Abstract
本发明公开了一种万寿果酒及其酿造方法,由下列重量份的原料配制而成:万寿果50~60份、桑葚15~20份、枸杞5~10份、杜仲3~5份、山药4~6份、黄芪3~6份、当归5~7份。本发明采用万寿果为主要原料,辅以桑葚,枸杞、杜仲、山药等中草药,所酿造得到的万寿果酒营养丰富,酒香果香柔和,口感醇厚,具备增强人体免疫力、降低血压、补肝肾、明目安神等功效,酸甜适宜,酒度适中,是天然、营养与保健功能于一体的饮品,具有广阔的推广价值和应用价值;同时万寿果、桑葚来源丰富,价格低廉,以其为原料制成果酒,是对万寿果、桑葚资源的充分利用,为万寿果、桑葚的综合开发提供一条新途径。

本发明涉及食品加工领域,特别涉及一种万寿果酒及其酿造方法。
背景技术
万寿果,学名枳椇,别名鸡爪梨、拐枣等,是一种遍布我国黄河流域及其以南大部分省区的一种落叶乔木,其生长迅速,适应性强,果实成熟后糖分极高,达40%以上,营养丰富,味道纯正,人们常喜生食或供滋补药用。万寿果具有很好的保健功能,对舒筋活络、提神醒脑、壮胃健脾,降低血压、血脂、血粘,预防癌症,抗击癌症等都有很好的作用;万寿果含硒量高,是天然的富硒水果,而硒具有很强的抗氧化能力和防癌抗癌作用以及天然的排毒解毒功效,能调节和提高人体的免疫能力,维持心血管系统的正常结构和功能,对延年益寿有很好的功效。
万寿果具有较高的综合利用和研究开发价值,近年来对其的研究及相应保健功能食品的研发越来越受到重视。
发明内容
本发明的目的是提供一种万寿果酒及其酿造方法,采用万寿果为主要原料,辅以桑葚,枸杞、杜仲、山药等中草药,制成了具备增强人体免疫力、降低血压、补肝肾、明目安神等功效的万寿果酒。
为了达到上述目的,本发明采取的技术方案是:
一种万寿果酒,由下列重量份的原料配制而成:万寿果50~60份、桑葚15~20份、枸杞5~10份、杜仲3~5份、山药4~6份、黄芪3~6份、当归5~7份。
一种万寿果酒的酿造方法,包括以下步骤:
(1)原料精选、漂洗:采摘充分成熟至基本无涩味的万寿果,果实柔软成熟的桑葚,除去霉变果和果柄、杂质等,自来水漂洗后用纯净水冲淋干净,备用;
(2)榨汁、果汁酸度调整:将干净的万寿果、桑葚送入榨汁机,分离出果渣和果汁,果渣加少量纯净水浸渍2h后复榨,果汁混合,加入适量蒸馏水,调整汁液总糖浓度,果汁入贮罐,加入一定量的SO2,用柠檬酸调整pH值;
(3)除果胶、静置澄清:加入果胶酶,升高温度至40~45℃,酶解2~3h,静置12h,得到果汁澄清液;
(4)将上述重量份的枸杞、杜仲、山药、黄芪、当归粉碎成碎渣,加入10~20倍重量份的水,浸泡2~4h,加热煮沸,保持微沸1~2h,过滤,保留滤液,药渣加入5~10倍重量份的水依法再煎一次,合并滤液,加热蒸发浓缩至原体积的1/5~1/3,得到中药浓缩液,备用;
(5)入罐、接种发酵:将静置澄清后的果汁泵入发酵罐中,加入事先活化好的发酵母液,控制发酵温度,每隔8h检测一次,当测得发酵液酒精度达到10%vol时,立即将发酵液降温至4℃,加入亚硫酸杀灭酵母菌,静置5~8d;
(6)满罐、陈酿:抽取发酵罐中发酵原酒上清液至储酒罐,加入步骤(4)中准备的中药浓缩液和药渣,储酒罐装至满罐,在0~3℃的低温条件下,密封贮存6个月;
(7)过滤、澄清:过滤除去药渣后,加入澄清剂进行澄清处理,然后在自然条件下静置30d后,然后用硅藻土过滤机、板框过滤机过滤,使得万寿果酒澄清透亮;
