本发明涉及食品饮料技术领域,具体地说是一种具有改善酒后状态的植物组合及其制备方法。
背景技术
我国是白酒文化比较悠久的国家,也是白酒消费大国,据不完全统计,2012年白酒行业规模以上企业共有1290户,2013年上半年我国白酒销售额达到2402.13亿元,预计到2015年,我国白酒年销售额将达到8300亿元。消费者在饮酒后,都会不同程度出现不舒服的状态,但在如此巨大的白酒消费背景下,却没有一种专业的改善酒后状态的饮料,致使消费者胡乱购买饮用,目前饮用的主要是红牛、脉动、可乐和果汁等,但酒后由于大脑神经系统出现一定程度的模糊和混乱等症状,是完全不适宜饮用含有咖啡因的饮料的,如红牛、可乐等,部分果汁如葡萄汁等虽然在一定程度上能部分改善,但其改善是很不全面的,不能起到很好的效果,不能全面解决酒后状态,西医主要从保护化学性肝损伤的角度去研究,但酒后的问题远不止这点,我国的中医也主要是从解酒的角度去研究,但由于解酒无法取得很好的效果,消费者根本不相信能解酒,同时大部分消费者也不想解酒,因为这违背了喝酒的本来意义。我们正是从市场的角度去考虑和研发了能改善酒后不舒服状态的贴近市场的产品。
发明内容
本发明的目的是提供一种具有改善酒后状态的食品饮料及其制备方法。其不含防腐剂、香精、色素,口感色泽好,效果特别显著。
酒后出现的不舒服状态主要有:
酒精中毒;急性肝损伤;刺激胃肠道系统;缺水;呕吐;心烦意燥;疲劳;上火等。
本发明在研发过程中要求从不同方面均能减轻或者解决上述分析的酒后状态,同时始终坚持地道中医理论和现代生物技术结合的原则,在具体配方配伍上采用中医的君臣佐使理论。在配方植物的具体选用上坚持每一味植物均具有对化学性肝损伤的辅助保护作用。
本发明的食品饮料的原料重量份配比为:含子的枳椇2—3份、葛根2-3份、紫苏1—2份、藿香1—2份、枸杞子1—2份、山楂1—2份、甘草0.5—1份为原料,再辅以适量白砂糖、柠檬酸为调味辅料。
制备方法:
1)提取:将原料中较硬、难以快速提取的葛根、甘草、紫苏和藿香的枝茎混合,放入配方总重量5-6倍的纯净水中侵泡8-9小时,再加入含子的枳椇、枸杞子、山楂、紫苏和藿香的叶再侵泡4-5小时,放入提取恒温设备中加温至80-85℃,恒温20-25分钟后放出第一次提取液;在加入原料总重量的3-4倍纯净水,加温至80-85℃度,恒温20-25分钟后放出第二次提取液;在加入原料总重量的3-4倍纯净水加温至80-85℃,恒温20-25分钟后放出第三次提取液即可,最后合并三次提取液得到总提取液,过滤,备用或浓缩备用;
2)与辅料混合:加入纯净水稀释,再加入一定量的白砂糖、柠檬酸(可根据所需口感调整辅料用量),搅拌使其充分溶解,过滤;
3)加热灌装:将上述过滤后的混合液加热至40—50℃,用自动灌装机灌入铁罐中(加热灌装是为防止二次高温灭菌后涨罐);
4)二次高温灭菌:将已经灌装好的饮料放入灭菌设备中,饮料pH值在3.3-4,灭菌温度为93—95℃,恒温30分钟,快速降温罐装。

本发明的方解如下:
含子的枳椇:清热利尿,止咳除烦,解酒毒。用于热病烦渴,呃逆,呕吐,小便不利,酒精中毒。其果梗可健胃,补血。动物实验证明具有对化学性肝损伤的辅助保护作用,效果较为显著。
