Abstract
本发明的课题在于提供一种减轻姜黄提取物的涩味,好喝的高品质的姜黄饮料。可通过所述姜黄饮料解决上述课题,所述姜黄饮料含有姜黄提取物、蔗糖素及赤藓糖醇,所述蔗糖素的含量为0.01~0.04重量%,所述赤藓糖醇的含量为1~15重量%。
Description
技术领域
本发明涉及一种减轻姜黄提取物所特有的涩味的姜黄饮料。
背景技术
姜黄(学名Curcuma longa)以东南亚为中心,在全世界的热带、亚热带地域所栽培的姜科姜黄属的药用植物。姜黄的特征性成分为姜黄素(黄色色素),在姜黄的根茎中含有3~5%的姜黄素。
报告有关于姜黄提取物的有效性。例如,在非专利文献1中提出通过含有姜黄提取物的饮料与酒精一起摄取,具有适度地表现出酒精原本的“酒醉”,同时防止烂醉的作用。
另外,近年来,着眼于姜黄的有效性,开发有一种配合了姜黄提取物的饮料。一般而言,姜黄提取物中所含的姜黄素对于促进酒精的代谢,防止酒精饮料摄取后的起床时的所谓“宿醉”有效。

发明概述
发明所要解决的课题
但是,由于姜黄提取物的涩味较强,因此无法直接美味地摄取。因此,本发明的目的在于提供一种减轻姜黄提取物的涩味,且好喝的高品质的姜黄饮料。
用于解决课题的技术方案
本发明人等进行了潜心研究,结果发现通过在姜黄提取物中加入一定量的蔗糖素及赤藓糖醇,可提供一种减轻姜黄提取物的涩味,且好喝的姜黄饮料。
即,本发明包含以下发明。
(1)一种姜黄饮料,其含有姜黄提取物、蔗糖素及赤藓糖醇,所述蔗糖素的含量为0.01~0.04重量%,所述赤藓糖醇的含量为1~15重量%。
(2)如(1)所述的姜黄饮料,其中,每100ml姜黄饮料的单糖类和二糖类的合计含量低于0.5g。
(3)一种改善姜黄饮料风味的方法,包括组合姜黄提取物、蔗糖素及赤藓糖醇。
本说明书包含本申请的优先权基础的日本专利申请2012-101462号的说明书及/或附图中所记载的内容。
发明效果
根据本发明,可提供一种减轻姜黄提取物所特有的涩味,且好喝的高品质的姜黄饮料。