(8)装瓶:将陈酿后的万寿果酒72~75℃热灭菌3~5min,灌装到酒瓶中,打塞即得到万寿果酒成品。
作为具体化,所述步骤(2)中调整汁液总糖浓度为20%~21%。
作为具体化,所述步骤(2)中SO2按果汁的量计加入50~60mg/kg。

本发明所述的桑葚、枸杞、杜仲、山药、黄芪、当归,为新鲜的或干制的,其中:
桑葚又叫桑果、桑枣,农人喜欢其成熟的鲜果食用,味甜汁多,是人们常食的水果之一。桑葚果实中含有丰富的活性蛋白、维生素、氨基酸、胡萝卜素、矿物质、白藜芦醇、花青素等成份,营养是苹果的5~6倍,是葡萄的4倍,具有多种功效,被医学界誉为“二十一世纪的最佳保健果品”;常吃桑葚能显著提高人体免疫力,具有延缓衰老,美容养颜的功效。
枸杞,为茄科多年生落灌木,原产于宁夏。枸杞的干燥成熟果实,又名杞子、茨果子、明目子、狗奶子等,现宁夏、青海、山东、河南等地都有生产。枸杞子能滋补肝肾、益精明目,为药食两用佳品。枸杞素有“宝树”、“药树”的美称,嫩茎和叶作蔬菜,而以枸杞果实(枸杞子)、根皮(地骨皮)入药。尤其是枸杞的果实营养丰富,鲜枸杞子每l00克含蛋白质4克,碳水化合物19.3克,脂肪0.8克,热量为100干卡。枸杞子含有18种氨基酸,其中8种氨基酸是人体必需氨基酸。矿物质除含有钙、磷、铁等外,还含有一定数量的有机锗。含维生素也较全面和丰富,包括维生素B1、B2、维生素C、尼古酸和胡萝卜素等。中医认为,枸杞子味甘性平,有补肾、滋阴、养肝、明目、益气等功效。适用于肾亏遗精、腰膝酸软、头晕目眩、两眼昏花等症。现代科学研究证实了上述说法,并且认为枸杞子可以降低胆固醇、兴奋大脑神经、增强免疫功能、防治癌症、抗衰老和美容,对人体健康起极其有益的作用。
杜仲,又名胶木,为杜仲科植物。杜仲游离氨基酸极少,含有的少量蛋白质,是和绝大多数食品类似的完全蛋白,即能够水解检出对人体必需的8种氨基酸。测定了杜仲所含的15种矿物元素,其中有锌、铜、铁等微量元素,及钙、磷、钾、镁等宏量元素。药用杜仲,即为杜仲科植物杜仲的干燥树皮,是中国名贵滋补药材,其味甘,性温,有补益肝肾、强筋壮骨、调理冲任、固经安胎的功效,可治疗肾阳虚引起的腰腿痛或酸软无力,肝气虚引起的胞胎不固,阴囊湿痒等症。在《神农本草经》中被列为上品。现代研究杜仲具有清除体内垃圾,加强人体细胞物质代谢,防止肌肉骨骼老化,平衡人体血压,分解体内胆固醇,降低体内脂肪,恢复血管弹性,利尿清热,广谱抗菌,兴奋中枢神经,提高白血球药理作用。
山药又称薯蓣、土薯、山薯蓣、怀山药、淮山、白山药,是《中华本草》收载的草药,药用来源为薯蓣科植物山药干燥根茎。山药具有滋养强壮,助消化,敛虚汗,止泻之功效,主治脾虚腹泻、肺虚咳嗽、糖尿病消渴、小便短频、遗精、妇女带下及消化不良的慢性肠炎。山药是山中之药、食中之药,不仅可做成保健食品,而且具有调理疾病的药用价值。《本草纲目》指出:山药治诸虚百损、疗五劳七伤、去头面游风、止腰痛、除烦热、补心气不足、开达心孔、多记事、益肾气、健脾胃、止泻痢、润毛皮,生捣贴肿、硬毒能治;《医学衷中参西录》中的玉液汤和滋培汤,以山药配黄芪,可治消渴、虚劳喘逆,经常结合用枸杞子、桑椹子等这些药食同源的中药材做茶泡饮,可补肾强身,增强抵抗力,可以起到较好的保健养生功效。
