竹子中含有的鲜竹汁富含多种有益于人体健康的物质,如总黄酮、氨基酸、硒元素、叶绿素等,可药食两用,具有排毒养颜、清热解毒、爽口利喉、疏通经络等功效,将竹汁加工成保健饮料,可以满足人们对健康食品需求的增长,但目前对于竹汁饮料的开发相对较少,真正将竹汁加工成保健饮料的寥寥无几,所以要开发竹汁饮料,尤其开发适合老年人饮用的竹汁保健饮料。

本发明所要解决的技术问题针对上述现有技术中存在的问题,提供一种营养成分高、具有降低血糖、血脂、血压、健脾养胃、提高人体免疫功能的竹汁保健饮料及其制备方法。
本发明解决上述技术问题的技术方案如下:
一种竹汁保健饮料,包括如下重量份的原料:竹汁65~75%,钙果汁10~20%,胡萝卜汁 5~10%,红枣汁3~8%,中药提取液1~5%,辅料0.5~1.0%,添加剂0.1~0.5%。

(2)辅料的制备:按原料配比将核桃仁、骨粉、大豆、粳米、麸曲粉碎混合均匀,高温蒸汽蒸制30~60分钟,取出后密封发酵15~20天,酵化后过滤、灭菌,制成辅料液待用;
(3)混合:按比例将步骤(1)制备的竹汁、钙果汁、胡萝卜汁、红枣汁、中药提取液,搅拌均匀;按比例加入步骤(2)制备的辅料液,继续搅拌混合,然后加入添加剂进行调配,使其混合均匀;

一种竹汁保健饮料,包括如下重量份的原料:竹汁70%,钙果汁15%,胡萝卜汁8%,红枣汁5%,中药提取液1.4%,辅料0.5%,复合维生素0.05%、蜂蜜0.05%;其中,中药提取液中各原料的配比为:党参30%、石斛20%、茯苓10%、胡颓子10%、灵芝10%、山楂 10%、杜仲5%、甘草5%;辅料各原料的配比为:核桃仁30%、骨粉30%、大豆20%、粳米 10%、麸曲10%。
一种竹汁保健饮料的制备方法,具体步骤如下:
(1)竹汁的制备:选择生长1~2年生的鲜竹,将整根鲜竹用清水洗净后切片,放入蒸锅内,在蒸锅内加入10~15倍水,在65~85℃提取15~20h浸提,过滤,制得鲜竹汁;
(2)辅料的制备:按原料配比将核桃仁、骨粉、大豆、粳米、麸曲粉碎混合均匀,高温蒸汽蒸制30~60分钟,取出后密封发酵15~20天,酵化后过滤、灭菌,制成辅料液待用;
(3)混合:按比例将步骤(1)制备的竹汁、钙果汁、胡萝卜汁、红枣汁、中药提取液,在300~800rpm的条件下搅拌10~60min;按比例加入步骤(2)制备的辅料液,继续搅拌混合,然后加入添加剂进行调配,使其混合均匀;
(4)杀菌灌装:将步骤(3)的混合溶液加热到70~80℃进行脱气;对脱气后的溶液在120℃杀菌10~15min,热灌装,封口,得到所述竹汁保健饮料。
实施例3
一种竹汁保健饮料,包括如下重量份的原料:竹汁75%,钙果汁10%,胡萝卜汁5%,红枣汁3%,中药提取液5.9%,辅料1.0%,复合维生素0.05%、甜味调节剂0.05%;其中,中药提取液中各原料的配比为:党参30%、石斛20%、茯苓10%、胡颓子10%、灵芝10%、山楂10%、杜仲5%、甘草5%;辅料各原料的配比为:核桃仁30%、骨粉30%、大豆20%、粳米10%、麸曲10%。
一种竹汁保健饮料的制备方法,具体步骤如下:
(1)竹汁的制备:选择生长1~2年生的鲜竹,将整根鲜竹用清水洗净后切片,放入蒸锅内,在蒸锅内加入15倍水,在85℃提取15h浸提,过滤,制得鲜竹汁;
(2)辅料的制备:按原料配比将核桃仁、骨粉、大豆、粳米、麸曲粉碎混合均匀,高温蒸汽蒸制60分钟,取出后密封发酵15天,酵化后过滤、灭菌,制成辅料液待用;
(3)混合:按比例将步骤(1)制备的竹汁、钙果汁、胡萝卜汁、红枣汁、中药提取液,在800rpm的条件下搅拌10min;按比例加入步骤(2)制备的辅料液,继续搅拌混合,然后加入添加剂进行调配,使其混合均匀;
(4)杀菌灌装:将步骤(3)的混合溶液加热到80℃进行脱气;对脱气后的溶液在120℃杀菌15min,热灌装,封口,得到所述竹汁保健饮料。

Claims (9)
1.一种竹汁保健饮料,其特征在于,包括如下重量份的原料:竹汁65~75%,钙果汁10~20%,胡萝卜汁5~10%,红枣汁3~8%,中药提取液1~5%,辅料0.5~1.0%,添加剂0.1~0.5%。
2.根据权利要求1所述的竹汁保健饮料,其特征在于,包括如下重量份的原料:竹汁70%,钙果汁15%,胡萝卜汁8%,红枣汁5%,中药提取液1.4%,辅料0.5%,添加剂0.1%。
3.根据权利要求1或2任一项所述的竹汁保健饮料,其特征在于,所述中药提取液中各原料的配比为:党参30%、石斛20%、茯苓10%、胡颓子10%、灵芝10%、山楂10%、杜仲5%、甘草5%。
4.根据权利要求1或2任一项所述的竹汁保健饮料,其特征在于,所述辅料各原料的配比为:核桃仁30%、骨粉30%、大豆20%、粳米10%、麸曲10%。
5.根据权利要求1或2任一项所述的竹汁保健饮料,其特征在于,所述添加剂包括复合维生素、海藻酸钠、山梨酸钾、蜂蜜、甜味调节剂中的多种复合物。
6.一种权利要求1所述的竹汁保健饮料的制备方法,其特征在于,具体步骤如下:
(1)竹汁的制备:选择生长1~2年生的鲜竹,将整根鲜竹用清水洗净后切片,放入蒸锅内浸提,过滤,制得鲜竹汁;
(2)辅料的制备:按原料配比将核桃仁、骨粉、大豆、粳米、麸曲粉碎混合均匀,高温蒸汽蒸制30~60分钟,取出后密封发酵15~20天,酵化后过滤、灭菌,制成辅料液待用;
(3)混合:按比例将步骤(1)制备的竹汁、钙果汁、胡萝卜汁、红枣汁、中药提取液,搅拌均匀;按比例加入步骤(2)制备的辅料液,继续搅拌混合,然后加入添加剂进行调配,使其混合均匀;
(4)杀菌灌装:将步骤(3)的混合溶液加热到70~80℃进行脱气;对脱气后的溶液加热杀菌,热灌装,封口,得到所述竹汁保健饮料。
7.根据权利要求6所述的竹汁保健饮料的制备方法,其特征在于,步骤(1)所述浸提是在蒸锅内加入10~15倍水,在65~85℃提取15~20h。
8.根据权利要求6所述的竹汁保健饮料的制备方法,其特征在于,步骤(2)所述搅拌速度为300~800rpm,搅拌时间为10~60min。
9.根据权利要求6所述的竹汁保健饮料的制备方法,其特征在于,步骤(4)所述杀菌温度为120℃,杀菌时间为10~15min。
