背景技术
奶片是乳制品中除液体奶和奶粉外的另一种产品形式,是一种高品味、有明显社会效益的产品,具有可随身携带,无须冷藏保存,无须加热食用等特点。
脱脂乳粉是将鲜牛奶脱去脂肪再干燥而成,除脂肪可降低至1%左右外,其他变化不大。脱脂乳粉因其脂肪含量较少,以易保存,不易发生氧化作用。脂肪含量低,蛋白质含量较高,尤其适合于需要补充高蛋白质的人群及肥胖而又需要补充营养的人食用。对于老年人,消化不良的婴儿,经及腹泻、胆囊疾患、高脂症、慢性胰腺炎等患者有一定益处。
人参是东北“三宝”第一宝,为百草之王。因人参含有人参皂苷、芳香油、植物甾醇、维生素配糖体等成分,其中人参皂苷是人参的主要活性成分,具有具有抗疲劳、延缓衰老、调节中枢神经系统、提高机体免疫力、促进新陈代谢、抑制肿瘤细胞生长等作用。但其中绝大多数人参皂苷在胃肠道中吸收较差,人体吸收利用度低,有上火、发热、发痒等因人参皂苷起的副作用。
木瓜素有“百益果王”之称,又名万寿瓜、番木瓜,在水果中其含酶的种类和数量及其它营养成分排名第一。其中木瓜酵素是最好的蛋白质分解酵素,可帮助人体分解肉类蛋白质,助消化,清宿便排肠毒。从现代营养保健学的角度看,不仅可分解蛋白质、糖类,还能分解脂肪,同时促进新陈代谢,及时把多余脂肪排出体外,润肠通便,排毒养颜,达到除便秘、减腹部的目的。
目前关于人参奶片相关发明只有一项,即CN102578236A《一种太子参干奶片的制备方法》;关于木瓜奶片相关发明两项,即CN103461501A《一种新型番木瓜奶片及其加工方法》和CN1593168《木瓜奶片的生产方法》,其中CN1593168《木瓜奶片的生产方法》中利用微生物酶解木瓜制成木瓜汁。现有发明中,尚未有利用发酵技术将人参、木瓜酵素、脱脂乳粉有机结合的人参木瓜酵素奶片相关发明。
本发明通过接种益生菌将人参、木瓜、脱脂乳粉有机结合进行发酵,经冷冻干燥压片制成人参木瓜酵素奶片,易存贮,可随身携带,极大程度减少人参土腥味,伴有奶香,酸甜可口。充分利用发酵技术,其中木瓜酵素可分解蛋白质、糖类、人体胃肠中多余的动物性蛋白质,具有很好的降解作用:对消化不良和胃部不适等有较好改善作用,有健脾消食助消化之功;能促进肌肤代谢,排毒养颜。利用乳酸菌对人参中大分子皂苷进行生物转化,增加生物活性物质含量,提高人体吸收利用度,减少上火等副作用;同时以脱脂乳粉为基料,脂肪含量低,蛋白质含量较高,富含的酵素、蛋白酶等可促进脱脂乳营养物质的吸收和利用,将奶片营养与保健功能有机结合。
发明内容
本发明的目的在于提供一种人参木瓜酵素奶片及其制备方法,产品含有脱脂乳、木瓜酵素、人参、益生菌、蛋白酶等多种酶类,具有补充蛋白质、健脾胃、助消化,美容养颜、抗疲劳、延缓衰老、提高机体免疫力、改善心人参脑血管供血不足、抑制肿瘤细胞生长,促进营养物质的吸收和利用等功效。
本发明是通过以下技术手段实现:
一种人参木瓜酵素奶片,其各组分按质量计为木瓜35%-58%、人参10%-30%、脱脂乳粉10%-30%、蛋白酶0.15%-0.25%、淀粉酶0.15%-0.25%、脂肪酶0.08%-0.12%、纤维素酶0.15%-0.25%、甘露醇2%-4%、山梨糖醇2%-4%,益生菌0.003-0.006%。
上述产品制备过程中,益生菌为保加利亚乳杆菌、嗜热链球菌、双歧杆菌或嗜酸乳杆菌。
1)、将木瓜去皮、去籽、破碎、打浆;五年生人参粉碎至100目-150目,备用;
2)、将脱脂乳粉、人参粉、水按照质量比为1:1:10-20配制成人参脱脂乳,按脱脂乳粉质量向人参脱脂乳中添加6%-18%甘露醇、6%-18%山梨糖醇,搅拌均匀,80℃-95℃加热10min-30min进行灭菌,冷却至室温,得人参乳液,备用;
3)、按人参粉和木瓜质量比为1:15-36,添加经处理后的木瓜,与人参乳液混合均匀;
4)、添加0.003%-0.006%的益生菌,搅拌均匀,36℃-45℃发酵36-72h;
5)、-80℃预冻12h-24h,冷冻干燥1-2d,备用;
6)、按冷冻干燥后粉的质量添加蛋白酶0.15%-0.25%,淀粉酶0.15%-0.25%、脂肪酶0.08%-0.12%、纤维素酶0.15%-0.25%,混合均匀,压片制成人参木瓜酵素奶片,密封包装。
本发明的有益效果在于:
1)本发明利用多种益生菌将脱脂乳、木瓜及人参有机结合混合发酵,经冷冻干燥技术制粉后压片,最大程度保留原料有效成分的活性及功能,储存稳定,易携带;
2)混合发酵后,产品不仅助消化,健脾胃,美容养颜,提高了人参有效成分的生物利用度,增加生物活性成分,减少人参上火等副作用,同时富含的酵素、蛋白酶等可促进脱脂乳所含营养物质的吸收和利用;
3)本发明含有脱脂乳、木瓜酵素、丰富的益生菌及其活性代谢产物,并添加了甘露醇、山梨糖醇,具有营养丰富,味道可口等特点。
具体实施方式
实施例1:
人参木瓜酵素奶片及其制备方法
1)将木瓜去皮、去籽、破碎、打浆;五年生人参粉碎至100目,备用;
2)将20g脱脂乳粉、20g人参粉、300g水配制成人参脱脂乳,并向其中添加2.56g甘露醇、1.92g山梨糖醇,搅拌均匀,80℃加热30min进行灭菌,冷却至室温,得人参乳液,备用;
3)将300g木瓜浆与人参乳液混合均匀;
4)添加益生菌0.0240g,搅拌均匀,36℃发酵72h;
5)-80℃预冻12h,冷冻干燥1d,备用;
6)向冷冻干燥后人参木瓜奶粉中添加0.096g蛋白酶,0.096g淀粉酶、0.0512g脂肪酶、0.096g纤维素酶,混合均匀,压片制成人参木瓜酵素奶片,密封包装。