葛根:主要功能及作用:养肝益肾,滋阴解酒。作用物质,异黄酮类之葛根素和三萜类葛皂醇。动物实验证明具有对化学性肝损伤的辅助保护作用。
紫苏:发汗解表,理气宽中,解鱼蟹毒。用于风寒感冒,头痛,咳嗽,胸腹胀满,祛扉,止痒。紫苏既能发汗散寒以解表邪,又能行气宽中、解郁止呕,故对风寒表症而兼见胸闷呕吐症状的,使用本品,很是适宜;或无表症而有气滞不畅症状的,也可用于宣通,配藿香效果更佳。动物实验证明具有对急性化学性肝损伤的辅助保护作用,效果特别显著。
藿香:芳香化浊,和中止呕,发表解暑。用于湿浊中阻,脘痞呕吐,暑湿表证,湿温初起,发热倦怠,胸闷不舒,寒湿闭暑,腹痛吐泻,鼻渊头痛。藿香有杀菌功能,口含一叶可除口臭和酒臭。藿香单独使用并没有对化学性肝损伤的辅助保护作用,但与紫苏配就有共同的较为显著的效果。
枸杞子:滋补肝肾,益精明目。用于虚劳精亏,腰膝酸痛,眩晕耳鸣,内热消渴,血虚萎黄,目昏不明。动物实验证明具有对化学性肝损伤的辅助保护作用。
山楂:消食健胃,行气散瘀。用于肉食积滞、胃烷胀满、泻痢腹痛、瘀血经闭、产后瘀阻、心腹刺痛、疝气疼痛、高血脂症。动物实验证明具有对化学性肝损伤的辅助保护作用。
甘草:补脾益气,清热解毒,祛痰止咳,清咽利嗓,缓急止痛,调和诸药。用于脾胃虚弱,倦怠乏力,心悸气短,咳嗽痰多,脘腹、四肢挛急疼痛,痈肿疮毒,缓解药物毒性、烈性。动物实验证明具有对化学性肝损伤的辅助保护作用。
本发明以“解、排、养、防”为研发理念。解为解酒毒、解郁闷、解烦躁、解口臭;排为解表发汗、利尿利便;养为养肝养胃;防为防止呕吐、防止上火和溃疡。承担解这一功能的植物是含子的积椇、葛根、紫苏和藿香。具体是含子的积椇、葛根解酒毒,紫苏和藿香解郁闷、解烦躁、解口臭;承担排这一功能的植物是紫苏和藿香、山楂、含子的积椇。具体是紫苏和藿香发汗解表、理气宽中,山楂健胃消食,积椇子利尿利便;承担养这一功能的植物是枸杞子、山楂、含子的积椇。具体是枸杞子养肝,山楂、含子的积椇养胃;承担防这一功能的植物是紫苏和藿香、甘草、葛根、含子的积椇。具体是紫苏和藿香防止呕吐,甘草、葛根和含子的积椇防止上火,甘草防止溃疡。本发明在注重满足上述功能的同时,在配方选择上特别注意还要有缓解体力疲劳作用的植物,具体是枸杞子、葛根。
本发明在配方配伍方面坚持地道中医有关君臣佐使的理论,具体是:配方和配伍上以承担“解”功能的植物为君、以承担“排”功能的植物排为臣、以承担“养”功能的植物养为佐、以承担“防”功能的植物防为使。
本发明采用复方植物组合解决了灵芝等解决酒后状态较好植物的高成本问题,并具有很好的方便性和口感。
具体实施方式
实施例1:(单位:重量份)
以含子的枳椇2份、葛根2份、紫苏1份、藿香1份、枸杞子1份、山楂1份、甘草0.5份为原料,再辅以适量白砂糖、柠檬酸为调味辅料。
制备方法:1)提取:将原料中较硬、难以快速提取的葛根、甘草、紫苏和藿香的枝茎混合,放入配方总重量5倍的纯净水中侵泡8小时,再加入含子的枳椇、枸杞子、山楂、紫苏和藿香的叶再侵泡4小时,放入专业提取恒温设备中加温至85℃,恒温20分钟后放出第一次提取液;在加入原料总重量的3-4倍纯净水,加温至85℃度,恒温20分钟后放出第二次提取液;在加入原料总重量的3倍纯净水加温至85℃,恒温20分钟后放出第三次提取液即可,最后合并三次提取液得到总提取液,过滤,备用(或浓缩备用);
