Abstract
一种紫甘薯保健可乐,主原料:紫甘薯;辅料:白砂糖;中草药:枸杞、甘草、灵芝、何首乌、桂皮、陈皮、当归;调配剂:磷酸、阿斯巴甜、焦糖色素、山梨酸钾、香精、碳酸水;紫甘薯洗净切丝后,放入柠檬酸溶液中浸泡24小时,得到紫甘薯浸提汁,紫甘薯浸提汁经过酶处理和灭菌处理后,得到紫甘薯汁;将上述中草药粉碎后过筛,采用热水回流法提取出中药浸出汁;取白砂糖和水放入锅内,搅拌均匀,加热煮沸,得到糖浆;向糖浆中加入阿斯巴甜、山梨酸钾溶液、磷酸、中药浸出汁、紫甘薯汁、焦糖色素溶液、香精,搅拌均匀,制成紫甘薯可乐半成品,将紫甘薯可乐半成品灌装到容器内,充满碳酸水后立即封盖,经过杀菌、检验程序处理后,得到紫甘薯保健可乐。

技术领域
本发明涉及一种紫甘薯保健可乐及其制备方法,属于食品饮料技术领域。
背景技术
紫甘薯又称紫薯,肉质呈紫色或深紫色,是一种药食同源、蔬粮同源的薯类作物。紫甘薯内除含有丰富的淀粉、维生素、矿物质等普通甘薯所含的营养成分外,还富含花青素和黄酮类物质,这些物质具有的一定抗癌、抗衰老和提高人体免疫功能的作用,是一种优良的天然抗氧化剂和自由基清除剂。
近年来,科研人员对紫甘薯进行了一系列的开发,其中大都着重于提取色素或制作粉条等方面,而对于紫甘薯饮料的研制则很少有人问津。本申请人在2008年4月17日申请的甘薯饮料制备技术中【专利名称为:具有保健功能的甘薯饮料,专利申请号为:200810093614.3】,由于没有添加使用中草药成分,其饮料在养生保健方面的作用没有得到充分的发挥,不能满足人们在养生保健方面的需求。
发明内容
本发明的目的是为了提供一种紫甘薯保健可乐及其制备方法,该可乐是以紫甘薯为主要原料,辅以配合一些中草药,采用科学的食品加工技术制成的保健型可乐;该可乐营养丰富,香气怡人,具有抗癌、抗衰老和提高人体免疫的保健疗效;该可乐生产工艺简单,能够极大程度的保护紫甘薯内的营养物质不流失,口味纯正,且生产成本低。
为了达到上述目的,本发明是采用如下技术方案实现的。
一种紫甘薯保健可乐,其主要原料为:紫甘薯;
辅料为:白砂糖;
中草药配料为:枸杞、甘草、灵芝、何首乌、桂皮、陈皮、当归;
调配剂为:磷酸、阿斯巴甜、焦糖色素、山梨酸钾、香精、碳酸水;
其制备方法如下:
(1)制备紫甘薯汁
选择无霉变、无机械伤的新鲜紫甘薯,将其倒入清洗池内,用流动水将其清洗干净;然后采用手工或切丝机将清洗干净的紫甘薯切成0.5cm的细丝,将切好的紫甘薯丝立即放入浓度为0.1%柠檬酸溶液中进行护色、浸提处理,紫甘薯丝与柠檬酸溶液的重量比为1∶5,浸泡24小时后,采用过滤装置进行过滤,得到紫甘薯浸提汁,然后向紫甘薯浸提汁内加入果胶酶制剂进行酶处理,紫甘薯浸提汁与果胶酶制剂的重量比为2500∶1,将经过酶处理的紫甘薯浸提汁用加热装置加热至40℃,保持50min,然后继续加热至100℃,并维持2min,然后迅速冷却至室温,最后经过滤装置过滤后放入灭菌锅中进行灭菌,灭菌温度为121℃,时间2~3min,这样即可得到紫甘薯汁;
(2)制备中药浸出汁
将枸杞、甘草、灵芝、何首乌、桂皮、陈皮、当归,分别放入粉碎机内进行粉碎处理,然后过10目筛,将过筛后的上述组合物放入装有热水容器内,其中枸杞、甘草、灵芝、何首乌、桂皮、陈皮、当归、水的重量比为200~260∶6~9∶3~6∶6~9∶2~4∶3~6∶6~9∶1000,采用热水回流法提取2小时,过滤后,得到中药浸出汁,备用;
(3)制备糖浆
分别取白砂糖和水放入不锈钢锅内,白砂糖与水的重量比为75∶100,搅拌均匀,加热煮沸,然后采用过滤装置进行过滤,得到糖浆,备用;
(4)原料合成
向上述制好的糖浆中依次加入阿斯巴甜、山梨酸钾溶液、磷酸、中药浸出汁、紫甘薯汁、焦糖色素、香精,并搅拌均匀,这样即制成紫甘薯可乐半成品,所述的糖浆与添加物的重量比为:糖浆∶阿斯巴甜∶山梨酸钾溶液∶磷酸∶中药浸出汁∶紫甘薯汁∶焦糖色素∶香精=40~50∶0.4~0.5∶0.3~0.4∶0.2~0.4∶30~50∶50~70∶0.1~0.2∶0.07~0.20;
(5)灌装、杀菌
将上述的紫甘薯可乐半成品灌装到容器内,然后充满碳酸水后立即封盖,所述的碳酸水的充入量与紫甘薯可乐半成品的重量比为6~7∶1,最后经过杀菌、检验程序处理后,即可得到紫甘薯保健可乐。
本发明主要具有以下有益效果:
1、该可乐是以紫甘薯为主要原料,辅以配合一些中草药,采用科学的食品加工技术制成的保健型可乐。
2、该可乐营养丰富,香气怡人,具有抗癌、抗衰老和提高人体免疫的保健疗效。
3、该可乐生产工艺简单,能够极大程度的保护紫甘薯内的营养物质不流失,口味纯正,且生产成本低。

