本发明涉及一种新能源食品,具体的说是一种黄秋葵复合益生菌酵素粉的制备方法
背景技术
黄秋葵为锦葵科(Malvaceae)秋葵属(Abelmoschus Medic)的一年生草本植物,又名秋葵、补肾草、咖啡葵等,在国外被誉为“绿色人参”、“植物伟哥”。黄秋葵营养丰富,嫩荚富含蛋白质,各种游离氨基酸,VA、VB、VC、VE等多种维生素,钾、钙、铁、锌、磷、锰等矿质元素及由果胶等多糖组成的黏性物质,黄秋葵嫩荚中稀有的黏性物质(糖聚合体),主要成分有维生素A、钾、果胶和黏性糖蛋白。这种黏性糖蛋白可增强人类机体的抵抗力,维持人体呼吸道、消化道的润滑,利于人体关节腔里关节膜与浆膜之间的润滑作用,促进固醇类物质的排出,减少动脉管壁上的脂类物质沉积,使动脉血管保持弹性,预防肝脏和肾脏中结缔组织的萎缩及胶原病的发生。从黄秋葵体内提取出来的这种黏液,也被用来制备Lepidmoide(LM)。它是一种天然荷尔蒙类物质,也是一类新的植物激素促进型互感作用物质,对植物的一些生理反应具有一定的控制作用。

本发明的目的是提供一种营养丰富、食用方便且口感好的黄秋葵复合益生菌酵素粉的制备方法。
为实现上述目的,本发明采用的技术方案是:一种黄秋葵复合益生菌酵素粉的制备方法,其特征在于以黄秋葵、蓝莓、西柚、葡萄、番茄、猕猴桃、石榴、蜂蜜为原料,添加有益菌种对果蔬混合物进行发酵,将所得到的发酵液进行喷雾干燥得到黄秋葵复合益生菌酵素粉,该方法制得的酵素粉,营养丰富,食用方便,具有抗衰老、抗菌消炎、净化血液、增强机体免疫能力及解毒抗癌等多种保健功能,是一种新型的功能性微生物发酵食品,消费市场广阔。
一种黄秋葵复合益生菌酵素粉的制备方法,包括以下步骤:
(1)选用新鲜的黄秋葵嫩荚、蓝莓、西柚、葡萄、番茄、猕猴桃、石榴,洗净,切成片,按质量比黄秋葵:蓝莓:西柚:葡萄:番茄:猕猴桃:石榴:蜂蜜=2:1:1:1:1:1:1:8混合均匀;
(2)将酵母菌、长双歧杆菌、嗜酸乳杆菌、保加利亚乳杆菌和嗜热链球菌添加到混合果蔬中,添加量按质量分数分别为0.1%,0.05%,0.05%,0.05%,0.05%,混合均匀后置于已灭菌的玻璃瓶中,封口,35℃恒温发酵30天;
(3)将发酵混合物过滤后得到酵素原液,将酵素原液进行喷雾干燥后得到酵素粉;
本发明采用的技术方案,其有益效果在于:(1)原料纯天然,营养丰富,富含多种抗氧化活性成分;(2)添加益生菌发酵,所得产品含有丰富的维生素、酶、矿物质和次生代谢产物等营养成分,具有抗衰老、抗菌消炎、净化血液、增强机体免疫能力及解毒抗癌等多种保健功能,可作为一种新型的功能性微生物发酵食品。
具体实施方式
本发明的一种黄秋葵复合益生菌酵素粉的制备方法,采用新鲜的黄秋葵、蓝莓、西柚、葡萄、番茄、猕猴桃、石榴、蜂蜜为原料制成。
产品制备方法包括以下几个步骤:
(1)选用新鲜的黄秋葵嫩荚、蓝莓、西柚、葡萄、番茄、猕猴桃、石榴,洗净,切成片,按质量比黄秋葵:蓝莓:西柚:葡萄:番茄:猕猴桃:石榴:蜂蜜=2:1:1:1:1:1:1:8混合均匀;
