本发明涉及一种南川木波罗饮料。它包括如下制备步骤:(1)选取无病害、无腐烂变质、成熟的木波罗果实,去皮和种子;(2)用甘蔗榨汁机进行汁渣分离;果渣用15倍纯净水沸水提取1h,提取液定容至提取前体积;(3)果汁:提取液:纯净水=5%:45%:50%体积比混合配成饮料原液;在加入10%的木糖醇,0.1%食用盐进行调味;(4)调配完成后,采用真空脱气、巴氏灭菌、罐装等工序,即得到一种南川木波罗饮料。本发明首次将南川木波罗果实开发成南川木波罗饮料,配方精良,工艺简单,极大的刺激了南川木波罗的种植,丰富了南川木波罗的市场价值和开发价值。
Description
技术领域
本发明涉及食品加工技术领域,特别是一种南川木波罗饮料。
背景技术
南川木波罗(ArtocarpusnanchuanensisS.S.Chang),又名南川面包树、水冬瓜,系桑科波罗蜜属植物。它是重庆特有种,也是波罗蜜属在我国最北端自然分布的物种,属珍稀濒危树种,还是园林绿化的优良树种,已列入重庆市“主城区园林树种规划”的基调树种之一。南川木波罗的果实营养丰富,经研就其营养成分,富含维生素C(150mg/kg)、β-胡萝卜素(112.7mg/kg)、钙(372mg/kg)、铁(3mg/kg)、Na(41.4mg/kg)、锌(2.57mg/kg)、可溶性淀粉(6.5%)蛋白质(2.3)等十几种人体必需的维生素、微量元素、和氨基酸。可以直接食用,果汁有机酸含量非常高;在民间,长期用来泡酒,果酒甘甜,饮用能够治疗便秘等肠道疾病,并且对心血管疾病也有很好的疗效。
经过近十多年的资源普查和人工繁育,目前野生挂果大树有50余株,单株产量1000斤左右;人工繁殖苗木有1000多亩,100万余株,6年树龄已经开始挂果。南川木波罗在产品开发方面尚处于空白。
发明内容
本发明的目的在于提供一种南川木波罗饮料,主要解决上述现有技术所存在的技术问题,本发明首次将南川木波罗果实开发成南川木波罗饮料,配方精良,工艺简单,极大的刺激了南川木波罗的种植,丰富了南川木波罗的市场价值和开发价值。
为解决上述技术问题,本发明是这样实现的:
一种南川木波罗饮料,其特征在于:它包括如下制备步骤:
(1)选取无病害、无腐烂变质、成熟的木波罗果实,去皮和种子;
(2)用甘蔗榨汁机进行汁渣分离;果渣用15倍纯净水沸水提取1h,提取液定容至提取前体积;
(3)果汁:提取液:纯净水=5%:45%:50%体积比混合配成饮料原液;在加入10%的木糖醇,0.1%食用盐进行调味;
(4)调配完成后,采用真空脱气、巴氏灭菌、罐装等工序,即得到一种南川木波罗饮料。
具体实施方式
以下结合实施例来进一步介绍本发明。
实施例1:
选取1000g无病害、无腐烂变质、成熟的木波罗果实,去皮和种子;用甘蔗榨汁机进行汁渣分离,得到果汁和果渣。
实施例2:
将实施例1中的果渣称重,加入15倍体积纯净水,煮沸提取1h,过滤后,滤液定容至提取前体积,即得提取液。
实施例3:
取实施例1果汁5ml、实施例2提取液45ml,纯净水定容至100ml,即得饮料原液,其体积比为果汁:提取液:纯净水=5%:45%:50%。
实施例4:
将实施例3配制的饮料原液,加入10g木糖醇,0.1g食用盐,进行调配,再经过真空脱气、巴氏灭菌、罐装等工序,即得本发明的南川木波罗饮料。
本实施例中的真空脱气、巴氏灭菌、罐装都是现有常规技术,故不进行详细叙述。
综上所述仅为本发明的较佳实施例而已,并非用来限定本发明的实施范围。即凡依本发明申请专利范围的内容所作的等效变化与修饰,都应为本发明的技术范畴。

1.一种南川木波罗饮料,其特征在于:它包括如下制备步骤:
(1)选取无病害、无腐烂变质、成熟的木波罗果实,去皮和种子;
(2)用甘蔗榨汁机进行汁渣分离;果渣用15倍纯净水沸水提取1h,提取液定容至提取前体积;
(3)果汁:提取液:纯净水=5%:45%:50%体积比混合配成饮料原液;在加入10%的木糖醇,0.1%食用盐进行调味;
(4)调配完成后,采用真空脱气、巴氏灭菌、罐装等工序,即得到一种南川木波罗饮料。