黄芪又名绵芪,主产于内蒙古、山西、甘肃、黑龙江等地。黄芪性甘温,归肺经,有补气升阳、益卫固表之功能,经常用黄芪配伍琼珍灵芝煎汤或泡水代茶饮,具有良好的防病保健作用。现代医学研究表明,黄芪有增强机体免疫功能、保肝、利尿、抗衰老、抗应激、降压和较广泛的抗菌作用。黄芪不仅能扩张冠状动脉,改善心肌供血,提高免疫功能,而且能够延缓细胞衰老的进程。黄芪食用方便,可煎汤,煎膏,浸酒,入菜肴等,内蒙黄芪与东北林下参、琼珍灵芝,东阿阿胶被称为中药养生四宝。
当归,别名干归、秦哪、西当归、岷当归、金当归、当归身、涵归尾、当归曲、土当归,多年生草本,高0.4-1米,花期6-7月,果期7-9月。其根可入药,是最常用的中药之一,具有补血和血,调经止痛,润燥滑肠、抗癌、抗老防老、免疫之功效。中医医学认为,当归味甘而重,故专能补血,其气轻而辛,故又能行血,补中有动,行中有补,为血中之要药。因而,它既能补血,又能活血,既可通经,又能活络。凡妇女月经不调,痛经,血虚闭经,面色萎黄,衰弱贫血,子宫出血,产后瘀血,例经等妇女的常见病,都可以用当归治疗。当归是中医中的最常用药多用于煲汤,特别对贫血患者是最好的,还能显著促进机体造血功能,升高红细胞、白细胞和血红蛋白含量。

具体实施方式
下面结合具体实施例对本发明作进一步地说明。
实施例1
一种万寿果酒由下列重量份的原料配制而成:万寿果50Kg、桑葚20Kg、枸杞10Kg、杜仲5Kg、山药5Kg、黄芪5Kg、当归5Kg;
一种万寿果酒的酿造方法,包括以下步骤:
(1)原料精选、漂洗:采摘充分成熟至基本无涩味的万寿果,果实柔软成熟的桑葚,除去霉变果和果柄、杂质等,自来水漂洗后用纯净水冲淋干净,备用;
(2)榨汁、果汁酸度调整:将干净的万寿果、桑葚送入榨汁机,分离出果渣和果汁,果渣加少量纯净水浸渍2h后复榨,果汁混合,加入适量蒸馏水,调整汁液总糖浓度为20%,果汁入贮罐,按50mg/kg量加入SO2,用柠檬酸调整pH值为3.5;
(3)除果胶、静置澄清:按果汁的量加入0.03%果胶酶,升高温度至40,酶解2,静置12h,得到果汁澄清液;
(4)将上述重量份的枸杞、杜仲、山药、黄芪、当归粉碎成碎渣,加入10倍重量份的水,浸泡2h,加热煮沸,保持微沸1h,过滤,保留滤液,药渣加入5倍重量份的水依法再煎一次,合并滤液,加热蒸发浓缩至原体积的1/5,得到中药浓缩液,备用;
(5)入罐、接种发酵:将静置澄清后的果汁泵入发酵罐中,按果汁的量接入5%事先活化好的发酵母液,将发酵温度控制在18℃之间发酵,每隔8h检测一次,当测得发酵液酒精度达到10%vol时,立即将发酵液降温至4℃,按每1000L发酵液中添加80mL亚硫酸杀灭酵母菌,静置5d;
(6)满罐、陈酿:抽取发酵罐中发酵原酒上清液至储酒罐,加入步骤(4)中准备的中药浓缩液和药渣,储酒罐装至满罐,在0℃的低温条件下,密封贮存6个月;
(7)过滤、澄清:过滤除去药渣后,按0.03g/L的量接入壳聚糖进行澄清处理,然后在自然条件下静置30d后,然后用硅藻土过滤机、板框过滤机过滤,使得万寿果酒澄清透亮;
(8)装瓶:将陈酿后的万寿果酒72℃热灭菌3min,灌装到酒瓶中,打塞即得到万寿果酒成品。
实施例2
一种万寿果酒由下列重量份的原料配制而成:万寿果55Kg、桑葚15Kg、枸杞8Kg、杜仲4Kg、山药6Kg、黄芪6Kg、当归6Kg;