1)将木瓜去皮、去籽、破碎、打浆;五年生人参粉碎至120目,备用;

5)-80℃预冻12h,冷冻干燥2d,备用;

1)将木瓜去皮、去籽、破碎、打浆;五年生人参粉碎至150目,备用;
2)将20g脱脂乳粉、20g人参粉、360g水配制成人参脱脂乳,并向其中添加3.2g甘露醇、1.6g山梨糖醇,搅拌均匀,95℃加热10min进行灭菌,冷却至室温,得人参乳液,备用;
3)添加经处理后的木瓜浆500g,与人参乳液混合均匀;
4)添加益生菌0.0344g,搅拌均匀,42℃发酵48h;
5)-80℃预冻24h,冷冻干燥2d,备用;
6)向冷冻干燥后人参木瓜奶粉中添加0.200g蛋白酶,0.120g淀粉酶、0.064g脂肪酶、0.160g纤维素酶,混合均匀,压片制成人参木瓜酵素奶片,密封包装。

Claims (3)
1.一种人参木瓜酵素奶片,其特征在于:其各组分按质量计为木瓜35%-58%、人参10%-30%、脱脂乳粉10%-30%、蛋白酶0.15%-0.25%、淀粉酶0.15%-0.25%、脂肪酶0.08%-0.12%、纤维素酶0.15%-0.25%、甘露醇2%-4%、山梨糖醇2%-4%,益生菌0.003%-0.006%。
2.根据权利要求1所述人参木瓜酵素奶片,所述益生菌为保加利亚乳杆菌、嗜热链球菌、双歧杆菌或嗜酸乳杆菌。
3.根据权利要求1或2所述人参木瓜酵素奶片的制备方法,其特征在于,步骤如下:
1)将木瓜去皮、去籽、破碎、打浆;五年生人参粉碎至100目-150目,备用;
2)将脱脂乳粉、人参粉、水按照质量比为1:1:10-20配制成人参脱脂乳,按脱脂乳粉质量向人参脱脂乳中添加6%-18%甘露醇、6%-18%山梨糖醇,搅拌均匀,80℃-95℃加热10min-30min进行灭菌,冷却至室温,得人参乳液,备用;
3)按人参粉和木瓜质量比为1:15-36,添加经处理后的木瓜,与人参乳液混合均匀;
4)添加0.003%-0.006%的益生菌,搅拌均匀,36℃-45℃发酵36-72h;
5)-80℃预冻12h-24h,冷冻干燥1-2d,备用;
6)按冷冻干燥后粉的质量添加蛋白酶0.15%-0.25%,淀粉酶0.15%-0.25%、脂肪酶0.08%-0.12%、纤维素酶0.15%-0.25%,混合均匀,压片制成人参木瓜酵素奶片,密封包装。