发明的实施方式
<姜黄>
在本发明中,所谓姜黄是指姜科姜黄(Curcuma longa)的根茎。
<姜黄提取物>
在本说明书中,所谓姜黄提取物可通过如下操作得到:将干燥的姜黄的根茎粉碎(粉碎工序),使用提取溶剂提取粉碎的姜黄(提取工序),从姜黄的固态物分离提取液(固液分离工序),从提取液中除去提取溶剂并使其干燥(提取溶剂除去工序)。姜黄提取物可以大致分为使用油溶性有机溶剂提取的姜黄提取物和使用水溶性溶剂提取的姜黄提取物。另外,作为使用油溶性有机溶剂提取的姜黄提取物,具体而言,可以举出姜黄色素。姜黄色素含有姜黄素作为主要成分。作为油溶性有机溶剂,例如可以举出:丙酮、正己烷、乙酸乙酯等。从提取有效成分姜黄素的观点考虑,特别优选使用丙酮。姜黄色素也可以根据需要进行精制。
使用水溶性溶剂提取的姜黄提取物可通过使用水、水溶性有机溶剂等进行提取,然后,除去提取溶剂来制备。作为水溶性有机溶剂,例如可以举出:醇、特别是乙醇等。混合使用醇和水时的混合比没有特别限定,例如可以设为10∶90~90∶10,优选设为20∶80~50∶50的重量比。另外,由于在配合使用水溶性溶剂提取的姜黄提取物时容易产生姜黄饮料的涩味,因此,本发明在此时特别有效。
<蔗糖素及赤藓糖醇>
蔗糖素为具有砂糖的约600倍的甜度的人工甜味剂,由于在体内不会被消化及吸收,因此卡路里为零。蔗糖素存在使用基准,规定每1000g清凉饮料水为0.4g以下。
赤藓糖醇为具有砂糖的约0.7倍的甜度的天然甜味剂,卡路里为零。赤藓糖醇相对于水的饱和度在5℃下约为22重量%,在10℃下约为25重量%,在25℃下约为36重量%。饮食的推荐温度一般而言为5~10℃。
<含有姜黄提取物的组合物>
含有姜黄提取物的组合物可制成饮食品组合物或医药品组合物等,特别优选制成以水为基调的液状组合物(饮料)。本发明的组合物可用于例如用于防止宿醉的用途。
本发明的姜黄饮料含有姜黄提取物、蔗糖素、赤藓糖醇及水(例如90重量%以上)。姜黄提取物优选同时含有姜黄色素和使用水溶性溶剂提取的姜黄提取物。在姜黄饮料中,通过含有0.01~0.04重量%的蔗糖素且含有1~15重量%的赤藓糖醇,可提供一种减轻由姜黄提取物、特别是使用水溶性溶剂提取的姜黄提取物引起的涩味,且好喝的姜黄饮料。特别优选将蔗糖素的含量设为0.015~0.025重量%,赤藓糖醇的含量设为3~7重量%,更优选将蔗糖素的含量设为0.02重量%,赤藓糖醇的含量设为5重量%。
由于蔗糖素及赤藓糖醇为零卡路里的甜味剂,因此如果不使用含有单糖类或二糖类等具有卡路里的其它的甜味剂,则可制成“无糖(シユガ一レス)”、“无糖(無糖)”、或“零糖类”的姜黄饮料。这些表示是指每100g食品或100ml饮料的单糖类和二糖类的量合计低于0.5g。
姜黄饮料中的姜黄提取物的含量没有特别限定,但优选以每100ml姜黄饮料的姜黄素的量为30mg以上,例如为30~65mg的方式含有黄提取物。姜黄素多源自使用油溶性有机溶剂提取的姜黄提取物(特别是姜黄色素),但一部分姜黄素也源自使用水溶性溶剂提取的姜黄提取物。
具体而言,在姜黄饮料中优选含有0.04~0.12重量%,特别优选0.06~0.12重量%的姜黄色素。
另外,在姜黄饮料中优选含有0.15~1.05重量%,特别优选0.2~1.05重量%的使用水溶性溶剂提取的姜黄提取物。另外,使用水溶性溶剂提取的姜黄提取物换算为干燥的姜黄优选每100ml姜黄饮料含有0.9~5.0g,特别优选含有1.0~5.0g。
姜黄饮料中的姜黄素的含量可通过如下操作求得:使用高效液相色谱法(Agilent technology公司制Agilent1100)测定用50%乙腈溶解姜黄饮料并将其离心分离而得到的上清液中的姜黄素量。
在不损害本发明的效果的范围内,姜黄饮料也可以含有其它成分。作为其它成分,例如可以举出:甜味剂、酸味剂、抗氧化剂、增粘剂、糊精、高甜度甜味剂、香料、肌醇、维生素类、提取物类、寡糖、其它的食品添加物等。
作为甜味剂,可以举出:果糖、葡萄糖、液糖等糖类。
作为酸味剂,可以举出:柠檬酸、苹果酸、葡糖酸、酒石酸等。
作为高甜度甜味剂,可以举出:乙酰磺胺酸钾、阿斯巴甜等。
作为抗氧化剂,可以举出:维生素C、酶处理芸香苷等。
作为增粘剂,可以举出:结冷胶、黄原胶、果胶、瓜尔胶等增粘多糖类。
作为维生素类,可以举出:维生素B6、维生素E、维生素C等。
姜黄饮料可以通过增粘多糖类调整为5~15mPa·s左右的粘度。
姜黄饮料可以填充到瓶、铝制容器、钢制容器、PET瓶制容器等容器中。
姜黄饮料可以以例如50~500ml(典型而言为50ml、100ml、150ml、200ml、250ml、300ml、350ml、400ml、450ml或500ml)的饮料的形式填充到容器中来提供。
本发明的含有姜黄提取物的组合物在液体形状以外的形状(例如半固体形状,固体形状等)的情况,可以以例如50~500g(典型而言为50g、100g、150g、200g、250g、300g、350g、400g、450g或500g)的组合物的形式提供。
<风味改善方法>
本发明也涉及一种改善姜黄饮料风味的方法,包括组合姜黄提取物、蔗糖素及赤藓糖醇。通过组合使用蔗糖素及赤藓糖醇,可减轻由姜黄提取物,特别是使用水溶性溶剂提取的姜黄提取物引起的涩味,且将姜黄饮料改善为好喝的风味。
通过使用一定量的蔗糖素及赤藓糖醇,可有效地减轻姜黄提取物的涩味。例如优选每0.45g使用水溶性溶剂提取的涩味强的姜黄提取物使用0.01~0.04g蔗糖素、1~15g赤藓糖醇。特别优选每0.45g使用水溶性溶剂提取的姜黄提取物使用0.015~0.025g蔗糖素、3~7g赤藓糖醇,进一步优选使用0.02g蔗糖素、5g赤藓糖醇。
实施例
下面,使用实施例进一步详细地说明本发明,但本发明的技术范围并不限定于此。
在本试验中,确认了含有姜黄色素和使用水溶性溶剂提取的姜黄提取物的姜黄饮料的涩味及好喝程度(美味性)。
<试验饮料的调制>
混合表1的成分,填充到铝制的100ml容器,制备实施例1~10及比较例1~16的试验饮料。另外,姜黄色素可通过如下操作得到:用丙酮萃取姜黄(Curcuma longa)的根茎部分,减压使丙酮挥发。另外,使用水溶性溶剂提取的姜黄提取物使用水萃取姜黄(Curcuma longa)的根茎部分而得到。

<试验方法>
以6名20岁以上且40岁以下的健康男女为对象实施试验。
饮用实施例1~10及比较例1~16的试验饮料,按照以下的评价基准对“源自姜黄提取物的涩味”及“好喝程度”进行评价。
将6名的评价结果的平均分数示于表2及表3以及图1及图2。“源自姜黄提取物的涩味”的数值越小越优选,“好喝程度”的数值越大越优选。

<试验结果>
如表2及3以及图1和2所示,在实施例1~10的试验饮料中,源自姜黄提取物的涩味被掩盖,而且好喝。与此相对,在比较例1~16的试验饮料中,源自姜黄提取物的涩味残留,损害好喝程度。

Claims (3)
1.一种姜黄饮料,其含有姜黄提取物、蔗糖素及赤藓糖醇,所述蔗糖素的含量为0.01~0.04重量%,所述赤藓糖醇的含量为1~15重量%。
2.如权利要求1所述的姜黄饮料,其中,每100ml姜黄饮料的单糖类和二糖类的合计含量低于0.5g。
3.一种改善姜黄饮料风味的方法,包括组合姜黄提取物、蔗糖素及赤藓糖醇。
