐射处理。
2.根据权利要求1所述的一种枸杞子的气调保鲜包装方法,其特征在于: 所述枸杞子含水量为:12%-22%。
3.根据权利要求2所述的一种枸杞子的气调保鲜包装方法,其特征在于:所述枸杞子含水量为:15%-18%。
4.根据权利要求3所述的一种枸杞子的气调保鲜包装方法,其特征在于:所述混合气体为:N297%、CO23%。