一种万寿果酒的酿造方法,包括以下步骤:
(1)原料精选、漂洗:采摘充分成熟至基本无涩味的万寿果,果实柔软成熟的桑葚,除去霉变果和果柄、杂质等,自来水漂洗后用纯净水冲淋干净,备用;
(2)榨汁、果汁酸度调整:将干净的万寿果、桑葚送入榨汁机,分离出果渣和果汁,果渣加少量纯净水浸渍2h后复榨,果汁混合,加入适量蒸馏水,调整汁液总糖浓度为21%,果汁入贮罐,按55mg/kg量加入SO2,用柠檬酸调整pH值为3.8;
(3)除果胶、静置澄清:按果汁的量加入0.04%果胶酶,升高温度至43℃,酶解2.5h,静置12h,得到果汁澄清液;
(4)将上述重量份的枸杞、杜仲、山药、黄芪、当归粉碎成碎渣,加入15倍重量份的水,浸泡3h,加热煮沸,保持微沸1.5h,过滤,保留滤液,药渣加入8倍重量份的水依法再煎一次,合并滤液,加热蒸发浓缩至原体积的1/4,得到中药浓缩液,备用;
(5)入罐、接种发酵:将静置澄清后的果汁泵入发酵罐中,按果汁的量接入6%事先活化好的发酵母液,将发酵温度控制在20℃之间发酵,每隔8h检测一次,当测得发酵液酒精度达到10%vol时,立即将发酵液降温至4℃,按每1000L发酵液中添加90mL亚硫酸杀灭酵母菌,静置7d;
(6)满罐、陈酿:抽取发酵罐中发酵原酒上清液至储酒罐,加入步骤(4)中准备的中药浓缩液和药渣,储酒罐装至满罐,在2℃的低温条件下,密封贮存6个月;
(7)过滤、澄清:过滤除去药渣后,按0.01g/L的量接入聚乙烯吡咯烷酮进行澄清处理,然后在自然条件下静置30d后,然后用硅藻土过滤机、板框过滤机过滤,使得万寿果酒澄清透亮;
(8)装瓶:将陈酿后的万寿果酒75℃热灭菌4min,灌装到酒瓶中,打塞即得到万寿果酒成品。
实施例3
一种万寿果酒由下列重量份的原料配制而成:万寿果60Kg、桑葚18Kg、枸杞5Kg、杜仲3Kg、山药4Kg、黄芪3Kg、当归7Kg;
一种万寿果酒的酿造方法,包括以下步骤:
(1)原料精选、漂洗:采摘充分成熟至基本无涩味的万寿果,果实柔软成熟的桑葚,除去霉变果和果柄、杂质等,自来水漂洗后用纯净水冲淋干净,备用;
(2)榨汁、果汁酸度调整:将干净的万寿果、桑葚送入榨汁机,分离出果渣和果汁,果渣加少量纯净水浸渍2h后复榨,果汁混合,加入适量蒸馏水,调整汁液总糖浓度为21%,果汁入贮罐,按60mg/kg量加入SO2,用柠檬酸调整pH值为4.0;
(3)除果胶、静置澄清:按果汁的量加入0.04%果胶酶,升高温度至45℃,酶解3h,静置12h,得到果汁澄清液;
(4)将上述重量份的枸杞、杜仲、山药、黄芪、当归粉碎成碎渣,加入20倍重量份的水,浸泡4h,加热煮沸,保持微沸2h,过滤,保留滤液,药渣加入10倍重量份的水依法再煎一次,合并滤液,加热蒸发浓缩至原体积的1/3,得到中药浓缩液,备用;
(5)入罐、接种发酵:将静置澄清后的果汁泵入发酵罐中,按果汁的量接入7%事先活化好的发酵母液,将发酵温度控制在22℃之间发酵,每隔8h检测一次,当测得发酵液酒精度达到10%vol时,立即将发酵液降温至4℃,按每1000L发酵液中添加100mL亚硫酸杀灭酵母菌,静置8d;
(6)满罐、陈酿:抽取发酵罐中发酵原酒上清液至储酒罐,加入步骤(4)中准备的中药浓缩液和药渣,储酒罐装至满罐,在3℃的低温条件下,密封贮存6个月;