一种紫甘薯保健可乐,其主要原料为:紫甘薯;

调配剂为:磷酸、阿斯巴甜、焦糖色素、山梨酸钾、香精、碳酸水;
其制备方法如下:
(1)制备紫甘薯汁
选择无霉变、无机械伤的新鲜紫甘薯,将其倒入清洗池内,用流动水将其清洗干净;然后采用手工或切丝机将清洗干净的紫甘薯切成0.5cm的细丝,将切好的紫甘薯丝立即放入浓度为0.1%柠檬酸溶液中进行护色、浸提处理,紫甘薯丝与柠檬酸溶液的重量比为1∶5,浸泡24小时后,采用过滤装置进行过滤,得到紫甘薯浸提汁,然后向紫甘薯浸提汁内加入果胶酶制剂进行酶处理,紫甘薯浸提汁与果胶酶制剂的重量比为2500∶1,将经过酶处理的紫甘薯浸提汁用加热装置加热至40℃,保持50min,然后继续加热至100℃,并维持2min,然后迅速冷却至室温,最后经过滤装置过滤后放入灭菌锅中进行灭菌,灭菌温度为121℃,时间2~3min,这样即可得到紫甘薯汁;
(2)制备中药浸出汁

向上述制好的糖浆中依次加入阿斯巴甜、山梨酸钾溶液、磷酸、中药浸出汁、紫甘薯汁、焦糖色素、香精,并搅拌均匀,这样即制成紫甘薯可乐半成品,所述的糖浆与添加物的重量比为:糖浆∶阿斯巴甜∶山梨酸钾溶液∶磷酸∶中药浸出汁∶紫甘薯汁∶焦糖色素∶香精=40~50∶0.4~0.5∶0.3~0.4∶0.2~0.4∶30~50∶50~70∶0.1~0.2∶0.07~0.20;
(5)灌装、杀菌
将上述的紫甘薯可乐半成品灌装到容器内,然后充满碳酸水后立即封盖,所述的碳酸水的充入量与紫甘薯可乐半成品的重量比为6~7∶1,最后经过杀菌、检验程序处理后,即可得到紫甘薯保健可乐。

1.一种紫甘薯保健可乐,其特征在于:其主要原料为:紫甘薯;
辅料为:白砂糖;
中草药配料为:枸杞、甘草、灵芝、何首乌、桂皮、陈皮、当归;
调配剂为:磷酸、阿斯巴甜、焦糖色素、山梨酸钾、香精、碳酸水;
其制备方法如下:
(1)制备紫甘薯汁
选择无霉变、无机械伤的新鲜紫甘薯,将其倒入清洗池内,用流动水将其清洗干净;然后采用手工或切丝机将清洗干净的紫甘薯切成0.5cm的细丝,将切好的紫甘薯丝立即放入浓度为0.1%柠檬酸溶液中进行护色、浸提处理,紫甘薯丝与柠檬酸溶液的重量比为1∶5,浸泡24小时后,采用过滤装置进行过滤,得到紫甘薯浸提汁,然后向紫甘薯浸提汁内加入果胶酶制剂进行酶处理,紫甘薯浸提汁与果胶酶制剂的重量比为2500∶1,将经过酶处理的紫甘薯浸提汁用加热装置加热至40℃,保持50min,然后继续加热至100℃,并维持2min,然后迅速冷却至室温,最后经过滤装置过滤后放入灭菌锅中进行灭菌,灭菌温度为121℃,时间2~3min,这样即可得到紫甘薯汁;
