本发明涉及酿酒领域,特别是涉及一种菊花酒的制作方法。
背景技术
米酒营养丰富,能够帮助消化、改善血液循环、活气养血、补血养颜、舒筋活络、滋阴补肾、解渴消暑、强身健体,适合产后虚弱、自汗或体质虚弱、头晕眼眩、面色萎黄等症状的人。药酒应用于防治疾病,滋补强壮方面,在我国医药史上处于重要的地位,成为历史悠久的传统剂型之一,至今在国内外医疗保健行业中享有较高的声誉。药酒是选配适当中药,经过必要的加工,用度数适宜的白酒或黄酒为溶媒,浸出其有效成分,而制成的澄明液体。当今社会生活节奏越来越快,伴随而来的则是生活压力越来越大,人们迫切需要加强锻炼、调理平衡、补充营养、增强体质。
我国酿制菊花酒,早在汉魏时期就已盛行。据《西塞杂记》载称“菊花舒时,并采茎叶,杂黍为酿之,至来年九月九日始熟,就饮焉,故谓之菊花酒。”古时菊花酒,是头年重阳节时专为第二年重阳节酿的。九月九日这天,采下初开的菊花和一点青翠的枝叶,掺入准备酿酒的粮食中,然后一齐用来酿酒,放至第二年九月九日饮用。从医学角度看,菊花酒可以明目、治头昏、降血压,有减肥、轻身、补肝气、安肠胃、利血之妙。
发明内容
本发明的目的是提供一种菊花酒及其制作方法。
本发明的技术方案是这样实现的:
一种菊花酒,由下述重量份的原料制成:鲜菊花50-150份、鸦胆子20-30份、金银花10-20份、甘草5-10份、、决明子20-40份、蜂皇浆15-25份。、红枣8-22份、地黄30-60份、糯米50-70份、酒曲12-32份。
一种菊花酒的制作方法,具体包括以下步骤:
(1)将糯米用水洗干净,浸泡24-48小时,备用;
(2)将糯米沥干水后,用蒸汽蒸煮10-20分钟,使蒸熟的糯米易散且不粘手;
(3)待蒸熟的糯米降温到25-32℃;往所述降温后的糯米添加3-5%的酒曲搅拌均匀;
(4)将拌好的糯米装入坛中,在发酵室中发酵5-10天得酒糟;
(5)将鲜菊花、鸦胆子、金银花、甘草、决明子、红枣、地黄洗干净,晾干,研磨成粉后加入蜂皇浆,放置15-30天,得到发酵物备用;
(6)将发酵物与酒糟混合,经过压榨,去除固体物质得酒液;
(7)将步骤(6)中的酒液进行杀菌,过滤即可得到成品。
本发明中,作为进一步说明,所述步骤(1)中所述的蒸汽温度为120-200℃。
本发明中,作为进一步说明,所述步骤(1)中所述的发酵室温度为25-32℃。
本发明的有益效果为:
1、酒色淡黄而具有红色,具有菊花清香,入口甘甜醇绵,能清热解毒。
2、红枣的加入,因为其富含蛋白质、脂肪、糖类、胡萝卜素、B族维生素、维生素C、维生素P以及钙、磷、铁和环磷酸腺苷等营养成分,因此保健的效果会更加明显。
3、决明子的加入,可以清泄肝火、益肾阴功、降血压、防治血管硬化等功效。
4、地黄的加入,对人体具有补肾益精、养肝明目、补血安神、生津止渴、润肺止咳等功效。
5、本发明的生产方法简单,易于掌握,提高工作效率。
6、本发明的菊花酒,其营养价值高,具有清热解毒、清肝明目、美容养颜、滋补肝肾、促进睡眠等功效,且口感较佳,适合广大人群。
具体实施方式
下面通过具体实施例进一步说明本发明。
实施例1:
一种菊花酒,由下述重量份的原料制成:鲜菊花50份、鸦胆子20份、金银花10份、甘草5份、、决明20份、蜂皇浆15份、红枣8份、地黄30份、糯米50份、酒曲12份。
一种菊花酒的制作方法,具体包括以下步骤:
(1)将糯米用水洗干净,浸泡24小时后备用;
(2)将糯米沥干水后,用125℃蒸汽蒸煮10分钟,使蒸熟的糯米易散且不粘手;