2)与辅料混合:加入纯净水稀释,再加入一定量的白糖、柠檬酸(可根据所需口感调整辅料用量),搅拌使其充分溶解,过滤。
3)加热灌装:将上述过滤后的混合液加热至40℃,用自动灌装机灌入铁罐中(加热灌装是为防止二次高温灭菌后涨罐)。
4)二次高温灭菌:将已经灌装好的饮料放入灭菌设备中,饮料pH值在3.3-4,灭菌温度为93—95℃,恒温30分钟,快速降温罐装,得该食品饮料。
实施例2:
以含子的枳椇3份、葛根3份、紫苏2份、藿香2份、枸杞子2份、山楂2份、甘草1份为原料,再辅以适量白砂糖、柠檬酸为调味辅料。
制备方法:1)提取:将原料中较硬、难以快速提取的葛根、甘草、紫苏和藿香的枝茎混合,放入配方总重量6倍的纯净水中侵泡9小时,再加入含子的枳椇、枸杞子、山楂、紫苏和藿香的叶再侵泡5小时,放入专业提取恒温设备中加温至80℃,恒温25分钟后放出第一次提取液;在加入原料总重量的4倍纯净水,加温至80℃度,恒温25分钟后放出第二次提取液;在加入原料总重量的3-4倍纯净水加温至80℃,恒温25分钟后放出第三次提取液即可,最后合并三次提取液得到总提取液,过滤,备用(或浓缩备用);
2)与辅料混合:加入纯净水稀释,再加入一定量的白糖、柠檬酸(可根据所需口感调整辅料用量),搅拌使其充分溶解,过滤。
3)加热灌装:将上述过滤后的混合液加热至50℃,用自动灌装机灌入铁罐中(加热灌装是为防止二次高温灭菌后涨罐)。
4)二次高温灭菌:将已经灌装好的饮料放入灭菌设备中,饮料pH值在3.3-4,灭菌温度为93—95℃,恒温30分钟,快速降温罐装,得该食品饮料。
本发明的配方还可按现有技术的方法应用于其它剂型食品的制备,如胶囊、片剂、口服液等。
Claims (2)
1.一种具有改善酒后状态的植物组合,其特征在于所述植物组合物的原料重量份配比为:含子的枳椇2—3份、葛根2-3份、紫苏1—2份、藿香1—2份、枸杞子1—2份、山楂1—2份、甘草0.5—1份,再辅以适量白砂糖、柠檬酸为调味辅料。
2.权利要求1所述的具有改善酒后状态的植物组合的制备方法,其特征在于按以下步骤进行:
1)提取:将原料中较硬、难以快速提取的葛根、甘草、紫苏和藿香的枝茎混合,放入配方总重量5-6倍的纯净水中浸泡8-9小时,再加入含子的枳椇、枸杞子、山楂、紫苏和藿香的叶再浸泡4-5小时,放入专业提取恒温设备中加温至80-85℃,恒温20-25分钟后放出第一次提取液;在加入原料总重量的3-4倍纯净水,加温至80-85℃,恒温20-25分钟后放出第二次提取液;在加入原料总重量的3-4倍纯净水加温至80-85℃,恒温20-25分钟后放出第三次提取液即可,最后合并三次提取液得到总提取液,过滤,备用或浓缩备用;
2)与辅料混合:加入纯净水稀释,再加入一定量的白糖、柠檬酸,根据所需口感调整辅料用量,搅拌使其充分溶解,过滤;
3)加热灌装:将上述过滤后的混合液加热至40—50℃,用自动灌装机灌入铁罐中;
4)二次高温灭菌:将已经灌装好的饮料放入灭菌设备中,饮料pH值在3.3-4,灭菌温度为93—95℃,恒温30分钟,快速降温罐装,得该食品饮料。