(7)过滤、澄清:过滤除去药渣后,按0.02g/L壳聚糖+0.05g/L聚乙烯吡咯烷酮的量进行澄清处理,然后在自然条件下静置30d后,然后用硅藻土过滤机、板框过滤机过滤,使得万寿果酒澄清透亮;
(8)装瓶:将陈酿后的万寿果酒74℃热灭菌5min,灌装到酒瓶中,打塞即得到万寿果酒成品。

Claims (10)
1.一种万寿果酒,其特征在于,由下列重量份的原料配制而成:万寿果50~60份、桑葚15~20份、枸杞5~10份、杜仲3~5份、山药4~6份、黄芪3~6份、当归5~7份。
2.一种万寿果酒的酿造方法,其特征在于,包括以下步骤:
(1)原料精选、漂洗:采摘充分成熟至基本无涩味的万寿果,果实柔软成熟的桑葚,除去霉变果和果柄、杂质等,自来水漂洗后用纯净水冲淋干净,备用;
(2)榨汁、果汁酸度调整:将干净的万寿果、桑葚送入榨汁机,分离出果渣和果汁,果渣加少量纯净水浸渍2h后复榨,果汁混合,加入适量蒸馏水,调整汁液总糖浓度,果汁入贮罐,加入一定量的SO2,用柠檬酸调整pH值;
(3)除果胶、静置澄清:加入果胶酶,升高温度至40~45℃,酶解2~3h,静置12h,得到果汁澄清液;
(4)将上述重量份的枸杞、杜仲、山药、黄芪、当归粉碎成碎渣,加入10~20倍重量份的水,浸泡2~4h,加热煮沸,保持微沸1~2h,过滤,保留滤液,药渣加入5~10倍重量份的水依法再煎一次,合并滤液,加热蒸发浓缩至原体积的1/5~1/3,得到中药浓缩液,备用;
(5)入罐、接种发酵:将静置澄清后的果汁泵入发酵罐中,加入事先活化好的发酵母液,控制发酵温度,每隔8h检测一次,当测得发酵液酒精度达到10%vol时,立即将发酵液降温至4℃,加入亚硫酸杀灭酵母菌,静置5~8d;
(6)满罐、陈酿:抽取发酵罐中发酵原酒上清液至储酒罐,加入步骤(4)中准备的中药浓缩液和药渣,储酒罐装至满罐,在0~3℃的低温条件下,密封贮存6个月;
(7)过滤、澄清:过滤除去药渣后,加入澄清剂进行澄清处理,然后在自然条件下静置30d后,然后用硅藻土过滤机、板框过滤机过滤,使得万寿果酒澄清透亮;
(8)装瓶:将陈酿后的万寿果酒72~75℃热灭菌3~5min,灌装到酒瓶中,打塞即得到万寿果酒成品。
3.根据权利要求2所述的万寿果酒的酿造方法,其特征在于,所述步骤(2)中调整汁液总糖浓度为20%~21%。
4.根据权利要求2所述的万寿果酒的酿造方法,其特征在于,所述步骤(2)中SO2按果汁的量计加入50~60mg/kg。
5.根据权利要求2所述的万寿果酒的酿造方法,其特征在于,所述步骤(2)中用柠檬酸调整pH值为3.5~4.0。
6.根据权利要求2所述的万寿果酒的酿造方法,其特征在于,所述步骤(3)中果胶酶用量按果汁的量计加入0.03%~0.04%。
7.根据权利要求2所述的万寿果酒的酿造方法,其特征在于,所述步骤(5)中发酵母液用量按果汁的量计加入5%~7%。
8.根据权利要求2所述的万寿果酒的酿造方法,其特征在于,所述步骤(5)中发酵温度控制在18~22℃。
9.根据权利要求2所述的万寿果酒的酿造方法,其特征在于,所述步骤(5)中亚硫酸用量按每1000L发酵液添加80~100mL。
10.根据权利要求2所述的万寿果酒的酿造方法,其特征在于,所述步骤(7)中的澄清剂为壳聚糖和聚乙烯吡咯烷酮中的一种或两种,所述壳聚糖按果汁的量计加入0.02~0.03g/L,所述聚乙烯吡咯烷酮加入0.05~0.1g/L。
