本发明涉及保健饮料的加工制作领域,具体涉及一种冷热可口的紫薯保健饮料。
背景技术
紫薯薯肉呈紫色至深紫色。它除了具有普通甘薯的营养成分外,其中铁和硒含量丰富。而硒和铁是人体抗疲劳、抗衰老、补血的必要元素,特别是硒被称为“抗癌大王”,易被人体吸收,可留在血清中,修补心肌,增强机体免疫力,预防胃癌、肝癌等癌病的发生。所含花青素对100多种疾病有预防和治疗作用,被誉为继水、蛋白质、脂肪、碳水化合物、维生素、矿物质之后的第七大必需营养素。紫薯在国际、国内市场上十分走俏,发展前景非常广阔。
银耳又叫白木耳。它被人们誉为“菌中之冠”,既是名贵的营养滋补佳品,又是扶正强壮之补药。历代皇家贵族将银耳视为“延年益寿之品”、“长生不老良药”。
大米可提供丰富B族维生素;大米具有补中益气、健脾养胃、益精强志、和五脏、通血脉、聪耳明目、止烦、止渴、止泻的功效;米粥具有补脾、和胃、清肺功效。
现有技术中以紫薯为原料的保健饮料的种类很多,但饮料普及率不高,营养成分往往不够丰富,有很多还加入了食品添加剂,长期服用对身体有害。很少有饮料常温时口感细腻,温度低时可以作为果冻直接食用。
发明内容
本发明的目的是提供一种营养价值丰富,而且常温时口感细腻,温度低时加入果肉等制成果冻直接食用。采用如下技术方案来实现的:1、一种紫薯保健饮料及其制作方法,其特征在于,一种冷热可口的紫薯保健饮料,其特征在于,包括以下原料:紫薯65-75%,大米15-25%,银耳3-5%、蜂蜜6-8%、卡拉胶6-10%,果肉4 -5%。其制作方法如下:
(1)将紫薯清洗干净,去皮,切割成块;
(2)将大米淘洗干净,将银耳用凉水浸泡22-24小时,中间换水两次最佳;
(3)上述原料加入水中蒸煮,先武火煮开,搅拌一下防止粘锅,再用文火煮30-40分钟,加入蜂蜜调配即可热饮。
(4)将上清液中冷却过滤,加入卡拉胶和果肉,放到真空浓缩锅内浓缩5-8分钟,放入冰箱冷冻后可作为果冻冷食。

本发明公开了一种冷热可口的紫薯保健饮料,以紫薯为主要原料,辅助以银耳和蜂蜜、大米、果肉等加工而成的饮料,不含有食品添加剂,不仅营养价值丰富,而且口感细腻,是一年四季,老少皆宜的饮品。常温饮用时口感细腻,营养价值丰富,加入卡拉胶和果肉进行浓缩,再放入冰箱冷冻后,成为果冻类冷食饮品,不仅补充了果肉中含有的维生素类营养物质,而且口感更加丝滑。
具体实施方式:
实施例1:
取紫甘薯2个,约650g清洗干净,去皮,切成一公分见方的小粒;银耳五朵,用凉水泡发22小时,期间换水两次,换水时将银耳死结剪开;大米100g,用清水淘洗干净,加水2公斤,先用武火烧开,搅拌一下防止粘锅,再改文火煮30分钟,取蜂蜜20g加入煮好的粥中,搅拌至熔化即可。将上清液冷却过滤,加入卡拉胶以及草莓和水蜜桃的混合果肉,放到真空浓缩锅内控制浓缩温度为40℃,真空度为10 KPa浓缩5分钟,放入冰箱冷冻后可作为果冻冷食。采用该方法制得的紫薯保健饮料常温时口感细腻,老少皆宜;温度低时加入果肉等制成果冻可直接食用,营养丰富。
实施例2:
取紫甘薯3个,约800g清洗干净,去皮,切成一公分见方的小粒;银耳七朵,用凉水泡发24小时,期间换水两次,换水时将银耳死结剪开;大米150g,用清水淘洗干净,加水3.5公斤,先用武火烧开,搅拌一下防止粘锅,再改文火煮40分钟,取蜂蜜30g加入煮好的粥中,搅拌至熔化即可。将上清液冷却过滤,加入卡拉胶以及梨和水蜜桃的混合果肉,放到真空浓缩锅内控制浓缩温度为45℃,真空度为12 KPa浓缩8分钟,放入冰箱冷冻后可作为果冻冷食。采用该方法制得的紫薯保健饮料常温时口感细腻,老少皆宜;温度低时加入果肉等制成果冻可直接食用,营养丰富。

1.一种冷热可口的紫薯保健饮料,其特征在于,包括以下原料:紫薯65-75%,大米15-25%,银耳3-5%、蜂蜜6-8%、卡拉胶6-10%,果肉4 -5%,
其制作方法如下:
(1)将紫薯清洗干净,去皮,切割成块;
(2)将大米淘洗干净,将银耳用凉水浸泡22-24小时,中间换水两次最佳;
(3)上述原料加入水中蒸煮,先武火煮开,搅拌一下防止粘锅,再用文火煮30-40分钟,加入蜂蜜调配即可热饮,