(3)待蒸熟的糯米降温到25℃;往所述降温后的糯米添加3%的酒曲搅拌均匀;
(4)将拌好的糯米装入坛中,在25℃发酵室中发酵5天得酒糟;
(5)将鲜菊花、鸦胆子、金银花、甘草、决明子、红枣、地黄洗干净,晾干,研磨成粉后加入蜂皇浆,放置15天,得到发酵物备用;
(6)将发酵物与酒糟混合,经过压榨,去除固体物质得酒液;
(7)将步骤(6)中的酒液进行杀菌,过滤即可得到成品。
实施例2:
一种菊花酒,由下述重量份的原料制成:鲜菊花100份、鸦胆子25份、金银花15份、甘草7份、、决明子30份、蜂皇浆20份、红枣13份、地黄40份、糯米70份、酒曲21份。
一种菊花酒的制作方法,具体包括以下步骤:
(1)将糯米用水洗干净,浸泡36小时备用;
(2)将糯米沥干水后,用160℃蒸汽蒸煮15分钟,使蒸熟的糯米易散且不粘手;
(3)待蒸熟的糯米降温到27℃;往所述降温后的糯米添加4%的酒曲搅拌均匀;
(4)将拌好的糯米装入坛中,在25℃发酵室中发酵7天得酒糟;
(5)将鲜菊花、鸦胆子、金银花、甘草、决明子、红枣、地黄洗干净,晾干,研磨成粉后加入蜂皇浆,放置25天,得到发酵物备用;
(6)将发酵物与酒糟混合,经过压榨,去除固体物质得酒液;
(7)将步骤(6)中的酒液进行杀菌,过滤即可得到成品。
实施例3:
一种菊花酒,由下述重量份的原料制成:鲜菊花150份、鸦胆子30份、金银花20份、甘草10份、、决明子40份、蜂皇浆25份、红枣22份、地黄60份、糯米70份、酒曲32份。
一种菊花酒的制作方法,具体包括以下步骤:
(1)将糯米用水洗干净,浸泡48小时备用;
(2)将糯米沥干水后,用200℃蒸汽蒸煮20分钟,使蒸熟的糯米易散且不粘手;
(3)待蒸熟的糯米降温到32℃;往所述降温后的糯米添加5%的酒曲搅拌均匀;
(4)将拌好的糯米装入坛中,在32℃发酵室中发酵10天得酒糟;
(5)将鲜菊花、鸦胆子、金银花、甘草、决明子、红枣、地黄洗干净,晾干,研磨成粉后加入蜂皇浆,放置30天,得到发酵物备用;
(6)将发酵物与酒糟混合,经过压榨,去除固体物质得酒液;
(7)将步骤(6)中的酒液进行杀菌,过滤即可得到成品。

1.一种菊花酒,其特征在于,由下述重量份的原料制成:鲜菊花50-150份、鸦胆子20-30份、金银花10-20份、甘草5-10份、决明子20-40份、蜂皇浆15-25份、红枣8-22份、地黄30-60份、糯米50-70份、酒曲12-32份。
2.根据权利1要求所述的一种菊花酒的制作方法,其特征在于,包括以下步骤:
(1)将糯米用水洗干净,浸泡24-48小时,备用;
(2)将糯米沥干水后,用蒸汽蒸煮10-20分钟,使蒸熟的糯米易散且不粘手;
(3)待蒸熟的糯米降温到25-32℃;往所述降温后的糯米添加3-5%的酒曲搅拌均匀;
(4)将拌好的糯米装入坛中,在发酵室中发酵5-10天得酒糟;
(5)将鲜菊花、鸦胆子、金银花、甘草、决明子、红枣、地黄洗干净,晾干,研磨成粉后加入蜂皇浆,放置15-30天,得到发酵物备用;
(6)将发酵物与酒糟混合,经过压榨,去除固体物质得酒液;
(7)将步骤(6)中的酒液进行杀菌,过滤即可得到成品。
3.根据权利要求2所述的一种菊花酒的制作方法,其特征在于,所述步骤(1)中所述的蒸汽温度为150-200℃。
4.根据权利要求2所述的一种菊花酒的制作方法,其特征在于,所述步骤(1)中所述的发酵室温度为25-32℃。
