发明内容
针对上述技术问题,本发明提供一种营养成分利用率高、食用方便的银耳食品,具体的技术方案为:
银耳咀嚼片,由以下制备方法制得:
(1)银耳子实体干品置于电热鼓风干燥箱中进行干燥,然后粉碎制得银耳粉末;
(2)银耳粉末和水混合进行熬煮,并搅拌得到固液混合物;
(3)固液混合物进行过滤,滤液冷却后以进行离心分离,收集上清液并减压得到浓缩液;
(4)向浓缩液中加入浓缩液3倍体积的质量浓度为95%的乙醇,并搅拌至析出银耳多糖,离心得到沉淀物;将沉淀物用水复溶,加入质量浓度为95%的乙醇沉淀出银耳多糖,再次离心后得沉淀物;连续上述操作三次以上,最后制得纯净的湿品银耳多糖;
(5)湿品银耳多糖真空冷冻干燥,制得银耳多糖;
(6)银耳多糖粉碎,过40~100目筛;辅料按照比例混合后粉碎,过40~100目筛,银耳多糖和辅料混合;
其中,银耳多糖和辅料按照以下重量份数混合,银耳多糖15~50份,奶粉5~35份,甜味剂5~15份,酸味剂0.8~1.5份,润滑剂0.5~1.5份,粘合剂1.0~8.0份,芳香剂0.00~0.03份。
酸味剂为柠檬酸、富马酸、葡萄糖酸、葡萄酸-δ-内酯、酒石酸中的一种或多种混合;芳香剂为银耳香精。

银耳多糖的制备:
200克银耳子实体置于70℃电热鼓风干燥箱中干燥4.5h,机械粉碎,过20目筛制得银耳粉末;向银耳粉末中加入12kg水,90℃~95℃浸提10h,减压过滤、冷冻离心取上清液,减压浓缩至1000ml,得银耳多糖水溶液;向浓缩后的多糖溶液中加入3500ml的95%乙醇,搅拌过夜,离心得沉淀,复溶,连续3次以上提纯过程;得到的多糖溶液进行真空冷冻干燥,得银耳多糖17.0g。
银耳咀嚼片的制备:

(1)银耳子实体干品干燥,然后粉碎制得银耳粉末;
(2)银耳粉末和水混合进行熬煮,并搅拌得到固液混合物;
(3)固液混合物进行过滤,滤液冷却后以进行离心分离,收集上清液并减压得到浓缩液;
(4)向浓缩液中加入浓缩液3倍体积的质量浓度为95%的乙醇,并搅拌至析出银耳多糖,离心得到沉淀物;将沉淀物用水复溶,加入质量浓度为95%的乙醇沉淀出银耳多糖,再次离心后得沉淀物;连续提纯多次,得到纯净的湿品银耳多糖;
(5)湿品银耳多糖真空冷冻干燥,制得银耳多糖;

2.根据权利要求1所述的银耳咀嚼片,其特征在于,步骤(6)所述的银耳多糖和辅料按照以下重量份数混合,银耳多糖15~50份,奶粉5~35份,甜味剂5~15份,酸味剂0.8~1.5份,润滑剂0.5~1.5份,粘合剂1.0~8.0份,芳香剂0.00~0.03份。
3.根据权利要求2所述的银耳咀嚼片,其特征在于,所述的酸味剂为柠檬酸、富马酸、葡萄糖酸、葡萄酸-δ-内酯、酒石酸中的一种或多种混合;芳香剂为银耳香精。
4.根据权利要求1所述的银耳咀嚼片,其特征在于,步骤(7)所述的润湿剂为食用乙醇水溶液,质量浓度为10~50%。
5.根据权利要求1到4任一项所述的银耳咀嚼片,其特征在于,步骤(9)所述的润滑剂为硬脂酸、硬脂酸镁、硬脂酸钙、滑石粉、氢化植物油、聚乙二醇、十二烷基硫酸镁中的一种或多种混合,以重量百分率计,其加入比例为颗粒的0.5~2%。
